It's Passover, so I made an herb roasted chicken, matzo kugel, green beans amandine and matzo popovers. Gawd it was delicious:)

That's too bad. Maybe it's a regional thing. I had great experiences at Red Robin in WA but the ones I've had here in TX are just okay.

Tonight, I am impatiently waiting on my turkey dogs to boil. In the process of said waitation, I'm consuming a small salad and drinking grape water.

well i made up a concoction of shrimp in a cheddar cheesey type sauce with veggies and mushrooms then slathered that on top of some pasta...


i wasn't sure how it would come out but it's all gone.

She Made an early dinner of her famous potato casserole. It had baby red potatoes, corn and broccoli. We added grilled chicken and shredded cheese.

I just snacked on some nachos too with cheese, salsa and jalapenos and having a Budweiser.

Today is technically a new day, soooo for dinner tonight...I just put brisket in the smoker. I am also slow cooking pork for pulled pork sammies. Cole Slaw, Potato Salad, Green Bean Casserole, Deviled Eggs for sides. Lemon Merengue Pie and Red Velvet cake for dessert. All from scratch thank goodness my mom and sister have pitched into help me with the cooking!

Easter brunch, sort of..late ,unch and early dinner...so my girl can be on road by 300pm or so...
Baked bone in, spiral ham
devilled eggs
asparagus with bacon and garlic
new potatoes with garllic and bacon bits
Carrot Cake cupcakes with cream cheese frosting (since NO ONE made me any of those rainbow Mimosa ones...(we won't mention any names, will we smouldering....evil grin!!!)

mac n cheese, peas, corn bread, fried chicken, greens, black eye peas..........baked ham, deviled eggs, some kind of salad stuff, chocolate soup..............and various bottle of wine that were suitable to the occasion....................
and now i am going to go to sleep cause i am full, happy, and................sippin on some of my very own home made lemon drop wine....thats aobut 80 proof :)

Made a spiral honey baked ham, mashed potatoes and ham gravy.
We also had a sweet potato casserole, a green bean casserole, a cheesy corn casserole, a tossed salad, rolls, with my cherry enchiladas for dessert. Keeping the ham bone with lots of good bits (same as clay!) for soup later on... only mine will be a ham and field pea soup.

Tons of leftovers. Wolfz7 had asked me to save her a plate. I saved even more than that for when she gets here on Tuesday!

Tonight was my first official dinner since I got out of the hospital, so I made sure it was a good one. We had beef tenderloin with a baked potato and fresh garden salad. Everything turned out perfect!

I look forward to making my ham bits with some beans sometime later this week. and some corn bread. yum!

last night I had some pasta with yellow squash, zucchini, and turkey in a cream sauce over it. interesting at work..

tonight I think I will make me a leftover ham sammich on whole grain white bread with mayo and tomato and get me a baggie of potato chips! and an apple..

My Fat-Free, Home-Made, French Fries

Ingredients

4-5 Potatoes (Red or White)
Pam Cooking Spray
Lawry's Season Salt
Ketchup




Preheat oven to 325 degrees.
Cut potatoes into long slices that are about 1/2" thick.
Arrange the cut potatoes on baking sheet in a single layer.
Cook for 30 minutes at 325 degrees, then increase temperature to 400 degrees and cook another 30 minutes.
You may turn fries periodically to make sure they brown evenly (I don't turn them and they turn out great!)
While fries are hot, salt them with regular table salt or Lawry's Season Salt.
Optional: Some like to dip them in ketchup while others enjoy drizzling vinegar on the fries.

I butterflied it, because apparently that's my new thing, and

I made what I hope to hell is a yummy marinade.

I've never made duck, though I've eaten it a few times.

I took 3 oz of cubed chicken breast, added it to mushrooms sauteed with basil, oregano, marjoram, sage, red pepper, fresh ground pepper, pinch of salt, and garlic. Then I stirred in about 1/4 cup of homemade Italian sauce (I make a batch, and then freeze it in 1 cup servings), and let the flavors mingle a little and heat up enough to thicken the sauce. I placed this on a plate, then sprinkled it with a little bit of Tillamook mozzarella and some shredded parm, and put it under the broiler until the cheese got just a little brown to it. It was frigging fabulous.

Who needs pasta?

One pan meal of 3 oz of cubed pork sauteed with onion and garlic. Seasoned with cumin, red chile powder, salt, and a dash of my favorite secret hot sauce. Then I stirred in a tablespoon of sour cream and simmered it until it thickened. Served over shredded lettuce, with a sprinkling of shredded Tillamook medium cheddar cheese and some cilantro.

I never know what I'm going to eat until I start throwing things together. It was yum.

Serves 8

INGREDIENTS
4 cups frijoles colados, or seasoned and pureed beans (in Basics/Cooking Techniques section)
16 corn tortillas
1 cup Mexican cream or heavy cream
1 cup Queso Fresco, or Fresh Cheese, or Farmers cheese, or a mild Feta
Avocado slices, optional

Chipotles in adobo sauce, optional

TO PREPARE
Heat a comal or dry skillet over medium heat.

Heat the pureed beans in a medium cooking pot to a gentle simmer.

Taking one tortilla at a time, heat on the comal or skillet for about 30 seconds per side. Take the tortilla with a pair of tongs and immerse it in the bean puree. Place it on a plate, fold it as if it were a quesadilla or a turnover. Drizzle as much cream and sprinkle as much cheese as you like.

You can also top it with some avocado slices and a bit of chipotles in adobo sauce.

A UK Masterchef winner set up Mexican restaurant (there are three now) and when I'm in Convent Garden at the NZ shop, I sometimes pop into Wahaca for one of their vegan (they do vegetarian and will veganise when asked) breakfast wraps and a hot chocolate. Food heaven! :)

Cottage cheese, turkey meat balls, kidney beans and sunflower seeds and a head of lettuce.

Babyback ribs w/applejuice simmered for 2 1/2 hrs. than switched to a broiled pan and basted with bbq sauce. Potatoe salad ,mac salad , fresh string beans.

I love Arroz con Pollo...I haven't made it in soooo long...Now I want it!

Dinner:

Two Portobello mushroom caps, brushed with olive oil, filled with fresh spinach, rosemary, basil, oregano, ground pepper, and sea salt. Topped off with some marinara, and then covered with mozzarella and parmesan cheeses. Baked in a lightly oiled pan for 8-10 minutes at 400 degrees.

Desert:

Peanut butter, of course.

i made hamburgers and brats on the grill with all the fixings this house can handle. Someone requested triple chocolate cookies to celebrate NASCAR/piano Sunday.

I had plans for the groceries I bought but my housemate had pizza ready when I got home, so I had pepperoni pizza and Blueberry and Pomegranate iced tea for dinner and I'm snacking on gummi worms and Runts now.

Mister Bent roasted a chicken to perfection with a lemon and herbes de provence rub. Wild rice. Mixed greens (turnip, collard, mustard and spinach) with mushrooms. A gin and tonic. Chocolate pudding for dessert.

I love Arroz con Pollo...I haven't made it in soooo long...Now I want it!

Dinner:

Two Portobello mushroom caps, brushed with olive oil, filled with fresh spinach, rosemary, basil, oregano, ground pepper, and sea salt. Topped off with some marinara, and then covered with mozzarella and parmesan cheeses. Baked in a lightly oiled pan for 8-10 minutes at 400 degrees.

Desert:

Peanut butter, of course.
