I have been contemplating what to do with last night's leftovers. Finally a solution that doesn't make me eat the same meal 2 nights in a row (not that, that's a bad thing). I'll take a can of black beans and make refried beans, fry some of the corn tortillas, take the Mexican 4 cheese blend out of the fridge and what's left of the Pico de Gallo I made 2 days ago. I also have one small piece of arrachera (skirt steak) that I will cut into pieces and pan fry. Add it all up and I'll be having tostadas tonight...yum!

.. after that a protein shake, and a snack later at work of probably a pb and jelly sandwich and a banana.

I lied. . I had some spinach cheese pizza, crunchy.. and then a piece of pecan pie and a banana at work at 4 this morning. I think that was my dinner cause I didn't eat breakfast till 3 p.m. when I woke up. :| gotta love working overnights! .. and my pb and j sandwich has sat there now twice, I feel bad. :p

tonight I'm thinking burgers, fresh jalapeno poppers wrapped in bacon and some baked beans. . and beer of course cause it's my weekend off and I want some!

im on a kick apparently..... i had roasted peanuts in the shell....with salt....and turkish eggplant with pita bread...i get stuck on stuff at itimes.... ohhh i just remembered...i got a hazelnut wafer cookie...or a skinny cow candybar...cant remember which...hmmm

The other half of the sandwich from lunch on the road. Ham and Swiss on rye with lettuce and tomato. It was good, even dry..lol, from Panera. Also traveling with a dozen cherry vanilla bagels.

I'll be making chili tonight and baking some pumpkin filled croissants.


For 32 mini croissants use 2 tubes of refrigerated crescent rolls. Roll each crescent roll out and cut lengthwise in 2.

1/2 block of cream cheese
1 cup of canned pumpkin
1 - 2 T pumpkin pie spice
3 - 4 T sugar (granulated or powdered)

Beat together until fluffy and creamy. Mix together 4 T sugar and 1 T pumpkin pie spice and roll each pumpkin pie croissant in it. Bake at 375* for 15-18 minutes.

I'll be trying half of them with cinnamon instead of pumpkin pie spice, see what happens.

Tonight we are having leftovers from the Halloween supper I cooked over the weekend. I made Mummy Meatloaf (meatloaf shaped like a mummy with 1 inch strips of mozzarella cheese over it to look like wrapping and some olive eyes) and roasted ghost potatoes. (Mashed potatoes squeezed onto a cookie sheet with a frosting bag and decorated with 2 peas for eyes.) YUMMMMM!!

I threw a whole chicken in the crock...with garlic and herbed butter under the skin...added some chicken broth and more herbs, some carrots, onion and celery for good measure. I've had it on high since this morning...I hope it comes out good....smells purty nummy right now!

Well, I just made homemade tuna salad sandwhiches for both my son and I - one jar of albacore tuna, 1/2 c. of sweet relish, minced onion and celery, seasoned with sea salt, cracked pepper and a skosh of fresh basil leaves and I had some sweet Hawaiian rolls - so I made a bunch of them for Mr. Ed and just a couple for me.

For supper tonight, I'm working on a homemade chicken soup.

I cook a whole chicken until the meat falls off the bones; then I let it cool off and separate the bones from the meat, save the broth, etc. Around 4 o'clock today, I will commence to slicing up some organic carrots, parsnips, celery and fresh basil and rosemary, and a whole sweet onion (or two) and add all of the vegetables to the broth and the de-boned chicken and add about a quart more water to it, then let it simmer until this evening. It should be very delicious! I might just add a bit of minced ginger to it too and of course, season it with sea salt, cracked pepper. I might even make some homemade Buttermilk biscuits. :)

My family's Halloween tradition has always been to have a big pot of homemade chili on the stove, to eat either before heading out trick or treating, or after. All my kids and grandkids have moved away now, and D is out on the road. I debated long and hard whether to make the chili today, since it is just me here tonight. :(

Yes, traditons mean a lot to me, so I made the chili. yummmmmo!

so now I have 2 freezer bags filled with chili, for when D comes home, or the kids come to visit.

