A slice of homemade Keto Lemon Pound Cake
Had planned on having chicken but lost my appetite for a meal while making the cake.

I used a hand mixer instead of a processor. It came out pretty good. Overdone on the sides and bottom. Next time I’ll double up on the parchment paper. Texture was almost perfect and way better than expected. I used monk fruit for sweetener and it’s the best I’ve tried so far.
It helps that I haven’t had real pound cake in ages.

I am not a big fan of lemon, in fact I always cringe when the Pioneer Woman and Barefoot Contesa use it so very often, but this lemon pound cake, I'd try that in a heartbeat!

I'm nuts about lemons. This recipe called for water in the icing but I used lemon juice and it was perfect for me. Nice and tangy.
This was easy-peasy to make. I haven't made more than one or two cakes from scratch in over 20 years (thank you, Betty Crocker), but gave it try with this one and am glad I did.
It may not be as good to people who are accustomed to gluten and sugar, but I can't get over how it good it is to me.
Will definitely make this one again.
Tonight will have burger on low-carb tortilla with lots of fixings and cake for dessert.

A little while ago, I saw this miniature popcorn tub at a store. I pondered it over and decided to go ahead and pick it up. It was less than $2 and I eat popcorn regularly, so why not I thought. Well, my big bags won't fit in it natch but the smaller 100 calories bags are a PERFECT size. They fill it up exactly to the top.
So, my dinner tonight has been a 100 calorie bag of butter flavored popcorn, 2 Halos, 1 small apple and I'm contemplating the banana. If I opt for it, I'll add the tiniest smidge of reduced fat peanut butter to it to help slow the sugar absorption. Water to drink.
Dinner was light because of calorie laden breakfast and a big lunch as well.

This looks absolutely delish. I had to go on their site and see if anyone sells them near me and there's a Target 6 miles away that does so I will be trying this.
Last night, I got out of work 3 hours late due to a security issue, so it was popcorn and a sliced cuke dipped in buttermilk cracked peppercorn dressing. Very very light dinner.

It's more of a linner or a dunch because I never officially ate lunch today but I'm eating Caesar salad with part of a naan round (it got cold and hard before I finished it so that was that), 5 tomatoes (https://www.natureandmore.com/en/products/wild-wonder-tomatoes) and water to drink. I suspect I'll get a bit noshy before bed so I'll have either a Halo or an apple.

Last night I made an interesting medley of plant-based 'rice', with plant-based meatless 'meat-balls', and tossed in a bunch of freshly chopped celery, sweet onion and sweet bell pepper (red, yellow and orange mini peppers chopped up) and after it was almost ready for dinner, I added Chao Field Roast 'cheese' slices, to make it creamy and very tasty.
I have a couple of servings left over from last night, so I will have it again for dinner tonight.
I may, however, go on a baking spree later today. I want to make some cookies. Probably oatmeal-raisin-walnut cookies. Lots of cinnamon, too.

Stuffed bell peppers. I got a really good deal – red, yellow and orange were selling for less than the price of green. So I'm skipping green and using some of the red tonight. Don't really need much else with this standalone dish but I'll probably have some seedless watermelon for dessert. Maybe a glass of warm milk or cup of hot tea afterwards depending how full I feel.

With the roasted yams I make something that to me is reminiscent of pumpkin pie*, mash the yam add appropriate cinnomon, ground cloves, etc and chopped walnuts on top for texture with a bit of butter for richness.
*Given that I haven't had actual pumpkin pie in about a decade, it works for me..

Dinner was a taco using Jackfruit as a meat substitute. It didn't have much flavor on it's own but it was fine with all the fixins. I had an Ortega flour tortilla with sour cream, shredded cheese, a sliced yellow tomato, dots of black bean and jalapeno hummus, shredded lettuce, a few dots of a chipotle sauce and, of course, the Tex-Mex jackfruit. I rolled it up and dipped it into a little puddle of Taco Bell Mild taco sauce. No sugar in it! I had a Halo for dessert and water to drink.

I had nearly the same dinner as last night only this time I also had a Greek flatbread too. So, here's my thoughts on the dill pickle salad...the salad part is fine...regular bagged salad....but the dressing contains tiny pieces of dill pickle in it so it reminded me, texture-wise, of a thin tartar sauce. The taste was okay though. Not in your face but there like a mild relish ranch flavor. It comes with a bag of brioche croutons, which is where the added sugar in it comes from.
I try to keep my added sugars as close to zero as possible but I really wanted to try this salad so it got it. To cut down on the sugar, I just didn't use all of the bagged croutons.
As a side note, even if you use a strong mouthwash and drink lots of water, you might still be tasting the dressing later.

