I had shepherd's pie with two apples...one honey crisp that was delish as always and one autumn caramel something or other that was so so...and then my mouth wanted chips but my brain did not so I had two of the snack bags of apple chips, which were very good and hit the spot. Water to drink.

Last night was spaghetti squash casserole that I didn't enjoy at all. I picked at the meat sauce and tossed everything else.

One of the TV dinners J brought me! When she saw how much I enjoyed the beans and rice she'd sent over she raided my refrigerator, freezer, pantry. Took everything she needed home with her, turned it all into carefully portioned freezer meals – happy holidays! Just in time too because if she hadn't went into Chef Ramsey mode some of that stuff would have been lost. Just aged itself out of the system what for having been in there so long. Tonight I'm going to have some of the pork chops, since they'll go bad first before everything else and some of the buttery green beans. I have pork gravy packets and seasoned instant mashed potatoes in my pantry to go with. Just water to drink. Later tonight if my blood sugar goes down then some eggnog for dessert.

I'm not sure. It could be more of the shepherd's pie I had last night or more of the steak I had this morning for brunch. It might be a salad. I haven't moved much today. It's been bed to chair to household chores to chair again while watching two holiday movies so it can't be something heavy. Probably more of the plantain chips I picked up. They are freakin' delicious.

My neighbor phoned and told me not to cook dinner. Two hours later she brought in a huge plate of baked chicken and stuffing, whipped potatoes and gravy and steamed broccoli. OMG more than I have eaten in a long time. Delicious I have to say, just finished and am totally sated. I was not going to cook today anyway so it was a lovely treat.

Northern White Bean Soup: presoaked beans, filtered water, sea salt, fresh tarragon leaves, fresh sprig of rosemary, one smoked ham hock (which I remove after the soup is finished simmering, I use it mainly for flavor), and organic vegetable broth. I also chopped up half a head of organic cabbage and half a stalk of organic celery. It smells delicious. Today's soup is a rather big batch of soup, so I can warm up a cup of soup, all week long, for any meal on the go or for supper-time.
Water to drink.
A cup of hot herbal tea, before bedtime (Sweet Dreams tea by Tazo).

I had a tiny piece of maple glazed ham, mashed potatoes, black eyed peas, greens, a Halo, an apple, a snack bag of dried figs (strangely enough they don't have a dried texture), a snack bag of apple chips and two glasses of water. Not sure if it's stress eating from today's political circus in the Capitol and the races in Georgia or something wacky going on with my hormones, but it was pretty darn tasty.

Bread and butter – lots of it, homemade! J is going out of town for the weekend so she brought me some to tide me over till she gets back as a nice surprise. I'm particularly impressed because this is white and there's a lot less room for margin of error with white, especially plain white, bread. Actually with many of the dark breads you don't even have to knead the dough. Anyhow it is the best home baked bread I've ever had in my 5+ decades of living. And that speaks a lot of her talent because this is only her third attempt ever at making bread and her very first making white. I've been to county fairs where women who'd been baking for decades and decades won ribbons and still after all the rave reviews didn't turn out bread like this. Though even if it had been terrible it would have been good to me because it was so thoughtful of her to think of me before heading out of town. I'm so fortunate to have such a nice daughter-in- law. :)

I love plain, white bread. And you're right, FSF, it is not easy to do well. Mine does not consistently turn out the way I want it, and I've been baking bread for almost 50 years.

I had a small piece of sweet chili chicken breast, a salad quinoa, a few bites of a chicken-walnut-balsamic salad, grilled mixed veggies and water. That was all fine and good but then I got the munchies so I had a 1 ounce bag of plantain chips and a Halo then a honey crisp apple followed by more water and then some apple vinegar kettle chips. They were my downfall and so easy to keep nibbling on!

Ohhhh, I love them too. I just make sure before I bring anything into the house that it's within an acceptable range for my sugar. That's been helpful. I thought for sure I'd see the evidence of last night's snacking on the scale this morning but it was steady. No spike!
Also, I made a typo. They are apple cider vinegar kettle chips and they are very good. Plus the family that owns the company donates to charities that influence their family. It's a taste good, feel better chip!

I do miss pizza.
Tonight, I had an eggplant cutlet, the rest of the chicken balsamic pecan and walnut salad (it was only supposed to have one type of nut but someone got generous), a Honey Crisp apple, a Halo and a ton of chips. I taste tested most of my new snacks. A little bit of this and a little bit of that does add up but I have no regrets. I had the apple cider vinegar chips, coconut and plantain chips, a variety of root veggie chips and straight up plantain chips. None of them have added sugars and, for me, I think that makes all the difference in how I process them. It was all delicious! Plenty of water to drink as well.

