The carne guisada is in the crock pot. Cross your fingers for sucess. I used the food network recipe mostly but added beef bouillon, chilies, and coco for a Mexican flavor.

Leftover drumsticks & Brussels sprouts, along with freshly roasted beets. I also roasted a couple of heads of garlic and will have some on a piece of bakery sourdough.

For dessert a yummy piece of mango key lime pie! :drool:

I had a filling lunch so for dinner I had refrigerator pickles that I made and sliced apples, drizzled with honey and sprinkled with Trader Joe's cashew almond ginger granola. Tasted like a raw apple crisp. Yum

I am cooking beef liver with bacon, onions, garlic, rosemary and cayenne, also steamed sweet potatoes and mixed veggies.

I know that many people despise liver, but I grew up eating it before I had much of a choice as to what I ate, so I developed a taste for it. :)

The potato soup is good, I made enough to eat then put two containers in the freezer. I'm on a cooking binge after being laid up for a while, no telling what will end up in the freezer.

I made a Mediterranean salad of sorts with chicken, olives, artichokes, cucumber, tomato, avocado, and a light Greek dressing. I tossed it all together, and then into a Paleo wrap lined with Romaine lettuce leaves.

Thank you Ocean. The beans came with a season package but I am one of those guys that likes to use my own seasoning and put a Texas taste to the soup.

one of the simplest pleasures I have in life, is feeding my husband. He works midnites so I make his dinner around 8pm. Tonight it was Aldredo pasta. He wont eat veggies so he only gets the main entre'. Earlier I made him beef stroganoff soup. OMG...it was to die for!

I'm making chicken and Yukon gold potatoes in the oven. Drizzled with Tuscan herb infused oil and sprinkled with every day spice. I added several cloves of garlic in. Its in the oven now and smells delish.

Its been forever since I cooked. The lunches at work are so yummy, filling and free.

Technically, it's evol. Love backwards with a period at the end (or beginning, depending on how you look at it).

It's a company I discovered a few months ago in the freezer section. Lots of vegetarian and gluten free options but some really delish dishes and their burritos are ginormous!

The truffle mac 'n cheese is STRONG with truffle flavor, though, so if you pick it up, be prepared for that.

I tried something new tonight. Luvo makes a frozen dinner of chicken in bbq sauce, millet grits and collard greens. It sounded good so I tried it. The chicken was delicious, the grits weren't too bad and the greens were not designed to be nuked, which I suspected and that was confirmed. A dash of vinegar helped remedy that problem but it certainly wasn't the best I've ever had.

I don't love every fake meat product and I'm super aware of texture, but this simmered in homemade spaghetti sauce for an hour. I served it with ww pasta, and garlic toast. Pete loved it, and I have two portions to bring with me for lunch.

I sauteed a chicken breast in cilantro infused olive oil, added half a bag of Trader Joe's country potatoes with mushrooms and asparagus. I can not say enough about how much I love those potatoes! Added mixed veggies since I love my veggies. Not only does it taste yummy but the garlic in the potatoes makes the house smell good too...

One of the things I really miss about trying to (mostly)maintain a Paleo eating plan is beans...and tortillas, so tonight I am making black bean burritos and will have that along with some of the Spanish rice I made yesterday, but didn't eat. It's gonna be a high carb day, but that's okay. :)

I had a late lunch at my favorite Jamaicanish restaurant..

It was linguine with mussels and scallops...tomatoes and squash...all in a white wine sauce. Quite good.

I had never tried mussels before. They are less squishy than clams. Very good.

Dessert was....

Peppermint cheesecake with tiny chocolate chips and a dollop of chocolate frosting.....

I finally went to my local (like throw a stick and hit it) bakery and it's amazing. I also have a caramel brownie for tomorrow...if it makes it that long. It's awful purty

I felt like celebrating a little today :)

I did the leg work for chili this morning and put it on low in the crock while I went to my interview...

It has 3 kinds of beans, three kinds of pepper..four with jalapeno...tomatoes, ground turkey and some Turkey kielbasa that I had leftover ..various spices...I made rice on the side

For dessert I'm having a caramel brownie from the bakery.. Yum

I had a dinner by Luvo that had red wine braised beef and polenta with Brussels sprouts, butternut squash and cranberries. I like that the packaging is paper based and not some plastic stuff and the beef was amazing. This is the second dinner I've had by this company and it seems to go this way: meat is excellent, bread/carb is really good, veggies are okay/passable.

Well, at least the main ingredient is the best.

I also had chocolate coconut cookies for dessert.

There's a place down the road a ways that has wood fired pizza...and pasta...

I've never been there but I wanted to try something different..

I got shrimp scampi. It was done in an odd fashion with marinara instead of a wine and garlic sauce...but it was awesome.

I got a huge chocolate chip cookie for dessert...and have a hard cider in the fridge...

I stopped by the Gyro shop and ordered: a large Greek salad, hold the dressing and the potato salad, and add 2 stuffed grape leaves and a small order of gyro meat on top, tzatziki sauce on the side and an unsweetened tea to go. Please & Thank you! I will likely have enough for dinner tonight and lunch tomorrow.

