today I was busy cooking..so there are options

1) I had frozen the jambalaya (without the rice) the other day because I wasn't ready to eat it and still needed to adjust the flavors (to spicy for some). I took that out and added a few things to reduce the heat from the peppers and cooked up the rice to finish it off.

2) I made a Tuscan Bulgar (because I couldn't find farro and didn't want quinoa) soup with white beans and basil

3) I have pinto beans in the crock pot

and I have yeast bread on it's first rise and should be ready for dinner

corn on the cob...ever since I found out you can cook it in the microwave in a few minutes with no mess, pots, water, I've eaten it with every meal, including breakfast...long as the fresh supply lasts. Was there ever a more perfect vegetable...except maybe chilies.

Never found hand cut fries...but did find something called potato ribbons...yeah...not NEARLY the same...they were more like over done potato chips...

Also passed by the ONE booth offering fried dough (called elephant ears here) instead of funnel cake and never found it again...

I did get cotton candy though...

It really was all the same food with few exceptions. It hinders a lot that I dont eat pork or beef. Down here those are staples to the diet...

As soon as I am finished taking a mental break from test taking, I will finish my tests (very important :blush: ).

Then, I will swish my way home, to my other home, and once home, right after I kick my shoes off, I will put on a apron and begin taste testing the wonderful food that my son and boyfriend are grilling for our supper tonight.

I've been in an "ick" mood when it comes to dinner these days because of the humidity here, so I have been grazing for the most part. I think I will cook some chicken in the crock pot overnight to have with some veggies and a salad tomorrow. I will likely have fruit of some sort for dessert.

BBQ pork chops on the grill, baked potato with a dab of sour cream, mixed vegetables and sliced tomatoes. Large milk to drink.

I am sitting outside on the patio eating right now. It is so nice out tonight, a little cool and no bugs. I cooked 4 huge hamburgers for my canine children. They ate first. Now both of them are here at my feet looking pitiful every time I take a bite of food.

This is the recipe that I generally follow with a few additions. I add a bay leaf, about 2 tsp of cumin, a tsp of curry powder, 1/4 teaspoon of cayenne, and 1-2 tbsp of Sambal Oelek chili paste (depends on how spicy you like it).

You can use any veggies that you like. I typically use sweet potatoes instead of regular potatoes, and I like to add yellow squash and sometimes a little okra or corn.

I know it sounds a little odd adding peanut butter to soup, but trust me when I say this is good stuff. :)

I'm going with a butternut squash and kale risotto (butternut squash, kale, garlic, white wine, veg broth, red onion, Arborio rice, parmesan cheese) with a side salad and french bread

A simple roasted chicken with citrus and seasoning.

Ingredients:

1 ( 4 lb) whole chicken
1 large lemon
Butter
Herbs de Provence Seasoning
Sea Salt and pepper

Directions:

Preheat oven to 350F

1. Pat chicken dry with paper towel. Salt and pepper inside of chicken.
2. Rub all over with butter.
3. Sprinkle chicken with some lemon juice, Herb de Provence and some sea salt
4. Put the lemon that you squeezed inside the chicken
5. Roast the chicken for 1 1/2 hours. Basting every 25 minutes.
6. Remove lid of roaster during last 25 minutes to brown and crisp the skin

Serve with Rice and Vegetables

I literally threw dinner together...

I sauteed the remaining chicken sausage in olive oil, added some leftover fresh mushrooms and frozen pepper/onion blend. Threw in a can of diced tomatoes and Got some fresh basil from the garden and threw it in.

Then made a pot of spaghetti which I mixed with some olive oil and minced garlic...

Threw it together and sprinkled with some good parmesan cheese. Voila!

Does everyone know? The Rock Star of all ice creams is back. Loving that Blue Bell! I was a pouty stone butch while they were not producing and distributing. I could not get satisfied with any other brands. Mayfield was as close as I could get but still lacking.

