Fiesta Chicken Enchiladas (didn't follow exact recipe but turned out DELICIOUS!!!! and my son thought so too :) )
I also made a ceasar salad and made banana muffins, banana chocolate chip muffins AND banana chocolate chip skor chips muffins

Family is important. Have fun and have a margarita for me. This evening the menu is jasmine rice and a pineapple version of the crab rangoon recipe that you posted a few weeks ago. Easy and delicious.

I am currently making broccoli cheddar soup! It is smelling goooddd! I bough just a few hard crusty rolls as this will also be lunch tomorrow!! It is pretty chilly here in Md, so this will warm up my bones! Lots and lots of broccoli is always the way I go....... :) YUM......

SO, gren saw a cheese burger she wanted to try...so I figured out how to make it.

this is how it's built

bottom bun

bacon jam (bacon, onion, garlic, whiskey, brown sugar, cayenne paper, cinnamon, nutmeg, ketchup, sherry, coffee, maple syrup, and small amount of bacon drippings...cooked and then put in a food processor and pulsed until its a slightly chunky but spreadable)

lettuce

burger

a cheese sauce (made with asiago, parm, mozzarella, provolone, and fontina)

cooked mushrooms

burger

cheese sauce

bacon

horseradish spread

bun


it was tasty..but the double decker made it a tad messy and overly cheesy...so, next time I'll modify it by only doing a single, less cheese sauce... and adding some spice to it with some chili peppers to balance out the sweet of the bacon jam.

I did some broad egg noodles with some oregano in the water, sauteed some mushrooms, onions, green and red pepper and zucchini with salt'n'pepper, lemon herbs and garlic. It was pretty dang yummy, if I do say so myself.

It was too late to eat heavy after I got home from the 2nd job, so I had....

cottage cheese with diced peaches

Tonight....

Steak cooked on the grill
baked potatoes (loaded for her, sweet potato for me)
and a big ol' garden salad
perhaps a glass or two of wine for me, too :)

I had linner....since I missed lunch and was starved but didn't want to wait for dinner....I made:

creamy chicken ramen...with corn, carrot, green bean mix stirred in...typically I put in some Sriracha sauce for a lil kick...but the creamy chicken is delish :)

also had some chicken sprinkled with my faveeee Italian dressing from whole foods....cuz someone worries about my protein intake....

and for dessert I had half of a very lovely, juicy pomegranate....mmmm

With the Brutal One out of the house for six weeks at a time, I have too much time on my hands. So I have started experimenting with new dishes. :|


Tonight I had grilled chicken breast with herb and pistachio pesto over garlic and oil olive couscous.


Lesson of the evening?? There is such a thing as too much pesto.

Hi,

I was thinking of making Salmon Croquettes and roasting a small pan of herbed, baby red potatos: I've also made a small batch of bread, that is rising for the second time, so I can serve freshly baked rolls for supper.

it was clean out the fridge night so.....

pasta with asparagus, tomatoes, parsley, garlic, onion, bread crumbs, capers lemon juice and olive oil with a little bit of pasta water to thicken the sauce.

It was the best thing I have made all week. And I have NO idea how much of what I put when or where so don't think i'll ever be able to recreate it. boo

A fusion of Southern comfort food and Hawaiian, as that is where I now reside...Paniolo pork barbecue with peaches served with a Napa cabbage slaw in mango chipotle dressing speckled with cilantro, local bush green beans, roasted corn on the cob and green chili Asiago hush puppies.

since we still have sore throats around here and swallowing isn't the easiest. I made homemade broccoli and cheese soup. Served in a homemade bread bowl and a half BLT sandwich on the side for those who wanted.

Little man doesn't like broccoli (even though he'll eat it if on his plate) I made him mac and cheese with a couple hot dogs.

The lasagna had a garlicky sweet red gravy, 1/2 ground sirloin and 1/2 ground italian sausage, and lots of Pecorino Romano and mozzarella. DELISH!

Yesterday, I had some whole garlic that needed to be used up, sooo I made a roasted garlic oil. I took a chuck roast and browned it in the garlic oil. I deglazed the pan with a few cups of white wine and added a bunch of veggies and put it in the oven for a little while. Last night everybody ate it over egg noodles and Ms made delicious green peas to go with it.

Last night, we had our version of caprese (more of a sandwich than a salad), filet mignon sliders and an Asian salad. Yummy!

The night before was coconut shrimp, one filet slider, sweet potato fries, coleslaw, and a plethora of desserts (rustic apple tart, caramel banana cake, key lime pie and NY cheesecake). Yummy!

It is cooking now, almost done ... Maybe 10 more minutes.

Cooked 5 pounds ground beef. After the beef was done and drained, dumped a large can of cream of mushroom soup in there. Added 42 ounces of milk and 14 ounces of water. Plus a packet of Beef Pasta Hamburger Helper seasoning mix.Stirred it well on high heat. When it started boiling, in went a large pack of egg noodles. Covered it, tuned heat to low. My male dog is literally dancing in the kitchen. *laughing* He knows this is what he is having for dinner.

