I fixex a crock pot dinner that is really good.
Make it this way.
Melt three table spoons of light butter on the bottom of crock pot.
Add 1 cup of long grain rice spred evenly on the bottom
of crock pot.
Lay two boneless chicken brest.
Open a small can of mushroom soup add 3/4 can of water or milk.
Pour over the chicken evenly.
Sprinkle a couple teaspoons onion soup mix over it all.
Cover an cook for 2 1/2 hrs on medium till tender.Cook time may be a bit longer cause not all crock pots temp the same.
This can be done with pork chops as well.I often add sliced mushrooms to mine or sauted onions and mushrooms to kick it up a notch.I bough some chicken flavor booster that do well in it too..1 small package dribbles over all of it.

Wait til you get to the bottom. They always have extra ooey gooey stuff there.

Tonight, it's gonna be Pizza Hut. They have a box special with 2 mediums, some breadsticks and a choice of either wings, pasta or pizza rolls plus, when I order it online, we'll get a 2 litre for free. Not too bad for $25 (including tax and tip), which will feed 3 and then have leftovers for another 1-2 meals.

Tonight it's probably some leftover chicken wings to finish those off. Now I'm off to make a bacon egg and cheese sandwich on whole grain muffin.

I am having....at this very moment....a pita from this place:

Pita Fusion (http://www.pitafusion.com/Press.html)

They stuff their pitas and roll them like burritos. The bad part? They have so much goodness in it that the common pita soon breaks and/or falls apart a few bites into it. The good part? Everything else.

It's a wheat pita with ancho chipotle sauce stuffed with grilled philly steak, provolone, bell peppers, mushrooms and onions as well as fresh mushrooms, spinach, and banana peppers.

Super yum!

Tonight it is chicken chile verde. It has been cooking since this morning and it smells DIVINE!!

CHICKEN CHILE VERDE
3 pounds boneless chicken breast, about 6-7 medium
14 ounces green Mexican salsa
4 ounces onion, chopped, 1 medium
1 teaspoon pepper
4 cloves garlic, minced
1/4 cup sliced pickled jalapeños
2 teaspoons chicken bouillon granules
1/4 cup fresh cilantro, chopped
Iceberg lettuce, chopped

Place the chicken in a slow cooker. Combine the green salsa, onion, pepper, garlic, jalapeños and bouillon in a small bowl. Pour over the chicken and stir a little to make sure that some of the sauce gets under and between all of the chicken pieces. Cook on LOW 6-8 hours. Use two forks to shred the chicken once it's tender. Stir in the cilantro just before serving. Serve over chopped iceberg lettuce and add desired toppings.