I am cooking chicken & artichoke hearts in crazy water. I also added summer squash to it, both yellow and zucchini...and okra. It is simmering in my cast iron dutch oven and it smells so good. :)

I'm making black bean veggie burgers (lentils, mashed black beans, spinach and kale chopped in the processor, onions and peppers finely chopped, bread crumbs, soy sauce, worcestershire, memphis seasonings, salt and pepper) with temeph "bacon," lettuce and tomato..maybe some cheese on a bun with a side of fries

I like making veggie burgers because I can pretty much put any veggie in them as long as it is put in a food processor to increase the nutrition value and season to taste...healthier and better tasting than store bought.

I will say that the transition from meat eater...to vegetarian...to vegan has been an eye opening experience. Before, I thought I would be going without a lot of things...but, with an open and adventurous mind I don't miss much. Of course the fact they have created vegan foods that taste like the real thing helps. I haven't gone fully vegan yet..but I'm almost there.

*disclaimer doing this was for health reasons and not animal right reasons...I can still throw down a slamming meal for my meat eating friends ;)

While at the farmer's market today I purchased some smoked pork chops from a local butcher. I absolutely love the meats he makes. It is all fresh and very tasty. Since he didn't have any quarters left in his change box he was rounding everyone's meat prices down. So if it was 11.75 he gave back change as if it were 11 bucks. Once I got it home I got the roaster out and added those, sausage, some fresh cut pork chops (not smoked) and about 2 quarts of sauerkraut. I placed it in the oven to roast for the afternoon and then around 4:30 I peeled potatoes, diced, boiled, and mashed them to go with the sauerkraut. There is plenty of leftovers for tomorrow and I can share some with my sister (her hubby cannot even bear the smell of sauerkraut). It was delicious!!

for dessert, they had Blue Belle Homemade Vanilla ice cream and I am still working on my 28 oz milkshake ... made with milk, ovaltine chocolate malt powder and huge scoops of the same ice cream

Jennifer subscribes to the belief "what is hers is hers and what is mine is hers too" ... she stuck her snoot down in my milkshake when I placed it on Kevie's new bed steps I recently made for him ... only turned my back on it briefly ... chocolate it a definite no-no for dogs!!! Jennifer is sneaky. LOL! I have to keep a close watch on that little pocket pittie!

That is what I am pondering right now.

After reading cinnamongrrl's post, I am leaning toward nuking some corn dogs. Need quick and easy instead of quality tonight ... just something down there to get my stomach off my backbone. :) Think I am losing a little weight because I find myself constantly having to pull up my pants. :(

Later tonight I'll have stuffed red bell peppers. Stuffed with ground beef, TJ's 8 Healthy Chopped Veggie Combo, olives (i love olives), cheese, chopped tomatoes, green onions. Seasoned with cumin, turmeric, Mexican oregano, coriander, not sure what else.

I'll use an 1/8 cup of cooked brown rice/quinoa combo as a binder per bell pepper. It may not be enough to bind, but it will still be good to eat.

OMG....shrimp/crab burgers on Hawaiian sweet bread bun with a cilantro/Serrano pepper mayo I whipped up. It was so so good. With some steamed snow peas and green beans.

We are waiting a little while to top it off with Carmel pumpkin pecan upside down cake with real vanilla ice cream.....sounds yummy Huh?..

Tonight was me staring blankly into the cupboards until my hands spontaneously started yanking things out because my gut thought my gullet had been cut.

I wound up with a Velveeta shells and cheese cup, Sante Fe rice blend, corn, steamed mixed veggies and sliced beets and a little Yum Yum sauce on the side. Chocolate milk to drink.

Grapes and a Fiber One Cheesecake snack cake for dessert.

Ohhh Gemme, that sounds so good. I am sitting on the patio same as last night. Trying to think about what is for dinner. Macaroni & Cheese cups x2 will be a for sure thing. And I will heat up a bag of those wonderful steamed veggies - I love them! Quart of cold milk to drink.

