Beautiful cool day with lots of breeze. Perfect to bake beans with pork hock. Add a couple of fried eggs and 2 toasted hash browns. Coffee. Breakfast for dinner is nice sometimes.

I've seen the beyond burgers in the store but haven't tried them - sounds like they must be yummy. I've been getting the black bean burgers by morningstar. Maybe I need to try something new!

I will be cutting 2 chicken breasts in half, cutting up smoked sausage and stuffing them into the chicken breasts, season them up, wrap bacon around them and bake in the oven.

Sides are rice and green beans. Water to wash it down!

I've seen the beyond burgers in the store but haven't tried them - sounds like they must be yummy. I've been getting the black bean burgers by morningstar. Maybe I need to try something new!

Combine the two! If I had the ingredients, I would have a black bean burger on an Artisano bun with spicy guacamole schmeared on it and maybe a little sauce of some kind to jazz it all up and something fresh inside, like a thick slice of a beefsteak tomato. The bun should be toasted in the oven, of course.

As for myself, I have food in the fridge to eat up, so I worked on that with some Basmati rice and a kielbasa/mixed pepper/mushroom and broth concoction. It wasn't bad. It was actually pretty good. But it's a bit boring. I remember the tangerine Outshine fruit bars more. Water to drink.

Last night was the same. Angus burger on low-carb tortilla.

I have a couple more frozen burgers I have to eat by the end of this week (I don’t even play with expiration dates on meat). Last night I put smoked gouda on the burger. Wasn’t bad and could be worse.

I had sweet apple chicken sausage with rice pilaf and steamed mixed veggies (broccoli, cauliflower, carrots and peas). Being that that is a fairly bland dish, I added some sriracha horseradish sauce to give it some zing. I had a handful of dill pickle potato chips as well. Soda to drink and a watermelon Outshine bar for dessert.

Not as good a job sidestepping the sweets tonight, it seems.

I had a few too many snacks today so I just ate some cantaloupe and a piece of cheese for dinner. The cantaloupe was awesome! Another gift from the co-worker who has too much produce.

Lemon/thyme tuna on a bed of spinach, chard and kale with a lemon/olive oil dressing.

Was going to have chicken medallions, but it’s too hot to cook. Probably won’t eat the chicken today and may need to toss it out.

Quick..toss the chicken in a skillet with olive oil, put a lid on it..
After it's cooked, freeze the cooked chicken and put the hot pan in the oven until it cools off.

My problem is I want to wait till I'm hungry before prepping and by then it's too doggone hot to do anything. Think I'll do just what you suggest and go and cook it now and can use it later today and tomorrow. Will add some italian herbs to the pan and a little lemon after it's done.

I just needed a nudge :) thanks.

This week my coworker brought me yellow squash so I tried this (https://www.theseoldcookbooks.com/kentucky-southern-squash-casserole/) recipe. Turned out yummy. I had it over rice. :)

I found some high-fiber tortilla wraps on sale, so I bought some. I like them a lot. I made a veggie wrap by using one of these new tortilla wraps. Quick to make, and simply tasty.

For dessert: I am having a scoop of dairy-free ice cream and a special vegan brownie.

I need to make a bunch of Belgian waffles, this weekend. Then, for a quick breakfast or snack or whatever, I can just toast one and slather a bunch of peanut butter or almond butter or name your favorite topping and have that for a meal on the run.

Wednesday is my long day at work. (Leave the house at 5:45 am and return at 7:15 pm.) When I got home tonight I found potato soup waiting for me on the stove. Yum! My dad made it for dinner and they saved me some.... What a treat!

Too tried and achy sore for anything fancy. Just diced avocado, a few halved grape tomatoes, topped with grated shredded cedar cheese and a splash of sweet Italian salad dressing. Water and some coffee I didn't finish earlier because I got so busy working in the back room. Maybe some canned peaches with half and half for dessert.

It’s one of those bag-o-dinner things I keep in the freezer for when I don’t feel like cooking from Trader Joe’s. I read all the ingredients and surprise, there’s actually nothing bad in it. Guilt free convenience.

If it’s good I may have to restock that…

I had spinach miso crunch salad (baby spinach, baby red chard, carrots, slivered almonds and cashews, won ton sticks and miso dressing). It's probably more fatty than the rest of my bagged salads that I like but it's delicious. I had water to drink and myer lemon meringues for dessert. I'm feeling my sweet tooth tonight, so I might have a creamy strawberry Outshine bar as well. More water to follow too.

I feel like saying ribs just to be part of the "in" crowd but I'm really eating salad with Bleu cheese dressing. And wishing it was soup. But I hate wasting food so I'm eating salad. The green peppers kind of look like ribs if you squint.

OMG, I finally caught up on the dinners. Reading them - I mean.

Tonight I had one of my faves: cucumber, plum, paprika, and garlic herb cheese spread.

