Tonight im fixing stuffed bell peppers in red sause,skettie for my son,a salad for me(wish I could have skettie but the carbs are a no no..)But I can darn well eat the stuffed peppers cause I didnt use bread products in the stuffing.

I'm at a plateau in my HCG diet so it's 6 apples and coffe today...that's it...unless I want some Yerba Mate tea and I don't! :tea: I can have all of that I want but it's not the best tasting stuff...

had a small bowl of Chicken Enchilada soup, with crispy tortilla strips, chopped tomatoes, shredded cheddar jack cheese and a tiny dollop of sour cream on top. Also had 1/2 of a grilled cheese sandwich.

It was on the cool side here today, fall weather. I love a good homemade soup in the fall and winter!

I am going to have to look up my old recipe for Louisiana Gumbo, and make a big pot of that soon. Yummo!

It's lemon frozen yogurt with a lemon swirl and a lemon cake crunch

Took an hour to decide, is all :)

Tonight it is finally the first night of a whole new and since my hun has arrived back in the city after being away for three whole weeks - I have decided to cook dinner for the two of us. We will have a medium rare steak with vegetables and for desert I baked a whole cheese cake yesterday. And accompanying with the steak we will enjoy a great bottle of champagne from the last champagne delivery (http://www.serenatawines.com/Champagne) I received from my hun as a kind of 'I miss you' - gift after one week being a goner. :)

you do not believe how happy I actually am to have my hun back... I know that I will enjoy cooking tonight.

Chicken Club with ham, swiss cheese, onions, lettuce/tomatoes

it was almost a foot long lol so I had half at lunch and half last night after work... Mmmmmm awesome!

I do a version with butter beans, courgette and aubergine - a great Autumn/Winter dish.


Tonight my cousin is doing a vegan fry up with vegan sausages, bacon, tofu scramble (for me), homemade baked beans and toast.

......Dinner will be ready at the sound of the smoke alarm! LOL!

I made extra vegan Pain au Chocolate for dessert when I was doing the party food, lol!

A very, very dear friend..who owns the mexican place I dine...sends me two huge, hot plates of freshly made Mexican foods along with a huge chef salad and a large glass of Southern Sweet Tea daily!!! Free of charge...as she knows what I am going through and facing right now...I am blessed with many angels...smiles

browned hamburger meat (or turkey whichever you have), 1 can each of rotel tomatos, diced tomatos, ranch style beans, light kidney beans, & corn with a taco seasoning packet & a hidden valley ranch packet. Mmmmmmmmmm let that stuff simmer a couple of hours ~ delish!

and good ol' Jiffy cornbread :)

This was delivered to me from my favorite local place by my long distance sweet girlfriend. We cannot spend my birthday dinner together but she wanted me to have a nice dinner for my birthday! That is really sweet!

...but as the day progresses, the sun is cooling down, and it's getting crisp & chilly - soup weather for sure.

I've got all the fixin's for either turkey or chicken soup - so not sure which I'll make. Am also thinking of making home-made butternut squash soup. Last time I made it (my first time), it was so incredibly delicious, it was orgasmic! lol, so I may just defrost some of those butternut cubes I froze a couple of days ago...hmmmm, w/ground nutmeg & light cream, yummo! I love to cook, and eat as well! :)

I'm currently on the HCG diet, but tonight I went rogue. I went off-diet and went out to eat at the best little Mexican Restaurant in downtown OKC, called La Luna. It's lesbian owned and a good portion of the staff are gay or lesbian too. It's between Harvey and Walker on Reno.

Anyway, what I ate, was a cheese chile relleno (sp?)

I started early this morning (who has time to cook with football on??!!) and made Charro Beans. We will probably have some fresh tortillas from a local market with some homemade salsa and maybe some rice. Simple, yet very delicious.


Recipe: Charro Beans
MAKE-AHEAD
1 1/2 pounds dried pinto beans, picked over and rinsed
1 quart low-sodium chicken broth
3/4 pound thickly sliced bacon, sliced crosswise 1/4 inch thick (I used some smoked pork for flavor not bacon this time)
16 garlic cloves, peeled
3 large jalapeños—halved, stemmed and seeded
1 tablespoon dried thyme
1 tablespoon dried oregano
2 large bay leaves
Kosher salt and coarsely ground black pepper

In a large pot, cover the beans with water and bring to a boil. Remove from the heat, cover and let the beans soak for 1 hour.
Drain and rinse the beans and return them to the pot. Add the broth, bacon, garlic, jalapeños, thyme, oregano, bay leaves and 2 quarts of water and bring to a boil. Simmer over moderately low heat until the beans are very tender, 2 hours and 30 minutes. Discard the jalapeños and bay leaves. Pick out and mash the garlic cloves, then stir them back into the beans. Season the beans with salt and pepper and serve.
MAKE AHEAD The charro beans can be refrigerated for up to 2 days.

