I pan fried a thin steak that had marinaded in a soy ginger sauce all day and had a bag of steamer veggies....cauliflower, broccoli, carrots and corkscrew pasta. Normally, I only eat half the bag but I guess I was hungry tonight cuz I ate the whooooooole thing.

Cut one of the frozen bricks of camp stew out of the suction food saver bag and nuked it. Becky, my friend at work (the fantastic cook ) gave me numerous frozen meals for my birthday. I only have one camp stew left and I will try to save it as long as I can. It is months before Christmas gets here.

Made some paleo tortillas today--
and fresh green chile tomatillo verde.

For dinner-- pork chunks marinated (cooked) in verde, with pan fried sweet potato chunks with cumin, oregano, cilantro tacos.

I'm super excited and cannot wait til the wifey gets home so we can eat--- YUM.

I made a steak pita with a whole wheat pita, steak, pepperjack cheese and a tiny bit of steak sauce. I paired that with a Greek pasta salad and a big spoonful of heath salad. Now, I'm savoring my blue Tootsie Pop.

She prepared a nice salad with romaine lettuce, all sorts of of raw veggies and greek olives. We had cheese sticks and french baguette bread. Dipped the bread in a herb and oil mixture and there was Bertolli tomato and basil sauce for dipping too. I love that flavor of Bertolli. It has chunky pieces of tomato in it. (Not certain if I am spelling that sauce correctly.)

I had blinner today with my mom....(yes one meal over the course of a nearly 12 hour cleaning jag)
We went to a favorite restaurant

My mom had the meatloaf...I had a dish that I couldn't pronounce and can't remember how to spell...but it was seasoned chicken pieces sautéed with garlic, onion, tomatoes (fresh and sun-dried) and broccoli (and my mom lent me her not much loved mushrooms!) in a wine sauce, served over linguine. It had a delicate lemony flavor...very nummy :)

Mom got strawberry cheesecake for dessert and I got a brownie big enough to share with a small country...not yet touched...yep...will power of STEEL <flex>

Since the kiddo and resident food critic is off visiting her other parent for the weekend, I cooked the following non-kid approved meal;

Last night;

Halibut with an Italian bread crumb, light seasoning and mozzarella crust.

Fresh spinach sauteed in a touch of olive oil and large slices of garlic.

Noodles in a light sesame sauce with a bit of red bell pepper.

Tonight;

Steaks on the grill

Corn on the cob

Baked potato


I have a fruit tart with a yummy custard base and fresh blackberries, raspberries and strawberries for dessert.

Ahhhh, an Ode to Summer!

cinnamongrrrls crock pot pineapple chicken.

1c honey
1/2c soy sauce
1/2tsp each salt and pepper
1 clove garlic, minced
1c pineapple bits

place 1 kg chicken in the crock... pour sauce over. cook till done, 2 hours on high, one on low... (as I had fresh chicken)

it smells amazin'!

I had turkey bacon with a big ole salad and a smidge of Greek pasta salad. I broke up some of the bacon and crumbled it into the pasta salad. It's going to be soooo yummy tomorrow with the feta and the pasta and the bacon. Like Heaven on my tongue.

We had a gorgeous roasted chicken filled with garlic, onion, lemon, a little red pepper, thyme, rosemary, black pepper and sage. I slit the chicken skin and made a pocket between the breast and skin and rubbed in sage, rosemary, and dressed the pocket with more garlic and lemon slices. Juney made one last year for us filled full of wonderful things and it has really reignited my love for roasted chicken. (my "foodie" is showing here!! LOL)

I did some mashed potatoes on the side and a gravy of roasted chicken pan drippings, corn starch, white wine, and a tiny splash of cream.

Such an easy dinner and the leftovers are amazing too.

Left over BBQ brisket, chopped on top of sourdough bread. I added a piece of provolone cheese and zapped in the micro for a few seconds. The best sandwich for a Monday night!

Chicken, diced tomatoes with jalapenos, chicken Andouille sausage (very spicy!) rice, peppers and okra...

It came out wicked good. I'm going to freeze the copious leftovers... :blink:

We shared steak marsala & manicotti and both had ceaser salads. Oh and two pitchers of blackberry sangria :)

we had a late lunch at TGIF..had the sizzling chicken and shrimp..with mojitos.

since we had the spinach florentine flat bread and white cheese quesos for starters...we didnt finish lunch. So, left overs it is for our dinner...and the kids will have the chinese left overs in the fridge.

we're continuing with our mojitos at home and relaxing :)

the low carb meatloaf was pretty good (different in texture because there was no breadcrumbs..more dense) and I ended up serving it with a tomato, mozzarella and basil salad.

Freeze Fresh Herbs In Olive Oil to use when not in season and it’s a great way to have herbs ready immediately for winter stews, roasts, soups, and potato dishes! I LOVE THIS!

8 Steps for Freezing Herbs in Oil
1. Choose firm, fresh herbs, ideally from the market or your own garden.
2. If you wish, you can chop them fine. Or leave them in larger sprigs and leaves. Here I froze a combination of finely-chopped and whole herbs such as rosemary, fennel stalk, sage, and oregano.
3. Pack the wells of ice cube trays about 2/3 full of herbs.
4. You can mix up the herbs, too; think about freezing a bouquet garni of sage, thyme, and rosemary to add to winter roast chickens and potatoes!
5. Pour extra-virgin olive oil or melted, unsalted butter over the herbs.
6. Cover lightly with plastic wrap and freeze overnight.
7. Remove the frozen cubes and store in freezer containers or small bags.
8. Don't forget to label each container or bag with the type of herb (and oil) inside!
• Preserving herbs in oil reduces some of the browning and freezer burn that herbs can get in the freezer.

It should be ready in about 15 minutes......and I am putting bread with margarine with a sprinkle of garlic powder in the oven and also make a simple salad. Just wish SS (f) was here eating with us.......

When I was young, my mom used to make this dish called lazy man's lasagna... so good, super fast, pretty cheap to make & makes plenty for leftovers. I haven't had it in years, but suddenly I'm craving it. Must make grocery list!!

small block of mozzarella cheese
lasagna noodles
and spaghetti sauce of your choice

Boil the noodles, drain & set aside.
Take the sausage cut into 3" pieces. Cut a slit in the top of each piece.
Slice the cheese and place a chunk in the sausage.
Take the sausage/cheese and roll up in the cooked lasagna noodle
Place in a baking dish. Repeat process with all the pieces.
Pour the spaghetti sauce all over the top and add a lil' more mozzarella cheese and bake until golden brown.

You go to the hot deli at the grocery store and load up the container. Lol! Seriously! I wondered too about making my own, since they are Paleo.

The recipe I found said:

Preheat oven to 400 degrees. Place parchment paper down onto baking sheet and place wings/drums in single layer. Bake 50-60 minutes until crispy. In a separate bowl mix 4 TBSP of white vinegar and 2 tsp of sea salt together, this is for approx. 20 wings. Once wings/drums are crisp, toss in vinegar mixture. I will likely start with half the salt because I do not like to eat a lot of it.

I'll try them soon, because these were awesome! As in so awesome, they are good without the bleu cheese even.

I was lazy today so we had sloppy jo's with baked seasoned fries,I treated myself to a near frozen diet coke.
