Tonight is family dinner with my extended family and it's my turn to cook. I'm at work so my crockpot is working on a wild rice and mushroom soup that I will finish off with cream and spices when I get home. I have a loaf of crusty bread for the family and boring gluten free crackers for me. My nephews will have their standard pasta. They don't eat much else and it's not the hill I'm going to die on right now so I cook them up a weeks worth every Friday and they have to make it last. They are very specific about it having to be pasta that I make, no one else.

It's been AGES since I had boiled peanuts! Soo good.
I'm going to try to make my own Riced Cauliflower pizza crust; then pile some cubed squash on top, after I use slices of Chao Field Roast Cheese on the cauliflower crust, then pair some tiny broccoli buds and black olives and ChiKn tenders on top, then roast it in the oven.
Hopefully it turns out okay.
If not, I can always smother it in Caesar salad dressing.
Here's to another night of Bon Appetit in the kitchen. :balloon:

Pretty good! I just squished a bunch of riced cauliflower into a pizza pan lined with baker's paper; then poured a half cup of a mixture I made out of coconut cream/coconut water and a bit of coconut flour on top of it and squished it all over the riced cauliflower -- then baked the pizza crust first, then put the other stuff on top and shoved it back in the over to bake for about ten or fifteen more minutes. The pizza pan I have is not a big one; it's more like a small personal pan size, which I found at a Good-Will store, a few years ago. Comes in handy, when I want a small meal for myself. :)

I'm quoting below so I remember what is good in this recipe and don't f**k it up like I did tonight. Tonight I wokk-ed together carrots, onions, tofu, and riced cauliflower and then added .5 cup Gochujang. It was a disaster! The number one problem was too much sauce! Just crazy! Also, I should not have put the tofu in with the veggies without cooking them by themselves first. I was just being lazy. And I don't think the riced cauliflower worked. And I had also added a teaspoon of EVOO in cooking and maybe it's better without that. I got cocky :mohawk: because my last version of this dish came out so good. This one came out steamed, mushy, and wayyyy over-sauced- Really I should have been arrested it was so alarming.
I did have some of my famous plum and cucumber salad which came out great. That involves chopping up 2 plums and chopping up 1 cucumber and putting them together. Aw, simplicity. I actually watched a youtube once about plant based recipes that involve one or two ingredients. Like this man had a guest over and he served some defrosted peas, and it was really good. At least that's what the man said about it on the video. Not sure what the woman actually thought
Tonight was a win! I dry wokked (okay- I made that term up- I just mean cooking with no oil and no water in a wok) carrots, onions, tofu, and petite brussel sprouts. It was not watery which was great. I cooked it till it was starting to brown. Then I added. 25 cup of Gochujang (I'm forever thankful, GeorgiaMa'am!) after it was off the heat. The flavor was perfect! I was surprised how well the petite Brussel sprouts worked! Total victory of a meal!

I'm not sure what dinner will consist of for me. I'm eating out of the freezer and fridge so there will probably be fresh fruit and maybe a Sweet Earth frozen meal. They are actually pretty good and contain several super foods in each meal. The other option is a sandwich. I could do ham and Swiss. I dunno. I'm still kind of full from brunch so dinner's not a big concern for me now.
Tomorrow night, I'll have rice with peppers and onions and a veggie sausage though. It's going to be sooo pretty as I got the striped peppers. I'm just too lazy to do that tonight.

Is there such a thing as Spicy ChiKn-Cordon-Caesar?
That's what I'm having tonight.
I use one slice of Garlic Nan bread; I cut in half, then I set it aside.
Then I take two Spicy Quorn ChiKn patties (https://cdn.nexternal.com/vegane/images/QuornSpicyChickenLG.jpg) and simmer them in EVOO or Coconut oil in my new non-stick, non-plastic resin, frying pan for about 15 minute (med-high heat).
Once I flip the chik-N patties over, I lay down both halves of the Garlic Nan bread, top both pieces with Field Roast Chao Cheese, then put the chik-N patties on top, then turn off the burner and slip the lid back on the pan.
I let it sit in the pan for about 5 minutes, so the Garlic Nan becomes warm and soaks up the evoo/coconut oil and to let the cheese melt.
Once it's ready to serve, I take a leaf of romaine lettuce and tear it up, put it on top, then use my favorite vegan Caesar dressing on top of the whole thing.
For those who like the powdered spice of Curry, I usually sprinkle a touch of it on top, as well as crack a few peppercorns too.
*Delish!* :)

