Dinner party for my Mom for her birthday.

Vegetarian Shepherds Pie (spiced lentils, mushrooms, peas, corn, mashed potatoes) with a vegan mushroom gravy.

Roasted beets topped with peppered goats cheese, basil, and crushed walnuts.

Roasted Brussels sprouts and cauliflower with garlic and olive oil.

Gluten free chocolate almond cake cooked in a crock pot and served hot with whipped coconut cream.

Wine.

My meals are a little wonky today. I had an early skillet dinner of turkey sausage, onions, potatoes, red peppers, snap peas and carrots. It was nummy good but I will get the nibbles soon probably. If that happens, I'll have a small salad with tomatoes, mushrooms and a light dressing or maybe just a little cottage cheese.

My own concoction...

It's a home made BBQ sauce, baked onto chicken, very spicy and interesting, cooked down in the oven, then served on a toasted roll like a sloppy joe, the roll having been toasted in the oven with cheese so the cheese is melted.

It is so so on the health scale *chicken portion is reasonably pretty lowfat*

And WOW WOW on the taste scale.

Early in the day, I pureed some Roma tomatoes with onions and Italian seasonings and simmered it for a few hours.

Later, I made a large muffin tin full of muffin meatloaves with garlic, rosemary, onion, red pepper, and fresh spinach in them. Once baked, I spooned some of the sauce over them. I'll be eating good this week. :)

Had dinner not too long ago. It was rice, sweet and sour fish, Chinese Brussels sprouts, baby bok choi with pork, and fried squid. Washed down with a glass of Chinese tea.

Yummy. Although the bok choi dish was the best.

Tonight is dinner in India a festive healthy meal.

Spicy Chickpea Salad

1 cup chickpea (chana) (boiled)
1 small potato (aloo) (boiled and cut into cubes)
1 small Tomato (Tamatar) (chopped)
1 tsp coriander leaves (dhania patta) (chopped)
1 green chilli (chopped)
2 tsp lime juie
1/4 tsp black salt (namak)
salt (namak) to taste
1 tsp chaat masala

for chaat masala
1 tsp plain salt (namak)
1/2 tsp chilli powder
1/2 tsp black pepper (kali mirch)
1 1/2 tsp cumin powder
1 tsp mango (aam) power
1/4 tsp black salt (namak)

Not my own recipe but this is wonderful. You could use Guarm Maasla as well as you find tasty.

My allergies/general fall stuffiness has killed my appetite so today's been a steady stream of orange juice and tea. I did make myself eat some noodles earlier though. Going to pick up some Progresso chicken soup after work. That's my go to, "hey body. you can't get sick. i have things to do" meal.

A can of that chicken noodle Healthy Choice or maybe it is Healthy Request. It's the one where you don't add anything to it. Kind of watery but enough black pepper can help anything.

And a large glass of very cold milk. Ahhhhhh, must always have that delicious milk. :) I get edgy when there's less than a quart in the fridge. LOL!

Thick cut bacon, mesquite turkey, and provolone on toasted sourdough bread with lettuce and garden tomatoes. Leftover jalapeno coleslaw. After sitting all night in the fridge the jalapeno and cilantro were very flavorful.

I love me a good sandwich. <3

Spicy Lentil Crackers, fried to a crisp, kind of like potato chips.

Yogurt Dip, I made it.

I made it for the first time... turned out pretty good!

Potato Soup a la Uniquestyle

Brown a cut up onion in approx 2 t of bacon grease
Cube of butter
Scoop of garlic
Pkg of cream cheese
Chicken stock

Add to about 6 cut up, cooked, skinned potatoes
1 sm can of green chilies

I am too tired to make anything to eat. I could not fall asleep last night. Finally around 3:00 a.m., I went into a lull for about an hour and a half.

Got home around 8:00 tonight, fed the two bully dogs, washed my face, brushed my teeth, put on pajamas ...

won't be much longer and I will be sleeping ... probably wake up at 2:00 a.m. and eat the refrigerator.

Sweetened iced tea to drink.

My dinner tonight was so good, that I wish I had not eaten it yet so that I could eat it now! Lol!

I fixed cedar planked orange ginger salmon, steamed broccoli stalks, and oven baked rosemary sweet potato chips. You can buy the planks online or sometimes you can find them at your local grocery. I love using them for salmon!

It was about lunch time and my son had come home for a quick bite,so I had him unloading all the groserys.Putting it all up in the right places did take a while,I nearly missd my chiro appointment.W did have tacos for dinner cause it was a quick fix.

Yesterday: Pizza-- on a non-grain, gluten free crust. It was so yummy-- I haven't had pizza for over 3 months. Our toppings were-- sauce (made from tomatoes, fresh basil, garlic, onion), applegate pepperoni, mushrooms, black olives, red bell pepper, and small amount of cheese. With a nice salad.

Tonight we're having leftover minestrone soup-- rainbow chard, carrots, small amount of potato, 1/2 cup of white kidney, onion, garlic, rosemary with bacon of course.

I made grilled chicken mason jar salads for the week today, and they looked so good I had one for dinner. It had red leaf curly lettuce, feta cheese, grilled chicken breast, whole green olives, whole grape tomatoes, chunks of cucumber, chopped carrots and a sesame ginger balsamic dressing. Shake and eat! Good stuff!

