Even on new years I have to cook a nice roast dinner! The rebellious side of me wants to say "feed yourself, I'm getting take out!"
DO IT!!!! take out is a wonderful New Years Eve menu... its what I am having...

I just had late lunch with my son at OG and it took 45 min to get food I sent back. So for dinner I had dessert. That they didn't screw up!
For 100 bucks I could have made dinner for 6 people, salad and dessert and wine.

It was a most delicious vegetable and coconut curry with long grain rice. I prefer basmati rice with curry but forgot to buy more after I gave the last of it to a friend to dry out their iPhone. http://phumphries.com/forums/images/smilies/headspin.gif

I am NOT cooking tonight. I'm going to perch myself in bed with water, juice, holiday chocolate, leftover pizza from days ago & wings.
On new years day my family always got together for rice, sweet & sour meatballs, honey garlic spare ribs and the like; I miss being able to walk into that knowing I was going to have the most wonderful comfort food WITHOUT having to be the one to make it hungover.

Casa de Snow decided on finger foods for the New Year's Eve celebration, and we kept it simple.
Chicken Wings with Grant's Spicy Garlic BBQ Hot Sauce and blue cheese for dipping.
Steamed Pork Dumplings with a lemon grass ginger dipping sauce I made on the fly. It is soy sauce based.
Shrimp Cocktail
Hot Artichoke and Crab Bake served with tortilla chips for dipping.
Fried Mozzarella Sticks
Tossed Green Salad
Ms helped me assemble the dumplings and grateful i am for Her help!!! #kissesHersexyfoot

..........we live near the sea in Hastings, on the south east coast of England so about once a month, we buy fish and chips and sit on the beach eating it out of paper, often with a nice bottle of wine, but even if its pouring we sit in the car and look at the waves and eat. We will go midafternoon, that way we dont eat 2 meals (they are lovely but fattening). The fish comes in every morning fresh from the sea, we have one of the few fishing fleets left now in Britain. Christmas morning we always go down the beach with egg and bacon sandwiches and a flask of coffee and walk before the festivities begin..........it was sunny this year, though really cold but we put the soft top down on the car and drove along the country lanes to the beach...........great for clearing the head and brrrrrrrrrrrrrrracing!

I ordered Chinese take out for two: 4 veggie spring rolls, General Tso's chicken which comes with an order of steamed rice, honey garlic spare ribs, chicken chow mein and pineapple chicken. Fortune cookies, plum and sweet and sour sauces are all on the side.

I want something adventurous. If I had more time I would have loved to do a salmon dinner with all of the trimmings.
Tomorrow we will barbeque, or grill rather, enough meat for a few meals this week to cut down on cooking time. We can then each do as we please with the protein. Mine will involve noodles, lots of veggies, salad and maybe a rice dish.

Consisted of a chopped up pineapple, pummello, hummus, guac, blue corn chips, rice crackers, and a little mozzarella cheese for the kiddo.
Note: There were no Brussels Sprouts. First time in a long time they were not on my table. Yes, I did miss them and will probably OD on them tomorrow.

Not sure if I ever made it when I lived in NM, but it's just cukes peeled and sliced into thick rounds, with part of a raw onion then covered in raw apple cider vinegar. Some folks add salt as well. Refrigerate and allow time, (I usually give it a day) for the cukes and onions to soak up the flavor of the vinegar.

