made myself a 1/3 lb Angus burger with pepper jack cheese, tomato slices, diced onions, mayo, mustard, ketchup on a whole grain thin bun, bite size tortilla chips with queso and salsa, and some fresh jalapeno poppers wrapped in bacon. Amber bock beer.yum!

Pork Tacos with tomatoes, avocado and corn
I seasoned a pork steak with spices and crushed red pepper, turned on the broiler and let it cook.
Diced and sliced everything while I heated up 4 corn tortillas.

What was in the Salad?
Shredded lettuce, tomato, feta cheese, kalamata olives, shredded deli smoked ham, and Caesar Vinaigrette dressing.
It's a good to salad for me that I always enjoy because it's tangy and gets my taste buds wiggling.
I had a similar salad tonight (minus the ham) with a few bites of pickled beets and ground beef in a horseradish Heinz 57 sauce.

You can't beat a tangy Salad.....with Olives and Beetroot added to it. I love pickled Beetroot! LOL!
I love to eat a Salad most days, even in Winter. Sometimes I'll add fruit and/or dried fruiy and nuts.

well not sure if it was dinner, probably.. .
grabbed a multi grain thin bun halved it and put prego traditional sauce on each piece, mozzarella cheese, pepperoni, and hamburger. put the 2 slices in the toaster oven and enjoyed delish personal size pizzas. yum!
may go ahead and cook up some ribeye steaks to have a bite and have the rest for tomorrow.

Sirloin steaks (started on stovetop and finished in the oven with a little olive oil, salt and pepper, garlic and worcestershire sauce)..... baby potatoes with the skins on (with a little butter, salt and parsley)....and fresh green beans, steamed.

Tonight I had to do something with my leftovers. I cut up the rest of the pork steak and a piece of chicken from Sunday's dinner. Put in in a bowl and heated it in the microwave. when it came out, I added salsa verde and heated it a little longer. Cut in the rest of the tomato and other half of the avocado from yesterday...so, another day of Mexican delight as I sopped it all up with some corn tortillas.

I'm very excited for dinner tonight! I made a pot of homemade black beans seasoned with jalapeno, poblano peppers, onions, garlic and cilantro and they turned out AWESOME... gonna use them, along with fresh spinach, corn, tomatilla salsa and pepper jack cheese for filling for enchiladas. Serving with rice and a bottle of lambrusco. Mmmmmmm!

My dinner is always early because I have an early morning work schedule and usually fall asleep early.
And with that said, I had thawed some of my black bean chili and heated it up along with some corn tortillas.
I'm not totally full, but it'll do for now until I decide what else I may want, but don't really need.

When dinner time rolls around, I have 4 boneless chicken breasts marinating in italian dressing.. which will be grilled my the Grillmaster (guy, not me.. I burn shit on the grill).. and then we will have 2 of them in a Chicken Caesar Salad.. the other two will be put in asian chicken pasta salad tomorrow :)

I have some mexican chicken broth from when I made enchiladas.
Therefore, I am contemplating thawing that and tossing in a couple chicken breasts and shredding it...can of tomatoes or 2...onion...then putting in rice....
Then slicing up and frying corn tortillas to go with.

Tonight, in honor of the KU/UNC game, we are having steaks, asparagus, and I am making cheesy potatoes. Gotta have a diet coke before the game starts; as I was drinking one prior to the first game of the tournament. We keep the same traditions every game...except the menu gets fancier as the team goes farther in the tourney! :clap:

Soft boiled eggs and soldiers with a little Gruyère toasted onto the soldiers
then biscuit with lemon curd and a cup of hot tea
Tonight for dinner I had homemade strawberry shortcake.
I cleaned and sliced the strawberries and mashed them a little. Added some sugar. I then made a batch of sweetened biscuits and put it in a round cake pan to bake like a cake. Served with milk. YUM!

Last night I made a big pot of chicken and noodles with sauteed mushrooms and onions, add peas, and italian three cheese. Even better today! I have not been the best cook since the girl left, so this was a good thing.

I made an inside out burger, swiss cheese in the middle. then i slow simmered it in bbq sauce, with a side salad and some baked lays. thennnn a cherry mango popsicle for dessert. yum!

Yep! It’s a recipe from my Dad’s family (Norwegian) from the 80s when Avocados where new and exotic. It’s said the Antipodeans created Fusion cooking; sometimes I’ve wondered if they meant ConFusion cooking, lol! It might seem like a strange combination, but, the acid of the Sauerkraut works well with the creaminess of the Avocado. It’s one of my comfort foods.
I usually make the Surkal (Sauerkraut) myself with some Caraway seeds. If you’re interested, I’ll give you the Salad recipe?

I've got a delicious roasted tomato and basil bruschetta with fresh foccacia too.
A splash of red wine, and I'm good to go!

We had one of those dinners where everything turns out perfectly....I love those...
Ribeye steak started in the pan with olive oil, salt, pepper, onion, garlic and worcestershire sauce...then popped into the oven to finish...tasty and tender and buttery....
Mashed potatoes...made with real butter and half & half
Steamed fresh green beans with just a touch of butter....still a hint of crunch

Tossed the stuffing in a bowl first, took the corn off the cob and stirred it in with the stuffing
Lastly, I took the rest of the chicken off the bone in pieces and added it to the mix
Nuked it and grabbed a bottle of rain lime gatorade

Having dinner right now. It is a can of Campbells Tomato Bisque soup with crackers and ice tea. I mix a can of milk with the soup ... makes it creamy. I love the little hunks of tomato. I think this is the 3rd evening this week that I have had Tomato Bisque for dinner ... but I love it ... so who's counting? ;)

Thanks to the influence of a nice Latin American man at the grocery store last night, who started chatting with me while I was looking at tomatillos and habaneros, if I have time tonight, I am making Chile Verde Con Cerdo (Green chile with pork), and freezing single size servings of it. He gave me some tips from his mother's recipe that I am going to try using with my own recipe. YUM!

Well we have been cooking the last couple days, so tonight is what my Dad always called "catch as catch can"...meaning you are on your own and lets clean out the fridge of leftovers! I just saw Guy walk by with popcorn chicken, plantains, and broasted potatoes....maybe not a good idea! lol ... so I am going to go make some homemade salsa for snacking later.

Nuking frozen eggrolls right now. Got home late. Picked up a rotissere chicken from Sam's club. Made KKs very happy for me to come through the front door yelling "chicken picnic." Their tummies are full and both are sound asleep. They've gone to Daycare the past two days. I think playing with the other dogs wears them out. Kelly got in trouble yesterday and Ms Emily had to punish her with a timeout. Ms Emily told me Kelly did not play rough with others today and behaved herself.

I am really into poaching these days, probably a wild salmon or cod tonight. Add veggies at the end, sitting on top, so they just steam. With spices and herbs, the variations are endless and all yummmy, all moist and lovely.
Happy that fruits and veggies are in abundance right now and only getting more so as the season wears on. Eating locally, fresh and organically - always better when it is not so darned expensive.
On the other hand, the expense is far out weighed by the reduction in co-morbidities and medical costs, which go down in an inverse proportion, imnsho~

I started with chips and salsa, until the salsa started burning.
Then, I switched to a whole wheat tortilla with spicy Southwestern sauce and turkey and shredded cheddar on it, nuked just enough to warm it.
I'm not sure if I'm done yet though.