Last night, I got home and ate very late....about an hour before my usual bedtime...so I had about a quarter bag of the avocado ranch salad with one grilled chicken strip torn up and thrown in the bowl. Water to drink.
Tonight, I had the remaining quarter bag of the avocado ranch salad with maybe 3 torn up grilled chicken strips, one Honeycrisp apple and water to drink.

a cup of hot herbal tea by Tazo Passion: it's a blend of hibiscus and passion flower herbs, maybe a titch of chamomile too. It is delicious. And, two blueberry gummi drops.
I had a big lunch earlier today, Popeye's classic chicken sandwich.

Chicken satay. I don't know if it's always cooked on skewers but this is. I've never cooked anything on a skewer before, not that I can remember anyway. So I keep putting off dinner as the thought of making it has me feeling more than just a little bit intimidated. Anyhow I don't know what else with it because it seems it's served along with rice and J's nagging at me to stay low carb. Maybe fake cauliflower rice but to me that tastes like something even people in prison probably aren't served. I worked with people on parole, some even still in prison once and the meals. You know it's perfectly legal to serve people in prison bologna that's starting to turn green? Then they wonder why people try and escape. I 'd have to apologize profusely and really suck up to my kids so they'd put money on my books and I could live off canteen.

An eccentric meal - a friend hosted a small Alice In Wonderland themed late tea:
- Lemonade with purple ice balls that turned the lemonade pink as they melted, with garnish of mint leaves and edible glitter
- Eggs Benedict
- Assorted macaroons - coconut/saffron, rose water, and lavender
- Pralines
- Jello with blueberries and dried cherries soaked in brandy
It was very psychedelic.
Pork chops, sweet potatoes, and yellow squash. Mom's favorite.

I splurged. Since school started, I have been doing fast food crap. Tonight I made steaks and jumbo shrimp. It was a very good choice and a nice step away from the fast food joints.
I also found a new website for interesting new recipes. I am looking forward to making something from there.

Aside from a few wayward crumbs, eating a macaron should be clean. Filling shouldn't squish out of the cookie nor should it leave much residue on your teeth. ... The cookie's texture beneath the crust should be light, just a little chewy, and soft, but not so soft that it's mushy. It's okay if the cookie looks "uncooked."
If your macarons don't have feet, it could be because your batter is too wet. Make sure you're using aged egg whites and avoid adding liquid flavoring and coloring. Most likely the reason for underdeveloped feet is because your macarons did not develop a skin before baking."

Ok moe an easy one for you , you will love. I chose fettuccine as my pasta, one bottle of alfredo sauce, chopped steamed broccoli and one ring of thawed cooked shrimp. NOW you will love it and it will take you no time at all. Just boil the pasta, dump the water, heat the sauce, steam broccoli and throw the thawed shrimp in the fry pan for one minute to heat up and add. You can shake on some parm. cheese if you feel the need plus some salt and pepper.

Leftovers - Meatballs in brown gravy over mashed potatoes. Green beans as a side, water and black tea to drink. Last serving of canned peaches for dessert. It's alright but a bit of a let down. My oldest and I had planned to do some sales shopping, then going out to dinner afterwards but that was canceled so now it's all about my own cooking. Which though it turned out well and tastes pretty good today especially for left overs, still by comparison – ick!

I had a veggie burger with avocado oil mayo, pickles and smeared yolk (blends with the mayo and makes a super creamy and smooth "sauce") on an Artesano bun. I also had the egg white, since it was a hardboiled egg, salt and peppered, and an apple plus a banana with a small schmear of reduced fat peanut butter for dessert and water to drink.

I pan seared some alternative vegan meatless veggie tenders in evoo. Then I drizzled a touch of sesame teriyaki sauce on them. Hot herbal tea to drink (Tazo's Orange Spice). Water too.

It is excellent. I suggest trying it in a cup of hot orange pekoe tea with a slice of orange, if you have never had it this way.

A steamy bowl of vegan barley soup! My honey made me a pot full of it Sunday before I took her back to her place. She keeps a baggy of "soup bones" in the freezer...ends off zucchinis, parsnips, green onions, carrots, leafy greens we chop up for this, sun dried tomatoes, beef bone broth, onions, potatoes.....and it was so good!!
PS...I have a ton of vegan dishes since we began dating back in July & have lost 20 lbs. I need to lose 34 more so my surgeon will finish my hernia repair. Today I am wearing an XL long sleeved shirt and 2xl sweatpants...I used to wear 3xl or 4xl shirts...:) and 4 xl sweats. I am so proud of myself. No longer do I eat out, have left off sodas, breads, & carbs, and sweets!!! We cook every meal here or there....we did have take out Sushi & salad a few weeks back....:)

It was a chili night. Lots of onions, celery, cilantro, yellow pepper, garlic..not much ground beef and about a half a cup of black beans. Topped off my bowl with sour cream and cheese.
Found a recipe for corn casserole. I'm not a fan of corn bread but this called for a box of jiffy cornbread mix. And you know it called for creamed corn, which I could not find. Imagine that?! I made my own, regular sweet crisp corn with a splash of heavy cream in my bullet thingy.