P I Z Z A !!!
. . . although it was not the pizza I ordered. I received a pepperoni pizza with a plain crust. I called the pizza place and spent 45 minutes trying to get through. I'm pretty sure they took their phone off the hook, because it was going straight to a recording. I'm sure they messed up other people's pizzas, too, because the ticket on the box had my correct order on it and my name; it's just that the pizza inside didn't match the ticket.
I finally got a refund by calling the main customer service number. (They refunded the delivery fee too!) And I ate three slices - any pizza is good pizza.

I have to say the chicken soup (more like a stew) came out delish, and I had some left over for lunch today.
As for tonight, building on that success, I made:
A kind of spaghetti skillet dish (ground beef, diced tomatoes, tomato sauce, and uncooked noodles mixed in)-a recipe off of a box, and it was highly delish.

One of those cheesecake bars
(Oh, and I am on day 3 of my Russian course. I can now say "The boy is eating my apple", which is highly useful to know in the Moscow Metro. It doesn't matter: the course is fun and the important part is having daily goals. Depression feeds on goal-less days).

Costco food court hot dog with ketchup and some of their light lemonade. This lemonade is so good it's hard to believe there are only 15 calories in 20 ounces, no carbs and zero sugars. I know zero sugar can still have some sugar but still it's a very, very light amount. Anyhow this beats any diet lemonade I've ever had and I can't wait to go back and have more, more, more!

Last time when I made it the pizza turned out pretty good if I do say so myself. I put mushrooms on my side and pepperoni on my parents' side. I may have over done it a bit on the cheese... which is not all that surprising if you know me. Anyway I'm going to try it again tonight but this time I'm going to put more veggies and try to go a little lighter on the cheese. I'm putting the rest of the mushrooms on my side and pepperoni on my parents' side but this time everyone is getting green peppers and onions that I'm going to cook a bit in some garlic and oil. Fingers crossed!

Decisions, decisions... J raided the freezer again and took home salmon, hamburger, chicken. Then brought back, chicken fajitas, spaghetti sauce with meat, and salmon with some sort of glaze on it. I've had a baby spoon size bite of each and all three are delicious. Now all I have to do is warm up some tortillas or boil some spaghetti or nuke a freezer pack of asparagus just depending. I'll probably go with fajitas since that's what I have the most of. Tonight I was hungry well before dinner, so I've had dessert to tide me over it was Great Value Berry Medley- blackberries, blueberries, raspberries, strawberries, with some milk and a little Splenda mixed in. Well generic version of Splenda actually but I couldn't tell the difference just as good and still, like with the brand name, only a little goes a long way. I was surprised because usually frozen berries are so sour but these were actually fairly sweet even without it. Anyhow, my son got me hooked on these Extreme Wellness tortilla wraps each one, and they're huge, only has 4 net carbs. So along with some sour cream and some avocado I'll be feasting tonight.

Do you know that the first time I ever had shepherd's pie was last year? Inadvertently, I made it on my plate by mushing things up together as I used to do but not as a fully formed dinner.
Tonight, I had salad, some 4 Cheese Cheez-Its, a Keto friendly coconut yogurt, an apple and lots of water.

It has a strange texture. Not unpleasant at all. Quite smooth and velvety but just a hair 'off' from the usual texture of yogurt. I liked it, actually.

Dinner I planned for yesterday but didn't make because I lapsed into lazy mode. It was an Extreme Wellness high fiber, low carb tortilla wrap made with some of the chicken fajita filling J made for me. Along with it grated Tillamook cheddar cheese and some sour cream. I had to use two wraps because they're very thin and sort of flimsy. Also J forgot the fresh bell peppers I had for it, so J used some frozen ones she had on hand which even with the mix well drained might have made the filling too mushy for just one wrap to hold up. Still, one only has four net carbs, so even with two that wasn't so bad. The wraps held up and the fajita was huge, so filling I started to wonder if maybe I wasn't going to be able to finish the whole thing. Good change, usually when I eat no matter how large the serving I wonder if the amount will be enough to fill me up. Though I had plans for dessert I couldn't, I'm stuffed. Just water to wash it all down. I haven't felt this full and satisfied after a meal in the longest time.

