Carrot ginger soup with cashew cream and fresh Thai basil, and a small grilled sandwich: Balthazar multi-grain bread, farm aged cheddar, thickly sliced organic apple-wood bacon, thinly sliced Empire apples, and a smear of garlic mustard on the bread. It was divine! Glass of chardonnay.

I got a great deal on some huge ass portabello mushrooms from our local farmers market...i mean they are hugeeeeee!!!
so we are having

Well, I figured it out. It was ugly (literally...Gordon Ramsay would have been disgusted), but it was good.
It was a raid the fridge kind of meal: pulled roasted skinless chicken breast, brown rice, onion, orange pepper, mini red peppers, jalopenos, and a few TBS of light buttermilk ranch dressing all stirred up together and cooked in the skillet.
Organic got red beans with Mexican blend shredded cheese and chopped onion on top and I got pickled beets. Mmmmmm.....:tease:.....beeeeets.

Hungarian Mushroom Soup - loosely following this recipe (http://allrecipes.com//Recipe/hungarian-mushroom-soup/Detail.aspx). I used mushrooms from the Asian market, including Oyster, Portobello, and Enokis (delish). Serious mushroom heaven. Was making for my boy but he had to work late so is a no-show.
And broiled Korean purple sweet potatoes - healthy and filling.

We went to Outback and I had Bushman bread with the tiniest smidge of whipped butter, a side salad without croutons and onions and with tangy tomato dressing, steamed carrots and squash and steak (NOM!) and grilled scallops.
I was a full girl. :blink: No dessert.

Dinner was a very small portion of this (points up) and half a cup of fat free pineapple sherbet for me. Organic got an equally small portion of the dish above plus half a wrap and a big dollop of red beans with cheese.

My sweetie manages a pizza place (and makes yummy pizza)....so she brings home my favorite....a small original crust with olives and mushrooms, just for me :eating:

Well I've been having burrito's made with "Sweet's" homemade salsa for the last 3 days but Mom and Dad have decided I needed to eat out with them the last 3 nights. So maybe tonight we can eat at home and enjoy the new salsa.

On the stove this very minute!
Some soup I put together- sort of Asian.
I use a pot that holds 8 quarts (sorry, I don’t measure other than by site and smell, this is just the amount I make each time!)
4 chicken breasts - boil in the water and chicken broth, then cut it up and return it to the broth
Water plus low sodium and low fat chicken broth
Sliced carrots
Half a package of frozen peas
1 package of extra-firm tofu
Bok Choy - about 3 bunches - sliced up
Sometimes I put some chopped cabbage in- red or green (don’t add it until about 5 minutes before serving- same with frozen peas and eggs)
1 large onion- kind of “cubed”
3 eggs - just stir these in
Some garlic powder
A little pepper
Sea salt if needed (usually by other people I serve this up to!)
Bean sprouts on top are good!
It really is good! I like to make it and freeze some during winter- ‘cause hot soup in winter is just great!
You can add ’hot” stuff to it if you want, like cumin, a bit of chile powder and some cayenne pepper. Be creative!

There is something similar I do in the rice cooker!! it IS fabulous, only I leave out the bacon. Cabbage is soooo good :)

I was at Costco around dinner time and so I had a mini meal from the samples. I chose edamame, roast pork and mashed potatoes, a large strawberry and a small piece of dark chocolate peppermint bark.
Organic was working and had himself a nice wrap.

Vegetable stew: leeks, carrots, celery, mushrooms, shallots, sautéed in olive oil until caramelized and melted, with organic apple-wood bacon, smoky apricot tea for broth, and when all returned to a low boil, added quartered purple potatoes and black beans, with a healthy dose of Thai green curry....A bowl of that, with a glass of Merlot, and I was a happy girl!

The roast I cooked yesterday, has made a great beef stew for today,with a fue things added of corse.
I cook a lot thanks to my exec chef friend, rhonda. Delicious, healthy and gourmet. Sometimes over my calorie chart, but need to splurge now and then. Next week, I'm going to make my white sauce with sun dried tomatoes and artichoke.

Tonight I had delicious little meat stuffed pies, that I dipped in a spicy mint chutney. Savory pie with Indian spice. It was so good!
Yesterday I had an Antipasto Salad, with artichoke hearts, prosciutto, pepperoni, shrimp, fresh mozzarella, veggies, balsamic vinaigrette. I could eat that once a week easy, really easy.

I forgot to add Miss Diva's Aunt Olive's Raspberry Surprise stuff to my dinner list last night. That too is delish. It has jello and blueberries and raspberries and pineapple and cream cheese. Thank goodness it only comes out once or twice a year.

The Canadian milk producers (http://www.dairygoodness.ca/milk/the-milk-calendar) put out a recipe calendar every year - some of the stuff is actually pretty good. Today I tried the recipe for this month. I was wondering how the cumin and cinnamon would taste - - it was pretty good.
Had the beef and sweet potato saute (http://www.dairygoodness.ca/recipes/tender-beef-and-sweet-potato-saute) over rice.

1 large mug (I used a ‘soup mug’ for this)
some oil to grease the mug with
3 tablespoons of cake flour or self-rising flour
3 tablespoons of sugar
2 tablespoons of cocoa powder
2 tablespoons of vegetable oil
2 tablespoons of milk
1 egg
Optional: chocolate chips or marshmallows
Grease the mug.
Put in all dry ingredients and mix together.
Add oil, milk and mix again.
Finally, break the egg and stir it in until everything is a smooth batter.
Put microwave on highest setting and put the mug inside. (Put it on a plate or something in case something goes wrong).
Put the microwave on 3 minutes.
After 3 minutes take out your mug (careful - it's hot!) and spoon out the cake. Cut up in slices and eat with whipped cream.

One of my favorite made-up recipes ... very quick and easy
RECIPE:
Will Need:
a heavy duty paper plate
plastic fork or spoon
1/2 can of Luck's pinto beans seasoned with pork
large handful of grated cheese
large tablespoon chipped up jalapenos (purchased in store - jar type)
1/2 cup hot salsa
teaspoon of sour creme
Directions:
Dump beans on paper plate
Scatter jalapenos over beans
Dump on hot sauce
Top with cheese
Nuke 2 minutes (cheese must be melted and running - mine is an 1100 watt microwave so you can make adjustments accordingly)
Add teaspoon of sour creme on top when you remove plate from microwave
Enjoy!

Yesterday at lunch time we ate our Middle School traditional Thanksgiving dinner, creamy squash soup, freshly roasted turkey breast with all the trimmings, arugula and spinach salad with pears and cranberries, cider, pumpkin pie, sitting by advisory groups with the advisors (I advise a group of 7th graders), at tables covered with cloth tablecloths, decorated with turkeys and paper flowers the kids made. (Yes, It is the kind of food we have in our cafeteria, our chef is incredible, most everything homemade by our school cooking team!...) It is such a great tradition, our "family" meal, where we have lovely conversations with the kids!
Needless to say, dinner was minimum for me after that lunch: a small bowl of goat's milk yogurt with a sprinkle of raw sugar.
This morning I am off until Monday, savouring my café au lait, with a prospect of a lemon/ginger/black currants scone later, with organic thickly sliced grilled bacon!

Outrageous!), a tiny bite of a tiny cupcake (Dry!), and two helpings of cherry cobbler with soft serve ice cream swirled on top. Oh, and pink lemonade to wash it all down.
Today was our Thanksgiving dinner! :tease:
