I have not made a decision as of yet.
Based on this from this past week:
Monday night dinner:
Blue Belle Milk Chocolate ice cream. Since there was only a little left from the bucket I bought late Saturday, I ate the rest of it that night for "dessert"
Tuesday night dinner:
My made-up Mexican recipe that I nuke for only about 3 minutes
Wednesday night dinner:
4-pack of tapioca pudding
Thursday night dinner:
Most of a new box of vanilla wafers and milk
I intend to put some thought and planning on my dinner tonight. Hmmm, maybe a footlong veggie sub from Subway. Perhaps Arby's Roast Beef.We'll see! The possibilities are numerous. :)

I made the most awesome tuna salad sandwiches tonight, if I do say so myself! We can really put it away so I make a large batch and it doesn't last long...
4 cans of tuna in water (drained)
6 boiled eggs chopped
1 small onion
1 teaspoon mustard
Mayo to taste (about a cup roughly)
Stir it all up and it's mmm mmm good.

I had a huge salad made of romaine, mixed greens, sliced mushrooms, Roma tomatoes, and light Ranch dressing. That was the good for me part. Then I had a bunch of cookies (Keebler's Fudge Shoppe Coconut Dreams) that probably weren't as good for me, but they tasted super yummy.

Sitting here eating food from Sonic as I type.
I have a guest here who's had her chemo session and never knows what she'll have a taste for. Tonight it was hot dogs, so I went to the drive thru for her. I, of course had to try the Chicago Dog along with onion rings and Ocean Water. Hers had mustard and relish along with tater tots and Dr Pepper.
I have had more fast food this week than I've had in months. I probably put a few pounds back on. Next week, I'll be back to cooking meals for just me.

For farther elaboration cincinatti chili meat with all right spices cinnamon nutmeg chocolate chili powder. Simmered for 6 hours or so. Then placed on cooked spaghetti with cheddar cheese chopped onions and red kidney beans. Is heaven.

Two roasting chickens are in the oven right now...covered in coarse sea salt, fresh ground pepper, a little poultry seasoning, and a big cube of butter on each.
They'll be served alongside julienned potatoes cooked in casserole with sauteed onions, peppers from the yard, some leftover queso, milk and a little flour to thicken it.
I have no idea what the veggie may be.....probably peas cuz they're in the freezer, and I don't feel like running out to the store. :)

i made a giant pot of veggie stock over the weekend pet sitting, and decided to make brown rice [with the stock, of course]. thawed out frozen tofu [freezing changes texture]. drained/squeezed out tofu, browned in cast iron skillet with veggies, shallot and garlic, set aside. made a cornbread and turned 1/4 of it into crumbs. combined all ingredients with more veg broth, and egg replacer. result:
vegan loaf with fresh sage, heirloom tomatoes, and romaine lettuce w/squeeze of lime.

I don't know yet. The past couple of days' worth of dinners have been awesome. We went to HEB and bought samplings and small chunks of a few kinds of new to us finer cheeses and some crackers and we got some organic soups and we each had a bowl of soup (tomato with red pepper for Ebon, ginger carrot cashew for me) and cheese and crackers. I had red grapes and coconut dreams cookies with it too.
Last night Ebon had a repeat of the night before and I had my soup with a fresh avocado and more cookies.
Tonight, I think we're going to finish up the soups (this is a record for us...usually we bore of it and have to freeze it or split up the days so it's not back to back) and I'm going to have a tomato and avocado sandwich. Ebon already started by making and eating his own salsa and chips.

We had lean baked turkey burgers with sauted onions and mushrooms. I added a chipotle bbq sauce to mine and skipped the bread. I also had a salad of mixed spring greens, feta, and Caesar vinaigrette. Yum!

It's 80 degrees here today so we're taking advantage of the beautiful weather and cooking out. BBQ chicken, ribs, hamburgers, hot dogs ... yum!!! I might even make my famous pasta salad. I have the recipe from Olive Garden's salad dressing that I use and everyone here loves it.

I made lentil soup :) yummy...
I made homemade gravy (also known as tomato sauce) with beef short ribs slow cooked to perfection. Meat so tender if melted on the fork. :|
Tomorrow, I will need to make pasta and use the actual sauce.

I had the most enjoyable dinner! Ebon and I went out with Arwen and a new friend to "our" :sushi: place and we all had a little bit of something nice. I had crunchy and scallop rolls and a house salad. Ebon had a Kyle roll and a spicy tuna roll. We all had yummy water with lemon and then went over to Amy Ice Cream shop where I had a large bowl of Mexican vanilla with cinnamon and cookie dough and Ebon had Mexican vanilla with Oreo chunks smashed up in it. Super yummy!!!

Last night very rare grilled New York steak, steamed green beans with olive oil and parsley, slice of pear tart with almond crust, glass of Merlot.
Tonight steamed salmon and steamed fingerlings with zaatar labneh (Lebanese yogurt "cheese" - yogurt drained and flavoured with garlic and herbs), and an artichoke to start, glass of Merlot, slice of pear tart with almond crust, espresso.

Tonight, Ebon made me a pan fried steak and sauted mixed veggies and we made ourselves giant fresh salads of spring herb greens, mushrooms, tomato and kalamata olives. Feta and Caesar vinaigrette dressing for me and Annie's Goddess dressing for Ebon, minus the feta.

I made a mixed green salad with roma tomatoes and almonds with a Balsamic Vinegar dressing. Then I made what I think may have been the best garlic mashed potatoes I've ever made! Holy Mother of Gay were they ever good! AND a meatloaf on a bed of carmelized red onion slices and baby carrots.....
It was wonderful! And there are leftovers for a meatloaf sandwich tomorrow! I'm excited!
The best part was having my Sissy there and laughing uncontrollably. Julia was present. :eyebat:

I had a Crazy Boy roll, which is a hot roll with crab, avocado, and tuna (I think) plus some interesting sauce that made my lips tingle. Weeeee!
I also had another new to me roll, called a Hakata roll with cucumber, pineapple, avocado, tuna and salmon. It was okay but the hot roll was better. Super yummy!