I have a container of Purina Beneful Chopped Blends (beef, carrots, peas, barley) for each canine child baby so they are going to be thrilled.

we are so hungry we can barely wait ;)

I love this little Weber Q-1000 tabletop gas grill! It is their low-end one. Cooks evenly and quickly ... and so clean. I like the taste of charcoal grilled better but was tired of the messiness and wait time.

Mmmm, is it dinner time yet? This is our dinner tonight...

Peach Whiskey Barbecue Chicken

Ingredients

12 whole Chicken Thighs, Bone-in, Skin-on
2 Tablespoons Olive Oil
2 Tablespoons Butter
1 whole Yellow Onion, Diced
1 cup Whiskey
12 ounces, Barbecue Sauce
1 jar Peach Preserves
1/2 cup Water
2 Tablespoons Worcestershire Sauce
1 Tbsp minced garlic
3 whole Green Onions, Sliced Thin

** Use salmon for a great taste change **

Preparation Instructions


Preheat oven to 300 degrees.

Heat oil and butter in a heavy pot over medium-high heat. Place chicken thighs, four at a time, in the pot, skin side down. Brown both sides, then remove to a plate and repeat until all chicken is browned.

Pour off half the grease, then return pan to stove. Add onions to pan and stir, cooking for 2 minutes. Pour whiskey into the pot, being very careful if you're using an open flame. Stir and scrape the bottom of the pan, allowing whiskey to reduce for a minute or two. Pour in barbecue sauce, peach preserves, water, and Worcestershire sauce. Throw in garlic cloves. Stir until combined, then return chicken to the pot, skin side up. Cover and put pot in oven.

Cook for 1 1/2 hours, then remove from oven.

Serve pieces of chicken over a big pile of smashed potatoes. Sprinkle sliced green onions over the top.

I have to brag a little about last night's dinner. I had to get up way before the crack of the crack of dawn, and didn't have time after dinner.

I sautéd ahi tuna steaks in unsalted butter and lemon. I need to omit as much salt as I can right now. So, I've been getting creative with sauces, herbs, spices, hot peppers...lol

I concocted a relish of chopped red onion, cilantro, garlic, tomatoes, Serrano pepper, lemon juice mixed lightly with low fat mayo. Ohhhh, topped that the tuna. Oh my gosh! Delish!!!!

Served with steamed white rice and steamed fresh snowpeas.

All fresh, no salt added! Healthy, I say.

I created a very large and very revolting dinner early this evening. Then I ate it.

I'm used to "experimental cuisine." I've built up such a tolerance over these many years of kitchen experience; but this time I may have taken a little too much artistic license.

If you are too sickly to eat them now, put them in the fridge for later.

I do that experimental stuff in my crockpot. A few years ago, I made up a stew, it had about $30.00 worth of meat and other ingredients in it. Tasted like chit!!! I went and bought 4 pounds of Colby cheese ... you know if you melt enough cheese in the disaster, it will help it. With the cheese I was able to tolerate it pretty well. Ate all of it in a week ... but ... come closer, I don't want anybody else to hear ... it is far too embarrassing ... let me whisper in your ear ...I could not go to the bathroom for days after all that cheese ... then when I finally did, I thought I would surely have to call the paramedics. Almost killed me I tell you! LOL! TRUE STORY! Let's just keep that embarrassing part between the two of us. I know you will keep my little secret. ;)

Soooo...to recap for those who may have joined the conversation late -30 dollars worth of various varieties and cuts of meats, "other" unspecified ingredients in a festive array of tantalizing amounts and proportions, all topped off with four - not just 1, not 2, and not even 3, Ladies and Gentlemen - but 4 pounds of Colby cheese simmered to crispy burnt perfection over the course of one week in the slow cooker, lol.

I'll take your secret to my grave; I swear, lol.

I'm a vegetarian, so - while both of our creative cooking skills are clearly unparalleled - my own more revolting experiments tend to be a bit lighter and "quicker." (That's the secret to surviving serious food poisoning - I'm giving out tips now, lol)

Just got back from grocery shopping and I am starving, so no cooking for me tonight. I got a friend of mine who works in the grocery deli to make an awesome roast beef sub for me, so I will have that tonight along with a glass of tea. Friends rock!

That said, I almost can't wait for tomorrow's dinner, it is one of my most favorite meals. Hey no peeking! You have to wait, same as me. ;)

I am cooking Italian sausage and vegetable stir fry over polenta. Yum! I love this so much that I am cooking the polenta already and it is only 11 am. :) The vegetables I am using for the stir fry are fennel, red onion, zucchini, yellow squash, tomatoes, and yellow and red bell pepper, and of course some seasonings and herbs. ;) Oh yeah...it has asiago and parmesan cheese on it as well.

It's early yet today, but I was thinking of cooking something spicy.... I could make some Jasmine rice and cook some chicken and make some Thai peanut sauce. Maybe steam some late summer crowns of broccoli buds, too.

I tended to an organic tomato plant which is loaded with little yellow, red and orange tomato fruits. I need to pick all of them and wash them up and dry them. Eat them too. :)

I just made some homemade herb pizza crust..so, tonight is an array of mini pizza choices. In the fridge we have olives, peppers, onions, mushrooms and sauce. I also saw a recipe with pureed butternut squash, broccolini, garlic and onions. So, since I have those items I'm going to try that on one of them as well.

Interesting dinner. I cubed some chipotle tofu and threw it in with some diced peppers (one yellow, one red and one orange) in the skillet. I added a smidge of fiesta ranch sauce and let that simmer through and put a ladle full of the mixture on top of a small bed of steamed jasmine rice. I made sweet potato fries as well. Chocolate milk to drink. Bag of Bones Cheetos for a snack later.

This is a week of eating out for me so I am trying to order reasonably healthy.

Tonight it's Chinese. I am having Wonton/egg drop soup, & Moo Goo Gai Pan. The Moo Goo Gai Pan comes with pork fried rice and an egg roll, but I got them to switch it to a spring roll and veggie fried rice and go light on the oil. They were very accommodating to my request. :)

Tomorrow night it's dinner out with a friend, so no telling what I will have.

It has chicken, mushrooms, edamame and green beans and has a nice sauce included. I added some frozen stir fry veggies for color and served it over rice (brown/white mix)

I had dinner out with a friend tonight. She had bourbon chicken that was loaded with mushrooms, and squash & zucchini. I had grilled salmon, steamed broccoli and the zucchini & squash. For dessert, she had some kind of devil chocolate lava thingy, and I had a piece of hot apple pie. We both had unsweetened iced tea with lemon.

Dinner was great, as was the service and the company. :)

We had steaks on the grill, baked potatoes with sour cream, steamed mixed vegetables. I had milk to drink. Then I had a large milkshake.

My khakis and jeans seem to be sliding off my hips. When I am off work, I am doing lots of heavy duty manual labor lately, lot of lifting and carrying "heavy." I think I was not eating enough. More muscled up than normal right now but still don't need to be dropping weight. Anyway, great excuse for milkshakes. ;)

I MADE soup in the crock pot...one of those 12 bean mix soups...it sounded wicked good. I added garlic, veggies, a can of tomatoes with chilies, some hot sauce and various spices...

but....

It took forever and I got hungry so I made icky mac n cheese from a box. I hate the stuff and I never make it for myself but...it was quick and I was hungry. I diced up a jalapeno from the garden and added it in. Made it tolerable. I also have no milk so I used extra ater and butter. Garlic salt made it yummier...

I also baked a cake. Spice cake, made with cinnamon apple sauce instead of oil. I have cinnabun frosting for it once it cools....and Im thinking I may crumble up some almond/ginger granola to sprinkle over it....

Fall makes me feel all bakie :)

Sometimes I just cook for hours, playing with flavors, textures and taking risks. Some work...some don't. Today everything worked :)

I know vegan things don't sound appealing to most. Which is why I have found that by having cooking days, like today, I can find and/or create recipes that are a hit at home.

