Hmmmm i meant pumpkin muffins! Lol
One box spice cake mix
One 15oz can of pumpkin
2 teaspoons pumpkin pie spice
Mix together (will be thick)
Spray the cupcake pan or use cupcake liners (spray makes the outside crusty and yummy), makes 12 muffins.
350* for 20 minutes or when toothpick comes out clean
It cost me $2 and a little cooking spray to make 12 yumbolicious muffins.

Cheese, more cheese and then yet more cheese. I was at a friend's cheese and wine tasting birthday party. I don't taste the wine anymore so cheese it was.
Then we all dove headlong into fabulous croque en bouche the lovely Ms.O.C had taken the day off to make and get perfect. Every component was fabulous but together they were sensational.

That depends on what you define as dinner. If you count what I ate at 3pm as dinner, then I had beef fajitas, mac 'n cheese and loaded mashed potatoes again. If you count what I ate at 7pm, then I had peppermint ice cream and a honey crisp apple.

Meatloaf...the most versatile food on the planet. Yesterday I poured a can of vegetable soup over a slice of it, today I poured a can of mushroom soup over it.
You'd hardly know it was the same meatloaf I've been eating all week.

last night...
I had some chicken that needed using up...and it was frozen so I boiled it to defrost it and partly cook it...
Then de-boned it and put it in the wok with some basil olive oil (Yum!) I let it finish cooking slow...then considered the chicken stock...I threw some rice in it and it came out omg good.
Strangely enough, I had been watching an awful but funny movie (Bad Words) and the character mentioned "curry hole" and...well...I'm subjective to my environment...so I threw some curry and tandoori spices in with the chicken. I had some frozen veggies so I threw those in with the chicken also, and added water to steam them...it made a nice accidental sauce with the chicken juice and curry spice.
Threw it together on a plate and it was dinner. And I was either REALLY hungry...or it was REALLY friggin good...my friend said prolly a little of both lol :sunglass:

I used flax seed pita bread ,sauced it with some tomato sauce. Added some turkey pepperoni, black olives, spinach and kale mix, and a little cheese.
Had the pizza with a sliced cucumber in a little dressing.

Tonight I did a carb splurge and had a roast beef sub with prepared horse radish and a small bag of barbeque chips, and for dessert... once a year I buy a 12 piece box of liquid center chocolate covered cherries, that box is in my freezer and tonight I shall have one or two for dessert.

After I hung Xmas lights around fence and patio area and built a Bon fire my tenants cooked spencer steaks,Green beans and a roll...on my BBQ they made me a small plate....

Browned off Tennessee Pride mild sausage... added chopped yellow squash, cooked till tender then topped it with shredded mozzarella ...placed whole skillet in oven to finish cooking. Yummmm...I don't usually like sausage but this was just right and no additional spices needed.
And today I precooked dinner for the next two days since I'll be driving to Charlotte for appointments, and won't feel like doing ANY chores after getting home....so I slow cooked a huge pork roast in my special secret BBQ sauce... the roast was so large I had to split it between two crocks...and will be sharing with my neighbor and roommate's parents.
The kitchen smells very yummy.

Last night...
I made my long awaited turkey Alfredo...
I kinda just threw it together...which seems to work better for me than planning...to be honest...
I sauteed some green onions and garlic in basil olive oil (which will always be a staple in my kitchen from here on out!) a sprinkle of dried herb mix, and fresh sliced mushrooms and then added the de-boned turkey to simmer in the flavors...boiled my pasta meanwhile ( I used a nice veggie pasta by Barilla...a friend who doesn't love veggies gave it to me to try lol ) threw the (jarred :() Alfredo sauce in with the turkey mess and then added 2 handfuls of cleaned, fresh spinach...drain pasta and toss your way to a happy tummy :)
A sprinkle of garlic salt and some crushed red pepper finished it off nicely...but it would've been gooder to have some fresh parmesan to sprinkle...
Note: I once asked an Italian man what was a good jarred Alfredo sauce and he said, "there isn't one". I have tried many, and he is correct. I need to learn to make my own...it's the only way to get that truly wonderful flavor. Alfredo is probably the only white sauce I even like...I'm just not much for sauces and gravy. I know...merde! I am tres French but...I never did say I was right :D

I had a bowl of light NE clam chowder but my tummy's rumbling again, so I'm carbing it with a Hawaiian sweet roll and some naturebox snacks.

Today I made a huge stock pot of potato soup with lots of ham chunks,big chunks of potatoes,celery,onions then seasoned just right.I had dinner rolls to go with it.Now I have three one gallon containers of it in the freezer for later.

I was craving Mojo pork so bad that I stopped by Publix deli on my way home and bought some for tonight. I'm having the pork, collard greens with my homemade peppa sauce, and a little baked mac-n-cheese.
While there I bought a nice pork loin and will throw that in the crock pot tomorrow, along with my own Mojo sauce, and have that tomorrow with some of the veggies I roasted last night. :) Love that stuff!

5 dollar cheap Chinese...Hunan Chicken to be specific...
I got it for lunch but had plenty for dinner and more for lunch tomorrow...
I had a Miranda moment when I went in to order and she remembered me and said "extra spicy??". It's only the second time I've been there though...
NOTE:
I brought my own tupperware to forgo the usual styrofoam ickyness. They were more than okay with me doing this. If anything, it seems they gave me more food than usual. I'm glad it didn't present an issue. She didn't even bat an eye. Nor did I have to explain lol Now to make a habit of doing this...I always mean to leave some tupperware in my car for leftovers when I eat out...this was never an issue in Asheville since just about ever place uses the compostable take away boxes...

I have a loin roast in the oven that I rubbed with Dijon mustard and then topped with shredded horseradish so that it will have an awesome crust. I will be having some of that as soon as it is done, along with stewed sweet potatoes, green beans, broccoli, onion and carrots.

I made cooked rice in chicken broth (gives it a buttery taste without needing butter) added some herbs and garlic powder... then added a wonderful new discovery, to which I won't become attached since I found it in the discontinued bin...
Bush beans makes a line called Cocina Latino...news to me...so I found this can of black beans, smashed and seasoned with cumin, tomatoes and bacon. I put it side by side with the rice but ended up blending it in. Really good flavor for canned beans. All I needed to add was some salt.
As much as I won't get attached to them, if I can find them again I'm thinking they would make an excellent addition to burritos....or the beans could even be used more like a condiment...on a turkey burger...or veggie burger.. I can honestly see just warming it up and having it with some tortilla chips...mmmmm

I took one of those Lipton (or Knorr) pasta mixes Spicy Thai Chili to be exact, added some frozen veggies to the boiling water...broccoli/cauliflower/carrot mix to be exact...and added a can of (drained) chicken...
Dinner for under 2 bucks and there was enough for 2 helpings...go ME

I generally try to use up any leftovers from the week on Sunday, in preparation for cleaning out the fridge on Monday because that is the day trash goes out to the curb for Tuesday pickup, so I eat even weirder on Sundays than I usually do. :)
Tonight's dinner was cottage cheese with fried eggs over medium on top, (this is actually very good) and then I ate the left over coleslaw after that and drank a glass of the fresh veggie juice that I made earlier in the day.
