Also bought 8 plain hamburgers and made a couple of little somebodys very happy! I yelled out "Hamburger Picnic" when I came in the door. The wiggle-dancing immediately got underway! *laughing*

I am going to make that tuna salad stuffed tomato that I said I was going to make last night, but never got around to making. :blush: In fact, I am putting the eggs on to boil now. :)

Speaking of eggs, if you take a raw egg in the shell and shake it for a good two minutes, then boil and peel it. The egg will be yellow and the yolk evenly distributed. Cool huh?

I only knew that I was craving curry and sweet potatoes...so

I heated up some coconut oil in my fantab new cast iron skillet...cut the sweet potatoes into 1/2" medallions (I realized I have no peeler so this was more necessity) threw them into the oil. Cut up a chicken beast into chunks threw them in too. Sprinkled curry powder, cinnamon, salt and Hungarian paprika. Put in some water to steam the taters...added some frozen veggie mix and let it all get to know each other...

I confess...I was really hungry...but this is one of my fave meals Ive ever cooked EVER...

Soon we will go forth to hunt and gather some ice cream......

chao vegan white cheese (melted this is better than a lot of real cheese)

Bought a brand new bucket of Blue Bell ... for sure will have an x-tra large milkshake ... it will be the star of the show! And something else too ... but still undecided about that ... Hmmm, maybe a 2nd milkshake??? I had plenty of veggies on my footlong Subway sandwich today. That counts a lot!! *sneaky grin*

Toasted up some sourdough bread...spread herb hummus on both sides (the key to making a well balanced sandwich). Added: Chopped Spinach and Kale, sliced black olives, banana peppers, roasted red pepper, and sliced cherry tomatoes...served with roasted buffalo corn with a dab of blue cheese.

I had a BLT inspired salad - spinach, bacon, big cherry tomatoes sliced in half, and an avocado, with ranch dressing. It hit the spot! I'm thinking a chocolate chip cookie is next. :)

A rich veggie soup I think, beef broth base, with a couple thin slices of Asiago cheese... Fuji Apple for dessert, so freaking sweet and delish, better than candy.

Left over: turkey (that was roasted in bacon), walnut sage bread stuffing, roasted carrot and mini potatos, and gravy.

I had it for left overs last night too. I'll be having it for probably four more nights. With turkey sandwiches.

YUM.

I ate a whole pack of steamed mixed vegetables - so good. Then I had 2 banana and peanut butter sandwiches with potato chips stuffed inside the sandwiches. Took 2 large milks to get the sandwiches down.

ice cream for dessert :)
I am satisfied ... not over-stuffed but just right.

Better you than me, Georgia! I can't stand ketchup skin on meatloaf. Hot ketchup is soooo nasty to me. I tend to make mine with turkey and bbq sauce anyway.

Hrmph.

Now, I want meatloaf.

I had two servings of taco salad/fajita hybrid and by servings I mean two bowls. As in big plastic mixing bowls.

Then I had candy.

I followed that up with Bag of Bones.

And fizzy water.

I guess I'm good.

I made a wrap using a whole grain tortilla, chunks of grilled chicken, lettuce, diced cukes, tomatoes, feta and a little balsamic dressing. I had sweet potato fries with it. I only ate half because the fries filled me up, so I will have the other half tomorrow with a salad.

I had a Caesar salad and Campbell's Slow Kettle Texas-Style Angus Beef Chili. The salad was good and the soup was disgusting. I've tried a few of the Slow Kettle soups and I only found one that I've liked. I think I'm giving up on this brand. Gummy bears and BoB with fizzy water to finish.

Chicken is in the crockpot in a mixture of allspice, ginger, garlic, onion, and garlic oil. Sliced up zucchini is in the fridge marinating in italian dressing to be sauteed later. Eggs are cooling and will be made into deviled eggs. At some point later, rice will also be made.

I dont know if this will sound odd...I just kind of threw dinner together.

I was CRAVING cabbage...

I sauteed garlic and cabbage in olive oil...added some cubed turkey ham and a sliced apple...sprinkled some caraway seeds on it....

It was quite yummy....

