I have no desire for dessert so far. If a desire develops, I guess a gluten free brownie.
There is a flank steak with potatoes and onions in the crock pot for tomorrow. I couldn't get it in the pot in time for tonight. Hence the eggs and bacon. But no complaints. Love those goat cheese crumbles. And of course, bacon rarely disappoints.

Subway! 9 grain honey oat with bacon and all the veggies except onions and hot peppers. Vinegar and chipotle southwest sauce complemented it nicely.

I'm unhappy with Cracker Barrel too! They no longer serve my favorite beef stew and cornbread. That stuff was craveable!

I just ordered about $50 worth of Chinese food (for just me), so it looks like I'll be having a buffet of chicken soo gai, yang chow fried rice, spicy salted squid, and curry shrimp!
(leftovers--and then some--for the Oscars!)

I am spending the day cleaning so I feel the need for pizza:
Crustless pizza made with baby mozzarella, Parmesan curls, red green and yellow peppers, red onion, Italian sausage, basil, thyme, oregano, coarsely chopped garlic, crushed red pepper, coarsely ground black pepper, and the last bit of prosciutto, ooh and I think I have some black olives left

Thai chicken curry -- packet of red Thai curry simmer sauce, can of lite coconut milk, already cooked chicken that had been languishing in the freezer, fresh mushrooms and onion. All thrown into the crockpot on high for an hour or so.
Brown rice -- boil in bag. 8 minutes
water to drink
Dessert -- gluten free vanilla cake with dairy free frosting (meh, but dessert still)
Eaten while watching Death in Paradise, the episode in which Richard dies. *sob*

I have come to the realization that I would rather cook all day one or two times a week, than every single day. I suspect I'm not a domestic diva. Always thought it was lovely image, but the reality of never ending domestic service on a daily basis brings me to tears. So for me do it big, make it pretty open a bottle of wine, turn up some good music, cook and move on....
for the next few days it is
fresh homemade salsa
hummus
2 kinds of chicken sausage
one batch made into a zucchini casserole
one batch cut and ready for salads or eggs over the week
lightly steamed a big batch of veggies; green beans, asparagus, broccoli
fresh chicken salad
cilantro lime chicken (really yummy)
big basic salad to dress up
tahini dressing
It's wonderful the next day to open the fridge and see it full of healthy, all ready cooked yumminess. Heat and rinse dishes, feed them to the dishwasher, and voila, several days of kitchen reprieve.

I had chicken on a bed of basmati rice with mango salsa and red/yellow/orange pepper strips as well as pineapple spears on the side.
I ate a little earlier than usual, because I was excited to eat the first round of this year's asparagus! I steamed bite size pieces of asparagus and then folded them into my scrambled eggs along with some smoked cheddar cheese. Two strips of bacon, and two slices of sprouted wheat sour dough toast, with some raspberry jam completed the party my tastebuds had. Yum!

I so relate to this! We now decide on Friday night/Saturday what we're going to eat Monday through Friday, make a list of ingredients, buy and prep Sunday night. It took us maybe an hour and a half to shop, and two hours to prep Sunday.
Biggest life saver was a basic seasoned chicken breasts in the crock pot for six hours, then shredded and froze what we weren't going to use for the rest of the week. Also chopping up all the salad and carrots and putting into gallon size bags in the fridge.

I was asked for this recipe this morning. So, please forgive me folks for posting it again. This is for the sweet potato and lentil chili.
Clay - since I couldn't PM you here it is
ingredients
1 onion, diced
1-2 bell peppers, diced
3-4 sweet potatoes, diced
3 cloves garlic, minced
3 cups vegetable broth
1 can black beans
1 can kidney beans
1 can northern beans
1 (15-ounce) can diced or crushed tomatoes
1 can rotel
1 1/2 cup lentils
2 tablespoons chili powder
1 tablespoon cumin
1/4 teaspoon cayenne pepper (optional)
Kosher salt and freshly ground black pepper, to taste
Place everything into a crock pot, stir and cook 6-8 hours on low
.
just as a side note if you don't have veggie broth ...just use a can of crushed tomato. Don't have green bell peppers...use what ever color you do have. If you want a change add some corn as well. That's one of the great things about chili...if you need to you can change things around a little. The chili powder, cumin, cayenne ratio is what I find to be the key to a good chili

Yummy salad. I was burnt out on them for awhile and now i got a hankering for them again. Hard boiled eggs, bacon, cheese, broccoli, romaine lettuce, tomato, onion, avocado and a dash of vinaigrette dressing. I'm getting used to low carb eating and taking little bity bites of my crackers making them last. Only two crackers and they lasted the whole meal. Yum!!!

Smoked salmon (it's a bit chilly in my neck of the woods but I think I'll start the smoker when I get home from work) cauliflower rice, green salad. I may even have a square or two of dark chocolate for desert.

had to chuckle Ms. CherryWine.......have a place like that, too! I had their "angel wings" first time about 6 weeks ago....OMG...can you say mouthgasm! It is a rather large chicken wing, left intact......deboned the drummette and flat 2 boned piece.....scraped meat out and combined with glass noodles, crabmeat, and spices...is then crispy coated and fried.....OMG! Last weekend was at another restaurant who had them on menu....was sadly not at all like other ones from another place......(w)......

it's been a crazy week and meal planning was shot to hell...tonight wasn't much different. never seems to be enough hours in a day.
So, the girls had a hummus sandwich in pita bread with chips. I had a veggie burger (homemade that I had in the freezer) with spinach on a bun and chips. The boy had left over cheese pizza.

Chicken n veggies (brussel sprouts, pepper onion mix and peas) which carmelized..I added some Lea and Perrins and it gave it a nice smoky flavor...

I picked up a tube of ginger paste (I've never used paste before so this is going to be fun!) and a package of huge boneless, skinless chicken breasts that were on sale at the market. They are a little less than a pound a piece. $3.24! Manager's special, so that's why they are getting cooked tonight.
I'll probably do a basmati rice and steamed veggie thing with it.

I sautéed turkey sausage, sweet onions, cloves of roasted garlic and grated carrots, then added them to a large pan of French lentils and added smoked seasoning for my BBQ'd Lentils dish.
Very yummy (just had supper).

We had a panini with chicken, spinach, gorgonzola cheese and a tasty garlic sauce...french fries on the side may have been a bit much. I lamented that there was no pickle..

I had smoked salmon cooked with some soft scrambled eggs and a little raw white cheddar, with a side of oven roasted asparagus. This is one of my favorite breakfast-for-dinner meals. :)

Asheville is participating in its annual Dine to be Kind benefiting the local Humane Society. 15% of all sales are donated by 60 participating local restaurants.
So
I went to Ihop for linner..I had a southwestern club with turkey, bacon, LT on sourdough. Side of onion rings and some (not as good as mom's) minestrone soup. I ate only half of everything; my appetite still isn't great. BUT I did get a pannycake for dessert, cut it in fours and sampled all the syrups ( I hadnt been tobIhop in yearsss) I was shocked that I didn't
love the butter pecan...and DID love the strawberry...

I actually made something different...
Flounder, seasoned with lemon and TJ's every day spice (next time I will saute some garlic in the pan before I cook) oh yes, pan sauteed along with brussel sprouts and some sugar snap pea stir fry frozen veggies...mostly for color..
It was ok...I had wanted salmon but the store was out...flounder in thin filets loses its flavor when frozen. And I always prrfer a nice, chunky piece of fish, compared to flat-as-a-board. But then, I also prefer to bake my fish. But the only pan my roomie owns is of the pizza variety...with holes and all. My stuff is in storage...
