Been at the Hyatt Wash DC for 3 days already a bit tired of the menu....including all restaurants.

When i get home a steak on the BBQ ... salad and cottage cheese!

I will be at the clinic getting my back shot up today so I doubt I will have brain cells to think so I can cook. So I already made calzones and they are in the fridge coved so when my son gets home he will pop them in the oven to cook. Yes I said my son, seams like he has learned a thing or two about cooking that isn't done with the microwave, Sunday he made passable biskits for breakfast. He is also making a salad to go with the calzones.

After working all day and with more work to do at home tonight I was in no mood to cook soooo..

Atkins frozen meal mac n cheese - I added some sharp cheddar, provolone and coarsely cracked black pepper. It was really good. This was was surprising as it is low carb and the whole point of mac n cheese is the carbs, right?

Spinach salad with red onions, bacon, pecans and feta

Mixed berries later when I need a break

Off to work for me now, no rest for the wicked

I am cooking "Vaca Frita de Pollo" (http://www.arrozyfrijoles.com/restaurants/chicken-vaca-frita) for dinner...it is so yummy too! I am having it alongside a little jasmine rice with well seasoned black beans, sliced avocado and a couple of lime wedges. Ice tea to drink. I linked the recipe I use for this dish in case anyone is interested, but there are of course plenty of others on Google.

Last night I lightly breaded some cubed steaks that I pounded out real thin and fried them quickly on the grill with avocado oil. I covered them in red sauce and cheese for the win. We also had salad and garlic bread.

A friend and I went to the National Art Gallery and had a fine time wandering around. Then we went to a local eatery, had 15$ burgers ( they really are good and worth every penny), shared a pitcher of terrific "Beyond the Pale" IPA and spent the next 3 hours sharing a copy of the Sunday New York Times.....what a great Sunday.

I had a bite of each of these.....a meatball in marinara, an Italian sausage in same marinara, 2 bites of homemade lasagna, and a small piece of chicken piccata...OMG was that ever good!!!

I had 3 sugarsnap peas, 2 small carrots, and a celery stalk. I stayed within confines of my "diet" and I did not even touch the Italian crème birthday cake...:hangloose:

Went to a friend's "milestone" birthday party with 23 other sisters!!!!

Last night, I had most of a huge burrito from Moe's (on whole wheat, black beans, rice, sautéed mushrooms, peppers and onions, steak, sour cream, guac, cheese, diced cukes and tomato, black olives and fresh salsa. Tomatillo sauce and mild salsa on the side with restaurant chips. Flavored water to drink.

I went to my favorite place and had the special

Grilled tilapia with sauteed broccoli, carrots and bell peppers in a Madras curry coconut sauce with rice. Served with banana chutney and garnished with Ming bean sprouts.

I wrote it down verbatim since I could never remember it all. It was awesome. But I could've skipped the chutney...

The GF picked up some Pollo Loco tonight. She had the regular dinner and I had a terrific salad with greens, avocado and a double portion of grilled chicken. I used some awesome Homeboy Industries salsa instead of dressing and enjoyed it totally.

Tonight I am making one inch thick boneless pork chops smothered in red bell pepper, onion with mushrooms along with a splash of non alcoholic white wine. The side dish will be a veggie mix brushed with seasoned evoo with sea salt and fresh ground pepper. This dish is simple and a hit around hear.

I thought I was starving when I punched out at work. I wanted to make Indian food. Natural grocers didn't have what I needed so I settled on Thai red curry with zucchini, carrots, onion, peppers, bamboo shoots, water chestnuts and spinach over rice noodles. I added lots of coconut milk in it.

Because I cook for an invisible army, it will be lunch for a few days.

Tilapia...Initially I just seasoned it and added butter and some fresh pineapple chunks...and then, I opened the fridge and saw the coconut/almond milk and thought: hmmm why not?! Final result was good! Added some fresh chunks of papaya to the plate as decoration/'dessert'
Salad: shredded iceberg lettuce, corn cut from cob...low fat sour cream as dressing...
and, just for the 'fun' of it, one soft peppermint puff candy :)

I stopped at a local Mexican place that I've wanted to try...

They call themselves "California Mexican " I didn't know what to expect...

I got chicken enchiladas with guacamole and rice and beans...nachos and some kind of cheese sauce came with it. I ordered flan for dessert cuz it's impossible for me to resist.

Everything was ok...not great. The place is always packed so I had high hopes. I can't stand a lot of onion in my guac. I think it's gonna be a one time thing. I confess that I am terribly picky about Mexican food....and Thai..

Oh and who decides to turn the chicken while mostly undressed and gets splashed by hot chicken juice....yep. This girl. I've had far better thoughts...:|

Blaze came home with lots of potatoes, yellow squash and green peppers. What to do?

