Last night I went to The Spotted Pig, which is quickly becoming my favorite restaurant ever. I had Devils on Horseback (dates wrapped with bacon), burrata cheese, deviled eggs, steak, mashed potatoes, polenta, and asparagus. OMG, it was delicious. :bow:

It's a rainy wet miserable day hear, being my son will be working in the shop but dealing with this nasty weather just the same. So I am making beef veggie soup, it's almost like a stew but not quite. Then I guess I can whip up a pan of butter milk rolls to sop up the juice....good eating.

Tonight I grilled a hamburger patty on my new cast iron that was delivered a day earlier than promised. :) I also cooked some couscous with pine nuts & garlic, and I steamed a rainbow of fresh veggies. Good stuff!

I sliced up some onions, mushrooms, summer squash, and zucchini ..seasoned with salt, pepper, onion powder, garlic powder and grilled them up. That will be served either on yeast bread or a tortilla with mozzarella cheese and pesto in the penini press with chips.

Young blood will be having brats with rice and a veggie

I sauteed zucchini and summer squash with olive oil and butter...added fresh garlic and fresh basil..

Baked chicken breasts are in the oven. Still haven't decided how I want to spice it...

Toying with the idea of making roasted chickpeas later...

I am in the same quandary. I was going to do a BLT.. then I thought..maybe chili .. then some type of soup (though I had that for lunch)..I am thinking the BLT is going to win out because I have been craving one for a week.

Though that fish and chips idea sounds good too.. or maybe ordering in Chinese..

It's more a lunch but salad with baby spinach, baby carrots, tomatoes, avocado, cheese and ranch. And an awesome peach that was calling to me at the store. Homemade lemony sweet iced tea to drink.

I forgot to mention that I bought a loaf of crusty 5 grain Italian bread to go with the orzo soup. Dinner was so delicious tonight!

MY honey called yesterday afternoon and asked me out on a date. So, we went to a local Japanese Steak House...I had the shrimp tempura and a Tuna roll with a small salad and ginger dressing! It was divine...I love our date nights....she is amazing!

I'm being a bit adventurous s today so I thought I would try a Greek dinner, so hear goes. I fixed egg plant with lamb rolled in grape leaves, Greek salad with a lemony home made dressing, humus with green sauce, veggie k-bobs grilled on the grill. I let the veggies soak in a mixture of very light olive oil with a touch of garlic and herbs. I will most likely drink unsweet tea, yesterday I baked a lemon pie so if its possible to eat any I have a dessert.

I found a new recipe for a Spanish rice. So, I made that and a black bean salsa..which will be served in a tortilla with hummus.

I made a big salad of mixed Italian greens, grape tomatoes, smoked bacon bits and the hard crunchy kind too, cracked black pepper, a torn up chicken breast and a tangy dressing (like French but not quite) and it all went downhill from there.

Gummy bears.

Pineapple coconut Greek frozen yogurt.

Tootsie Pop.

I am considering opening an IV line for the Coke.

Yeah....hormones.

I can share the recipe--

1 medium yellow onion
1 medium/large apple (your choice of variety)
2 cups of large cubed butternut squash
2-4 bunches of kale or 2 bags of kale (washed/cut up)
1/4 cup apple juice
1 pound of chicken sausage or any variety you'd wish
salt/pepper

Chop up onion, apple, and squash-- add cooking fat to a pan (I use ghee) (medium heat), when heated add onion, apple and squash and add salt to taste. Caramelize onions/apple/squash mixture when soft transfer to a bowl and add raw sausage to hot pan and cook til no pink. I like larger chunks but do whatever you'd enjoy. After cooked, add cooked veggies back in pan- add cracked pepper to taste, stir. Add washed kale to pan and apple juice. Cover til kale/butternut is tender to your liking. Uncover to let the juices cook down a bit. Serve. You can add fried eggs to top if you'd like-- but we just eat it as is.