Also: butter leaf and romaine salad w/ Brianna's poppyseed dressing (BB and I love that dressing).

Bottle of "Me & the Bees Lemonade" - my latest obsession, mixed w/Hal's lime seltzer.

I went to my favorite local restaurant for takeout (it’s kind of my alternate kitchen) and got a fabulous salad. From the menu:

Organic Mesclun and Baby Arugula, Wild Caught Grilled Salmon, Red Cabbage, Cucumbers, Grape Tomatoes, Creamy Avocado, Toasted Sesame Seeds, Ginger Sesa-Miso Citrus Vinaigrette. They left out edamame, that’s in there too.

For dessert I had a big flame peach that I finished ripening in the window sill. 🍑

I'm rummaging thru all the odds and ends in the refrigerator. Tonight the chef (me) will prepare fajitas in the air fryer!

Cut up onion, pepper, slices of jalapeno. Place the cut up chicken on top. It comes out in like 12 min. Top with some shredded cheese and the last of the sour cream. ...oh yeah, I need to chop up green onions I have growing.

Soon, it will be meals of frozen veggies!

I made broccoli cheddar soup from a package at lunch today. Super yummy! It said "family size" but it makes A LOT OF SOUP! I suspect I will be eating it (or bathing in it) for several days. Thank goodness it is so very yummy. :)

I cleaned and pared some fresh vegetables and have them roasting in the oven, with a dash or rice vinegar splashed all over them (two ears of corn, a baby-sized beet, baby red potatoes, one carrot and two parsnips).

Once the veggies are done roasting, I will have some of it with a small slice of Garlic nan. And a small bed of salad greens (sans dressing).

Water to drink and a cup of herbal tea, right before bed time.

For dessert: Pumpkin Cheesecake ice cream (non-dairy).

Homemade pizza. One spicy pork sausage, black olive, green bell peppers, mushrooms and onion. The other spicy chicken sausage with pineapple, red bell peppers and sweet chili sauce. That's my contribution. The rest I don't know what the kids are up to but they assure me whatever it is they've got it under control. If not I'm coming home and following up with some sort of huge, mega sinful, very tasty desert.

Tai Pei Potstickers from Walmart. Either chicken or pork or maybe a little of both. They're nothing at all like true potstickers but they are for what they are, frozen, pretty good. I usually buy Ling Ling brand at Costco. Now after having tried both I can't say which I like better because I like them both just each in their own way. When I make potstickers the plan is usually is to add some type of rice and vegetable side dishes however very often I lazy out and just double the amount of potstickers rather than fussing with anything else. I think that's what I'm going to do tonight. Just those and some green tea. Keeping it light and simple.

My GF was here til this late afternoon. She cooked in the kitchen all morning!

First up: Japchae...a Korean Beef dish with glass noodles, multicolored peppers, onions, thin fried egg, cut into thinner strips...and green onions....KB seasoned with ginger, sesame seeds, soy sauce.....mmmm mmm mmmm

Second up: Mock Alfredo pumpkin pasta, with onions, mushrooms, & seasonings...her mock alfredo is soaked in water overnight, raw, whole cashews, then blended real creamy) rigatoni, and organic pumpkin blended into the alfredo.....finely chopped fresh green onions...OMG....I have enough food for the week....plus she takes half with her for her dinner each night after work.

I am very lucky!!

I've had this salad and really like it. It's pretty much the only thing I can stand Brussels sprouts in because they are shredded nicely. One thing you can do if you find it too 'chewy' is to spread the greens out on a plate and chop them up more finely before you put the additional ingredients into it. The 'mouth feel' might be a little better if the pieces are smaller and more manageable.

Ocean's idea of adding fresh fruit is good too. It'll add flavor and moisture. I don't remember if you are not eating bread now but I like to oven toast a small piece of naan to go along with my salads and use it to mop up the dressing left behind.

I don't eat it as much as before due to the sugar content in the dressing. It has a crazy high amount of sugar--which is why my sweet tooth liked it so much--10g of the 13g of sugar will go directly to my liver and process just like straight up table sugar or HFCS would.

For thread compliance, tonight's meal will be one of four options.

1. Salad with naan.
2. Sautéed veggies with jasmine rice and some undetermined meat form (probably a spicy chicken patty).
3. Turkey dog with Artisano sausage roll, pickled salsa and mustard. It's reminiscent of a Chicago dog.
4. Tacos with a flour tortilla, fake chorizo meat, guac, black beans, chipotle sauce, sliced black olives, shredded lettuce, a dollop of sour cream and fresh pico de gallo.

I don't know which one yet but they all sound good to me now.

I like this salad mix and I usually buy a couple of bags of it to use as filler for veggie wraps. The bags of Sweet Kale Mix I buy usually come with packets of dried seeds and berries and a pouch of Poppyseed salad dressing.


