Well another FABULOUS no recipe dinner from House of Bliss!!!!
Roomie 1 didn't care for the turkey meat.... mostly dark, my bad, thought I had grabbed the White turkey out of the freezer.
But she had two big helpings anyway.. Me two (also!), lol, but smaller!
Roomie 2 stuffed herself with icky frozen burritos :vigil:
Wants her share tomorrow :goodluck: might be toooooo late :rofl:

Tonight I'm going to a friend's house to watch the Super Bowl. The menu plan is burgers on the grill, baked beans, and deviled eggs. It's like a summer time picnic in February!

Strange people have strange dinners.
So tonight I did some experimenting in the kitchen that came out pretty unappetizing. I ate it anyway because I don't waste food. I'm almost embarrassed to post what I thought might make a good recipe, but alas I'm with friends here, and I need to process this one.
First I baked brussel sprouts with balsamic vinegar and garlic. Smelled good when they came out, could have been the start of something decent. It always fools me that everything smells so good as long as it's coming out of an oven. Anyway...
So then I stir-fried them with carrots, bell pepper, yellow onion, scallions, tofu shirataku noodles, and sechzuan sauce. That might have been okay but now is where I hang my head in shame. I added:
maple syrup, peanut butter, curry powder, cucumber, lettuce (!), hot chili sauce, and lime juice.
I have a terrible tendency to get excited and overpower things with a mishmash of clashing flavors.
Said BB kindly, "Maybe you could try a cooking class, Honey."

There are times major canned junk food is on my list. Tonight is one of those nights. I am going to chow down on Hormel canned tamales with crackers and ketchup. Red of course is having something much more healthy but will not reveal it to me.

I put a small chuck roast in the crock pot with onions, celery, potatoes and carrots.

I over bought game snacks for the Super Bowl. I had these giant mushrooms that needed to be stuffed.
So just stuffed jumbo mushrooms with a mixture of sage sausage, onions and some cheese. Roasted for about 20 min. Going to pack them for dinner later at work tonight.
Add some honey Greek yogurt.
Some carrots and celery.
This low carb diet is easy !

Curry pasta salad
8 ounces tri-color spiral pasta
1 tsp curry powder
salt to taste
1 tbs lemon juice
1 apple chopped
1/4 cup of raisins
1/4 cup chopped green onions
2 grated carrots
1/4 cup crumbled firm tofu
3 tbs pine nuts
1 tbs of mayonnaise
Mix mayo, curry, salt, and lemon juice
Add cooked pasta and mix until coated
Add remaining ingredients and toss.
Yummy
Pinot Grigio for the wine.
Tonight:
Tossed a grass fed roast in the crock last night before bed with market carrots and mushrooms. Fresh thyme, tomato chunks/paste, onion and garlic. Tonight we'll have this over roasted cauliflower.

My grandmother used to make this dish she called Schwaki casserole that we all liked. It was like lasagna with layers of ground beef, tomato sauce,and bacon and cheese on top. Total yum! It's funny how strong food memories from childhood are.

Went to Costco today and bought some steaks. Each one is about 3 inches thick and the size of Lake Michigan. They wont sell you just one so I now have 3 massive steaks with a total weight of about 40 lbs.

I had a really delish burrito from Chipotle Grill!
It had carnitas (pork) and chicken, pico de gallo, brown rice, beans, guacamole and lettuce and shredded white cheese, all wrapped up in a flour tortilla.
I think it is a pretty healthy balanced meal. I mean it's got protein, veggies, dairy, bread, and an ice cold coke to wash it all down...lol...okay so the coke might not be so healthy...
It was so huge I ate less than half of it! And I don't mind telling you I really did try!
I think I like it better than FreeBirds!

Happily crunching my corn flakes and milk at this moment. Kevin is really eyeing my bowl when I put it down. He knows when the cornflakes are gone, he will get to lap up the milk. Poor thing, I believe he may think I am starving him but the vet at the Emergency Animal Clinic told me Sunday that I MUST get 30 pounds off my boy. Then went on to say no more than 1500 calories a day and that includes milk bone treats, table food and everything I let him put in his mouth. Kevie does not complain but the let-down in his eyes when I put the dry dog food down tells his story. He is a pretty funny fellow - you can always know what he is thinking because he wears his feelings on his face. Never any guesswork! :)

I'm sure it doesn't look like all that to some of the culinary wizards that frequent this thread, lol, but to me it is a huge success! I didn't use a bread machine or even an electric mixer; and I didn't burn the place down in the process!
I was looking for an alternative to store-bought bread not only for savings, but also to cut out additives and preservatives. (I know the flour isn't really healthy, but it's a start).
My first ever attempt at baking bread from scratch and it tastes sooo good!

