I made myself a scrumptious dinner...

I seasoned a split chicken breast with 21 season salute and some chicken bullion...threw fresh garlic into the pan and baked it along with a red skinned potato...I took the chicken outwhen it was done and threw in some cauliflower/ broccoli/ carrot mix which heated up in the nice garlicky juice...

Peppermint bark ice cream for dessert but I had it first....

Sometimes being a grown up ROCKS.. .

I had to have another Pineapple Teriyaki Turkey Burger, and I added a little Island Teriyaki sauce to some small white beans for my side - an attempt at Island Baked Beans. Delicious! :)

Dinner tonight will be leftover goulash that I finally got to make yesterday. It turned out real good for my first time making it. I got some fresh meat at the new butcher shop that finally opened.

Tonight I am having poached fish with a lite pine apple glaze, a three bean combo with mushrooms buttons, cherry tomatoes mixed with a spring greens mix with a hearty Italian dressing. We have nearly quit eating bread hear except for toast or a once in a while sandwich. I don't have a clue why it just evolved.

I kept it super simple and had a sandwich with 15 grain bread, mustard, provolone and honey ham. Cool Ranch Doritos, Claussen strips and root beer also.

I made a Bird's Eye skillet dinner...sweet and sour chicken to be specific....

Sesame sticks for snack with a Highland Gaelic ale for a snack...

It's my Mom's new favorite. I left her lots of leftovers and the easy recipe.

I had leftover pot roast with sharp cheese melted on top and a side of steamed sugar snap peas, spouse had leftover half a cheesesteak and I fried her a couple pierogis to go with them. Sweet tea for her and mint water for me.

There should be a way to automatically triple thank on here for posts like this because this meal has all the right elements to merit it - Mexican food with real beef and not just hamburger crumbs, homemade tortillas not the package kind(though some are pretty okay) and it was cooked for you by someone who knows how to garnish with avacado. Man how did you get so lucky to be so spoiled? LOL - I'm jealous. But, well at least this pizza I'm having tonight isn't too bad.

The conversation at the table during dinner was equally rich...Im blessed with some good real friends....

I had an early dinner with my family all cooked on the grill. Steak, sausage, burgers, hotdogs, ribs, chicken, asparagus, mixed veggies, green beans, and corn on the cob. Lemon pie for dessert. Shiner Bock beer to drink.

I'm making ribs, the firehouse way. My brother the fireman taught my Mom this way, and when I said to her, these are so good, she shared. I've made them about 4 times since, and every time I say. ..you don't even taste mustard.....what you say? ?

Take the ribs, baby back, bone side down, smear with mustard, top with brown sugar and then a pork dry rub.
Bake in slow oven, covered with foil..about 3 hours. Like 250. Then, if you want, coat with your fav bbq sauce, put under broiler to bring the sugars to a glaze.

Then eat, and say, I can't even taste the mustard!!

I also made some homemade potato salad, and the plan is also to grill some eggplant. It was on sale :)

Cooked short ribs in BBQ sauce in my crock pot and now I have leftovers for about a week plus cooked some green beans. And of course had a glass of sweet tea with my dinner ( small portion ) and I froze the rest.

I made an awesome dinner...

Split chicken breast seasoned with tjs 22 season salute, fresh garlic, fresh black pepper and some celery salt Cuz it was there...

Got half way through cooking and threw in some cut up mushrooms and some frozen Brussels sprouts to cook in the juice...

I could've been happy with just the veggies...

Note to self: lemon juice should be bought and kept always in the house. It would've added a little something to this methinks...

Since nobody made any suggestions or offered to cook for me, I was left to my own devices (Danger Will Robinson!) and had a peanut butter and honey sammich, too. I know it'll be hard but try not to be jealous.

I went out for a take out, their is a place called Sam's not far from hear that sells a jumbo shrimp plate with an assortment of sides, when I say jumbo I mean jumbo. Both of us got what we wanted their is still enough shrimp for lunch tomorrow, next time I'm just getting a box of shrimp forget the sides cause they barely got touched.

I sliced this yummy focaccia bread, I brought home from Arkansas. Spinach and mushroom. Heaven!

Leftover ribs, baked sweet potato, scoop of cottage cheese with sliced strawberries.

Later, shared a treat, chocolate chip ice cream sandwich. I haven't had an ice cream sandwich in so long. Mmmmm, good as I remembered.

Okay Degotoga I figure if you made it through the night, lived to see the morning then you’re probably going to be okay without further workup medical intervention but you still might want to give the nice fine folks at medical antiques dot com a ring and have them hook you up with a gastric pump you can stash in the closet, keep on hand just in case the need for DIY lavage at home should ever rear its ugly head again. Here are two fine examples of the many wonderful kits available in stock they have on hand.