For dinner tonight, I am reheating a batch of roasted veggies: small yellow potatoes, sweet potatoes and parsnips. A small slice of toasted nan, too. I might drizzle some Garlic Aoli onto the veggies, as well. Water to drink. Herbal tea for dessert (Lemon Loaf Tea).

Nope, nope, nope. I'm working on reducing my intake of sugar and while fruit has sugar, it's a different kind than the added sugar found in sweets, so I use my Halos to curb my cravings for sweet stuff. Apples help too, but not as much because they aren't as adorable or juicy as Halos.

When the Halos run out, I usually get Cuties.

February 15th is National Clementine Day.

Clementines are a type of mandarin.

I think that's all I got.

Anyway, tonight I went with the poor man's knockoff of a Chicago dog. I slit and seared my turkey dogs in avocado oil spray and then put them on Artesano sausage rolls with mustard and Pickle de Gallo. They were good. Not great, like a Chi-Town dog, but good enough. I had water to drink and 3 Halos for dessert.

It just occurred to me – even though I write catsup, when I talk about it I say ketch up. Probably in part because I grew up around people who used both but there was more behind it than that. Goodness, it's great. I've been reading up on how some models chip and flake. Those are the kind I purchased in the past and it drove me mad. I did some research after being tempted by you and firegal and found one just right for me.

It's good not only for cooking food but also for reheating it. I still haven't made apple chips or dehydrated any food yet, but this one is definitely a keeper.

Will probably have wings tonight in the air fryer with power greens on the side.

I have to run out to replenish my sauces..I need soy sauce, Worcestershire sauce, BBQ sauce. Already bought minced garlic! What else do I need?? Lol

* The new recipe was supposed to make six generous servings. It made 5 quarts of the stuff so it will be making quite a few appearances. Good thing it tastes great and has all the nutritional goodness that I wanted, lol.

It ‘s Sunday so that must mean I’m firing up the grill

Romanesco (alien) broccoli
Pomegranate seeds

One small serving should be enough.

Plans yesterday fell through, so my son and grandson took me an Asian fusion place for lunch today. The food was so good! My son had some sort of eel log thing. I didn't get that adventurous but my grandson did! This kid eats sauerkraut and lemons and eggplant and refried beans and oysters you name it, and now eel. So far he hasn't turned his nose up at anything anyone has thought to feed him, not once ever and he's tolerated it all very well. His pediatrician says keep at it. I'm glad they're making an effort to go beyond Gerber in a jar, expose him to different foods. His dad was like that when he was young a good not finicky eater, adventurous and willing to try new things.

Anyhow I had crab puffs, tempura shrimp, BBQ pork same as usual but each with a bit of twist, just enough to give a kick without moving so far away from the dish as you know it that you no longer recognized it. The shrimp was so good I ordered a side as my main course. Seeing how much I was enjoying it my son gave me his share too. The BBQ pork was in such an amazing sauce I craved more and more but I couldn't just sit there eating appetizers all day – how rude. My son also ordered BBQ pork fried rice and cashew chicken for us because he knows I really enjoy both. Again different than I've had before but in a way that elevated the dish yet didn't take it so far away you couldn't recognize it.

It was all so good even the tea was the best I've ever had. However best part - my grandson was so well behaved in the restaurant more than just one person commented on it. My son beamed with pride. I worked hard when my children were young to teach them good manners and people would comment on what a delight it was to have dined with us. When they got older, knowing what work it is, how much effort it takes to teach a child manners I made sure when a child was a pleasure to dine around I let those looking after them know. And now people are telling my son just what a pleasure it was to have dined with his son and that's just such a good feeling.

Tonight will be wings. Will put them in the air fryer or on the grill. Buttered turnips on the side.

I had salad and then bread with hummus.

Salad was spinach, green pepper, feta cheese, and italian dressing. The hummus I got free (!) with a promotional coupon. Woot!

I had a "light" Caesar salad and an apple. Water to drink. Apparently, what made it 'light' was that the cheese was missing. The salad still came with croutons. Even bigger ones than in the normal salad so I'm perplexed about that. I still ate them, of course. I'm not a fool. :sunglass:

A slice of homemade Keto Lemon Pound Cake

Had planned on having chicken but lost my appetite for a meal while making the cake.

I used a hand mixer instead of a processor. It came out pretty good. Overdone on the sides and bottom. Next time I’ll double up on the parchment paper. Texture was almost perfect and way better than expected. I used monk fruit for sweetener and it’s the best I’ve tried so far.

It helps that I haven’t had real pound cake in ages.

I had an "ultimate" Caesar salad tonight. What makes this 'ultimate' is that it comes with cheese, croutons AND spices and black pepper. Plus it has the full fat dressing. It's the small things. Water to drink and a Halo for dessert.

I had avocado ranch salad with a 3 inch round of naan and water to drink. Thought I might have a Halo or small apple too but I was full with that so I'm good to go.

Until I learned there were noodles in here. I love noodles.