I had to look this up. I didn't know if it was a special type of recipe or whatnot. Basically, it's Canadian version of Campbell's soup.
Come to think of it...split pea soup does sound good right about now. Well, not NOW but maybe tomorrow. It'll still be a wee bit chilly then too. I like mine with bits of smoky bacon or ham in it.

I did my own ingredient lottery myself tonight. I wound up with whole grain rice, steamed edamame, sautéed mixed peppers, a sliced up spicy chicken patty, diced cashews and a wee bit of Healthy Choice Power Dressing Creamy Italian just for something to hold it all together.
I think the Greener Goddess dressing would have been a better choice but the Italian wasn't disgusting, so there's that. I can't have any of the Asian flavored dressings and sauces I used to because of their sugar content and also because I haven't found a replacement flavor for them yet. Two small apples for dessert and water to drink.

It wasn't horrible. I had another version of the same thing tonight except I forgot about the edamame but I did use the Greener Goddess dressing and it was better suited for those flavors. I had some whole grain rice with a hardboiled egg diced up and then the sautéed mixed peppers on top with a dollop of the dressing and I mixed it all up. Not too shabby. Better than last night for sure.
Two small apples for dessert with 5 nuts from my mixed nut container and water to drink.

Tonight, I just kept noshing. I couldn't figure it out until I remembered that I used some sweet & sour sauce for my chicken. Not a lot, but sugar drives the appetite up and so before it was all said and done, I'd eaten: a spicy chicken patty, some steamed edamame, sauced steamed veggies, 2 applies, 1 Halo and a bunch of nuts. Like two handfuls before it was over. It was my handful sized, which is smaller than most, but still far more than I usually eat. It was an experiment and I failed. The nuts were damn good, though. They went perfectly with the Halo. Water to drink.
Last night, my honey made mock alfredo with angel hair pasta, shitakes, and diced tomatoes, with thinly sliced green onions on top. This is made with raw cashews, soaked in boiling water, then blended til creamy with addition of S&P, fresh, diced garlic cloves, & "nutch" (nutritional yeast) blended til creamy, then poured over cooked pasta, topped with G.O. OH Em GEE!
She also made, for today, mexican salad of eggplant, red beets, zucchini, & mixed up with a made dressing, and walnuts. That is also to die for! MOUTHGASMS. I have enough of both for the next few days!

Chicken Cordon Blue sandwich, side of coleslaw, while enjoying the beautiful harbor. The sun setting along with the early fog haze rolling in. May or may not of had one, two or three Michelob Ultras.
I took most of it home in a to go box.

My new favorite butcher had a deal I couldn't pass up. This deal has 5 different meals..divide that...I'll be set!
Tonight..pulled pork. Divided..a meal tonight with left overs. The other half, another night.
Coleslaw with raisins and some cut up marshmallows. I was missing the pineapple chunks.

Something J made. She told me but I can't remember what. I opened the lid but only to smell it. I was afraid to investigate any further for fear if I did I'd devour it and be too full for my lunch sitting on the counter growing cold. I just know whatever it is, it's some type of homemade dish with some sort of small red beans in it, but it isn't any type of Spanish American or Mexican American dish I've ever had before. It smells delicious. Along with it she sent some homemade French bread because I liked what she made for my birthday so much. Unbelievably as good as it was last time this batch turned out even better! My son better never divorce her.

Made a keto Tuscan sausage soup last night in the Instant Pot for the first time. Didn’t come out good because I added too many sun dried tomato strips. Will try to salvage it for tonight by adding chicken broth.
Well, that didn’t work. I ended up with thick-cut bacon, scrambled eggs with scallions, half a grilled Roma tomato and it hit the spot.

I'm making a fresh vegetable soup for Rico and I, tonight.
Organic vegetable broth, with chopped organic green cabbage, corn niblets, cauliflower and broccoli buds, chopped organic celery and organic red onion, with fresh tarragon leaves and fresh rosemary, with a fresh leaf of basil on top of the soup once I place it in our soup bowls.
Cranberry-Date seeded crackers with a spread-dip made of Jalapeno and Artichokes.
For a dessert, later on, I picked up freshly baked Cranberry-Orange muffins. We will probably split one between the two of us.
Water to drink and herbal tea with dessert.