First I had some celery with tofu salad (tofu salad sold in store).
Then I took a box of MacDougall brand low sodium French lentil soup and cooked it in a pan with a bottle of water and a bag of frozen kale. Unfortunately it turned out horrendous. The water watered it down too much, and I think I don't like the soup brand, because I literally could not eat this concoction. That's rare for me, because even if I don't like something I will usually eat it anyway- but this was just too unpleasant.
I instead had a bowl of frozen / microwaved black bean soup with chopped onion, cilantro, and sour cream.
Then I had a vegan vanilla Rawmantic bar.
Honestly I felt a bit sick to my stomach after the whole meal. So I had some chamomile tea :tea:.

Dinner tonight was not great but it was passable.
I used two woks and, with no oil, I stir-fried bell peppers, onions, and carrots in one, and then in the other I stir-fried tofu and cabbage. Then I put them together and added .25 of a cup of Gochuchang sauce (bibimbap / Korean style sauce).
It seemed to really help to press the tofu of all water before cooking, as recommended in this thread. And it was so easy to do.
The bell peppers were watery and over-powering, I think. Not sure the carrots worked that well either. It might be cool to do all cabbage and tofu. And maybe cook onions separately in EVOO and add them.
Cooking the veggies separately and without oil seemed helpful. They browned nicely. Skipping the riced cauliflower seemed good as well.
Afterward I had a Rawmantic vegan vanilla bar.
All in all, even though the stir-fry was meh, it was edible and healthy and filling, so I'm pleased enough.

It is very humid and terribly sultry tonight. I just got home after spending 3 long hours in traffic, lol. I'm not too hungry, but I am sipping on room temperature water, guzzling a Dr. Stevia, and will promptly eat some vegan coconut non-dairy ice cream (the whole pint) which is more like a solid type custard type confection, in the flavor of salted caramel.
I had a big Asian sesame salad for a late lunch, with sesame salad dressing, so I feel like I had something reasonably healthy.
Heck, the Dr. Stevia is fairly healthy since is doesn't impact A1c/blood sugar issues. The Salted Caramel non-dairy ice cream is protein rich, so I think I will be okay, for now.
I recently bought a 'rainbow' pack of Dr. Stevia 'soda' products, so it's one a day, just like a vitamin, until they're gone. I don't ordinarily drink soda type products at all, so this is just a test run on a new stevia based drink product.

I followed up with my idea from last night (trying a stir-fry with almost all cabbage as the veggie with the tofu). It was edible but not great; however, I have some ideas for improving it next time.
I dry-wokked (no oil) cabbage, lots of scallions (I think they taste great with cabbage generally), and tofu (pressed out much of the water thanks to this thread's advice). Then after cooking, I added .25 cup of the red pepper paste and mixed.
The problem was that it was too watery. And I think that came from the tofu. Even though I pressed it, it probably still generated a lot of water. When too much water can't be gotten rid of, the veggies come out more steamed instead of dried / browned (the latter of which I prefer). It also takes soooo long to cook when it's watery. I felt like I spent a good hour stir-frying cabbage.
So, yeah, I guess next time I will try cooking the tofu separately from the cabbage and scallions.
For dessert I had a Rawmantic vegan vanilla bar and it really hit the spot, especially after eating so much *essentially* steamed cabbage.
One way I love to stir-fry cabbage is with a combo of peanut butter and soy sauce. OMG, so good. Cabbage picks up flavors very nicely.

Yes, and I like it. It's easier for me to find quinoa pasta than red lentil pasta. I also like the red lentil but it's not as easily available.
I think the taste of quinoa and red lentil pasta is similar to the taste and texture of rice pasta.

My stir-fry was frustrating tonight. I dry-wokked (no oil) cabbage and scallions. I skipped the tofu altogether. So it worked very well not to have the water from the tofu- big difference. The cabbage cooked really well. I decided to go with a mixture of curry, peanut butter, and soy sauce to mix with it at the end. I added WAY too much curry. It was really overpowering. Also, I ran out of natural peanut butter and had to use BB's regular peanut butter. Both those things were frustrating, especially the excess curry.
Then I had a Rawmantic vegan vanilla bar which hit the spot.
I find it quite therapeutic to pull apart a cabbage. I recommend that activity.

