Eggplant and goats cheese lasagna made with left over meatloaf
Baked cauliflower
Tossed salad with cucumber, yellow tomatoes, and avocado
So... this lasagna got prepped and never cooked... dinner ran late... this meal got bumped to TODAY!!!
AND... the boy made the salad...

pork tenderloin pan fried with sliced onions and fennel sautéed in beet juice with lemon and lime zest and lemon and lime juice with grated garlic. Simple yet really yummy

Tonight we had rib eye steaks with real mashed taters with mushroom gravy.For desert I had made indevidual hot fudge cakes topped wit roasted pecans plus a bit of real whip cream if anyone wanted some.

Went out for dinner to a vegan gourmet restaurant, had:
drink: cranberry lemonade slushy (to die for, so sweet, bitter, and sour)
appetizer: avocado tartare (with jicama and jalepeno dressing)
main dish: Indian curry vegetable cake with sauteed greens, pureed celeriac, and caramelized onions
dessert: carrot cake
So yum!!!

we ended up getting a seat at a bbq joint at Mohegan Sun.....got the wicked barbecuey fish n chips cuz the waitress said it was quick (it was). Got hush puppies with a maple butter to start...not bad...not the best I ever had either though....the fish was ok...they use cod I prefer haddock. The tartar sauce was exceptional...tasted like it had a hint of horseradish....and there was some sort of herb...couldnt place it. But altogether nummy...:)

for myself.....Im going to have the same thing I had last night; some nummy Puerto Rican food I got yesterday. I only ever get take out...but gosh they load you up. I have enough to last 3 days! I got pork....2 kinds of rice...one with beans one with little sausages...and some yucca....its so so GOOD...

I ate 2 foot long veggie and cheese subs today from subway.
Still feel full. Had the woman put double jalapeño peppers on both of them. Will be crying on the can in the morning wishing I had thought to bring a tray of ice cubes to the bathroom with me to soothe my flaming butthole.
What's even worse, I'll do it to myself again and again in the future. It is an evil cycle. Powerless over jalapeño peppers. I love them!

I'll grill 2 more steaks tonight (seasoned with salt/pepper/garlic powder). served with more cilantro/orange/green onion yumminess.
Romaine salad with roasted chicken and ranch dressing. That sounds dull :(

I was so hungry. It was dark before I got all my tools in and wood bones cleaned up.
I ate a Healthy Choice Dinner - Sweet and Sour Chicken with some veggies mixed in. I think I goofed up ... believe I eat the Lean Cusine brand of Sweet and Sour Chicken. I managed to wash it down with couple glasses milk but it was pure awful. I will be careful - not buy that brand of SSC again. :(

My brother's girlfriend, who is pregnant, chose beef enchiladas and "something with fruit". This means grenade is cooking. :/
so...
Beef Enchiladas (beef, green chiles, onion, sharp cheddar,corn tortilla, topped with cilantro and green onion)
Zucchini, stewed tomatoes and roasted corn
Rice with garlic, cumin, chili powder, tomato sauce, diced tomatoes, chicken broth, cilantro and maybe black beans. I can't commit just yet.
Dessert will be mini fruit pizza.
There will be extra food if someone wants to come do dishes. I dislike doing dishes.
The only difference is the wine I use and I add bay leaves and cinnamon. (I have time to make this a great Sunday meal without getting shot.) I'm having Fat Clemenza's gravy over pasta and a salad.

I fired up the trusty ol wok....added olive oil and some cut up taters...added a green and a red pepper....chunked up some fresh mushrooms...added this yogurt onion Indian style sauce I found in the store....its simmering on the stove right now...smelling delightful..... :)
I baked chicken on the side....but truly the potato mix would suffice...Im prolly gonna toss the chicken in with the rest since theres plenty of sauce....

Tonight I made a homemade fried rice.
Cooked up a bunch of white rice yesterday and stuck it in the fridge.
Tonight I threw a couple of pieces of bacon in the wok with some grapeseed oil. Cracked in a couple of eggs. Added some chopped onion, broccoli, peas and carrots, garlic, ginger, black pepper, and 2 soy sauces and stir-fried the hell out of it.
It came out fucking DELICIOUS and we have leftovers for days!

