It's a bit early to know for sure, but thinking I will have a beef n bean burrito. Both the beef and the vegetarian re-fried beans are from some that I dried and oven canned a while back, so it will be an easy dinner.

Last night's dinner was...
grilled chicken
mac & cheese (yep, the blue box)
baked beans
and a spinach salad
dessert a couple hours later ~ a strawberry cheesecake blizzard from DQ with 2 spoons :)
Tonight...
a creamy chicken & rice casserole
and another spinach salad (yep, gotta finish up that bag before it goes bad)

________MEN and sandwiches have always gone together…I mean – what’s not to like …for a guy who has to live the bachelor life...at least (for the time being) – and for many years before…they are – fast – inexpensive – portable and filling and you can eat them on the go in your truck on the way to work…I mean – what’s not to like – right? …If there’s meat – cheese and other goodies stuffed between two slices of bread… let’s face it – I like it - (most) guys do – I’m not sure the women in our lives like it so much…but sandwiches have been a “man staple for years” – come on - financial empires have been built on the “sandwich” … :) - it was and still is standard fare for brown – bagging – and in the summer time – it’s a quick and easy fix for sure…pull out the cold cuts (bologna an old school favorite) – slap some mustard on wheat – and you are good to go – all washed down with a big glass of cold milk – gotta have the milk – that’s key - gotta have the milk - it is a natural after all and good for your bones! :)
In a recent conversation with (her)…as she knows I am (very) challenged in the art of cooking anything that doesn’t involve a microwave or boiling in a bag (and even that is suspect) …I told her I could cook … and when I told her of my sandwich skills– she with a small and beautiful smile said – ... “oh baby – I’m sorry that’s not cooking – that’s called assembling” … lol! :)
So – (for her) – I’ve decided to branch out into the cooking arena – and you know have a healthier diet – as let’s face it – they aren’t the healthiest thing to eat by any stretch…so – in a recent trip to the grocery store –
I got lettuce and tomato to go with the bologna (I mean – that makes it a little healthier- right?) …
SO conversation goes something like this:
She: hi honey…what are you having for dinner tonight?
Me: Bologna
She: (small sigh)
Me: (but) … I’m going to have some chicken noodle soup with it J
She: (laughter) – Well…that makes me feel a little better…
Me: Why? It’s still bologna (and you hate that)…
She: Well…at least you are having a (side) with it…
____SO – what am I having for dinner tonight?
_______________Well…bologna – soup (and) just for her some fresh fruit (cause if one side is good – two makes it even better- right?).
So…she may be the best cook (ever) – and she is –(no doubts about that whatsoever) so I leave that to her…and she spoils me terribly – but when it comes to assembling a bologna sandwich – trust me – I got this. :) ... even I got Dagwood beat on this one…:)
I lied . I didn't have roast beef and noodles I had Mcdonalds drive thru. My normal 12 hour day turned into 14 and a half. So I was too tired and too cook and wait for it to get done. So tonight it will be roast beef and noodles. I hope. Lol

I had some leftover 'oh so tender' beef roast that I topped with mustard n vinegar BBQ sauce, and an entire head of buttery soft roasted garlic that I roasted using a dab of coconut oil! I'll munch on some dried veggies later... :eyeing the remaining beef roast and garlic...maybe.

I'm not quite certain yet, but I'm going to my fave hole in the wall Italian joint later, so I know that whatever I have will be fantastico. I'm thinking either the ol' standby spaghetti and meatballs, or their gorgeous pasta with aglio e olio (garlic and olive oil), tossed with minced walnuts.

We made crispy little open face pizzas on sandwich thins.
We had roast garlic stashed in the butter dish, I don't know why, and
We spread it on the toasted bread.
I scooped a tablespoon of jarred pizza sauce on each toast round, and
I added sliced black olives.
Pete sautéed sliced mushrooms, which were crispy and yummy, and
I topped each pizza with shredded mozzarella and
We had a very little bit of parmigian cheese left.
The little pizzas were crispy and delicious, yum yum.

I put on a pot of chopped veggies this morning...celery, onion, red pepper, broccoli, garlic, mushrooms and cabbage. Opened a can of diced tomatoes with green peppers, added it to it.
Tonight, put a ladle of veggie soup over some cheese tortellini with sliced grilled sausage. Opened a can of flakey biscuits. Yummilicious!!

