Tomato/red pepper bisque with garlic croûtons and crème fraîche, duck prosciutto with homemade pear chutney, foie gras on toasted swedish rye, homemade fresh crab salad, fennel/orange salad with olive oil and fresh lemon.... all that was missing was oysters on the half-shell to be a French réveillon! Champagne with all of it, and later, a glass of old port with homemade shortbread and green tea madeleines.

Foie gras, homemade crab cakes, seared duck breast with chestnut purée, caramelized shallots and sautéed Brussels sprouts, orange fennel salad with olive oil and lemon, cheese tray (creamy Brie, Roquefort, ewe's milk cheese, Cantal, Parmiggiano Reggiano) with grapes and dried fruit and nuts (apricots, cherries, almonds, pistacchios), Bûche de Noël, Champagne throughout, bottle of Bourgogne with the duck.

Tonight its going to be traditional,Roasted turkey breast,dark meat stuffed and rolled with apple/walnut stuffing,whipped roast garlic and cream cheese potato,baked maple glazed sweet potato,minted sweetpeas,turnip,carrots and festive corn.Pumpkin pies,caramel apple pie and mint chocolet mousse will be on the dessert table.

Oh yes, I was determined to have my turkey dinner with all the trimmings, despite all of the naysayers. I bought one of those Jenna frozen turkey breasts and some stove top stuffing (I know, I know..I am the turkey and stuffing queen of the family). I started the oven (for the first time ever) and popped the turkey package in, with the cardboard lid as per the instructions. Within an hour, the entire Motorhome was filled with smoke. Living in a motorhome, one must conserve space and I forgot to take the cutting board off the stove and the toaster and coffeemaker. Soon the smell of plastic burning filled the air. I very nearly toasted my toaster and melted my coffee pot. When I took the turkey package out of the oven, the cardboard lid was burnt to a crisp. I had the oven set for 350 but I think it must have been more like 500 degrees. Opened all the windows and turned on the fan. Mind you, it is only 50 here in Texas today.
So, I grabbed the gin bottle and poured a drink and thought about the situation. Then I poured another one. I scrapped the turkey ( one must be careful of turkey that is not cooked properly) and popped a Stouffers Lasagna in the microwave. Put some Texas garlic toast in the toaster and whipped up a fresh garden salad.
For desert it will be Ho-Ho's and mint chocolate chip ice-cream. :)

I was planning on having turkey and all the accoutrement for dinner, but the turkey breast I took out of the freezer on Thursday and put in the fridge was still not thawed, so...
I had steak and some cheesy grits.
Perhaps I can make the turkey tomorrow.

Yesterday I boiled down a chicken for stock, so tonight we had chicken soup with root vegetables served with rosemary bread and cured meats. For Christmas, Maria gave me some chanterelle mushrooms, so for an appetizer I sautéed them with butter, olive oil and dry champagne. So good.

Change of plans, I have no flour and I'm not going out at the moment for it
So, into the cabinet I went a foraging and came up with a can of bacon bean soup
Along with that, I had a Jiff Corn Muffin mix that I was saving for pancakes, but made cornbread out of it instead
I have a great recipe for homemade cornbread, if I had the ingredients handy
Now I'm wondering how much cornbread is too much to eat in one day :|

I made a huge pot of chicken bog. For those of you who don't know what chicken bog is, here is a run down. Boil your chicken til done. You can use seasonings of choice. Take off the bone. cut up some hilshire sausage, cook it up in the bottom of the pot, stir in bacon if desired. Then put chicken and broth from boiled chicken in pot on top of sausage. Add rice in the pot (measured out of course) and cook until rice is done. This is sooo good.
the flavor of the sausage, bacon and chicken in the rice is great and leftovers are always good! Can't go wrong with southern cookin!

I took an easy way out for dinner,I opened a can of chicken noodle soup added half can of water a half teaspoon minced garlic plus a pinch of fresh parsley then warmed it up,also I had a small asortment of crunchy veggies like cherry tomato's,cuke thick sliced,1 stalk of celery with pemento cheese spred on it.I havent felt like eating to day bt I have managed to eat enough to keep my diabetis on track.