Opened refrig and found celery, onions and bacon. Added sliced potatoes and green peppers. Oh, and a jalapeño. Fried it up...kinda like country potatoes. Blaze, says what makes it country? Lol

I also found two bunches of radishes. What to do? They need to be used. I found a recipe for roasted radishes. Hmmmm...I wonder how that will turn out. In the oven now.

And...I brought home two bacon Monterey Jack cheese patty's that will go on Hawaiian sweet bread buns with all the fixin's.

Last night I was too hungry not to cook so I sauteed a chicken breast (which was frozen so I had to thaw it in the pan; I had no intention of cooking) seasoned it with spices and curry then added some fresh veggies. Zucchini, summer squash and red bell pepper to be exact. It was quite good.

A couple coconut marshmallows for dessert...but...the coconut fell out of the fridge and onto the floor. I may have wept a bit. Definitely need more. Love it in my yogurt too..

I tried so hard to get my loan originator to let me get a tractor/backhoe worked into my mortgage ...she said no --->>> EVERY.SINGLE.TIME.I.MENTIONED.WHAT.A.GOOD.IDEA.IT. WAS!!! Finally realtor lady told me to leave the loan originator lady alone about the backhoe/tractor. They were not even the least bit sympathetic about it either. They just don't get it is all I can figure out about that.

I actually got the idea from someone on here. You simmer onion soup mix and add lentils..I had a bag of birds eye brown and wild rice with carrots and broccoli in it. It was about 1/2 a bag left so I threw it in. I also cut up a spicy chicken sausage and added that in. Sprinkled some spices and fresh black pepper and it was awesome.

I'd love to figure out how to make burgers from the leftovers. I always make a ton and I'm the only one who thinks it's awesome sauce lol

Dice your veggies and sausage up super fine, decrease the liquid and add a binder, like egg and/or bread crumbs. Form patties once they cool and freeze for convenience.

I have a whole menu almost to choose from...lol. Now that I only eat 4 oz., I seem to have plenty of leftovers...lol.

So my choices are: sushi.....Cuban pork with couple of yucca with mojo, OR taco chicken salad....and I love any/all of them. I will have to toss whatever is now left after dinner this evening.....will be "too old" to re use....:(.

Some places will allow me the "kid's menu" with my card saying so...BUT sometimes I am NOT in mood for PBJ..lol

That's why I tend to make a meat dish for potluck. Easy meat like spiral ham or a pork butt. I don't eat either but it goes a long way if the potluck ball gets dropped. I bring a dessert too...covering bases and such.

For myself, I made a chicken breast with bbq sauce and a roasted beet.

My daughter cooked tonight. Spaghetti and sauce with garlic toast.

Last night, I made super nachos. Tortilla chips, refried beans and beyond beef crumbles spiced up with chili powder, garlic, onion, roasted green chilies and my must have in every dish...cumin. Grated rice cheese, guacamole- heavy on the lime and cilantro- and salsa. Yum. We had leftovers for lunch.

I don't think gay boys are really into the whole "potluck" thingy!

I have been at many gay men's homes for meals (one of the meals was a sit down dinner for Thanksgiving) and not ONCE was a potluck involved!

The meals (every item from appetizers to desserts) were prepared by the host and when I inquired what to bring, they simply said "your appetite"

I have been to lots of lesbian potlucks and it depends on if they are mostly vegetarians Or if they love to eat in general Or if they are Paleo Or Atkins.. The love to eat, Paleo and Atkins ones have more choices.

I reamed him out last time I was in here ... I saw him in the back when I came in a little bit ago and summoned him to come forward and speak with me. He sent another guy to the register who told me I had a free pizza coming any size, any ingredients. Then the Gomer came over and apologized over and over for not offering me the pizza free that night of THE INCIDENT. Okay, I forgive and forget. But if I am handed a white edged limp pizza, you may read about me in the papers tomorrow. LOL! Only kidding! ;) The floor, walls and backdoor kitchen blinds won't get an opportunity to wear this one.

I chopped up some of the chicken that was left over from last night, and made chicken salad. Yum, with mayo and a dallup of sour cream. Chopped celery,onion, green pepper, made on jalapeño cheese bread.
Cucumber and tomato side salad.

Tried a new recipe today: I roasted spaghetti squash with garlic, butter, basil pesto, tomatoes, crushed red pepper and the usual Italian spices

I sauteed in butter some scallions with yellow pepper and a bit of garlic, tossed in some shrimp then mixed it all together and topped the spaghetti squash with it

Not too bad, I will be using spaghetti squash again as a pasta stand in for when I am tired of zucchini noodles.

I've brought home the best berries lately, that I'm pretending I'm French. (well I'm partly...I know my lips are..lol...I'm cracking myself up)

Fruit and cheese. Cucumber slices, mini cherry tomatoes and toast. Darn, no croissant! Ice cream sandwich.
