I've had a roast in the crock-pot all day. It might be shoe-leather but the potatoes and carrots and onions will surely be edible :eating:

Roast tip #1 it is very hard to over cook. 7 hours make a fall apart roast no matter what the type of meat. 325 degrees is usually perfect.

tonight i am making a delicious black bean pizza with blackened grilled tofu and fresh cilantro. Topping with some cheddar chz veggie sprinkle stuff (that will be interesting) and small pieces of navel orange and grilled onions and mushrooms!!

it melts beautifully ! do you know that Galaxy Cheese - who make the cheese shreds i purchase all of the time, are located in orlando? don't knock it til you've tried it ;) :simplelaugh: i like the pepper jack blend. cilantro is an excellent pizza topping too! if you make your own corn tortillas from scratch, subsituting vegan cheese just might fool your guests ;)

Spaghetti! I took the sauce I made last month out of the freezer last night. It's cold and rainy here, so I think it will be perfect.

Tonight I took pork chops and sprinkled cumin and garlic powder on them and set them on aluminum foil in a glass pan then added a can of Rotel, diced tomatoes with green chilies and a can of tomato sauce, sealed the foil and baked for 50 minutes. I wasn't sure how it would come out, so the results surprised me. Quite tasty, really. Opened a can of lowfat refried black beans and corn to make it a complete meal.

Baked chicken strips marinated in garlic/herb buffalo seasoning, wheat mac and cheese, and home sauteed mushrooms. For dessert we'll have blackberry short cake (it's like strawberry but with blackberries, you get the picture) since we're flooded and I gotz no cake. :(

Hearts of romaine
chick peas
black olives
quartered artichoke hearts
sweet grape tomatoes
sprinkled with feta cheese
and
then drizzled with a vinagrette.

Home made sangria and for desert chocolate ice cream or flan
Here is the recipe for the sauce, super easy and oh so yummy
* 6 Poblano chiles roasted and peeled
* 1.5 pounds of tomatillos husks removed, rinsed, and chopped
* 1 medium onion chopped
* 3 Serrano chiles seeded and chopped
* 1 teaspoon oregano
* 1 teaspoon apple cider vinegar
* 2 teaspoons sugar
* Salt to taste
Pulse it together in the food processor or if you are me grind it together with a mortar and pestle until smooth then pour into a heavy skillet (I use cast iron) and simmer on low for about a half hour.

The sauce is on the stove, the filling is resting so as to blend the flavors more completely and the ravioli dough is chilling

A small green salad and it was *supposed* to be black bean soup, but I'd never used the mix before and it turned out like brown cement.
Ick.
Soooo, the pots came out and the pasta went on the stove.
In the end, I had that salad plus a small burger patty with sauteed peppers of all kinds, colors and levels of hotness on a bed of whole wheat pasta. Sprinkle with reduced fat authentic Mexican cheese and the world is better again.

Well, the final vote came in and this is what I ate for dunch (lunch/dinner):
2.5 cups of romaine hearts chopped
2 TBS of non-fat mozzarella cheese
1 TBS of chopped walnuts
2 TBS of pear vinaigrette dressing
with
6 oz of shrimp cocktail
2 TBS of cocktail sauce
and, for dessert
a small handful of Mountain Trail Mix

Instead, I believe I will make a wonderful salad with chick peas, artichoke hearts, olives, feta and possibly a bit of grilled chicken (drizzled with a vinagrette).

let me tell you about the rainbow swiss chard!

people don't apparently know what to do with chard, so let me tell you: first you wash it well, remove the stems (take a knife and just slide it down the stem, the leaves peel right off and it makes you look all chef-like), set the leaves aside, dice, saute only the stems in a tbl of olive oil and a pinch of sea salt, when they start to turn, add the leaves that you've sliced/or ripped apart into 3 or so inch pieces. stir, add another pinch of salt, turn down the heat, cover and enjoy in 5 minutes. (i turn off the heat and let it wilt for 10 minutes but i like my vegetables on the brink of steamed and raw, personal preference.)
another variation is to skip the olive oil and use a couple of strips of diced bacon in the bottom of the pot, saute the diced stems in the bacon fat, and same as above--add the leaves after, since they cook so fast. --and what isn't good in bacon fat?
i just personally feel bad eating pork because pigs know their names, and are very dog-like.
*also, a dash of red/wine vinegar really brings out the flavor in the chard, once it's plated--my parents would make the bacon-variety chard but i didn't develop a taste for the vinegar until much later; i say use sparingly.
and low-fat buttermilk mashed potatoes. (never use black pepper on mashed potatoes, it's white, only. trust. and i was lazy or i would have added some fresh oven-roasted garlic.)
--> i cooked because 1. i can but pretend that i don't know how, and 2. we're going to the vegetable co-op tomorrow and the fridge needs to be organized <3

i am starrrrrrving and ez's cooking a bird over coals (and other things that i'm unaware of cuz i was having my beauty sleep all afternoon!).
I'm feeling really good about the way dinner turned out. We went to the food co-op this morning and we never really know what veggies we are going to be given when we buy the pack online.
Asian style bbq chicken-I started with a rub on the bird and then made a nice tangy yet sweet sauce to put on the bird after it came off the coals.
home style sweet potatoes with house spices-we got the sweet potatoes at the co-op. I sliced them up and put a little oil in my big cast iron pan threw some seasonings on them and then in the oven for about 30mins.
brushetta-the best! I made it with fresh tomatoes, lots of basil, garlic, salt, pepper, olive oil. Toasted some thick sliced bread, then rubbed the bread with a raw clove of garlic, sliced a piece of fresh mozza on it and then toasted it lightly again. The brushetta came out soooo good.
fresh corn on the cob-pulled away the silk, left the husk on, let them soak in a sink of water for an hour or so, then used 'I can't believe it's not butter', some smoked paprika and threw those babies back on the grill.
It was really nice to sit down at the table together since I'm at work during dinner M-F.
Cup of non fat Raspberry yogurt with a heaping tsp of granola in it. I love this stuff :)

Last night I had a lovely salad with romaine hearts, fat free mozz, chopped walnuts and pear vinaigrette. It's a fave of mine!
I also had a small helping of whole wheat rotini with mixed peppers and a sprinkle of authentic Mexican cheese on top. :tease:

My wonderful friends invited me and the boy over for a last minute cook out. They grilled fish for fish tacos, made homemade white sauce, platanos fritos, pico de gallo, and mojitos. Then we roasted marshmallows at the bonfire and made smores.

Supper plans were challenging today: It was nearly done about an hour ago, so I could put it in the oven on warm to hold for later --- then the glass pan busted into a million cajillion pieces and I had start all over.
Same version, almost done.
chicken + veggie medley (thinly sliced broccoli crowns & parsnips & baby red potatos + mild seasoning (curry powder and a speck of ginger root- grated) with a mild toasted sesame-peanut sauce. It's almost the same thing I made last night except last night I used steamed Jazmine rice.