It is bacon, kielbasa, onions, corn cobettes, and red potatoes...I use two bottles of beer and one bottle of water.....as my liquid.....all cooked in layers...seasoned with Old Bay Seasoning...and then steam fresh shrimp in a steamer basket on top (you should NEVER immerse shrimp in liquid...and steam only til pink and done!!)
Some people add crab legs, mussels, or oysters also...here in my area this is a local food...and usually is enjoyed outdoors on a huge long table covered with butcher paper and folks just come along and dish what they want...enjoy with a cold beer

Tonight I fixed baked salmon paties cajun style,boiled corn for my son with garlic bread,a medly of summer squash with string beans with mushrooms with a garlic sause..I made some of my homemade tater sause with a touch of McIllhennys hot sause to spice it up....oh yeah good eating.I also dank a 20oz bottle of water with it,then some ocean spray diet cran grape.

Leftover tacos. Sometimes quantity overrides quality. I skipped lunch to prepare a fix for one of our users. We are getting swamped with fallout from late last year. Sometimes I wonder about these people. We write software for them so their jobs will be easier, train them on it and prepare user guides for them. Then January tells on them. We get bombarded with calls about their data is missing or has holes in it - evidence they are only running parts of the software. Not following through with entire process is causing these issues. January and February get a little stressful but it works out. Plus, I always learn a great deal more by cleaning up their messes.

Boil a chicken, debone, picking chicken off bones; set chicken aside and save broth. Use your choice of seasonings..I use some S & P, a little Old Bay Seafood Seasoning (to taste).
In same pot, brown bacon that has been chopped up in smaller pieces, and brown along with the Kielbasa, and I add a diced up sweet onion.
Once this is all browned, add chicken, broth, and your rice. (measure rice) and cook til done in this broth mix.
Down in my of SC, we do a bog with fresh oysters OR shrimp...venison...it is so delicious...and is usually even better the next day after all those flavors have set in fridge and "married up"...yummmmm

The kids came home and we all got in and cut up tons of vegetables and made a huge pot of homemade stew. There is enough here to feed an army is anyone hungry?

I've got a really bad cold and I really don't feel like eating much. I'm having a Stouffer's chicken pot pie and a glass of ginger ale. :cough:
Nothing tastes good, I can't smell and I certainly cannot taste anything. :(
I just know that I have to eat something or I'll end up feeling a lot worse than I do already. :|

Im making a nice ham with mac & cheese (homemade of course), corn on cob and biscuits. Later, I will take the ham bone and make a nice pot of soup and serve it with cornbread. Leftover ham will be frozen and used another time. I love cooking one meal and eating 3x off of it!
So far it's Crunch'nMunch. We'll see what the rest of the evening brings. If I get an energy spurt I'll make something better.

I'm making roasted potatos & Polish sausage and also, I'm making roasted brussell sprouts - after I wash them and slice them in half, I dress them in olive oil, sea salt and sprinkle rosemary on them and roast them in the oven at 450 degrees for about 40-50 minutes (turning them frequently). They end up tasting like a potato chip of sorts; really crunchy and yummy!

I am sure you know what prednisone does to you . I am not on high dosage , but I am hungry all the times. I can't sleep and I am going to fridge all the time . My daughter in law bought me 10 LB of fish .
I cook in it microwave which it unusual to me , but keep eating , but as you know that's prednisone . I am happy that I don't have mood swings since prednisone it does to you .
I don't care just send some more food ... lol .

Baked Salmon in a marinade of Olive Oil, Fish Sauce, Sriracha, Garlic, Lemon Juice, and Honey
Roasted Zucchini and New potatoes or a baked sweet potato. Still making a last minute decision. :D
I made up the marinade. We shall see how it turns out. Was a bit tart to me but I didn't need the sweet today.