Not sure yet-- maybe leftovers. Either stir fry that my wife made (chicken, water chestnuts, bamboo shoots, broccoli, snap peas, ginger, garlic) or tequilla chicken that was grilled and guacamole. Either sound good.. so we'll see.
Classic Saint & Sinner dinner (my own recipe and grill borrowed from the old Cork 'n Cleaver), baked potato and salad. I coat the steak with a marinade of peppercorns and Jack Daniels. New York Strip medium rare and plated up with a lobster tail (available from our Farmer's Market) and drawn butter.

Last night I took the easy way out for dinner,we had pancakes with butter and warm maple syrup and just for the heck of it we split a ham steak.Not bad at all.
Meatless spaghetti with lotsa garlic. I'm not that great of a cook but I DO like to cook :)

I had a yummy late lunch... ( garlic shrimp and won ton soup) so I wasnt terribly hungry when I got home....but I had leftovers that I want to bring to work tomorrow and its very saucy...so I made some white rice to mix in. So I had a bowl of white rice with butter and salt and pepper....lol simple and pleasing....and zero nutritional value....
it coulda been worse....I couldve had ice cream... ;)

I had a few items in the freezer/fridge that needed cooking so they didn't go bad. So I tossed some ground chicken, and ground pork in a large skillet, seasoned it with some Tony's and some cracked black pepper and let that cook will I sliced up crookneck squash and zucchini. I also had two baked sweet potatoes that I cut into chunks. Once the meat was done, I added the veggies and sweet potatoes, a few dashes of Mexican oregano, and the last of my mojo sauce, (time to make more) and let it all simmer for 30 minutes or so.
This dish is da bomb! I am happy it turned out well because I will be eating it for the next 3 or 4 days. Lol! :eating:

Family Dinner Day with Pops, Pappy, and my Lamb. We usually do it on a Saturday or Sunday.
Today it will be a roasted turkey (that is making the house smell amazing), mashed potatoes, gravy, cole slaw, green beans (cooked down to a bacon-y goodness), and cheddar garlic biscuits.
It's heavy on the carbs but they like it that way!

I made turkey tacos with all the fixins, had some for lunch and gonna eat more for dinner. They are delicioso !!
I have less stomach issues with ground turkey than I do with hamburger so turkey won out !!
Swai fillets. If you haven't had White Swai, it is a light tasting white fish in the order of Orange Roughy. I keep it simple: broiled about 3 minutes with a coat of mayo, butter, lemon juice, garlic powder and Parmesan, mixed. Add Kosher Salt and pepper. I like mine with rice and a vegetable. You can also bake in a white wine sauce. Swai is inexpensive and easy; I don't like strong/fishy tasting seafood, so this is a favorite.

I had....
spaghetti squash with homemade chicken meatballs in a nice marinara.....and a side salad...
all this was made by my mothers friend who does paleo.....very tasty....and best of all.... I didnt have to cook! :)
tonight: marinated a grass fed brisket in (coconut aminos, pepper, salt, balsamic, honey, garlic, onion powder for 12 hours) threw it into a crock pot for 12 hours. We'll be enjoying some of that with steamed broccoli and some white rice.

I have a pot of creamy Italian white bean soup cooking on the stove as I type this post. The creaminess comes from pureeing some of the beans, sauteed onions, garlic and celery and then stirring it back into the pot. It also has strips of fresh spinach and broccoli in it. Tonight Dad and Pappy came over and we all sat down and had pasta with my Great Aunt Louise's recipe of amazing Sicilian red sauce and a biggo hunk of steamy garlic bread.
I do so LOVE having midweek family dinners with them and my Pappy was just all smiles and delighted eyes as we chatted and ate. He is so fucking funny too!
I made a comment about a person in our family who seems to have gone off to crazyville and has started smoking cigarettes and posting lots of photos of themselves smoking on Facebook and my Pappy looked up and said, "Are you sure it's not GRASS?"

Cypriot, sheeps milk cheese although I"m sure mine, as a supermarket one is cow juice not sheep juice.
It needs cooking. I like it roasted off in the oven with seasonings and herbs/chilli.