They are great for tacos and loose meat burritos! I have used them in spaghetti sauce as well. You can also have a loose meat dish with the crumbles, some sautéed veggies and shredded cheese. With or without a starch. Rice and quartered red potatoes are my fave. And let's not forget making your own sloppy joes. Add in some diced onion and bell pepper with a little sauce and you are good to go. They are very versatile!

Dinner was delicious tonight.
I made an omelet with yellow bell peppers, onions, black pepper, and unsweetened ketchup, along with morningstar veggie strips (aka meatless "bacon").
Then for dessert I had Greek yogurt with blueberries, bananas, cinnamon, and kamut puffs.
The day after Labor Day I start back at my job (working at a school), so I hope I will be able to cook. It's so much easier to do during the summer when I am not working.

My son is taking me out to breakfast. My original plan was to only eat home cooked meals unless I was at their place or in the hospital or something. However it didn't last. Both J and my son are leading such busy lives they usually take me to a restaurant so while I chow down they can have a break and enjoy a meal too. Right now I'm busy planning my relapse, however I'll regret my decision later and make up for it tonight by having just some meat ick something, probably a plain baked chicken breast with a bunch of salt on it. Well at least I don't have high blood pressure because I really love salt. There's nothing already salted that I don't need to put more salt on, even jerky tastes better if it's dipped in salt. Bet if I had a past life it would have been as a member of some primitive tribe where we all celebrated life by holding hands and dancing in a circle together around some statue made of salt. Well quite obviously if that were the case Lot's wife wouldn't be a member of our tribe. Shit she'd probably be the statue! Now that's just plain wrong, thinking a thought like that.

The fall rains have come back to our area, and it's a bit chilly today, after weeks of being sultry warm outside. So I found my crock-pot, so I can have soup, all week long.
My starter batch soup, includes several types of beans (1/4 cup, each): northern white beans, navy beans, butter beans and a sprinkle of black beans. I soaked them last night by adding a pinch of salt and a splash of ACV to the water. I just rinsed them off, this morning. So, I start with 1 quart spring water and half of one small carton of organic vegetable broth. Add the presoaked beans. Cook on high setting for about 5 hours. Once the beans have softened, I add minced organic celery, sweet onion and roasted cloves of garlic (all of this fits into less than a cup of fresh veggies). Then I recap the crock-pot and let that simmer for about an hour, on low heat. Right before I have a bowl of soup, I take a fresh field tomato (the vintage heritage type tomato) and slice off a few sections and chop those up, to put on top of the bowl of soup. I also like to have a bouquet of fresh basil, so I can pinch off a leaf and lay it on the soup too. I like my bean soup to be on the 'watery' side, so I can have a few crackers with the soup or a tiny few slices of a rustic baguette type bread (two or three tiny slices). I spread a bit of warmed coconut oil on the crackers or bread, then season it slightly with cardamom or any spice I might be craving (sometimes it's cinnamon or as simple as sea salt and freshly cracked pepper corns).
So this is what I am having tonight: Soup. :balloon:

I took a salad to work for my lunch today, and my lunch hour falls toward the early afternoon, so I was kinda not hungry, even after I got home tonight.
So I just had a small vegan meatless meat patty and drizzled some Orange Miso dressing over it. That hit the spot, and it left me feeling sated.
However, lol, I am going to try to make a soup this weekend and see how it turns out. It's kind of like how one might make a creamy chowder, with corn and chicken; but I'm going to use my vegan meatless meat patties (which taste better than chicken, if you ask me) as a substitute for the chicken. It's also supposed to have bacon crumbled into it too, but I think I will use the vegan 'bacon' instead. You can even add your favorite shredded cheese to it too, for those who can have real cheese, but I think I want to see if the creamy Chao Field Roast brand 'cheese' might work in the chowder, instead. I'm also going to add a trace of liquid smoke to it, so it has that BBQ type taste too. Oh, and instead of using regular dairy milk, I'm using Coconut Cream and Coconut flour, to add toward making it have that creamy type taste and thickness that creamy soups tend to have. Hopefully it turns out pretty tasty. :balloon:

This made a lot of pasta!
So today, to continue my mad scientist adventure, I added a little bit more alfredo sauce, threw it in a casserole dish, and sprinkled two cups of shredded cheese on top. I cooked it for 20 minutes at 350. I now have a recipe for what I am calling Baked Spaghetti Florentine.

