My honey baked some nice thighs and onions in a honey soy sauce and some bourbon grillin' beans on the side.

I'm about to go into the kitchen to cook tomorrow's dinner so I can bring it to work and Ebon won't have to worry about it. I'm not sure what I'm going to make, but it's going to have turkey sausage in it.

Tonight SnackTime prepared dinner for us!
It was fabulous AND healthy fettucini alfredo, salad and bread.....For desert, a choice of banana nut muffins or chocolate chip! (Papa had both).
AND......fabulous company with the princess!!!!!!!!!!!!!!!

After I get back from my "unexpected, unplanned and frustrating" Lupus exam HR has set up at a hospital an hours drive from me, I'm craving REAL tacos from the restaurant Blade bought some at the other night....they smelled so YUMMY that I've been thinking about them ever since. It would make a nice treat for after the hospital trip.

Stopped at McDonalds on the way to work:
- double cheeseburger (w/no pickles)<--only ate about 1/2
- 6pc chicken nuggets <--ate 'em all
- medium fries <--not even fully cooked, ate 3 and tossed the rest
And a Cadbury Egg to top it all off.

You'd think I was on the verge of starvation when I placed that order... :|

I dumped a little spagehetti sauce, added an entire chipped up orange bell pepper and extra mozzerella cheese to a frozen flatbread pizza.

It turned out pretty good and I did not burn it. :)

Last Night my Love made the most amazing steak with a deglazed sauce of onions and tomatos, the onions were carmelized and the whole thing was absolutley divine....it was so good i wanted to eat the pan that it was made in.....I want more.....

my turn for cooking tonight.....I shall make some friend chicken breasts in some kind of honey egg wash with a flour dredge.....think ill put some extra red pepper in the dredge to make it sweet and spicy

hmmm a salad, some corn and of course we need mashed potatoes and graby...lol

I think my Roomie missed his calling....
He hasn't flubbed up a dinner yet!! I think Blade, Dom and Jess should open their own restaurant!!!

After a long, boring Orientation day...followed by over an hours drive home in highway traffic.... My Roomie had an AWESOME dinner ready for when I got home:

His famous "melt in your mouth chicken"
garlic sauteed mushrooms
and a batter dipped homegrown fresh okra/potato mix lightly fried in olive oil

It sure was worth the wait and struggle through rush hour traffic!! ....You will never go hungry in this house!! The pantry is always full and there's always something YUMMY cooking!!

And just as we were about to settle down for the evening.... all the excitement with "fire cops" and regular cops start!! LMAO!!!

We had shredded rotisserie chicken with sauted veggies (squash, onion, bell and red peppers). I added some veggie seasoning and light parmesan to mine and was good to go.

For dessert, I had a Raymundo's Caramel Flan cup.

Tonight it will be crock pot slow cooked pork shoulder made into pulled pork for sandwiches with onions and pickles and crispy home made sweet potato fries and for dessert dark chocolate pudding with cayenne and cinnamon

Note to add: everything but the fries is made in a crock pot, I love it when I come home and almost everything is done, almost like I have a staff looking after me

Dinner consisted of a bowl of cheerios. 'Dessert' is a fruit salad of apples, bananas, grapes and pineapples. Dinner tomorrow will be a 'fresh herb' salad with shredded matchstick carrots. Maybe some diced mozzarella sticks thrown in. Wishing I had bought some deli meat to go on top, hmrh.

Gratin of endives in Béchamelle sauce, with pancetta, lots of garlic, Parmiggiano, and a hint of freshly grated nutmeg....lovely with a glass of Cabernet Franc from the Loire Valley.....and for dessert a pear and Fuji apple compote spiced with cinnamon, coriander, ginger, and a good shake of Nigerian cayenne. Nice to be home on a Thursday, because of snow, and cook up a storm!
I also made blueberry jam, a corn chowder, and a Thai green curry with pumpkin and chicken.....Oh! and Irish oatmeal for the next couple of days...