We had fast fry steaks, potatoes, green & yellow wax beans with carrots in the frying pan with margarine. Also my son's salad consist of romaine lettuce, croutons and bacon bits (still trying to get him to have other veggies in there, but at least he eats that ;) ) My salad had romaine lettuce and a mix of other leafy lettuce, baby tomatoes, green & red peppers, cucumbers, bacon bits and croutons. oh and shredded cheese ;)

I love rabbit! After you roast it to seal in the juices, you can use a bit of sauce without making it into a stew (a bit of Dijon mustard and white wine, and cream at the end gives lovely results, with fresh thyme if you have it). The meat can get dry very quickly, so adding a wet agent helps, but it does not have to be a stew.

I love to come to this thread and drool, especially when I'm hungry. But rabbit doesn't appeal to me. Where did you get it? Does Walmart sell rabbit?

I love to cook rabbit , I learned to cook rabbit a few different ways . It depend what country I was living at . Since rabbit it's sort of plain and I am baking it, I add small piece of pork or bacon just for enhance the taste . If I am making a stew , I add spices .

I must say that in every country rabbit taste different , I believe due to the feeding . I never looked it as a skinned cat , because I just couldn't do it , but thanks for a visual ;)

About that Subject Line for this post ... LOL ... I really couldn't help myself ... just had to do it!

Now, back to correct content ...

I put together A FOOT wide (there's your 12") thick burger in a pan, chipped up onion, bell pepper (red, yellow and orange bell peppers) on top of it. Then dumped ketchup, bbq sauce, worstershire sauce and salt on it. I capped and tied it off with another burger (same dimensions) by crimping their entire circumferences together. Cooked it slow until done, then fired up the heat until it became a little crunchy on the outsides. Ummm, it was just what I wanted. Plus, there's enough left over for an addional meal. My dogs had boiled chicken filet breasts. I cooked them a pound of rice (hey - Kelly and Kevin are large dogs with large apetites) and a can of chicken noodle soup with a can of water for flavoring. Mixed chicken, rice and soup together before serving it to them. Everyone in Brock's household was very happy with their evening meal. :)

I roasted it, then crammed that little sucker into the crockpot with a box of vegetable broth and fresh herbs. Sage, thyme, parsley, onion and some paprika. Later I added some potatoes because Kat doesn't like carrots.

Anyway, it was delicious and she ate it. We had it tonight over brown rice.

Vlasta -- Anything is better wrapped in bacon! I think if I was going to roast one to just eat that way, I might do a nice bacon wrap on it.

HH -- I got it at a store that sells locally grown meats. I don't know if Walmart sells them or not. Probably Whole Foods, but it will be expensive. This was $14.00 and I think it was a little over two pounds.

Crumbs! That really is expensive. We get rabbit shot on local farms for crumpence*. Glad you enjoyed the bunny :thumbsup:

yes , absolutely , I do bacon on certain things , maybe not healthy , but if you need a flavor this is way to go . Majority times , I do cook a healthy food from a scratch . As much I tried , I never got to use to a box meals . it's not for me . I don't measure , I just cook .

It's so easy , to put a healthy dinner together , not expensive and not a junk a farmers market it's my best friend :)

hi I just noticed your post . I am a little slow ;) I can completely relate . I am weekly at a farmers market and load on vegetables and fruits . I couldn't function without it .
I also buy a lots of fresh fish , but I am obsessive if they are domestic or from other country that has been kept in containers full of antibiotic ,etc .

In my case , I don't do it for weight control , I am trying to keep my weight , but I just love a natural homemade food . My body feels better .

hi I just noticed your post . I am a little slow ;) I can completely relate . I am weekly at a farmers market and load on vegetables and fruits . I couldn't function without it .
I also buy a lots of fresh fish , but I am obsessive if they are domestic or from other country that has been kept in containers full of antibiotic ,etc .

In my case , I don't do it for weight control , I am trying to keep my weight , but I just love a natural homemade food . My body feels better .

***couldn't agree with you more... i dont go to a farmers market, but my local independent grocery store is just as good.

Goat cheese Brie, to die for!
Old fashioned apple (dark golden rough skin)
Handful of pecans
(from the farmers' market, except the wine)