My son took me to Sterlings. I don't know if that's a chain or just local but anyway they have two here and so far never a disappointment. I had a #63 the GOTCHA which is chicken, mushrooms, melted cheddar with two strips of bacon on a hoagie roll, plus I added some tomatoe dices. It came with fries, don't know how to describe them because I've never seen the way they make them anywhere and on the menu it just states fries. Anyhow they're very good. I had ranch dip for the sandwhich and tartar sauce for the fries both of which are made in house and were excellent. To drink I had coffee with 1/2 and 1/2 and that was it. I got too full and had to give some to my son. This is unusual me feeling too full and I have these last couple days. Wonder if it has to do with some recent med changes. Well I'm not complaining. I'm way too fat so the more days like this the better.

I'm having a salad with mixed greens, mini peppers, egg, bacon bits, carrots, wonton strips and G. Hughes Sugar Free Sweet Vinaigrette. It's got fat and sodium but not one lick of sugar and it's still good.
I'm also having some chips I found at WallyWorld. They are cassava root chips and taste like a rice cake and a Frito had a baby. Not the greatest but definitely not the worst. Interesting.

Topped with capers. It was really good.
I recommend Sprouts pasta sauces, really fresh tasting.

A salad by my friend Linda. Included butter lettuce, some kind of Japanese lettuce, Arugula, radishes, sprouts, avocado, tomatoes, etc. So good. She was one of the best cooks at the company where I last worked and she’s one of my friends who is helping me move.
She wanted to bring me a chicken casserole on rice, but I can’t afford the gluten and high carbs that would inflame my arthritis.
I would gladly be her sous chef in the kitchen and I will miss her meals.

- mixed veggie casserole - this is so good, I haven't made it in a long while because of the calories - it has lots of cheese - but it has been on my mind for about a month. I might as well give in and make it. It's my go-to potluck dish.

I'm in the computer room, but I heard Mary chopping & dicing, rustling pots and pans plus some fanatic's aromas are wafting my way so god only knows what she's all throwing together! If I had to bet, my money would be on spaghetti with meat sauce and Italian Sausage links.....:eating:

A beautiful crustless quiche came out of my oven tonight. Made with fresh spinach and swiss cheese. I topped it with slices of jalapeno.
Sliced avacado on the side.
Sparkling water to drink.

Chicken, J seasoned, cooked and made pounds and pounds of breast meat into chunks for me to add to casseroles, stews, make into chicken salad, pot pies whatever. Tonight I'm going shred some, spice it up and then use to make enchiladas. Beans and rice to go along with. Avocado either guacamole or dices, sour cream, tomato, finely shredded lettuce and salsa to round things out.

Okay, but . . . don't judge until you taste it. It sounds awful, but it's really delicious. Kids even love it.
* (2) 10 oz. packages or (1) 16 oz. package mixed frozen veggies (the old fashioned peas, carrots, corn, green beans is the one I use)
* (1) cup chopped onions
* (1) cup chopped celery (optional - makes it crunchy)
* (1) cup shredded sharp cheddar cheese
* (1) cup mayonnaise (I use light mayo and it's fine)
* (1) stick butter or margarine (yes, a whole stick)
* (1) sleeve of Club or Waverly crackers
Preheat oven to 350*F. Mix cheese and mayo together well in a large bowl (you want lots of room to stir). Add veggies, onions and celery and mix until everything is well coated. Pour into a large greased casserole dish (9 x 13 works well). In microwave safe bowl, melt butter or margarine. Crush the package of crackers, then add to butter and stir quickly to coat all crumbs. Spread crumbs evenly on top of veggie mixture. Bake at 350*F until heated through, 30 - 45 minutes.

I started with carmelized onions, thinking French onion soup. Then, I was checking out onion soup recipes and came across a knock off of creamy onion soup from Outback.
So, that's what I made. Creamy onion soup. I added carrots. It was good, but I think it needed something to wow it!!
GeorgiaMa'am...gnocchi came from TJMaxx. They were super soft, not clumpy at all. I'm buying them again.

Dinner was out at a real restaurant in the real world with real people! We were all very socially distanced, masked when not eating, and everything was sprayed down between parties. I felt pretty safe.
I had:
- a grapefruit-y cocktail
- a garden salad with fresh, signature bleu cheese dressing
- a crab cake appetizer (lots of crab, very good)
- baked rainbow trout
- green beans and blistered tomatoes in a balsamic dressing
- rice pilaf
- warm chocolate pecan pie with vanilla ice cream
- warm bread pudding with a buttery sauce and vanilla ice cream
Yes, TWO desserts - but they were both shared. It's Valentine's Day, after all.