By request of two teenage boys, it's "chicken and rice"

...which means that I lightly brown boneless, skinless chicken breasts in a little olive oil...sprinkling them with salt, pepper, garlic powder and poultry seasoning.

In a baking dish, I put 1-1/2 cups of basmati rice and pour 3 cups of chicken stock over top. Lay the browned (but not cooked) chicken breasts on top.

Toss 1 chopped onion into the pan the chicken just left and saute until transparent, then put the onion on top of the chicken (and scrape in the pan juices just because)...cover the whole thing with foil and bake at 350 degrees until the chicken and rice are both done. :eating:

It's yummy if I do say so myself...and works for my healthier way of eating too. :)

Tonight I made 2 salads for R and I
Her white blood count is low and she needs certain veggies to help bring it back up
I took mixed baby greens and baby spinach and added slices of yellow squash, radish slices, baby carrots and quartered tomatoes. Also added garlic and cheese croutons and sliced a rotisserie chicken to add on top of it. Followed up with dressing and it was truly a meal......oh and I had red wine with mine, R can't drink alcohol right now. I should go get another glass, so she can drink vicariously through me, right.

I wasn't in the mood for a traditional meal, so I'm snacking for dinner. I sliced up a nice, firm green apple and some extra sharp cheddar cheese to go with reduced fat Ritz crackers. Some green grapes on the side and, for bit of warmth, mini peppers hollowed out and stuffed with jalopeno and yogurt ranch dip and baked until slightly softened.

Begin with LARGE baking pan
1st layer: 2 cans fat free refried beans
2nd layer: 8 oz fat free sour cream mixed with 2TBSP taco seasoning
3rd layer: 6-8 oz guacamole
4th layer: real bacon bits, not the hard ones, enough to cover the pan
5th layer: diced green onions
6th layer: 2 pre-packaged bags of fajita flavored chicken, heated and
shredded in a blender
7th layer: shredded mexican cheese

Additional potential layers:
Tomatoes
Black olives

To make things easier:
Mix the sour cream, guacamole and the taco seasoning all together as one layer

Well Sweet grilled 3 days worth of food, but tonight we had chicken wings and I fixed the veggies cuz she loves my okra and taters . So I fixed okra and taters and silver queen corn. The wings were yummy and I can hardly wait until tomorrow night to eat the steak in a salad

Someone did not get off of work in time for sushi.

I may or may not be slightly homicid...er, I mean horomonal over this.

Dinner is flatbread with pepperjack cheese and fresh diced tomatoes toasted in the oven and pickled beets straight from the jar.

Yeah, it kinda sucks.

I'm getting my sushi on later in the week. No one keeps me from my sushi. :weightlifter:

Stir fry dish I concocted made fresh mushrooms, garlic, thinly sliced lean beef, zucchini, chayote squash, fresh tomato, sunflower seeds. and whole wheat penne sauteed in a dash or three of organic soy sauce then topped with a handful of shredded Swiss. Note: Tomato and sunflower seeds added after the rest is cooked. Good stuff!

It was "time to clean out the fridge....it's leftover night" at our house...

The Prince had the last of the lasagna (sorry honey!) and broccoli...at his request :blink:

Rooster had chicken taquitos (he loves them...in corn tortillas) and broccoli

I had the last pork chop and the last of the mashed potatoes...and broccoli :)


For tomorrow...the chickens (from last night's baked chicken) are simmering. Later tonight I'll separate the good meat out, and put the broth in the fridge overnight so I can skim off the fat...and make Rooster's favorite cream of chicken with rice soup. :eating:

I made it to the organic market today for their Sunday is 10% off thingy, I do believe I walked 5 miles in the process. Tonight I am having a cold cut sandwich made with uncured Black Forest Ham, organic Monterrey Jack cheese with jalapenos, organic basil and tomato hummas and a little organic mustard on that Italian bread I bought from the Greek/Italian market a couple of days ago. Also having a handful of organic blueberries.

I love this market, it is nearly the size or a regular supermarket but damn the prices kill me!
