I iz making pork roast. Cross your fingers, ya'll.
Ummmm......mashed potatoes...probably instant since my back still hurts like a bitch.
I will attempt to remember the veggies this time.
And I won the fight with the bread maker. This time.

Last night I had free bbque! Because they had a cook out for everyone at work,in honor of an award we received. Tonight I'm having boneless turkey breasts , gravy, corn and black eyed peas if I'm really motivated maybe a salad .

I took leftover meatloaf I made 2 nights ago along with a couple biscuits and crumbled it all on a plate
I then made a peppered white gravy and poured it over the top of it all
Dinner is served and leftovers were reinvented

We made something I am calling polagna!
As some of you know, I love to cook, and I often make quite complicated dishes from scratch, but
I use a lot of prepared foods too.
I was at Trader Joe's last week, and
I bought canned tomato sauce, premade polenta in a tube, and frozen eggplant breaded cutlets.
When I was at the supermaket, I bought shredded mozzarella cheese.
I preheated the oven to 375, and
We layered sauce, very thinly sliced polenta, eggplant cutlets, and shredded mozzarella, and
The last layer was cheese, and I added some parmigiana that I had in the freezer.
We covered the polagna with foil, and we baked it for about an hour, and
We cooked it uncovered for 10 - 15 minutes.
It was pretty freaking delicious, as Pete would say.
I might add a layer of sauteed mushrooms next time.

I'm having friends over...
So... gluten-free mac and cheese!
1 pack GF cheese sauce
3/4c milk
2tbsp butter, melted
1c grated cheddar cheese
1/2c grated parmesan
1/2 bag of rice macaroni
2 tomatoes, sliced
1c bread crumbs
Salt and pepper
Boil pasta, drain without rinsing. Pour milk and butter into pot with noodles, set back on the stove on medium. Add the cheese sauce mix, then add the grated cheddar and parmesan while stirring to make the sauce. Pour into 9x13 pan, lay sliced tomatoes on top. Bake in a 375F oven for 20 minutes. Sprinkle on bread crumbs and bake until golden. Serve with beer!

This morning I’ve made a selection for people to choose from; Italian Sun-dried Tomato, Olive and Char-grilled Artichoke pasties; Vegan Cheese and Onion pasties; Veggie mince and Onion pasties and Kumara and Veggie pasties.
Serving with; Potato and Leek Au Gratin and a Parsnip, Leek and vegan Blue Cheese Au Gratin, sautéed Carrots and Green Beans lightly dressed with a Balsamic Vinegar Dressing.
Dessert is; a homemade Lavender Ice Cream with homemade Dark Chocolate Ginger pieces.

My Dad grilled a humungous pork chop and it was so succulent and delicious. Mixed greens with a beautiful deep red tomato and Ranch. Carrots, cranberry sauce, apple sauce, baked sweet potato and baked Idaho with butter on everything. And a fresh lime off the tree for my cranberry juice. I don't know how they eat like this all the time. I'm going to have to buy bigger pants to fly home in. But man, it was tasty.

I love a thick onion gravy; I use a mix of red and white Onions with a little Balsamic vinegar. How do you make yours?
Edited to add: I love an Onion gravy over Brown Rice with sauteed Peppers, Cabbage and Chick Peas. One of my three comfort foods and two of them have Brown Rice, lol!

Stir fried vegetables (asparagus, broccoli, cauliflower, onion, carrots, raisins & mushrooms)
It turned out so Yummy!

I sliced and diced a russet and sweet potato, added a little EVO, mixed it all up and roasted in a pan'
Then I seasoned a couple chicken leg quarters and baked them.
I did share some chicken with my rescues, but not all of them wanted it...thank goodness or I'd of only had the potatoes for me :|

My dinner was the Burnin' Love Burger at Red Robin, wrapped in lettuce instead of a bun and with extra jalapeno coins. YUMMMM!! I loves me some spice! :) :)
Didn't really feel like eating dinner tonight, so I just cooked up some bacon and dipped it in maple syrup. I had a craving :|

It tastes like chicken cordon bleu. Its a casserole of diced chicken breast and ham with penne pasta and peas in a swiss cheese sauce. It's cooked in the oven with some bread crumbs on top. You can substitue swiss for mozzarella if you want and add any other veggies like broccoli, mushrooms, green onions..

2c old cheddar
1/2c grated parmesan
Splash of milk
1/4c butter, melted
Salt and pepper
Frank's Red Hot sauce (I put that sh*t on everything)
Boil macaroni. Drain without rinsing (the sticky rice-starch is important). Add the butter and splash of milk to the pot and set back on the stove on low to medium heat. Add the cheese in small amount and stir continually. Add to a casserole dish and sprinkle bread crumbs and extra cheese overtop. Bake for 20 minutes then grill until the top is golden.
The only appropriate way to eat this is to eat like a complete hog and make little moues of appreciation throughout.

I made some rice and I got this idea. I have this new tabasco sauce , it's buffalo wing flavored. So I took some low fat blue cheese and sprinkled it on the rice and put that tabasco sauce on it. It's really really good!!!!!!!!!!

For dessert, I made Peach Cheesecake Enchiladas.
Friends left REALLY full, and now I have lots of leftovers to eat this weekend and still have some to stick in the freezer! I so love to entertain!

I decided to fry the shrimp tonight, I usually make it scampi. Did an egg-white wash then breaded it in a mix of flour, bread crumbs, cavenders, and cajun seasoning. OMG they turned out GREAT.
Also had mac and cheese, asparagus steamed in foil with a whole stick of butter, and fresh made cole slaw.

And Cavender's is a greek seasoning. It's in one of those shakers similar to Tony Chachere's. I really like it on chicken, and just thought I would try it on the shrimp tonight. I don't know how to describe its flavor other than what it's not- not salty, peppery, garlicy, or oniony. It's just a subtle add on. Helpful huh? LOL

My pleasure. I miss our vacations to the gulf and the fresh shrimp. YUMMMMM Another way we use the cavendars is we take chicken thigh/leg quarters with the skin on. Pull the skin back and shake ALOT of the cavendars on it and then pull the skin back over it. Bake. You can choose to eat or leave the skin, but it has allowed the cavendars to nicely season the chicken. I've tried it on white meat, but it just turns out better on the dark meet IMHO.