Make bacon and reserve the grease then put it into a cast iron skillet add fresh rinsed Brussels sprouts and make sure they all get coated in the bacon grease then add seasoning to taste I use salt, pepper, and a little fresh chopped onion. Cook in the oven at 350 until tender (stir as needed). You can also top with bacon bits.

I like to roast mine. I cut them into halves...drizzle with olive oil and add salt and pepper. Put them on a sheet pan and roast in the oven. Yum!

Mmmm, this is a good version as well...

Slice the little sprouts, like lettuce. Omit the cores. Brown in a skillet with butter. Let them brown a little , it will wilt them, so turn the heat up. Remove from the skillet, and squeeze the juice of a lemon over it. The juice turns them into a milder flavor. This is my favorite way to eat them!

I had the same leftover chicken and rice...I cut up a small, fresh green pepper that needed to be used...threw that in as it warmed up...it was still crisp and peppery :) Good taste. Also roasted some butternut squash. I'm allll about making Gemme happy! :)

My wife is sick with the flu and hasn’t been eating much of anything but toast. I’m tired of toast but I lose interest in cooking when it’s just me. Tonight I had hickory smoked peanuts in the shell and Cheez-It crackers. It’s not the most satisfying meal ever. I’m already feeling a bit peckish. Worked late due to long lunch (with Tommi - wow - lovely little Italian place that is going on my "take others there" list.

So picked up Chinese on the way home. But this weekend, if the cool weather holds up, I will probably make a huge pot of something. Beef stew or pasta sauce. Big family kettle - going back generations. I have it now, but I have no idea who it is getting willed to. 6 of us (yeah, big family) all beg for it. So many memories.

tonight i'ma havin' sloppy joes! complete wit' melted parmesan cheese, roasted jalapeños and corn, a wee bit o' mustard and a huge side o' coleslaw. man oh man, i simply can not wait...

Peeled and cut up 7 huge baking-size potatoes. While they were boiling in water, I cooked a pound of ground sirloin burger in a skillet. When the potatoes were tender, drained the water, poured a little milk in their pot, added beef bullion, and dumped a good bit of sour creme in there. Mixed it up, in went the drained sirloin burger and lots of chunks of colby cheese. Dumped in a can of white corn and a can of green beans. (drained water from both cans before adding to the pot) Rolled it over a couple of times with a large spoon. The cheese melted just right.

My beloved dogs think I am the best chef in the world. *laughing* I fixed huge bowls for them. I had a plate of it too. Kelly helped me finish mine. :)

For supper tonight, I am making a meatless 'sloppy joe's' kind of sandwich meal for my son and I. It all started with finding minature ciabatta buns, at the farmer's grocery store, recently.

Here's my recipe that I am using, tonight:

a small bag of Crimini mushrooms
a small sweet onion
1 small block of Tofu (soaked in Soy Sauce)
a quart of Marinara sauce (I might only use half a quart)
half a bouquet of fresh basil leaves
half a cube of salted butter*
two teaspoons of garlic paste*

Wash and cut the Crimini mushrooms into small edible pieces. Cut sweet onion into diced up bits, too. Cut up small block of Tofu into bite sized pieces. In a skillet, dressed down in coconut oil, use a medium-high heat to sear Crimini mushrooms, onions and tofu -- add sprigs of basil leaves, too. As soon as the stir-fry medley is nearly cooked, cover the stir-fry with Marinara sauce, place lid over the skillet, turn off heat and let it sit while you make Garlic Butter* to spread over single servings of Ciabatta bread. Mix softened, room-temperature butter with the garlic paste. Spread Garlic Butter over open-face Ciabatta bread. Spoon Crimini 'sloppy joe' mixture onto each serving of bread.

(Makes 4 single sized servings - feeds two people).

Linner was too early...and I got peckish...so...

I used some of the corn water to simmer some lentils...sautéed a shallot and a small green pepper with some herbs and spices...cut up some of the leftover kielbasa and added that also...added it to the lentils and omg it's GOOD!

for dessert....

yesterday I made some sugar free cheesecake pudding...and it was kind of meh....so I thought about mixing something in it. Jam was a thought...then....I remember the caramel apple frosting that was leftover in the fridge :| And THEN I remembered that I hadn't finished all my salted caramel chai after lunch...sooo I reconstituted the somewhat dried out frosting with the chai....and poured a spoonful over the pudding....lets just say....I should be on Chopped....:sunglass:

We are having Thanksgiving a day early. So it's gonna be turkey, ham,mashed potatoes and gravy, stuffin muffins, salad, turnips, sweet potatoes, pumpkin pie and apple dumplings.

ONLY and I decided to combine Halloween and Thanksgiving this year since I can't be here for both so we are going to dress up in our costumes (good gawwd and hope everyone else in the family does too) and play candy poker while sipping our Vampire's Kiss sangria.

I think I'm going to make the same lentil stew from the other night. It was fantabulous. I'm going to roast some fresh beets to go with...and maybe some butternut squash sprinkled with cinnamon....

I am making kielbasa "curry" .... the recipe calls it curry because it has curry powder in the sauce. Usually I put green peppers in it but tonight I am going to try it with zucchini.

And I'm having it over rice. I love rice and it's cheap so I've been eating a lot of it lately!

Making meatloaf half with ketchup baked on top the other half naked, real mashed potatoes, a mushroom gravy, and some steamed fresh green beans and corn with sautéed onions and garlic....

Felt like some comfort food tonight. :)