I've been simmering beef in red wine for hours. And, I am now using the stock to make a wine mushroom sauce. It will be served on a bed of egg noodles (because they're just fun), along with a delightfully fresh loaf of bread!

I order mine from a place called Netrition because it is cheaper. You can get it at other websites for sure as well as some larger grocery stores and of course at overpriced "specialty and gourmet" stores.
I love it. It has a smoother texture and is lighter than almond flour. I have an easier time wrangling it as a substitute for wheat flour. Normally, however, when I bake I use a mix of almond and coconut flour, best of both worlds.
The thing with coconut and almond flour is that it goes bad faster than wheat flour. To make it last, protect it from the light and keep it in an air tight container. Some people keep it in the freezer to make it last longer.
I use coconut flour to make pancakes, cookies, mug cake, pound cake, crust, breading for fish/chicken, etc.
Hmmm, coconut flour? I'm going to keep my eyes open for that? Can anyone lead me in the right direction?

I sautéed one pound of frozen diced onions in one tablespoon of canola oil. After the onions defrosted, I added one quarter cup of taco seasoning.
When the onions and the taco seasoning were cooked, I added one pound of ground turkey.
When the turkey was almost cooked, I added the turkey to a stock pot with two 28-ounce cans of crushed tomatoes, and one 28-ounce can of water.
Everything has been simmering, and when Pete gets home, I will add two cans of pinto beans, and the Easy Bake Polenta is in the oven.

Trader Joe's Orange Chicken and TJ's veggie rice. Did a lot today and too tired to cook. Hate to cook anyway. We just got a TJ's in BF nowhere ville and I am quite happy about it. The hour + drive to get there is even worth it!
Too bad there is no smell-a-puter, cause everyones dinner sounds fantastic. But I have to say that Huge-Smiles dinner does sound the best.

Fresh trout fillets cooked with lime, red, yellow & orange bell peppers, onions, minced garlic, ginger, mushrooms, salt, pepper, red pepper flakes, olive oil and butter. Served over rice and topped with a cilantro/lime cream sauce, and chopped cilantro for garnish. Broiled asparagus tossed with olive oil, salt, pepper, red pepper flakes, minced garlic, and rosemary, and garnished with a sprinkle of grated asiago cheese.
This is the first time I have been able to create a recipe, for trout that I have caught, that I actually wanted to eat (I generally give away all of the trout that I catch). It was a yummy dinner, but I would have enjoyed it more, if I had been able to share the meal with loved ones.

well, it was little man's birthday today as well as Easter. So, we had a cook out instead with potato salad, home made mac and cheese, deviled eggs, hamburgers, hot dogs, and I forget what type of sausage. We had two cakes..one for Easter and one birthday cake with mint chocolate ice cream.

We had Kim's three boys over and she made the whole meal. It is the first time I have seen her cook since Christmas ( and I wasn't here to eat it). So I was quite impressed by the full Turkey and all the trimmings dinner she made. Now that I know she can cook, she may have to start sharing in the day to day cooking.

Being as I spent most of the morning haveing an out paitent thing done to my back, then was to foggy to chanch being around a flame to cook.My son stoped by Sams Southern Eatery and brought home each of us the best fried shrimp on the planet with side of choice,I had greens and corn bread he had salad...I confess I ate allll my shrimp first..great big fat juicy shrimp all 12 of them.Hey,it wouldnt take much for me top tackle 12 more shrimp.

I purchased some delicious chicken and garlic sausages at the Farmers Market this morning. So, they'll be cooked in a bit of olive oil in a hot pan. And, as an accompaniment, fresh asparagus tossed with a bit of garlic and olive oil, seared slightly in a grill pan. Light, tasty and fresh!

I marinated Ethan's London Broil in Dale's steak sauce and mine in Terayaki sauce then seasoned and grilled them on the George Foreman grill.. i also made penne pasta with garlic sauce, shrimp, asparagus and cherry tomatoes . I packaged it all up and took it to the rehab so we could eat dinner together.

Threw together a stir fry of sugar snap peas with tri-color sweet red/yellow/orange peppers (pinch of sea salt and grape seed oil, and sweet thick soy) on top of slightly scorched brown rice (adds a nutty element and crunch) then flavored Japanese style with a couple pats of butter and seaweed sprinkles. Feeling full and healthy. Warm green tea went along well. :thumbsup:
