I seasoned a chicken breast with cumin, garlic powder and adobo.

Started a pot of rice. Added frozen corn to it..

Once the chicken was nicely browned I added a can of TJs Cuban style beans to the pan. Served it altogether in a bowl.

I cooked orzo in a veggie broth, then added sauteed onions, butternut squash, garlic and peppers. Used salt, pepper, onion powder and garlic powder to taste. Right before the orzo was finished I added spinach.

Homemade beef enchiladas !! Using low carb tortillas and cutting out the rice and beans *sniff)....seriously watching my carbs. Smells wonderful in here already and made enough for 2 nights and then freeze some. It's very chilly outside, lots of rain and wind, so I wanted something to warm.me up......

I'm having a few heart shaped waffles, with lots of Maple-Cinnamon syrup, no butter, and two eggs over easy. Bacon, too (crispy, nearly burnt).

And a big cup of homemade cocoa, made with coconut milk and a few sprinkles of cinnamon on top. :stillheart:

I had grilled chicken breast with King's Hawaiian Smoky Bacon BBQ Sauce (did you know that they make sauce now? Rolls AND sauce?!? Squee!) and fresh salsa that was more like pico de gallo, guac and chipotle cantina thin chips. Grape sucker for dessert.

I haven't been to the store since I got home from my knee surgery, so I so I got a good grip on myself to make a trip to the market. They had some fresh cut grass fed beef so I got some really good roast. So tonight I'm cooking a slow cooked roast covered in mushrooms with various herbed and spices. To go with it will be a pot of fresh string bens.

Fall has arrived with a high of 65. So, I have a pot of Tuscan Bean and Veg Soup in the crock pot.

Veg Broth, Onions, celery, carrots, spinach, mushrooms, zucchini, northern beans and kidney beans, a can of diced tomatoes, basil, oregano, thyme, salt and pepper to taste.

in the other crock pot I put on some pinto beans to either eat with rice or to make something else with them.

I found a soul food place! Fried chicken, mac n cheese and collards. I just wish they'd given me some corn bread cuz it looked AWESOME

Last night went out to eat with my mum. I decided not to go with the Thanksgiving dinner special (my mum got it though, looked good) and instead had a chicken breast sandwich with sweet potato fries and a Greek salad. Plus Brickworks ciders :p Don't know about tonight yet.

We had twice baked potatoes fully loaded and a salad loaded with artichoke hearts, olives, tomatos, pickles, and cucumbers. I had raspberry vinaigrette dressing and ice tea to drink.

I had half of a roast beef sub with tomato, onion & lettuce, and freeze dried peach slices for dessert. I wasn't crazy about the freeze dried fruit but would eat it again if that was the only fruit I could get.

I had kale and chourico soup with Grainsfirst crackers and Laughing Cow swiss wedges. I'd spread the cheese on the cracker, drop it in the soup, push it to the bottom and break it up into 3-4 pieces and eat the soup-soaked pieces then some soup and then some pieces and then some soup and then....

Last night my lady and I went out for a lovely seafood dinner. I had crab stuffed mushrooms, crab cakes, and a lovely tomato basil soup. She had a beautiful salad and lovely piece of fish. Key lime pie for dessert. Wine to drink.

I'm making turkey meatloaf tonight: 93% lean turkey, Vidalia onion, bell pepper and bbq sauce. Mix it all up and bake it. It's healthy, moist and delicious.

I wound up not having this last night. No worries to those who messages me about it! I'll have it tonight. I just came home too late. Just as well. I see that I forgot the mushrooms. You can't have my turkey meatloaf without diced mushrooms. It adds body and 'meat' to the loaf. Sometimes I'll also add an egg if it's not holding well on its own but not usually.

So, last night I made a stop at Dave's Market, which is not entirely unlike Whole Foods in a lot of ways. Dave's has a tremendous prepared foods sections plus a fresh pizza section and multiple food bars that you can load up for X amount per pound (it's some ridiculous number...also similar to Whole Foods :sunglass: ) but every so often I'll go in and pick a smorgasbord of things from that section and mix and match my meals until they run out.

Last night, I picked up acorn squash wedges, sweet potato wedges, Asian peppers and steak, two kinds of salmon, a beautiful orzo dish, asparagus almondine, Mediterranean bean salad and a butternut slaw.

I wound up having half of one of the salmon filets (with a sweet chili and macadamia nut sauce), a little bit of the slaw and asparagus, a little more of the acorn wedges and a bunch of the sweet potato wedges. Delicious!

It's been a super busy work week, so this morning I put a whole chicken in the oven to slow roast all day until I get home this afternoon. I found the Yumm sauce at a nearby grocery store, so tonight for supper, I'm having .....

Roasted chicken, with Yumm sauce, and an small home made garden salad dressed with grape sized tomatoes, purple cabbage, cucumbers, and slivered almonds.