Tonight's dinner:

Grilled pork tenderloin served with an asian inspired slaw (napa cabbage, snow peas, julienned carrots, ginger, garlic, coconut aminos, sesame oil) and pineapple spears.

Well..it was far from nutritious..but hey it was a delightful treat. I'm a very simple sort. I enjoy very small things...big dinners and fancy nights out really aren't "my thing." I enjoy them when I am doing something special for someone else..but not for me.

So, here we go. We (gren and I) started out at Auntie Anne's Pretzels and shared an order of pretzel bites and a cherry lime aid. Then we both did the massage chairs..stopped at a store and off to D&D's (dunkin donuts for those who don't know) for a coffee and donut. Drove around for a few and picked up a cheese pizza and bread sticks to bring back to the kids.

D&D's and Auntie Anne's are two of my most favorite places that I rarely treat myself too.

Tonight was birthday dinner for my brother and brother-in-law:
Chicken, mashed potatoes, gravy, corn, lima beans, applesauce, cottage cheese, and string beans with bacon and almonds. Chocolate cake with peanut butter icing, coconut cake with icing, or strawberry shortcake with homemade sweet biscuits.

My dinner: chicken, string beans with bacon and almonds, and a small helping of mashed potatoes with gravy. I then went back and had 3 sweet biscuits.

Tonight's dinner will be a salad of romaine lettuce, cucumber, red onion, radishes, carrots, sweet peppers, celery, tomato, broccoli, topped with black peppercorn ranch dressing and freshly grated parm cheese.

I may also have some bacon, freshly snapped string beans and almonds that is leftover from yesterday.

Last night I was roaming around in the big freezer and found the last of the turkeys I bought on sale in January. So as I really like turkey sandwiches I am now cooking a 12 pounder for the heck of it, and sandwiches. I also will have the regular things to go with it for dinner to night.

I bought a sub while at the store today. It was beautiful. Honey oat roll, bacon, vinegar and chipotle Southwest sauce with lettuce, spinach, banana peppers, black olives, pickles, tomatoes and cukes. Oatmeal raisin and white macadamia nut cookies for dessert. Soda because I like the bubbles and it goes best with subs. I am full, full, full.

We had a sampler plate of roasted Lamb Gyros, falafel, and homemade fries that came with crumbled feta, and small bowls of dark green salad with yummy tomatoes dressed in a creamy garlic-cheese-type sauce.

Eta: we're headed to another place for dessert (cake and coffee).

We were going to grill, but Mother Nature said no. Instead I'm roasting a lemon garlic pork loin as well as some yellow squash and vidalia onion that I tossed in olive oil, garlic, salt & pepper. Also on the side - cucumber and tomato salad in a lemon dill Greek yogurt dressing, and sriracha deviled eggs.

I made a spicy watermelon salad from The Chew.

4 cups cubed watermelon
2 jalapenos, sliced
4 cups baby arugula
1 cup mint leaves, chopped
zest and juice of 1 orange
zest and juice of 2 limes
1/4 cup extra virgin olive oil
salt
black pepper
8 oz crumbled feta

1. In a large bowl, add the jalapenos, arugula, mint and watermelon
2. Make the dressing: orange juice and zest, lime juice and zest, olive oil and salt and pepper
3. Toss in the dressing and serve with feta on top

It was a nice change for me and I did like it but I would decrease the jalapeno and the mint in the future and I would probably use a mix of greens instead of only arugula.

I had some red velvet cake for dessert. I was going to make a black bean burger too but I'm just too stuffed.

Came home from work and had cottage cheese with fresh blue berries and the last of the homemade peanut butter cookies.