1) hand pie...with a "buttery" biscuit dough, homemade refried beans, pico de gallo, vegan cream cheese, avocado, salt and pepper. These got wiped out.

2) Rice and beans..this is a no fail here and will go well with the hand pie or "meatloaf"

3) Vegan mushroom and lentil meatloaf (it's all about the food processor for the right texture and seasonings for the right flavor combo for this one... kid approved)

4) black eye peas and black bean soup...inspired by India (onion, celery, black beans, black eyed peas, diced tomato, garlic, vegetable broth, coriander, bay leaf, dried red chili, ginger, garam masala, salt, turmeric, and cumin seeds). This will be for tomorrow..but my tasters say it's a keeper.

I have right at 5 pounds of chicken tender strips I wanted to cook on the grill. Actually, I would have cooked half of them because I split them up into 2 packs before I froze them ... anyway, worked late, just got home and too tuckered to bother with that tonight. Already fed the babes and now they both are knawing on a large milkbone.

Quick, easy with no frills is the name of my game plan tonight ... soup or Captain Crunch since I am totally out of Blue Bell. No milkshake tonight makes RockOn a very sad stone butch. :(

It was a can of Healthy Choice chicken noodle soup, saltines and milk

Lucked up, found a bag of brownie brittle I thought was empty ... it took another glass of milk for me to empty the bag ... I even got a table spoon and retrieved all the brownie brittle "sand" in the bottom of the bag. Quite satisfied, I am!

I was asked to post the recipe for the bean soup that was listed in my last post...So, here it is.


Ingredients:
1 can black beans (or 1/2 cup dry beans)
1 cup dry black eyed peas (I have never found these per cooked in a can. If you do have canned black eyed peas then use 2 cans)

2 teaspoons olive oil or vegetable oil
1 teaspoon cumin seeds
2 teaspoon coriander powder
1 bay leaf
1 teaspoon kashmiri garam masala ( or use regular garam masala)
1 teaspoon turmeric
1-2 dried red chili or ½-1 teaspoon you can use chili flakes
5-6 cloves of garlic chopped
1/2 inch ginger minced or 1 teaspoon dry ginger
1 chopped red onion
2 medium tomatoes, chopped or 1 small can diced tomato
1/2 cup chopped celery
4 cups vegetable broth
salt to taste

First, I cook the black eye peas overnight in the crock pot by covering them with water and setting the crock pot on low. If using dry black beans add them in with the black eyed peas. Make sure to drain and rinse the beans.


Then sauté onions, celery, and garlic, ginger (UNLESS you are using ginger powder, then, add when adding dry seasonings) until aromatic, then place in crock pot. Add black beans, black eye peas, tomato, vegetable broth and seasonings. Set crock pot on low for the day (at least 8 hours for the flavors to marry. It's like a good chili or tomato sauce, the longer the flavors infuse the better it tastes).

Roast beef, marinated overnight in a homemade Teriyaki sauce, topped with peppercorns, cloves of garlic, and sliced Walla Walla onions. I also made a small potato casserole out of baby red potatoes, cloves of garlic and mozzarella cheese.

The house should be fragrant with the aroma of supper tonight.

I threw Dairy Queen in my mouth between clients....

Their $5 lunch is satisfying but definitely not healthy....

I had the chicken wraps w/ fries and upgraded (of course) to the pumpkin pie blizzard instead of a sundae.

Rootbeer to drink....the only soda I regularly drink....


THEN...my second client fed me roasted veggies and seasalt caramels.....

Have I mentioned how loved I am?

Once I cool off enough to go do it, I am going to make a tuna salad stuffed tomato for my dinner. I use mashed avocado and greek yogurt instead of mayo. I like Duke's mayo, but this is even better. :)

Made black bean turkey chili with freshly grated sharp cheddar and sour cream, and flopped some corn tortillas on the stove burner, and then brushed them with butter and salt.