(I heard from my youngest son tonight. He was out trick or treating with his kids, in colorado springs. He told me that there was a pot of chili waiting on the stove for them to get back home. It just warms my heart when my kids continue on with the traditions that I had had when they were young, now with THEIR kids!)

I had yummy guac with white corn chips and lentil soup. Once the chips were gone, I dipped a spoonful of the guac in a scoop of soup and it was heeeeeaaaaaavenly. I'm so gonna dump it in there next time.

Dessert? Spiced pumpkin ice cream. Yum!

My favorite baby butch and I made dinner together just for the two of us: Tilapia sauteed in butter and olive oil (she seasoned them with Adobo and put them in the pan), and mashed white sweet potato (she washed it, poked it about 793 times, then put it in the microwave). Dessert was birthday cake left over from her big sister's 17th birthday.

We got an Excellent deal at Sam's Club yesterday on chicken breast tenderloins for 1.97 a pound..so it will be something made with chicken tenderloins...probably oven fried tenders , au gratin potatoes, and green beans :)

Been awhile so here's an update :p

we enjoyed dinner with some friends of the BFP site at a delish mexican restaurant, night after that I made chicken alfredo. last night I had tuna sandwiches with tuna, mayo, lettuce, onions, and cheese. tonight I'm making ravioli with meat sauce and cheese bread.

Have not decided it is a toss up between homemade Chili, Hamburger helper, or sauteed garlic scallops over linguine...since I just took out the meat from the freezer thinking Chili will not happen and the other two will depend on what time I get I home and how overwhelmed, tired I am when I do.

I just put in a tray of root vegetables to roast (turnips, sweet potato, carrot, parsnip) with a ginger dressing.

If I can get to the market for provisions I plan to put together a gluten free/vegan version of my grandma's cornbread casserole. Been craving that for a few weeks. Want to see if I can tweak it to fit my dietary preferences though...

If it turns out to be a perfect world I'll also get time to put together some split pea soup.

I put a beef shoulder roast in the crock pot before I left for work today

When I get home I will make mashed potatoes, corn, and gravy made from the roast broth, and warm rolls to go with the roast.

Yup, its chilly today in Florida so we are having comfort food :)

I made tuna noodle casserole last night...it will be dinner tonight also.... I forgot to ask Teddy to get potato chips for the topping (yeah...I'm old school) sooo I made tater tots to go with it....

I had a Stouffer's frozen dinner - breaded chicken and mashed potatoes with gravy - the meal was 340 calories. I usually dont like frozen dinners, but this was so good, I scarfed it down in 5 minutes. lol

I then had a strawberry shortcake flavored yogurt for dessert (90 calories). :)

I found baby asparagus at my coop. It makes NO sense this time of year. I decided to instill the "don't ask don't tell" policy and indulge. I usually don't cave like that until midwinter (do buy something so obviously non-local and out of season)
But that sauteed with some baby bella mushrooms tonight was so good.
Paired with some flounder that I baked with lime and chilies.

Munster cheese, tomato and lettuce sandwich on oat bread with Gulden's mustard. I've had it three nights this week (one night I went out with a friend), and every night last week. I get into patterns. I would say "rut," but that has negative connotations. I like my patterns. Right now I'm really into slicing the cheese really, really thin, and using so much iceberg lettuce each bite is big, sweet, crunchy and juicy, and then there's the tangy aftertaste of the mustard. And I slice the sandwich in half first. And eat it in front of the TV.

I cook quite a bit but today I was tired after going crazy with housework and getting my winter garden set up. I made some yummy mustard greens I pulled up from my pasture. It smells good. It looks very 'homemade'. The taste test is coming!

Oh and for those who asked...Tzatziki Sauce, (I think it is pronounced za-ZEE-kee...at least around here it is) is that yummy cucumber yogurt sauce that is most often served in Greek restaurants, also on Gyros, but is quite simple to make at home.

Luvs made steamed green beans, jasmine rice and chicken sauted with onions and garlic. Yummy.
