I cooked after a long hiatus away from the stove...

I found a recipe for a sriricha chicken that sounded awesome. I thought I bookmarked it but...I didn't. So I found a similar recipe and winged it. It.was.awesome.

I started with oil in my cast iron pan...need a big pan for this...

Sliced unpeeled potatoes thin..put them in the oil on low. Made the sauce which was 1/4c brown sugar and 4tbs sriricha sauce. Cut chicken breast x2 and seasoned them with salt and pepper. Dipped chunks of chicken in the sauce and placed it in the pan with the taters. Added fresh green beans and a little water. At the end I added sliced mushrooms.

Literally this was awesome sauce.

I just wish I had minced garlic to start with. And I wanted to add frozen pepper blend but my pan runneth over. I need a larger cast iron pan.

I purchased a pack of sugar & nitrate free beef franks with my last meat order to try and see if I like them or not. I think I will run to the store and get stuff to make coleslaw and have slaw dogs tonight.

Leftover mac and cheese mixed with ham and green peas. It wasn't great, but it was passable. I will say, I don't think the $3.99 box of Cracker Barrel mac and cheese is that much better than the $.99 Kraft mac and (powdered) cheese. Certainly not $3 better.

You know, I have two of their boxes that I haven't used yet. The cheddar Havarti and the sharp white cheddar. Was one of those what you had? I did have another one, the one with bacon in it, and that was pretty good.

The Cheddar Havarti is the one I tried. I was thinking if it goes on sale, I might try the bacon one, so thanks for the review.

Well heck! When I got to the store where I purchase lo carb bread from, they had already closed. :( Oh well, saves me from having to make mayo today.

So, I will have a couple of the dogs along with a caprese salad,(I'm on a kick) and maybe some creamed spinach, or a sweet potato. I am much too hungry to care which one of those two I have. Lol!

I had a late lunch before I went hiking..

I made the siriracha chicken again. I'm hooked.

This time I seared the chicken in olive oil and then started some green beans in the pan leanings..also used the pepper blend (frozen) and made rice on the side.

I think this sauce would make awesome wings in the crock pot...and I think it's Asian element could be brought out with pineapple..teriyaki sauce...that nice Thai sauce...maybe some peanuts and ginger...

Its just Damn good

Dinner was frozen veggie lasagna from Trader Joe's cuz I wanted something quick.

I had a sub last night. Subs are kind of 'splurgy' so I only had them put on half the meat and no cheese with a ton of veggies. I asked for light sauce but didn't get it because I'm me and he was a teenager. I've got to remember to speak to my audience.

So, I wound up soaking up some of that with napkins but the sandwich itself was really good. I was still peckish afterwards so I had the last of the Dorito crumbs (doesn't count if none of them are whole pieces, right?) and a handful of white cheddar puff Cheetos.

I was having major sugar cravings probably triggered by the bread of the sub so I had some fresh fruit too and told myself 'NO MORE' and went to bed.

I made "pulled pork". I think some things are best left to people whose grandparents and great-grandparents passed on the recipe.

My pulled pork tastes like hunks of dried ham coated in bbq sauce. It's ok but I doubt anyone south of the Canadian border would call it "pulled pork".

I'm a total carnivore tonight----look away vegans and vegetarians----and, thankfully, it's cooler than it has been so I was able to use the stove without melting myself. I had hunks of nice thick sirloin, seasoned perfectly, with just the tiniest bit of steak sauce and steamed broccoli. Water to drink.

nuked a can of Luck's brand pinto beans with shaved colby cheese on top

drank nearly a quart of milk

ice cream for dessert in a glass of chocolate milk ... already stirred up Hershey's liquid chocolate in there first ... hmmm, just talking about the ice cream inspires me to get up and make another one ;)

I threw this together when I was cleaning out stuff from the refrigerator ...

Spaghetti squash with baby portobello sliced mushrooms sauteed in butter with garlic and pesto, spicy Italian sausage that I sauteed the onions in the drippings of.
I tossed all that together and put it in a sheet cake pan with provolone on top and baked at 400 for 15 min til the top browned and bubbled.
Not bad and it will feed me for the rest of the week for lunch

Dinner was meat sauce with homemade pasta, ( bought locally), with some shredded Parmesan. What made the night was some peanut-butter swirl ice cream in a bowl with a spoonful of additional melted crunchy peanut-butter in the bottom of the bowl!! Talk about diggin your ice cream! hehehehe

and yes...it's pretty much a pot pie..it was a recipe I found a couple weeks back that I really enjoyed. Of course I never stick with the recipe..but it's a good base.

Today I made a butter bean and spinach in a tikki masala sauce to be served with white rice. I also made corn salad, chick pea salad and pasta with a red sauce.

I make several things early in the day because it's to damn hot to do it later. This way I have choices, only need to heat it up (if required) and the house stays cool.

Not sure if it's Portuguese in nature but it's a supermarket soup. It's very good. It has kidney beans, potatoes, chourico sausage, kale, cabbage, onions, carrots, chicken broth and a ton of spices and additives and weird things like nonfat dry milk.

But it's delicious.

Tonight, I am making steamed broccoli and having some sirloin and make some mashed sweet potatoes.

Actually, it's not thick at all. Quite light and brothy.

last night's menu ...

Went to the Farmer's Market yesterday and bought green tomatoes. I was too lazy to fry them last night so I defaulted to my alt method.

I took two and sliced into fourths - leaving the fourths attached at the bottoms ... put salt, pepper and a pat of butter in each opened flower. Nuked until just a tiny, tiny bit still crunchy.

My intentions are to fry an enormous batch this weekend. They are too much trouble to cook only a little portion ...

They are almost as good as an organism. *wink*

I bought a super lean beef heart for making jerky, the other day. Today while cutting the strips for jerky I sliced up a few chunks and set them aside. For now they are marinating in the fridge, later this afternoon they will be good in a stir fry with some fresh veggies and maybe a sliced sweet potato or rutabaga.

Here's just a few things I will NOT be having, because I just found out that one of my favorite restaurants, an old-timey cafeteria, closed. Yesterday was their last day. So I will not be enjoying:

- Salisbury steak
- New potatoes roasted with a big pot roast and serve with the au jus
- Stewed tomatoes and okra
- Eggplant souflee
- Squash casserole
- Turnip greens with cracklin corn bread to sop up the pot likker
- German chocolate pie
- Made from scratch banana pudding, including the custard itself being made from scratch with whole milk and meringue on top

I guess I'll just eat cereal while I'm in mourning. :bigcry:

Sonny boy has been doing the grocery shopping for me cause he can get in and out of the store quicker than I can manage to get out of the s.u.v., into the handicap cart then get started shopping. He has gotten some of the wrong stuff before but really out did himself this time, from now on he will just have to wait till I get into the car then do the shopping myself.

This morning, I quick seared some hot Italian sausage.

Added all the above with some diced tomatoes, paste and fresh oregano, sage, rosemary to the crock pot.

By the time I get home, "well~la", chunky pasta sauce!

I grilled some drumsticks this evening and I am having the meat from a couple of those on a salad of romaine hearts, kalamata olives, pepperoncini slices, grape tomatoes and grilled peache slices. In place of dressing, I poured a little of the pepper juice over the top of the salad. Good Food!