Well, we had a smorgasbord in a bowl.lol

Sautéed onions, jalapeños, celery, garlic in butter. Added scoop of sour cream, left over heavy cream from candy making and some Parmesan cheese. Sliced spinach and feta cheese sausage and into the bowl it goes over linguine. Topped with chopped tomatoes and black olives.

It had a kick with the jalapeños....definitely a do over!

We got pizza from a new place that has gourmet gluten free pizza. I had mine with mushrooms, olives, spinach, and goat cheese. My daughter had hot peppers, ricotta, olives, and spinach. Was worth the hype.

yesterday, I made a couple things to munch on for when the mood hits:

a creamy vegetable and wild rice soup (when something calls for cream I use almond milk with equal parts of vegan sour cream and vegan cream cheese...works like a dream)

and

a spinach, mushroom, onion, potatoes in a green chili curry stuffed into hand pies.

tonight's dinner was a collaboration:

I made: Fried cauliflower (used a seasoned wet batter)

and it was a accompanied by a sandwich that had

field roasted sun dried tomato slices (which is a vegan deli slice), sauteed onions, peppers, and black olives, with a spicy vegan mayo, vegan cheese on a sourdough bread heated through in a panini press

the combo tasted like an Italian Sub

was very good...I ate to much and feel like a log now...but well worth it

Tonight I poached fish in butter, olive oil, fresh chopped herbs and a lite dash of minced garlic till it was good and flakey. A pot of string beans I had in the freezer that had new potatoes and sweet onions in the freezer bag with them. A serving of sliced tomatoes dashed with basil red wine vinegar and a touch of salt with pepper. Far more than I need to eat but to good to pass up.

Going to have xmas dinner with groups of immigrants at the local community centre. Can't think of a better way to show gratitude for what we have and to share the bounty of our fortunate Canadian situation with newcomers.It's for them but mostly it's a joyous experience for me.. My parents and I came here in much the same way...as refugees...and i've never forgotten it.

When picking up the turkey from Whole Foods for dinner tomorrow, I also got a roasted chicken breast that had a spicy, crispy skin; roasted Brussels sprouts and roasted cauliflower.

I also got some of their delicious, whole berry cranberry sauce.

I just ate my dinner for lunch because I was hungry.

Dinner will be soup I think, because I am full!

Update:

I just noticed that somehow I splattered cranberry sauce all over my white blouse when I took the plastic lid off.

Brother.

Time to take it off and scrub it.

I made a Jurassic sized chicken breast cooked in garlic and wine with fresh rosemary , sweet potato, fresh green beans and baby carrots cooked in with the chicken and stove top. It doesn't feel like a holiday without stuffing

BIG glass of wine...might have more of that...

I think that's who Cinnamon was talking about but they are beyond being accused. They are extremely homophobic and outspoken about it.

I'm still snacking lightly of fresh pineapple, blueberries, strawberries and grapes of all colors. I'm saving my appetite for tomorrow when my Cuban Sunshine comes over for our extended weekend date. I'm going to make roast beef and roasted vegetables for our supper tomorrow. I might make a carrot cake too, with butter cream frosting. Or, maybe an apple pie. I still have chocolate coconut cookies, so maybe that will be our dessert. What I want is Lime jello or Key Lime cheesecake, but I forgot to get what I needed, when I went grocery shopping, recently. (Lol, or not). :)

I busted out the spiralizer I got for Christmas! I spiralized sweet potatoes and yellow beets and sauteed them with a little olive oil, salt, and cumin. I tossed those with black beans, spiralized raw cucumber, fresh chopped basil, and a splash of balsamic. Sooo good.

I had a nod to the taco salad: crumbled seasoned beef, shredded cheese, green chilies, pico de gallo and taco sauce and a creamy chipotle sauce. No greens because it was turning on me and I used the last of the sour cream. No matter. It was still yummy and delish. I even toasted a flax wrap for a taco burrito and then finished up with a taco bowl.

I stopped in Trader Joe's and they had a little leg of lamb that had to be frozen or cooked by today so I bought it.

It has a pop-up thing in it like turkeys do so I won't under or over cook it.

The ex "hated" lamb and I love it except I try not to think about them, if you know what I mean; so I am trying to cook everything that she would say: "Oh, I hate that".

I poked it full of garlic cloves because it does not matter if I have garlic breath either tonight!

I am throwing some cauliflower in the oven in a bit, to roast it.

I also poured myself a little glass of Francis Ford Coppola's Chardonnay. He makes great wine.

It might have been a Friday work day but it is like a Sunday dinner night.

Had a Hungry Man Turkey Dinner...pretty awful but not awful enough not to eat...how do they manage to get the mashed potatoes ice cold;the stuffing rock hard; all while the lil "cranberry" dessert is blisteringly hot...even tho you've followed the microwaving instructions right down to the last comma?

I had a MRE - beef and brown gravy poured over homemade mashed potatoes. Though it actually tasted pretty good, I’m regretting it now. This because even though I only ate half, it’s still sitting as I imagine it would if I survived downing a portion of some famine wall in Ireland. Moral of the story – don’t play military man. Get thy ass to the grocery store, and soon!
