I had Subway. BLT with everything but onions and hot peppers and with a line of vinegar and a line of chipotle Southwest sauce. They were out of white macadamia nut cookies....bastids....so I settled on an oatmeal raisin and the last gingerbread cookie (which was freakin' delicious).

Fajitas marinated in orange juice, lime juice/lime zest, brown sugar, pepper, basil, cumin and a pinch of steak seasoning. It will be marinating all day.

Spanish rice and homemade tortillas, homemade salsa to go with.

mmmm.. and sweet tea to drink.

I can't believe it's almost Christmas and it's so beautiful and warm out!! I'm gonna take this opportunity to grill ribeyes that have marinated in cracked peppercorn sauce and grill portabellas...I'm baking a regular potato for my roomie and a sweet tater for me...slaw made from fresh, local, sweet, crunchy cabbage and a small container of leftover tater salad that has chopped up tiny sweet pickles and hardboiled eggs.

For dessert...I just may treat myself to a McD's frozen caramel coffee. (I've been a good girl and my sugars have been under 135 all week!! Happy dance!)

I went grocery shopping late this afternoon and knew I would not want to cook afterward, so I got the Deli folks to make me an Italian sub on wheat with romaine and tomato. I brought that home and threw some Sriracha Sauce on it and called it dinner.

Last night I had an assortment of sauteed greens with some cornbread and it was delicious. I don't have cornbread often, so it was a real treat and very tasty. The cornbread was homemade and dense (not sweet and cakey like Jiffy Mix :seeingstars:)

First the good news:

I didn't make the awful tuna helper...

Bad news:

I made ramen noodles instead (shrimp flavored...which tastes NOTHING like shrimp) I added in some frozen veggies to make it healthyish.

For dessert:

apple sauce sprinkled with cinnamon and a handful of raisins...cuz the texture of apple sauce is icky to me...

BUT

I'm hungry now :|

I over cooked some rice yesterday...totallyyy forgot about it...it was mush :(

I have a texture thing and couldn't eat it. My friend suggested making rice patties and frying them...soo... I added curry cuz I was having a curry craving and some herbs and spices...fried it in olive oil ...and it was TASTY...

So...tonight I think it will be more of the same with a side of the canned black bean mash stuff I loved so much. (Made by Bush beans...it's their Cocina Latinas line)

I found Swiss Rolls for .75 cents. :hangloose: Either those or apple sauce for dessert...

We had a crew here for dinner...so... the cooking included

cheese/cracker/summer sausage platter, deviled eggs, chips and dip

ham (baked with brown sugar glaze), brisket (grilled for 5 hours on low), mashed potatoes, home made mac and cheese, pasta salad, green beans, cauliflower and broccoli, home made rolls

desserts: pumpkin pie, a chocolate cake that looked like a snow man, double chocolate cookies with a peanut butter cookie middle and marsh mellow wreaths (like a rice crispy treat but with cornflakes...the kids helped in the baking)

Late lunch/ early dinner

I made lentil stew. I have had a hankering for it and finally I made it.

I don't really measure but in a nutshell...

I boiled water and added an onion soup mix to it. Added the lentils. Let them simmer. This time I added a little rice; the impulse struck and I went with it. Added about a third of a bag of frozen broccoli, cauliflower and carrot mix. Sprinkles of cumin and garlic/herb spices and voila. Linner is served :)

I had a late lunch last night so I didn't really have dinner to speak of and tonight's going to be similar.

I'll be having a linner/dunch of smoked ham, mashed potatoes, black eyed peas, mixed greens AND collards, yams, Mexicorn, cornbread and glazed apples.

I'm happy just thinking about it. I can't wait for the apartment to smell like fresh cornbread and greens!

Caribbean food (forgive my spelling...maybe) so I had jerk chicken over linguine...it was soooo good and spicy. They threw in veggies and garlic bread on the side. It was a good linner :)

cleaned out freezer abit.made soup threw in partial bags of frozen veggie,white sweet potato,kidney beans,2 large sweet onions,hamburger, beans,garlic ..... simmered and added a blip of cottage cheese as I served myself yum!

I ran like a crazy lady today so I picked up a four cheese n spinach pasta thing from Trader Joes....then had some jalapeno cheddar summer sausage I got at the farmers market...put it on crackers. It was GOOD.

Summer sausage is new to me. My friend served it at New Years and I rather like it....

I fix'd loaded calzones tonight.I included fresh cut pepperoni, onions,red..yellow and orange bell peppers,five blend Italian cheese some rough chopped garlic I steamed in foil with olive oil,black pepper,salt(a little bit)and butter,not to forget lots of sauce.Bake till crusty golden brown.A glass of red wine,the only thing missing was flowers and a lady to share it with.

It took me a couple of days to make it, because the beans have to be washed, then soaked in a vinegar/salt bath, then washed again, but I made ... a spicy winter chili:

Rosa de Jamaica Chili

Black and Pinto beans
Quinoa
Organic Brown Wild Rice
Walla Walla Onion
Organic Tomato Paste and Organic Crushed Tomatoes
Jamaican Chili's (Be careful, they're hot)
Rosa de Jamaica sauce
Organic Raisins
Sweet Baby Ray's BBQ Sauce
Minced Garlic
Cinnamon
and finally, a tiny splash of pure Maple syrup.

It is incredibly delicious.

(Eat small portions of this chili otherwise you might get a side ache.)
