Today I made home made chicken and dumplins,I made the dumplins with whole wheat flower...not bad..a bit diffrent but not bad at all.

Tonight Miss Pink made the most amazing chicken tender tacos with salsa verde and all the trimmings! It is our first Easter together and I think it will be our Easter tradition! YUMMMMMM!!!!

Still not hungry, and although I had plans for very rare slices of leg of lamb with pesto mayonnaise on arugula, I had instead a carrot juice/ripe pear/banana/honey/bee pollen/organic yogurt/fresh mint smoothie! It is still very hot in Brooklyn!

We went to Duffys Sports Bar and Grill...I had a NY Strip--well done(and for once it wasnt tough as leather) and baked potato..Jo had Chicken stir fry and the PRince had a Med Rare NY Strip...thhen came home and had lemon jello for dessert

Last night dinner was a whole wheat tortilla with sharp cheddar from Ireland, and tomatoes, avocado, fresh jalapeño, cilantro and sour cream, a nice grounding of sea salt, and a Blue Moon, eaten on my deck! In NYC, summer follows winter!

Im being creative tonight,im fixing Hiwiian stuffed pork chops with grilled veggies.This dish is a trimed down version of a large stuffed pork roast ( or brisquit).Im useing thick cut pork chops off the bone.cut a pocket in the chop then stuff the pocket with choped pineapple ,mangoes and some shreded coconut.. then put a peeled ring of sweet oranged about half inch thickon top...tie this up with butcher twine & dribble spiced rum over the whole thing ...wrap the whole thing up in heavy foil the bake for 20 minits or so,depending on how done u like it.

Skirt steak (arrachera) cut into bite size pieces, sauteed in EVOO with onions, garlic, cumin, red pepper flakes and garlic powder. Mixed in half a steamer bag of corn, grabbed a couple corn tortillas and that was dinner for me tonight.

Dessert is a Jamba Coconut Pineapple Passion Smashin' Yogurt & Sorbet Bar

Seeing as I had all of these farm fresh veggies on hand today, I decided to do my own version of a veggie sub. I bought a 5 grain baguette, an avocado and chipotle dressing then loaded the baguette with sliced tomato, cuke, vidalia onions, red cubanelle, avocado, Boston lettuce, and a couple of slices of cheddar and jalapeno jack cheese, then drizzled it with the chipotle dressing. I had sweet potato tortilla chips with it. :veggie:

Made a tahini dressing and had two small whole wheat pitas with chopped tomatoes, cucumber, avocado and parsley, smothered in the tahini dressing (one cup tahini, one cup water, between half and three quarter cup freshly squeezed lemon juice, two or three tablespoons of chopped garlic, put all in blender until creamy, store in refrigerator but it does not linger in mine!)
I was going to have a Blue Moon but changed my mind!

I too had sweet strawberries for dinner...

I doubt they were a good as Miss Scarlett's....somehow hers sounded beyond the moon delicious....mine, though they are organic, are quite good but I just don't think *as* good...

I did eat them with some fun, long, tooth-pick spear things we got a few weeks ago at a cool import shop (cheap)...they have little foil flags on the top...the one I used has a couple dancing on one side and the words "Song Jung"on the other side in script (they all have that written on them, the pictures differ)...

using the spears made eating the strawberries more fun! :)

We were supposed to be doing Easter dinner tonight bc Rooster just got home from NY...Unfortunately,Jo could not find a ham that she liked :blink: so instead we are doing a fried/baked chicken(she can explain how that works) mashed potatoes,corn on cob,and some broccoli (for the boys)---then easter candy for dessert


turns out Rooster ate at least a half a pig while in NY so he was glad to hear we werent having ham tonight

I spent the afternoon cooking away, something that is rare. Made a super healthy chicken soup from scratch, grilled chicken breast and a salad.

Too bad I was unable to enjoy it. It is all now resting in the garbage.

That is twice that I make a meal, twice that it gets thrown in the garbage.

LOL very soon! I have a 5pm poker tournament, so going to eat early :)

I miss coffee too! Last time I visited NJ (in March) I was running around like crazy and didn't have time for any group get togethers :(

I am tired, been up since 4:45 a.m. and left work at 7:45 p.m. - trying to shake the kinks out of a server that is pretty much hosed. I ate a bowl of cornflakes at 8:30 this morning and no time for lunch.

On the way home tonight, I stopped and got a Hardee's Thickburger Combo. With purpose, I strategically sat off in a corner so I know that no one saw me wolf it down - it could not have been a pretty sight. I had one of those intense, immediate needs. Get the food from POINT A (off tray) to POINT B (into stomach) as quickly as possible!!!

All better now.

Dinner is done, I started with a dijon mustard and honey rub, then let them braise in water for about an hour. Rubbed ground ginger into them and let them cook another hour. Last hour or so, I sliced up a fresh jalapeno, dumped it in the water and stirred. Letting the steam from the water infuse my ribs. The results was tender and yummy, but next time, I'd add a few more jalapenos and I'd put them in the moment the water started boiling.

The default tonight. It is what I have often when I don't know what to eat.

pinto beans on a paper plate, dump hot salsa and chopped up jalapeno peppers on beans, then handful of shredded cheese on top

Nuke it until the cheese is sloppy, then put a spoon of sour creme on it and smooth it all around

7-up to drink

Eating this right now. It does the job. I am not really hungry but trying to fill up some space. I bought a bucket of milk chocolate Blue Belle ice cream yesterday. If I don't make myself eat this real food, I will eat only ice cream for dinner. Want to try and make the ice cream last at least 3 or 4 days.

I took my leftover country ribs off the bone and thin sliced.
I then diced an avocado, 2 plum tomatoes and a jalapeno, stirred them together with a little sea salt.
Heated the sliced meat and then heated some corn tortillas.
I stuffed myself with 3 soft tacos that were so full they were bursting at the seams.

Tuesday night dinner:
My made-up Mexican recipe that I nuke for only about 3 minutes

Wednesday night dinner:
4-pack of tapioca pudding

Thursday night dinner:
Most of a new box of vanilla wafers and milk

I intend to put some thought and planning on my dinner tonight. Hmmm, maybe a footlong veggie sub from Subway. Perhaps Arby's Roast Beef.We'll see! The possibilities are numerous. :)