I'm sure it doesn't look like all that to some of the culinary wizards that frequent this thread, lol, but to me it is a huge success! I didn't use a bread machine or even an electric mixer; and I didn't burn the place down in the process!

I saw the photo and instantly started craving homemade bread and butter. And the only thing I have here that even comes close is English muffins. And they are just not the same!

I made a chuck roast with garlic mashed potatoes, salad, and crusty bread. I didn't have any vegetable broth soooooo I grabbed the dry vermouth and deglazed with that.

Tonight I am having chicken breast with a few veggies.
I have a Boston Butt pork roast in the fridge marinating that I will slow cook for tomorrow's dinner: pulled pork with Mojo sauce. I swear I could be happy with just drinking the sauce, but the pork will give the Mojo something to cling to while I devour both. YUM! No idea what I will have alongside of the pork.

Homemade chicken soup.
Last night: We made a low-carb pizza crust (mozz cheese, cream cheese, egg, almond flour) and with all the toppings we enjoy. Pepperoni, mushrooms, olives, yellow pepper, and homemade marinara with lots of basil.
Tonight: I haven't thought that far yet.

cold tofu appetizer, three rolls of vegetarian sushi, and delicious fried ice cream
The fried ice cream was sooo good: breading underneath the fried outside, vanilla ice cream, whipped cream, and Maraschino cherries :)

No Mojo Pork for me tonight. :( I got a late start so it's leftovers for me tonight. Once the garlic has finished roasting, I can put the sauce together and slow roast the pork tonight. I decided to also make some garlic infused olive oil and some compound butter with garlic and Mexican oregano leaves while my house smells like a garlic factory. :)

Made in Cuisenart and shared with the neighbors. Secret recipe (won't give it all away) but made with 6 beans and a list of spices and ingredients. It's a feast and I serve it heartily with a relish tray and dip and cinnamon rolls.

Holiday today ... soup hit the spot ... my throat starting getting sore around mid-morning, then around noon, started aching all over so Kevin and I came on home ... that dog loves to nap so he was good with crawling in the sack mid-day for a nap. Feel somewhat better, I think it is just a head cold - not the flu. Worked outside 2 weekend days in a row wearing shorts and I may have brought this on myself - afternoons were chilly

Make sure you take care of this with OTC meds, liquids, nourishment, and old fashioned remedies such as vapor treatments of towel-over-the-head- breathing in menthol from a pot of hot water. The key is to never let colds get into your chest. I battled this thing for two weeks in January and overcame a sever cold before it overcame me.

Making fake strawberry shortcake. Using the last round eggo waffle as the shortcake. Sprinkled sugar on some sliced strawberries, waiting for them to get juicy. Then I'm going to top with vanilla Greek yogurt. Sounds good just typing it.

I take the easy route and cut it in half, remove seeds and cook in the microwave. (about 15 mins. ) Then spoon it out. Tonight I am going to melt butter and add fresh parsley, drizzle it on the squash then toss in some parmesan.
I have baked it in the oven face down at 400 degrees also but it takes longer. Microwaving is easier but I laugh when I cook it that way because my sister killed our circa 1985 microwave with spaghetti squash just after we were raving about how long the thing had lasted. :p

Rare london broil, steamed spinach, and roasted potatoes. Desert is a rice crispy treat with a layer of marshmallow fluff, sweetened shredded coconut, and semisweet chocolate chips. Because a rice crispy treat doesn't have enough negaive nutritional value all by itself.

This could turn out brilliant OR be a disaster. *Laffin* ONLY is bringing some flour tortillas home from work so we have a back up plan. ;)

its very filling...but if im still peckish I have half a chicken pesto grinder leftover from last night! also very tasty....made by a Greek pizzeria that only uses organic ingredients....yum :)

I'm not sure really..
I had defrosted a roast but we have been so busy that I hadn't cooked it yet. So, I put it in the crock pot and made some beef stew with it. Maybe that will be dinner tonight or tomorrow..we'll see
