I made egg roll in a bowl for the second time this week.


I made embellishments to my recipe that made it even gooder.

Good soy sauce, ginger and garlic for example. I’ve been having it on repeat on the weekly. It’s such a quick dinner too!

It may be the same thing that happens to me. When you sign on and get taken to the default page, go up to your URL line and erase everything after www.butchfemmeplanet.com and hit enter.

Brittany enjoyed the chicken nuggets and mozzarella sticks. She had hers plain.

A big bowl of sauteed veggies over chive and spinach linguine. I topped it off with a spicy chimichurri and a dollop of ricota cheese. So delightful.

Later I will have half a bran muffin and a few dk chocolate covered almonds.

Talk to me about this squash casserole please?

Well . . . okay. There are two different squash casseroles that I make. One is made with fresh squash, fresh onions, and is made from what I would call scratch. It is the more delicious of the two, and it is also more work and takes longer.

The other squash casserole that I make (and the one I had for dinner) uses canned ingredients and is kind of just thrown together. It is pretty good, but in a way that is reminiscent of a cafeteria that my family used to eat at a lot. It is pretty easy and quick.

Are you, or is anyone, interested in either or both of these recipes? I'll be happy to share.

My new cookbook came and I've been pursuing the pages! Last week I made orzo for the first time. It's pretty tasty and easy. Tonight I'm going to make

Creamy Orzo with Asparagus and sweet peas. Now that's going to be a Spring meal for sure!

99¢ for asparagus? Definitely a flashback price. I thought I did well when I got it the other day for $2.29.
I've been subsisting on food bought precooked from my recent shopping center tour. Sweet onion and teriyaki sub from Subway - unbelievably good. Wonton soup. Bbq chicken legs and another sub - beef and provolone cheese- from WinnDixie. I still have a chunk of both subs left. I have a wonderful bunch of fresh veggies in the fridge that I hope I can talk myself into roasting. We'll see.

I found a brand of Lavish Bread made in a bakery up in Washington state, that is not sold in every grocery store but in specialty type grocery stores: I’ve been having half of a Hummus Wrap for lunch and dinner. For my hummus wrap, I spread two heaping tablespoons of refried black beans, two tablespoons of my favorite hummus (balsamic, or garlic, or roasted red pepper, or pine nut hummus) on top of the black beans, then sprinkle broccoli slaw and add a few pinches of sprouts, then a few slices of one portobello mushroom, then drizzle tahini on top of it all. Then roll it up and cut it in half for two main meals.

Pretty yummy and nutritious! :)

Last night I had dinner at a restaurant downtown.

I had an amazing wedge salad and a flatbread with mozzarella, pesto and roasted garlic. And a local lager to wash it down.

Tonight: I have chili in the crockpot. It’ll be ready when I get home from work!

I love making a big pot of chili even though it’s just me. I reinvent it to make different things. Like an omelette with chili and cheese, get some decent hot dogs and have it with that, and, my favorite, make sweet potatoes and put chili over them. Just an amazing juxtaposition of sweet and spicy! 🌶️ I’ve even made stuffed peppers with leftover chili. There’s a thought!

I've been known to make corn muffins that are stuffed with chili. Just fill the batter a little more than 1/2 way, put in a good spoonful of the chili, and then more batter on top to close it in.

My daughter used to LOVE sweet potatoes topped with chili. It was our Halloween night dinner for years.

The temps were so high today, even record breaking, I didn't want to cook.

I shredded a carrot and a piece of jicama, mixed with Asian Sesame dressing. Oh, that was good. I got the idea at TJ's . I saw that and thought, I could make that!

Vanilla Seltzer, love the bubbles!

I wasn't able to eat my breakfast yogurt with fruit this morning. I just put it in the freezer for a treat later.

Dear Dinner Cooks, I finally found a browser that had stored my password. I should change it, shouldn’t I?

Whoa, groceries are so expensive, and since the election, I’ve made some choices about shopping local. But, we are in a relatively lucky position.

I made peanut soup two days ago, and Pete assured me that she didn’t mind if we ate it twice. I didn’t love it, but it was okay. I added tofu instead of chicken, and half the peanut butter. We had it twice for dinner, and there was probably enough for Pete’s lunch.

We went to a farm store yesterday and I bought 6.5 pounds of frozen chicken necks and two frozen turkey wings. We are committed to buying local, and this farm store represents several generations of poultry farmers. ❤️

I got up at 6:00 this morning, and I starting cooking even though we’re going to a seder tonight and Ill probably fall asleep at the table. I’m making chicken soup in two stock pots, and turkey broth for Arnie. I added onions, carrots, parsnips, and bay leaves to our chicken soup, but Arnie’s broth is plain. The house already smells delicious.

Tonight? We’re going to a seder at our synagogue which will start at 5:30 and end at 9 pm. It’s a good thing they kept it short.

I was working from home on Friday so I set up the stockpot and made a nice big batch of stock. Then made soup with mushrooms, kale, broccoli, carrots, celery, onions, and a little bit of chicken. I've had a head cold all weekend so this has pretty much been breakfast, lunch, and dinner.

Same here. I try not to waste anything. Yesterday I baked half a ham and put water in the drippings pan to keep it moist. Afterwards I froze three cups of drippings to make beans and peas with later, and I used the rest to make butterbeans for last night's dinner.

I'm sorry to hear you're not feeling well, easygoingfemme. That's a really healthy sounding soup you made; I sure hope you get better soon.

Speaking of using things to the fullest, when I had my big dog (100 lb pit bull) I used to finish making the stock and then I would strain out the stock and puree everything that was in the pot and add that to his food. He always has mega zoomies on the days he had the final gifts of the stock pot.

