Traditional Italian Christmas Eve dinner is called the feast of the 7 fishes. We are having fried, breaded shrimp; stuffies with clams, bay scallops, and lobster; snail salad for me and calamari in tomato sauce for everyone else; and aglio e olio (angel hair pasta with olive oil, garlic, and anchovies).

Dessert will be strawberry cream cheese pie and home made Italian cookies.

Tomorrow I will be busy from dawn until dusk...after dusk since it is dark around 4. I'm looking forward to cooking a very decedent feast!

Tonight will be either Chinese or Indian food, yet to be decided. Delivered to my door. Christmas Eve is chill out night.

I made up a stew ...10 quarts of it. :(

Even the dogs would not touch it until I added a handful of grated mild cheddar cheese to their bowls.

Sometimes the make up a recipe does pretty good. This was not one of those

On Christmas Eve..gren made up some chili..tiny meatballs...little tiny barbeque hot dog type things...nacho chips with cheese and salsa

Christmas was Ham..homemade mac and cheese...mashed potatoes...broccoli, cauliflower, mushrooms, onion, and brussel sprouts sauteed in butter and garlic (grens request), rolls....and caramel apple pie for dessert.

Too funny, I hope no one choked on their dinner! (I might have :p) Love mango lassi but when I drink it there is no room left for food.

Today's dinner was leftovers. And tomorrow and the next day and maybe the day after that :)

YAY! I fixed that 10 quart bucket of crummy stew I made yesterday. Found a can of pork and beans in the cupboard tonight. Looked for them last night but didn't see them. I knew I bought a can a couple weeks ago.

Anyway, dumped some in my bowl of stew tonight. Put some ketchup, barbeque sauce and worchestershire sauce in there. Stirred it good, then the handful of grated cheese on top. After I nuked it, this crummy stew became a masterpiece. :) Heh Heh!

I cannot stand to waste food. And it was work peeling and chipping up all those potatoes to boil.

Now we are good for a couple more days. The dogs had huge bowls with cheese. They looked up at me with glowing little faces after they ate. I dare not mix pork and beans in theirs. Kevin does that horrible nuscience farting sometimes already ... sure do not want to add to that show. Make you want to do a MERCY YELL-OUT! :(

I made Creamy Chicken Tortilla Soup (in the crockpot) !!!! Second time I make it and was just as DELICIOUS!!!!! also baked crescent rolls to go with the soup.
Earlier in the day I made banana muffins with a crumbly topping, second time I make those also and delicious!!!!!

I got Whole Food gift cards for Christmas so today I went and harvested ...

I am having about 7 different kinds of cheese many of which I have no idea what they are but all are fan-fucking-tastic there is super sharp cheddar, some blue cheese made from goat's milk that is both fruity and nutty, brie, some really hard cheese that is made with peppercorns, a very soft garlic cheese, and a few others, you get the picture.

With that I have some prosciutto, dry salami, topanad‎, grape tomatoes, sliced jalapenos, kalamata olives, hummus, and about 6 different kinds of crackers

To drink I have a very dry Chardonnay.

I just love meals that are many little perfect bites

I,m at work and we all brought in food items for our collective feast!

BBQ ribs,small pieces of chicken breast wrapped in bacon,fresh veggies,VERY garlicy garlic dip,sliced ham,turkey,roast beef, rice cracker,wheat thins,pepperjack and colby cheese.

I made a stir-fry of soba noodles and sliced tofu soaked in Japanese teriayki sauce; then added broccoli buds, sweet red pepper, crimini mushrooms, celery and Walla Walla sweet onions, and dressed it lightly with a sweet Chili sauce.

Tonight: Decided to marinate the chops in a asian theme marinade (coconut aminos, cilantro, ginger, garlic, sesame oil, white wine vinegar) and made a quick marinade (blood orange juice, ginger, sesame oil, honey, hot pepper sauce, coconut aminos) for a cabbage/carrot/red bells/cilantro/green onion salad.

I'll be grilling the chops -- in a few hours.

I too, had pork chops, boneless. I had mine defrosting all day.

Marinated in teriyaki sauce, grilled on my grill.
Along with grilled eggplant, yellow pepper and onions.
I microwaved a potato and then sliced it thick, drizzled olive oil on the slices and grilled that as well.

Diet ginger ale, the bubbles feel good on my throat.
And a peppermint tea chaser.

Quinoa dish with lots of veggies...carrots, leek, peas, mushrooms, garlic and a few black olives, everything chopped up. Spiced with chives, parsley, curcuma, curry, salt, pepper and a pinch of cinnamon. Feta cheese sprinkled on top, added at the end. Baked in the clay pot. Done in about 1 hour...yummy!:chef:

Don't fold or flip, just stick the whole thing, pan and all, under the grill for a couple of minutes. Genuine cooks will tell you that's a frittata but, eggs is eggs ;)

I cook the veggies in a separate pan. Cook eggs, flip, add cheese, will melt quickly on hot eggs, pour hot veggies on top of cheese, more melting, now the fun part.

DO NOT FOLD IN PAN.

gently slide omelet onto plate matching round edges of plate and omelet, when halfway on plate turn pan upside down to close omelet.

I use non stick pan for eggs and real butter for flavor and slippery -ness.

I cooked a lot today.

I made pinto beans with onions, peppers, and chipotle peppers in adobo sauce.

I made sweet potatoes in my crockpot with cinnamon, salt, pepper, and a splash of maple syrup.

I'm still simmering spaghetti sauce with ground turkey.

For dinner tonight, we are having spare ribs, sweet potatoes, store bought cornbread, and roast onions.

I didn't do any grading but I did one load of laundry and I took two water fitness classes.

work and home schedules have been off in this house for several reasons..So, dinner tonight went as follows

Made gren homemade pizza with mushroom and onions....I stole a slice.

I made the kids homemade chicken nuggets about an hour later with pasta and brussel sprouts...I had a small bowl of pasta and a couple nuggets.

I may have to try it this way sometime..maybe easier than what I do now.

currently, I pour the beaten eggs in a medium heated pan...slowly cook on a med to low heat (more on the low side so it cooks but doesn't brown) pulling the egg into the center allowing the uncooked egg to move to the outside. I continue this until it is almost fully cooked.

then put pre-cooked veggies...and cheese

I fold it in the pan...wait a few seconds...flip wait a few more seconds to allow the rest of the egg to cook.

add cheese on top and plate up