I get them at Walmart of all places. I have seen them in other local stores also, but very infrequently. There's also a jalapeno flavored pretzel chips but I can't seem to get them in lieu of the buffalo ones!! I swear they are great alone but if you wanted to fancy them up for a party, you could always serve it with a nice ranch or blue cheese dressing dip...mmmm
And our LITE dinner was seafood scampi over angel hair :) good stuff! And yes, I am very lucky that Teddy is such a good cook. It's the best of both worlds; he cooks, I clean, and I love to bake... :)

I didn't get to make my spaghetti tonight, more important things came up. I will have a turkey and bacon club sandwich with fries and KFC gravy. Ketchup is optional.
boiled up some perogies, threw them in a pan for a little crispy factor and cut up some sweet potatoe, mixed with some fresh rosemary and baked in the oven.
Homemade mac n cheese and hamburgers...the OT is not being nice to me :|

This is what I cooked for my dogs tonight:
Scrambled 18 eggs in the microwave with lots of mild cheddar cheese chipped up in with the eggs. Kelly and Kevin loved their dinner too. Kevin always gobbles his food and Kelly normally eats very daintily. Kelly will take a small bite in her mouth, chew it slowly while she looks thoughtfully around the the room. It was different tonight. They both had empty bowls at the same time. LOL!
Grilled veggie sandwiches (carmalized onions, bell peppers, mushrooms, with avocado) on rosemary sour dough and cream of tomato soup.

I was going to just pick up a meatball grinder, tonight...but now...hmmm...maybe I'll cook instead..it's been awhile, and I'm getting sick of eating out..I think I want something homemeade.
It will probably be little meatball and mozzarella sliders, served alongside /a Caprese salad> w/ plump, pretty, heirloom tomatoes, fresh mozzarella, fresh basil leaves, and a nice thick and glossy basalmic reduction...a little Kosher salt and freshly cracked black pepper.
Last night it was hamburger helper. Tonight a friend is supposed to he cooking something for me. :sunglass:

I made a meatball sub using an herb and garlic buttered baguette. It had onions, peppers, mushrooms, my tomato sauce and topped with pizza mozzarella before lightly toasting it in the oven.
I made a light salad as a side and poured an icy glass of pepsi.

Teddy made chicken salad out of the crock pot chicken I made...he added celery, mayo, relish and cranberries...I'm sure there's other things. It came out all good and southern like :)

I have a slammich in the oven as we speak. It consists of freshly sliced dark brown pumpernickel bread, horse radish mustard, lean roast beef, black forest ham, and muenster cheese. Once it's out of the oven, I will toss on some slices of tomato. Don't be a hater! :)

Sometimes the things you don't plan taste the best. I opened the kitchen and ta da...
Gnocchi with half jar of pasta sauce, mixed with a spoonful ofsour cream and some pharm cheese...that was on one side of the plate
Other side, sautéed in olive oil, half an onion sliced, 2 stalks of celery chopped, half of the red pepper with some roasted garlic, added the last of the frozen meatballs...mmmmm
Small bowl with a scoop of Greek yogurt, handful of black berries, sliced half of banana, drizzled with honey.
My my my, oh my...all in a 30 min time period. I think I watch too many cooking shows..lol
And a tad left over or lunch tomorrow. I just need to write my own note to be found in it ..lol

There is roast beef with all of the fixings in the oven. That will be tonight's meal, tomorow's lunch and with the rest I will make either stew or a meat pie and a stirfry for tomorrow night and into thursday.
It's a lot of beef. I need to get creative to feel like I am not eating the same flavors over and over.

Secretly - I'm hoping Paula Deen or someone will beem themselves down and decide that they want to be my personal cook - because well...while I can do a lot of things at least fairly well...
Cooking....yeah...(not so much)...lol!
I love the cooking shows though...but I've found watching and the application of the process - is WAY different....lol!

I checked the refrig and freezer, took stock in what I have...I am going to think about this.
Frozen chicken, some tortellini, sauce? ..perhaps butter lemon sauce? Got lemon and butter...also have cream cheese...let me think on this today:) oh and some good bacon.

We had scrambled eggs, sausage links, and fresh fruit. My son (9) offered us anything to drink from diet dr pepper to water. When I asked my choices they were diet Dr pepper and water. They did a good job.

Tomorrow's dinner will be steak and gravy, mashed "faux taters" (puree'd cauliflower) and maybe some southern style greens... perhaps even some sweet tater biscuits!