I've been craving BBQ ribs. So I bought a slab of baby back ribs. But the same day I couldn't wait, so I got an early bird special at Cody's BBQ. So good!

I came home and have been marinating the ribs I bought for like two days. Well, they made it into the crockpot today. So my ribs tonight, along with fresh sweet corn on the cob and asparagus.

I cheated, I had an ear of corn last night. Again, so good!

I had baby Bella mushroom’s pan seared in evoo: I seared them to perfection and arranged them on a slice of Lavish bread, which had garlic hummus and half a sliced avocado. I seasoned it with some “foxtrot delta tango” sauce (creamy mascarpone cheese with grilled sweet onion). Very delicious.

I’m finally getting over a cold which has exhausted me for a week. But tonight we feast! I soaked TVP in turkey broth and vinegar and poured in a jar of spaghetti sauce. Ill make pasta later.

Between Passover, limited dairy, and not much takeout in our small town, it’s been slim pickings.

I set up my grill station after work today. I'm grilling some veggie burgers while watching the high school crew team work their way down the river. I'll be having a veggie burger with guacamole, tomato, and lettuce on a gluten free bun. I will sit outside and listen to the birds chirp and hope to pick up a book to read out there too. I can not complain about this at all.

We had an excess of parsnips and carrots from our winter farm share, so I sliced them and roasted them with olive oil, garlic powder, salt, and pepper; I threw in a potato and an onion too. I also stuffed portabella mushrooms with bread crumbs, mushroom stems, and parmesan cheese. OMG, everything was so tasty

That sounds so good!!!!!

I made tempeh sautéed with kale and carrots. Seasoned with some braggs and ponzu. Simple and delish.

Our blender came with two tumblers that you can use to make a smoothie or something. These tumblers make it super easy to make a one-meal-size portion of peanut sauce. Tonight we’re having noodles with peanut sauce and bok choi, which we got in our winter farm share. Maybe I’ll roast more of those cockamamie root vegetables.

I got shrimp scampi from Trader Joe’s. Never noticed it before. Perhaps it’s new. Mixed in cauliflower rice and Normandy blend mixed veggies. It was amazing.

For dessert:

My go to has been a banana drizzled with peanut butter and sprinkled with nutty granola. Not low carb, but I’ll take the carbs in exchange for some potassium.

Tonight: god knows. I’ll probably pick up something on my way home. :eatinghersheybar:

I looked for the shrimp scampi at TJ's today and didn't see it! I've never tried it but your post made me want to.

I cooked dinner tonight for my parents and my kiddo and their partner. It's my birthday so we did it up a bit. Salmon cooked several ways to accommodate allergies and preferences, steamed broccoli, and mashed potatoes and a balsamic glaze to drizzle. Our family has like... a lot of food allergies... and we've found that is a meal that almost everyone can eat. My kiddo's partner is super duper picky so they had a grilled cheese and raw broccoli.

Instead of having dessert, I read several versions of dessert recipes and couldn't decide on any of them. Then it was too late to make any of the desserts I have ingredients for. I will start earlier tomorrow.

I reinjured my leg at work the other day so much that I couldn't walk on it and had to be taken away by ambulance to the emergency room to get x-rays. My knee is okay but it's my hamstring and I go see the orthopedic surgeon on Wednesday. Let's just say, I can't say I was dancing the night away on tables on my birthday hahaha.

I’m baking a frittatta. I make one just about every week during asparagus season. I buy locally grown asparagus at the farmers’ coop, kind of like Agway. The frittatta has eggs, parmesan, a couple of potatoes, some onion I found in the fridge, and a buttload of asparagus.

It's a busy week so I cooked in advance last night to cover the week. I was going to grill but it's been raining for a year now... Anyway I made some basmati rice seasoned with lemon and basil, roasted zucchini and yellow squash and sautéed portabella mushrooms and shrimp. Tossed all together it's pretty tasty and I won't have to cook dinner for a few more nights.

I finally gave in and opened the air fryer that I've had for five years. It was never my idea to get an air fryer in the first place, but the boy came home with it one night. I kept putting off opening the box for lack of counter space. But over the last week or so, I've been rearranging my kitchen, and now I have a spot. So for dinner, I had:

- French fries
- a bologna sandwich

Impressions: I was not impressed with the fries, but the booklet said if I used frozen fries, I did not have to use any oil. For fresh fries, it suggested spraying them with Pam. I think next time I will use frozen fries again, but I will spray them with Pam. That will hopefully make them crispier.

After inspecting the air fryer and reading the booklet, it strikes me that the air fryer is sort of a grown-up version of an Easy Bake Oven. It never occurred to me to try to make French fries in my Easy Bake Oven under the hot light bulb, but that's probably just as well.

It's so hot I'm struggling to figure out to eat before I have crew practice tonight. I think I'll do a scrambled egg with some smoked salmon. If I'm hungry after practice (I probably will be) I have a ton of washed and sliced fruit in the fridge.

Made a Cornish game hen in the air fryer last night. So tonight I made chicken salad wrapped in a whole wheat tortilla. (Half tonight, half for lunch tomorrow). Mmmm...I added cranberries and walnuts.

It's been so hot, so I've gone wild with veggie salads. There is some leftover pineapple coleslaw.
I just made a cucumber, red onion, sweet corn and a little left over frozen peas. Mixed it in this new dressing I found at Sprouts. Cilantro Verde. Spicy, just like I like it!

Water. ( I did get the water lecture from my NP the other day)

I just pulled out a Mochi cake from the oven. Trying this cake mix I got from Trader Joe's. I sampled, it's really good and easy to make.

I'm making stuffed chicken breasts with a mozzarella spinach filling. I'm not a fan of turning the oven on, but i will hike up the A/C temp and enjoy a cold beverage.