I fixed smothered pork chops, cooked up a pot of string beans with new potatoes and smoked bacon also had dinner rolls. I'm hoping it was good cause I have been on the blink with some germ all day and have no desire to eat...yet.

what I made:

chicken breast stuffed with fresh garlic and seasoned with lemon pepper seasoning. cabbage steak rubbed with garlic, drizzled with olive oil and sprinkled with TJs every day spice. I planned to eat my leftover 1/2 roasted sweet potato also

what I ate:

the chicken and only the chicken. After I took it out of the oven, I was checking for doneness and accidentally knocked everything onto the floor....I called the 5 second rule on the chicken but the cabbage kinda went everywhere...

If I felt better I would just go out for a bite...as it is...the chicken is sufficing. I just really wanted the cabbage steak wicked bad...such is my day....meh

Last night, I had a smorgasbord of delights. I had a spinach and feta tasca, a few roasted mini peppers stuffed with cheddar bacon spread, some Greek pasta salad, some broccoli crunch salad, some kale "super food" salad, fizzy water and a small handful of gummy bears.

I'm very tempted to just make some chicken soup since I have a lot of good things to put in it...

Off to the kitchen to check the freezer and see about a quick nuke-able something ... if there's nothing there I want, I will play catch up game tomorrow - eat two footlong veggie and cheese subs for breakfast instead of one. ;) In fact, forget the trip to the kitchen, I am too tired to prepare even a frozen dinner.

So, I started on some new meds that make my stomach turn. I take it once a week and for 4 days after the only thing I can manage without feeling sick is PB&J...that's what dinner consisted of, oh, I did attempt a couple mint oreo thins. The taste was well worth the nausea.

I made marinara and meatballs with angel hair, some fresh rolls, and a Caesar salad. Oh - and yellow cupcakes with chocolate cinnamon frosting for dessert.

If you cook, trust me when I tell you that adding pureed roasted red peppers to both marinara and your meatball mixture is a thing you should do.




Confidentially: you wouldn't do wrong to add a couple of anchovy filet to the roasted red peppers when you puree them for the sauce. If a person you cook for is one of *those* people, I promise it is not a sin to keep the anchovies a secret.

A bunch of us from work are getting together tonight for an anti-halloween soiree up in the mountains. It's our soon to be annual 'Summer Party in October.'

Each of us are to bring our favorite summer garden party fare, which I am taking a huge bag of Horseradish potato chips and a commercial size container of cottage cheese.

I'm also taking a bottle of aspirin with me too, just in case I have one too many shots of jello.

And, my gigantic patio table umbrella which looks like a huge watermelon. It's raining like it's never rained before and it's big enough to keep a bunch of us dry, in case we want to lounge around outside the cabin. :)

I pulled the thanksgiving roast carcass of Turkey with left over gravy out of the freezer this morning a 6am and roasted the frozen giblets and minced them. I've been boiling the turkey carcass, giblets and gravy for about 12 hours now, with spices, bit of coconut oil, and about to sieve the bones out. Will add veg and should be ready in another three hours.
I am either going to make bacon fat and spelt dumplings or I'll put polenta in. Haven't decided yet.

This gigantic pot of food will have cost $3. The bacon fat is something I freeze when someone fries bacon, the turkey is left over from thanks giving, the polenta was a freebie from a neighbour, the veg was a reduced bag of mixed veg from the grocery store for $1.50 and the spelt flour comes to about $1.50.

This gives me dinners all week :)

I am rockin great at thrift.

Most of the day was one or the other of us off doing something or other, so I
put a roast with carrots, onions and celery in the slow cooker then headed off. All in all my son and I had a late lunch say about 4:00 p.m. I guess that's a early dinner as well. So it's been snacking on whatever for the rest of the day.

I made homemade soup.......stew meat, diced tomatoes, baby carrots, green beans, diced sweet onion, celery and potatoes. YUMMY for my tummy. Cooked together for 2 hours at a low boil. mmm mmmm mmmm goood.
My neighbor gobbled it up. :)

I made an AWESOME dinner...with help from Trader Joes....

I went there for coffee after work today...went and did the requisite sample round...and today was a tasty dish from the frozen section; butter chicken with basmati rice.

It hit the spot and I knew I wanted something easy for dinner tonight so it came home with me.