I met my friend J at a neighborhood Cuban restaurant. He's been in Spain and we had a lot to catch up on. I had shrimp quesadillas and a Corona Light. He had black beans, rice and chicken and a Corona, not light. There was a lot of cilantro in my food, I loved it.

we have pinto beans, with onion and bacon in the crock pot. The girls like to have just that with buttered tortillas. Young blood doesn't like beans done this way...so, I still need to figure out what to feed him and I think I need something to go with the beans *shrugs*

I made soup for dinner. The recipe is similar to Italian Wedding Soup but I used cabbage instead of spinach and chicken meatballs instead of pork meatballs.

The local butcher has ribeye steaks on special once a month, so i will be making steaks with hand cut fries and steamed broccoli. Excitement fills the air on steak night around here.

I simmered some lentils with spices....added in some baby spinach to wilt....and some green onion....they came out veryyyy good...

Also made some Indian style potatoes in an onion yogurt sauce (from a jar; I'm not that good) I roasted half a red pepper and cut it up and threw it in...along with some more green onions. This time, it was a tad too spicy....but still very tasty :)

I made lentil soup via my Moms recipe!! As a kid she would make this and my Pops and I were the only ones who ate it. He is here visiting and I made a big pot o lentil soup, pulled the 1/2 loaf of crusty italian bread from the freezer and he as well as I happily slurped through a bowl each! (we actually don't make slurping noises!) Wonderful smells when its cold outside and something cooking fills the whole place up! What a warm feeling eh?! Yours does sound pretty yummy cinn!

Nuked 10 vegetable and chicken pot stickers, milk to drink. Gave each of my 2 dogs a pot sticker. First time they ever tasted one. They like them too! :)

Cut 1/3 of a pecan pie, placed it on a paper plate and just nuked it warm. It was frozen. Refilled my milk.

Don't look! This may not be pretty. I am dangerous with a whole pecan pie in the house. *laughing*

Okay so I made the Chicken broccoli & rice bake and it was, as my boy said "A KEEPER!!!!" it was delicious. Have some leftover for lunch and to bring some to my mom :) The salad was a no go, the Caesar lettuce had gone bad :( and I made the dessert and it's okay. Either I should have left in longer, or not as long or maybe I needed more peanut butter. Oh well.

Just made a pot of golden lentil soup (vegetable broth, veggie stock, carrots, onions, garlic, onions, spices -including tumeric, cumin, cardamom-and lentils).

We had lunch at a restaurant yesterday that had awesome golden lentil.

Had to try it. Still simmering. It smells great and hopefully it will be good.

I roasted a pan full of vegetables (sweet potatoes, parsnips, carrots, vidalia onions, and broccoli) and broiled a steak. My neighbors helped me drink some shiraz-cabernet while I ate. It was delicious!

I also just baked a damn tasty loaf of white hard crust bread. It's so much better by hand… I may be retiring my bread machine after this.

Nuked a frozen Healthy Choice meal. It was classic meatloaf , mashed potatos, corn and apple pie. Very good but only 12 ounces. Needed to be 24. Went back to freezer, found a Lean Cuisine french bread style pizza. Waiting for it to cool as I type.

I used to eat these frozen dinners all the time and fell out of the habit. I am not dieting but they are better for me than some things I have been eating lately ... plus they taste so good. The only bad thing is it takes 2 of them to feed me. Eating only one just pisses me off.

side note/somewhat useful fact:

In Australia cheddar cheese is commonly called 'tasty cheese' -

tasty as a proper noun, not an adjective.

This can be somewhat befuddling if you don't know this fact and you order a grilled cheese sandwich and the waitress says: "Tasty Cheese?" and you say: "ummm...yeah, please, i'll have the tasty cheese" (all the while wondering 'who on earth would want the un-tasty cheese?'). :|

I have Boston Pork Butt in a BBQ sauce going in the crock pot for pulled pork sandwiches. The longer it cooks the better it is :)

I made yumminess!

Drizzle a warm skillet with chipotle bbq sauce, lay beef stir fry strips evenly, sprinkle minced garlic over beef, cover and let it marinate a bit on low whilst I do chore-like things. Come back later and drizzle more chipotle bbq sauce over the meat followed by a stir fry veggie mix, fresh mushrooms and garbanzo beans. Stir and cover. Do more chore-like things. Eat an orange cranberry muffin. Stir and cover. Snack on Greek pasta salad and broccoli salad. Smell the deliciousness in the air. Dive in!

I'm making a big pot of chili so I can put some in the freezer for later,it's not to cold yet but the weather man said it's not far away.I have been doing that lately,cooking more than we need.Cause it's just easyer to take it out than warm it up...saves time.Besides I wanted some chili.

I thought it be good idea to get my son to learn more about the kitchen and cooking so he picked out a recipe and we went out to shop for supplies yesterday and tonight he will make.......BBQ chicken pizza roll!!!!!

Something simple to start but sure looks and sounds delicious.

Frozen pizza dough thawing out in the fridge (will need to be rolled out)
Chicken will need cooking
onion chopped
BBQ sauce smothered on dough
and added shredded mozzarella & provolone cheese

Can't wait :)
