Tonight it is a friend's pre-wedding party, I'm making:
Thin chicken cutlets, with a tequila lime dry rub, marinaded for a day in olive oil, minced garlic, red pepper; grilled.
Fresh guac & chips
Zucchini two-ways
thin sliced rounds marinaded in a parmesan, garlic dressing - grilled and topped with a tiny sprinkle of aged pecorino romano

I had a nice salad before work....then i was feeling peckish....while rooting in my purse for a jolly rancher, I found some trex mix I had gotten at trader joes and forgotten about....lol my purse is like mary poppin's...you just never know what you're gonna find in there :)

I made a huge pot of black bean soup. This stuff is da bomb! It has diced tomatoes, chili powder, onions, garlic and shredded pieces of fresh collard greens. I will have a bowl of this along with some hoecakes.

Tonight it was fresh corn on the cob basted with butter/lime/chipotle, chicken tenderloins w/ dijon mustard, salad with sour cherries, walnuts, and a raspberry vinaigrette. Still contemplating dessert... maybe a ripe pluot.

I enjoyed peel n eat shrimp, salt, pepper and garlic shrimp, a couple chicken wings, spring rolls, hot and sour soup, sushi. strawberry and vanilla ice cream for dessert.

I fixed a salad,a quatrerd hard boiled egg,greek olives,green olives,cuke slices with cherry tomatoes along with spring greens mix.A vinniagerett dressing with garlic herbs along with evoo...a big glass of unsweet tea.
a crock pot (slow cooked overnight) roast with couple bags soup veggies in it (carrots, taters, onions, okra, peas, limas, and corn)

We/we split a marinated chicken breast, grilled, and mushroom caps, stuffed fresh basil, fresh garlic, and a tiny, tiny amount of a smoky parm cheese,

Tonight we have a lotta company coming over so I'm making chile relleno casserole and a big salad with everything in it. :)
Mom took Sis, nephew and I out to eat.
I had creamy coleslaw, pasta with garlic/spinach/roasted peppers and mediterranean chicken. Had a bite of brownie and some of mom's dessert with glasses of water lol
I told SS (f) now I feel like a Fat French Canadian lol

I'm making risotto even though its way too hot to be standing over the stove for an hour+
I bit the side of my tongue earlier this week and it has since turned into a canker sore and it bloody hurts when I eat (and when I yell at bad drivers). So, semi-solid foods it is, while it heals.
And I fancy something 'comfort food' like.
I shall then sit down with a bowl of prosciutto and arugula risotto, a glass of sauvignon blanc and Helen Miren on netflix. And I don't care if that classifies me as 'middle aged'. (well maybe I do care :| but that is the way it is tonight)
I went out with a group of people for a meeting. I had fried chicken, baked potato, coleslaw, and a glass of Pepsi.
I have chicken legs marinating in honey garlic sauce and will prepare veggies and make a salad for my son and I ;)

I was trying to decide what to do with some country ribs I thawed out. Finally decided to make a rub with brown sugar, chili powder, spicy brown mustard and honey. After I slathered up those ribs and baked them totally covered up with foil, low and slow, as they cooked the smell wafted through the house and I couldn't wait for them to finish. The final outcome was better than I could have imagined. I so like to experiment with my food :)
I was looking in my cabinet for baked beans and only found a can of ranch beans which I really don't like, so as long as I had the brown sugar out, I added it to the ranch beans until I found them tasty enough for me.
Lastly, even though I already ate, I have leftovers for tomorrow and just now put a pan of cornbread in my toaster oven.

Chile Relleno Casserole Recipe
Ingredients
2 7-ounce cans whole green chiles, drained well *
8 ounces pepper-jack cheese, shredded
3 eggs
3/4 cup heavy cream
1/2 teaspoon salt
4 ounces cheddar cheese, shredded
Directions
Grease an 8x8" baking pan. Slice each chile along one long side and open flat. Arrange half of the chiles in the bottom of the baking pan, skin side down, in a single layer. Top with the pepper-jack cheese. Arrange the remaining chiles over the cheese, skin side up. Beat the eggs, cream and salt well. Pour evenly over the chiles. Top with the cheddar cheese. Bake at 350º for 35 minutes, until golden brown. Let stand 10 minutes before cutting.
I doubled this recipe for a dinner party and added 4 chicken breasts that I cooked in a pan with 2 cans of spicy green chiles. I layered the chicken in over the top of the first layer of cheese. DELICIOUS!!

Dang, she made me southern fried chicken ( she is a vegatarian ),
and killer collard greens with ham hawk , banging good homeade mac n cheese , cornbread , frozen pina coladas and double chocolate chocolate chip cookies for me for dessert.

I made fried chicken, sweet potato fries, steak fries, and mini hash brown patties in the deep fryer and then made hot dogs minus the bread of course. LOL!

had leftover chili. added salsa, cheese, sour cream and ate it up with tortilla chips. yum!
tonight probably more chili. :p or arroz con gandules P.R. style and chicken that a coworker gave me.
Dinner today is leftover lunch. I did not make the homemade chicken noodle soup yesterday, but rather today. It turned out very good since the broth was rich. Diced up some carrots, onions, celery, potatoes, parsley, and used very well cleaned chicken thighs - took it off the bone, diced it and returned it to the broth. Some noodles shortly before it was done and then make sure they were al dente. OMG! Perfection!! So deja vu it is......

It is really just chicken cooked in bbq sauce... The sauce is a secret family recipie, but not from my family, so I fear a certain southern gentleman (who is no longer with us) would come haunt me if I gave it away.

Home made pizza on Nan bread. Sliced plum tomatoes rather than sauce, buffalo mozzarella, shaved Manchego, finely sliced red onion, garlic, fresh basil, garlic and a drizzle of cold pressed virgin olive oil. I think I'll pair with it a nice Sicilian red, a Nero D' Avola. Chilled watermelon with feta and sunflower seeds a bit later.

Went to a friends house for dinner..had Fried Chicken, Saffron rice and Collards..it is amazing to me how a home cooked meal can lift my spirits. After a 60 hour work week I needed that. Always grateful for a meal that is cooked with loving energy by someone who loves to feed peopile.
Made salad (mixed spring salad, tomatoes, green olives, pickles, red, yellow & orange peppers, bacon cheddar almond slices, hot peppers and parmesan cheese) , hamburgers and chicken burgers for my son, my mom, my sis, my nephew and I.

I work nights and just got home - last night had a bag of Andy Capp's Hot Fries.
It's only 10:30 am and I will be alone for supper tonight :(
I might have corn on the cob.....maybe a cook up a frozen pizza....maybe a salad....or nachos.....I do have that chicken in the fridge....and some veggies......who knows, might even try something new.....any suggestions for a recipe????? (something simple and won't take hours to make or cook or ingredients that will make me wander the grocery store looking :seeingstars: )

I had a protein bar.....I find I'm not terribly fond of the texture.....and some fruit....a plum and a nectarine.... I had some lunch with Teddy around 1pm so it's not like I was ravenous....
I made chicken that was marinated in honey garlic sauce, couscous, veggies (green & yellow stringbeans with carrots) and Salad (romaine, red/yellow/orange peppers, cucumber, cherry tomatoes, pickles, olives, hot peppers & bacon bits). Have plenty of leftovers for lunch ;)

No dinner tonight! The lovely Armenian Orthodox Cathedral on my block had its annual festival, and the Middle Eastern food was divine! Lunch was ample and carried me through! I had a platter of fatoush salad, baba ghanoush and grilled lamb and chicken chunks, with pita bread, iced water, and double espresso with a pistacchio baklava. Delish!