Pretty much any pasta dish can be made better with the addition of cheese, so two whole cups, this casserole should be phenomenal.

I took a break around 4:00, sat outside, ate turnip greens straight out of the can. I won't be eating dinner - it was so hot outside. I was out there all day in it. A lot of times, this heat destroys my appetite. Probably eat a couple of freeze pops before I go to bed.
Per my doctor's suggestion, I did buy some Amy's frozen vegan burritos, nuked one for lunch. Only one was enough and it stuck with me. I am leary of the lentil soup or lentil anything. Probably end up trying it later on. I bought some real funky food back in May when I went vegan. I had to throw out quite a few food items. I am still learning.

Stick with the well-known name brand stuff. Gardein and Sweet Earth have super delicious options, I can tell you from experience. I know a lot of folks like Amy's and I've seen it around. I just haven't tried it yet.
Here's a link (https://www.peta.org/living/food/freezer-aisle-finds-best-vegan-frozen-food-products/?utm_source=PETA::Google&utm_medium=Ad&utm_campaign=0518::veg::PETA::Google::Grant-Dynamic::::searchad&gclid=CjwKCAjw5fzrBRASEiwAD2OSV0GMpIW2jlNNeiZ1XTnP 8AVKfw-KojYI9R4ui-4I5zjMLahHYo2aDBoC7h8QAvD_BwE) to some of the best vegan frozen foods according to PETA. They even have oatmilk ice cream. I've never heard of that but it looks amazing.
The only problem with you eating greens from the can is that you didn't put any vinegar in them. Vinegar makes beets and greens taste waaaaay better plus you get colored vinegar when the food is gone. Fun!
Lentils are good for you but if you're not used to eating them, you might be a little gassy afterwards. Winter's good for mixed bean soups.
Tonight I had fresh baby carrots with a creamy Caesar dressing to dip them in, water to drink and some Perdue chicky nuggets, a couple of Outshine coconut ice cream bars and now I had a giant lollipop that I have to store in a cup or on a saucer until I can get it small enough to actually put inside my mouth. It takes me forever to finish one, which is great.

Heh! You crack me up, Gemme! I survived Tuna Taco Coma-ville & slept like a rock (nine hours, or so). :)
I stopped by a bakery, in a shopping district I've been frequently lately. I bought a dozen of the last of their Pumpkin Muffins and Pumpkin Morning rolls (a twist on Cinnamon rolls, but made with Pumpkin, Walnuts, Cinnamon and big ole chocolate chunks that is 92% cacao, organic too).
OMG, it's like "Cake City" eating that stuff. But they're loaded with Pumpkin, Roasted Pumpkin Seeds and thank the good Cake Fairy, they're only loaded with antioxidants and stuff that won't set off the blood sugar alarm bells.
Not sure what I will have for dinner tonight. I was thinking of roasting a head of cauliflower and some Acorn Squash, then make some sort of 'cheese fondue' type dipping sauce for the roasted cauliflower buds, and make a roasted Acorn soup out of the squash. I've got left over Albacore Tuna, so I may have to have the last of it too. Only save it for Sunday Brunch. *lol*
I say that because rainy weather returns tomorrow and there's nothing like a Tuna Taco Coma-ville nap on a Sunday afternoon. :jester:

Instead of a grill I opted for an outdoor griddle. It stated you could cook 8 different ways on it. They weren’t lyin!
My sister has been trying to get mom to intake different forms of coconut oils to “help her brain”. So unfounded but it’s better than other oils. Mom ain’t buying that shit either so my sister gave up (finally!).
I decided today to figure out a way to get mom to consume the stuff and also use it and get rid of it lol Omg! I thru some chopped cabbage (figured I could just toss it if I didn’t like it) on the griddle with this coconut oil, which includes some Omega whatever, it was so damn good!
I’ve always liked cabbage but this oil completely changed the flavor of it. Best I’ve ever had and everyone devoured it. My sister ordered it from Amazon (healthish stuff) it’s in a slender black bottle and a clear liquid (if anyone wants to get down with this stuff).
I’ve been doing some experiments since this griddle came into my life and honestly I eat way better with it around lol.
It’s by Cuisinart and a smaller round version. (Again an experiment I could toss if it didn’t work out.
I think I’m on to something new and seriously delicious.
I am cooking up a storm. I made tuna casserole (really), I have not made it since the 1990's. I even had to look up a recipe, haha!