Yummmmmm... :)

Meatloaf.
In the 60's my Mother taught me how to make the World's Best Meatloaf:

A lb of hamburger, an egg, a can of Campbell's Vegetarian Vegetable Soup...squeeze it together and fill a loaf pan. Put it in the oven at 350, or maybe 375, or maybe 400 for maybe 45 minutes or maybe an hour or till it looks ok. Eat it.

I still make it. I still eat it.

Wait till you hear my pork chops and Campbell's Mushroom Soup recipe. lol

Sigh, this is going to be bad.

I have spent my entire life telling everyone that I can't cook. I am so convincing that even my kids and my sister believe me. I really believe that my kids think we hired a cook for evening dinners when they were young.

If I'm being honest, I hate cooking. I forgot how to cook many things but I can cook.

Because the baby decided to cluster feed between 4:00 pm and 8:00 pm, I feel obligated to feed the other two kids. I don't think that starving them is an option.

So, I have no idea what I am going to cook but I will cook tonight. My plan is to burn something tomorrow night just to maintain my reputation.

I'm going to use some of the roasted chicken, from yesterday, to make an simple supper: an small bed of jasmine rice, topped with an Asian salad mix, add the chicken, then use a home made Thai peanut sauce, for a salad dressing.

I made a copy cat recipe from PF Chang's. ..Mongolian beef. I even diagonally sliced the green onions on top. Sprinkled sesame seeds on top as well. Roasted sweet potatoes tossed in coconut oil were on the side.

Not bad I say.

Last night we tried new things for dinner! I bought kohlrabi two weeks ago and have been curious to try it out. We decided to go with mashing it, so I tried to peel it as much as possible, chop it up (also chopped up some potatoes to go with it), and then my partner boiled and mashed it. I should have tried to get more of the peel off (wasn't easy to peel I found), some bits were still a bit like when broccoli stems get a bit woody, overall it was still very good! Very cool taste, almost like a mild mix between broccoli and potato. The stems/leaves I'm saving for stirfry later this week.

I also pan fried Viana cowgirl steaks. It was our first time trying these and we liked them quite a bit. This is the same brand as the vegan chicken nuggets I like, and I found the texture of the two very similar. These vegan steaks were pretty thick too, so pretty filling.

So yeah, that's what we had last night. Vegan cowgirl steaks and mash kohlrabi and potato. To drink I just had some earl grey tea. Tonight will be a squash soup I think, my partner did a lot of cooking after dinner last night so more details to come on the squash soup haha.

Everyone's dinner sounds soooo good!

I took some leftover wings out of the freezer and reheated them in the oven, and made a raw veggie salad using carrots, grape tomatoes, english cucumber and half of a giant FL avocado cut into chunks. I sprinkled it with some herbs and a few dashes of sweet vinegar and olive oil. I also made my favorite stand by, spinach sauteed with garlic and a little evoo.

For supper tonight ended up cooking some broccoli, green onion, mushrooms and chickpeas in a pan with olive oil and peanut sauce. Didn't feel like rice or pasta, so instead chopped up some small potatoes to bake in the oven and had that as well.

The last of the chicken piccata (not very much is left), riced cauliflower, salad .... I have a cute little Delicata squash in the fridge. I'll bake that and will have that with some butter and nutmeg if I'm still hungry.

Have one of those in the kitchen closet as well :D Haven't made it yet but excited for it :D

I just returned home from the grocery with the fixins for tonight's dinner. I am so hungry, mostly because I have been thinking about what I am going to make tonight...all day!

I am going to make a baked French Brie with a blend of sliced dried figs, & walnuts mixed with fig preserves & spread generously on top of the brie round, then baked for a short time and served with a warm crusty five grain baguette. I will also have a salad with spring greens, tomatoes, radishes and lemon garlic dressing, (Tessemae's) made with all organic ingredients.

I am not sure yet, mostly because I'm tired, but.....

I'm probably going to make it easy on myself and toss a huge tortilla (gordita?) In the skillet and use some of the Asian salad mix, with a few end of the summer tiny yellow tomatoes and use up the half avocado and the last of the yummy poppy seed dressing too. Make a wrap, sort of.

Dessert is bring your own, which I bought a huge slice of organic Carrot cake on my lunch break. :)

Failed at attempt to make a "raw" butternut squash salad...

BUT I did nuke it, then make it like smashed potatoes...added honey, minced ginger, fresh cranberries, olive oil, S&P & OJ that I sautéed together, then poured into mash mix. Once on plate, I topped it with some walnuts....YUMMMMM

NOTE: I couldn't peel that raw squash to save my soul...SOOOO like any good boi chef, I nuked it..yes I did...removed seeds, removed peeling, & mashed it up (see above).

Had Italian bulk sausage crumbles with seasonings on side. THIS was a great dish to repeat!!! Thanks for the idea Gemme...