For a veggie I cut parsnips and carrots into uniform wedges, drizzled with olive oil and sprinkled with TJs every day spice. Started them first and then added the quicker cooking butter chicken (which is also microwaveable, but I refuse to own one)

The smell of parsnips cooking is just amazing to me.....yum :)

I had my first ever...pork cheeks with an orange jus glaze, asparagus puree, fresh asparagus spears, sautéed in brown butter chanterelles and micro greens on top. I had a side salad of chopped mixed microgreens with diced romas, alfalfa sprouts, and bell pepper slices with lite Ranch dressing!

I think I will cook the pasta and then toss it with the spinach while it's still hot, then toss that with everything else and call it dinner. Maybe a green salad too.

I've had a roast baking in the oven since 11 am, but won't be ready until late this afternoon (5 pm). Once it's ready for supper, I have put together a dark green salad with pine nuts, cherry tomatoes and sliced baby cucumbers. There are baby red potatoes roasting too. I need to make some fresh basil pesto to dress a few artisan garlic clove slices of bread.

Yesterday I made spaghetti squash and crock pot sauce with mushrooms, peppers and zucchini and turkey sausage...

I undid the low carb by getting a mini Italian loaf...but I had fresh butter that was just begging for some nice bread...what's a girl to do??

Lemon/orange/ raspberry sherbert for dessert...

I wish I'd remembered I had wine in the fridge... but I will be eating this for days so I have another shot at it tonight lol

I wanted them something fierce 😦 but they were causing severe pain to my tongue, necessary to back out ...I can eat them in a couple of days. So I nuked a small Stouffers' macaroni and cheese dinner. I am not intersted in it but Jennifer and Kevin sure have been ... they already had their dog food dinner, and now they just finished about 3/4ths of that mac n cheese dinner.

Sugar.

Put a one or two TBS of granulated sugar on your tongue and press it to the roof of your mouth for about 30 seconds or so. The sugar will melt into a sweet goo that will coat the rough parts of your tongue and soothe the worst of the pain.

Don't argue; just do it. I keep a small bag of sugar in a ziplock just for this reason because sometimes pizza is too hot when I stuff it in my face.

So...I've decided to go down to the Local Joint and have a turkey burger...and maybe a beer...and DEFINITELY some sweet tater fries....and if there's cake....I may have that too. I'm totally bummed...

Last night, I had the last of the meatless and soy free "chicken" nuggets with some tater tots and fizzy water.

Tonight, I have plans to make sweet Andouille chicken sausage with red beans and rice and maybe some broccoli. If I'm being honest, there will likely be hot cocoa cookies too.

Skirt steak sandwiches w/ some funky combo of condiments. Maybe garlic mayo, with blueberry or strawberry syrup on top.. just a drizzle not a dollop. To even the sweet/savory. And a few caramelized onion on top of that. A side salad and/or coleslaw.

Tea to drink of course.

So with the dental work I got today, it had to be something I didn't have to chew. So to the pantry I go...
Truffle/portabella mushroom gnocchi.
Made a sauce of, onions, yellow peppers, garlic, cooked down to soft. Added tomato sauce, shredded left over pork roast, all kinds of fancy spices, including red chili pepper. Mixed in fresh spinach. Topped the gnocchi with the sauce and shaved parm cheese.

Must say, that concoction was rather delish....

I made two types of pasta dishes..one a simple homemade mac and cheese and the other...hmm no idea what to call it. I started with using mushrooms, then added a compound butter (green chili peppers, lime, garlic). Then noticed there was a tomato, olive salad/bruschetta (that was left over from a party) and another mushroom garlic type thing that was also left over...so, I threw that in (I believe in re-purposing things). Cut up some fresh herbs and some organic pasta and BAM a tasty little pasta dish.

I was hunGRY....I still have some chicken left over for lunch today...

Tonight will be chicken and veggies...maybe sweet potato fries or acorn squash...if the spirits move me...

This evening I made a burrito of sorts with black beans and tabbouleh. I also made a salad using two types of tomatoes, cucumbers, onions, green bell pepper, black & green olives, feta cheese and a light Greek dressing. My fridge is pretty empty now but nothing went to waste. :)

I grazed really...had a very small bowl of the pasta from last night....later made tater tots..then saw imperfect pancakes and was compelled to make perfect pancakes *shrugs* it's been that kind of day.