I made some homemade black bean burgers (2 cans black beans mushed, grated onion, seasoned bread crumbs, chili powder, hot sauce, salt and pepper, 1 egg to bind) to be served with swiss cheese, lettuce, tomato, and a horseradish mayo (horseradish, mayo, cayenne pepper, ketchup. With a side of homemade mac and cheese (colby jack, queso, and mexican cheese, milk, butter, pepper, and mustard)

Young blood will have the mac and cheese with a ham sandwich

I had a leftover cooked chicken breast from the other day. I knew I needed to do something saucy with it since it may have dried out in the fridge...or else make chicken salad...so....

I put some sweet baby rays in a small pot, added some minced garlic, lea & perrin's, hot sauce, grape jelly and yellow mustard. Sounds icky but truly....it was delish.

On the side: Garlic smashed taters and some mixed vveggies...

Truly not bad considering I thought I had nothing at all to eat in the house lol

I had my sweet & spicy molasses chuck roast that was so tender it flaked easily with a fork, quinoa and brown rice, steamed mixed veggies and a salad with baby arugula, cherry tomatoes, Parmigiano Reggiano cheese and OG dressing. I had raspberry cheesecake gelato for dessert and I'm working on cutting down on my soda intake so I had Black Cherry fizzy water to drink.

Last night I attended a cooking class with a local chef that owns a vegan restaurant. So, tonight is inspired by that class. However, I made it vegetarian instead of vegan.


Portobella Wellington: shallots (or use a small onion), green onion, leeks (finely chopped), stems of mushrooms and a few small mushrooms chopped, chopped spinach, garlic minced, sauteed until soft. Then add a couple tablespoons of cream cheese and a tablespoon of sour cream. Salt, pepper, cayenne pepper, and thyme to taste. Set aside to cool...take large portobella mushrooms clean the inside with a spoon, brush with olive oil and place in skillet top side down until soft (not mushy, soft). Let cool. Take pastry dough (or if in a pinch use a sheet of crescent dough) cut into squares..place large portobella mushroom in the middle..fill with stuffing...wrap and bake at 400 for about 20-30 minutes until golden brown.

Plate with veggies ...and BAM...dinner is served

Grilled chicken breast with Oven roasted cauliflower and broccoli browned with a little sprinkle of parmesan cheese. Dinner was delicious.

Tonight I poached fish in olive oil, butter, parley, garlic with fresh ground pepper then dressed it over with lemon. A salad was made and the dressing was made with lemon juice, evoo and a touch of white wine plus various herbs.
To have someone that apresheate the time it takes to do this from scratch cause I could have called for a take out, I doubt may son would know the difference .

I have all the fixings (seriously, I typed, fixings?) for homemade Alfredo sauce. Angel hair pasta in the pantry, shrimp in the freezer.

It's barbecue weather (pearly skies, cooler temps), and we've been invited to several BBQ'S. I think tonight our friend's said we can bring something to BBQ or just be served with what they plan to make (it is a surprise, to me). Saturday and Sunday we take to the road as we drop in on invitation friendly engagements from people we've not seen in quite awhile. Beach BBQ, backyard BBQ.

I am having a nice cool Waldorf chicken salad with roasted lemon pepper chicken, red grapes, toasted walnuts, apple chunks, and whatever other veggies I decide to toss in, all on a big bed of chilled romaine lettuce. Cold watermelon and blueberries for dessert!

Can you tell I am burning up? :byebye:

chances are I'll be throwing something together that has no name. I'll be looking into the fridge and on the counter to see what veggies I have ( I know I have spinach, tomatoes, etc) and will make a something to toss in with pasta

Dinner was to be open-faced broiled sandwich of tomato, smoked Gouda, and bacon....instead had a burnt grilled cheese because I accidentally burnt Dad's sandwich and made him another. Also had garlic dill pickle spear and 2 queen stuffed green olives

Lastnight: g/f pizza made with pesto, artichoke hearts, sharp cheddar and diced bacon with a spinach salad with carrots.
Tonight: carnitas w/ green chile and mexican slaw (cabbage, cilantro, red bell, and an orange/lime cumin vinaigrette)
