Orema, I am curious as to how this turned out.
It was so-so. I used the right size asparagus (thin) but the prosciutto wasn’t crisp enough because my strips weren’t thin enough. The wings were pre-seasoned with beer and rosemary. They were okay, but am glad I purchased them on sale.
I’d have it again, but only because that’s the only thing in the fridge.

Ling Ling pot stickers from Costco, lots of Great Value stir fry vegetables instead of rice. I did not know a serving of rice is only half a cup, a half a cup of cooked rice. I usually eat large amounts of it. And definitely not brown rice either. Coffee with half and half, trying to stay awake, and that's it. I had all veggie rolls, and all brown rice: 1 avocado, 1 kampyo (pickled gourd), and 1 oshinko (pickled yellow veggie) with ginger and wasabi (I never have soy sauce with sushi, perhaps because the pickledness of the veggies gives enough salt.). I am having several Gardein Meat-less Meat Balls, with steamed broccoli buds, and it's all dressed up pretty in my favorite Caesar dressing that is watered down with Good Karma Flax Milk.
It is delicious and it hits the spot just perfectly.

I re-organized the cupboards in my kitchen and made room for dry goods I found in unpacked boxed from my move, this past summer. I found my huge Easter Bunny tin can of organic, non-gmo popcorn kernels, so I've been binging on homemade popcorn, that I made by searing the kernels in organic coconut oil... in my ceramic frying pan, which looks kind of like a wok (almost). I used my Amish "Butter" flavored 'salt', after I popped a whole bunch of it. Omg, it was delish.
But I want to have my nightly dose of organic sweet potato medallions and maybe have some of those meatless meat balls with them.
Later on, I will have a huge cup of coconut tea, which is also organic and caffeine free. It's my sleepy time remedy, which is almost as good as a cup of chamomile tea.

OMG, dinner was a heavenly smorgasbord! I had marinated beef tenderloin chunks, a potato clobber, eggplant Napoleon, chicken teriyaki pot stickers, steamed veggies and vanilla bean ice cream for dessert. Water to drink.

They are crazy good! They are also called potato sluggers. They are shaped like a baseball. I'm not 100% positive what's in it but I do know there are real potatoes, instant potatoes, Parmesan, bread crumbs, butter, herbs and cream. It seems to be potatoes, cream, butter, cheese (and whatever else is in there) whipped together and formed into a ball and then rolled in instant potato flakes, bread crumbs and more Parmesan. They are great warmed in the oven.

Kung pau chicken, all made in the air fryer, except for the rice.
I love that air fryer!

Last night was thin-crust pepperoni pizza from Little Caesars (pizza, pizza!). The crust was really thin—just the way I like it and you can’t beat the price.

Fried codfish and steamed green beans. Coffee.
We ate way too much food at the Chinese food buffet. Ugh.
I cook tomorrow .