I am roasting a large portion of pork roast (carnitas)... and cleaned some vegetables to roast separately on parchment paper : Brussel sprouts, beets, and a few baby red potatoes. Dressed in sea salt and rosemary olive oil and cracked pepper.

The meat should be finished roasting around mid-afternoon, then I will roast the vegetables.

I also have a Raspberry jello dish for dessert after supper.

I ended up not having this last night because my "going to" never got up out of the chair to cook it. I did however, cook it today, (minus the asiago cheese) and I am so glad I did, it is delicious! I left out the shrooms, and added in chopped radishes, & cinnamon along with my favorite Mediterranean spice blend.

I am going to cook up some ground sausage, and lightly stir fry some garlic, mushrooms, onion, zucchini, and sweet peppers. Then stuff it all inside this Sweet Dumpling squash that is in the oven baking, sprinkle it with a little asiago cheese & bake it for another few minutes.

I was starved and threw together a random Hodge podge

I thawed some chicken hot dogs (trader Joes has the BEST ONES EVER) sauteed them in coconut oil, added some fresh kale and then remembered having frozen pepper and onion blend. Added a can of chickpeas.Threw some in and let it all get to know each other. Twas yummy. Only seasoning I used was sea salt. But I did fervently wish I had remembered to buy fresh black pepper

I love my "cookie sheet" dinners! Slap on a sheet of parchment paper. Grass Fed chicken legs at one end, a pile of seasoned veggies at the other and roast til done. I also am loving these Fall root veggies. Tonight's dinner included chunked and seasoned beets, radishes, onions, garlic, parsnips, snow pea pods, bell peppers, and creamers [small white new potatoes] all tossed in a bit of evoo. Good food and super easy cleanup!

I am having a bowl of honemade Shitake Mushroom Soup....

made with:

Organic vegetable soup stock
Minced sweet onion, celery, half of a bulb of Elephant garlic, and a small golden apple cubed into smallish sections. A titch of grated orange rind, about a tablespoon of organic unfiltered cider vinegar, fresh rosemary and one fresh basil leaf. A small handful of Orzo pasta. Season with just a touch of sea salt and fresh cracked pepper. It only takes about an hour or so to cook. I'm bought a fresh loaf of baguette bread, to have with the soup. It's very delicious, light, yet filling, in a feel good kind of way.

I had a BLT from Subway with all the veggies except hot peppers and onions, no cheese and some vinegar and a little bit of the chipotle Southwest sauce. The girl and I were chatting so much that she accidentally put too much sauce on the sandwich and offered to remake it for me but she wiped as much off of it as she could and gave me a discount, so that was good enough for me, plus they have apple pie cookies (and she gave me one of those for free too!).

Total dinner score with a small drink for free as well.

I got a hella good deal at the craft store too, so it was a good day to be me today.

I'm working at my new job tonight from 3pm-11pm so I will probably just pack a pb&j and some snacks. My stepdaughter has chili in the crockpot for my spouse.

I wont be eating this I'm sure...merely because my stomach isn't right yet. However, other folks need to eat and work and after school things make for a late night..I figured I would try to cook today (trying to get back to my "normal" so that others don't have to pick up my slack. Not because they mind..but, because I do)

potato and spinach enchiladas and Puerto Rican rice, but I am using brown rice for the first time in this to make it healthier *finger crossed* it comes out ok.

I don't have much of an appetite tonight, didn't feel like cooking either. So I picked up an order to go of Zitti (Italian pasta smothered in a tomato basil sauce). There's enough to keep for another meal....but it's simply the best comfort food. Very yummy. : )

I am cooking basmati rice mixed with red & white quinoa, and grilled salmon. I will reheat the variety of leftover veggies that I scrounged from the refrigerator to go with the fish and rice.

Turkey burger mummies (shaped the burgers in an oval and they will be wrapped in phyllo dough for mummy wrappings), Pumpkin soup, and I need to figure out something green to put on the plate. Probably should figure out a dessert too since it's a major holiday ;)

Roasted Stuffed Butternut Squash halves....filled with a mix of sautéed fresh spinach, shrooms, green onions, and sausage, with herbs de provence spice, and topped with grated gruyere...baked til browned & melted....OHHH Emmmm Geee..foodgasms. (it made such a huge portion, I can have it for lunch today!)

I don't usually buy asparagus out of season but... at a time like this... I'm bending the rules. Walking sticks are totally in order. Good call! Or... I could make Brussels Sprouts brains!!!

I mixed leftover rice/quinoa with some sauteed spinach, then added chunks of grilled salmon. After I plated it I added a fried egg on top, yolk runny. Yum!

It was chips and salsa again tonight. I had to think about it because I tossed in down in between doing a hundred other things. Big lunch again so I was late to eat and didn't want to load up too soon before bed.

I don't think I've ever had pea salad before. Its a do over for sure.