My son likes hamburger helper, I am not much of a fan of it. So I was kicking around in the freezer wondering what to fix for dinner then decided to make it from scratch, it came out pretty good so he is taking the rest to work for lunch.
I still am not a fan of hamburger helper.

Dinner tonight was quick n easy. I pan grilled a burger, and sauteed a mix of fresh greens seasoned with ginger, chiles & finished off with a drizzle of coconut milk and a lime wedge, also the leftover steamed veggies I had in the fridge from last night's dinner.

So happy it is finally grilling weather!

Tonight was grilled chicken that had been in a marinade (have a fab recipe for one) for 24 hours. Yummy!!
Sides were fresh corn on the cob and rice. Diet iced green tea to drink.
Desert was fresh strawberries and blackberries with a dollop of ff cool whip.

Best part is extra chicken breast will be sliced for yummy salads tomorrow.

I really wanted pot sticker all day. The nearest asian restaurant is hours away!

So, I looked up a pasta reciept, made the pasta dough, cooked up some veggies with some home raised chicken meat......rolled out the dough, filled them up........folding was a bit challenging but fun!

They turned out pretty good. Made a dipping sauce out of low sodium soy sauce, sesame oil, green onions, sriracha and grated ginger.

I put the pork chops back to the fridge...and decided to make some chicken salad -some of it for lunch and some for dinner-...put it on top of a gluten free tortilla (after heated the tortilla of course!) and fried some sweet plantain...It was good! :)

Corned beef sandwiches. I just put the beef in the crock pot and it will simmer all day. I have no idea if this is a good way to cook it, but it's what's on today's menu.

I forgot it was St. Patrick's day until I was reminded by a friend today :) so I am having a Mediterranean salad with a pita. The salad has chicken, olives, artichokes, romaine lettuce, tomatoes, cucumbers and a balsamic dressing.

I guess I had dinner for lunch.

I had been marinating a split chicken breast for 2 days... put it in the oven...took it out when bit was done and added some frozen pepper mix and broccoli cauliflower mix to the pan. Threw it in til heated through. Voilà. Lunch and dinner combined.

I got peckish later and had yogurt with granola and blueberries...hit the spot and satisfied.

Unsweet iced tea to drink...but I didn't think of the caffeine...maybe that's why I'm getting so.much.done.

Threw some cooked ground beef, gravy made from beef bouillon and Worcestershire sauce and corn in a pot and topped it with garlic mashed potatoes and shredded jack cheese... hellooooo yummy Shepard's pie!

Followed by homemade French italian loaf, and sweet cream M'n'M ice cream also home made.

Today was a very food-productive day!

Reminds me of a party at work. I was fresh out of college with computer science bachelors, very first job - jr. software engineer.


I wanted to be impressive at the party so I asked my girlfriend to make a dish of her spinach artichoke dip for me to take to the party. Anyway, standing around eating at the party, my software manager and the database manager both wanted to know how I made this dip. See, I had lied and said I made it. I cannot cook something that complicated. Anyway, I freaked out when these 2 ladies expected the recipe. I said, "well ... it has spinach in it ... and let's see ... there's artichoke ... and cheese, yea, lots if cheese."

At that point, I fled, acted like a friend across the room had summoned me. As I rushed off, I told them I would write it down and provide it to them ... I gave them the recipe the next day after I got it from my girlfriend.

I never do that anymore!

I made it, I ate it, and I'm still alive! And I didn't burn hardly anything, well nothing important, not the food. While doing the noodles one broken little spaghetti bit fell in the drip pan/under the burner instead of into the pan and caught fire and temporarily danced with flame bit but it was really small, just a crumb so only lasted for a bit I didn't have to race for salt or rush to find a pan lid large enough to cover the burner or anything. All things considered I'm calling this one a success.

While doing the noodles one broken little spaghetti bit fell in the drip pan/under the burner instead of into the pan and caught fire and temporarily danced with flame bit but it was really small, just a crumb so only lasted for a bit I didn't have to race for salt or rush to find a pan lid large enough to cover the burner or anything. All things considered I'm calling this one a success.

I thought I had nothing in the house but I didn't want to go to the store. I used what I had on hand and it turned out wicked good...

I sauteed half of a turkey (sliced) in a pan, added some frozen pepper blend...meanwhile boiled some rice in a bag...then added some veggie mix with corn celery okra and onion to the kielbasa pan. Drained the rice and added a can of Trader Joes Cuban style black beans and let it warm up. Threw everything together in the pot and it was super duper yummy. And I have leftovers for tomorrow

Friendlys butterscotch swirl ice cream for dessert.

Burger dips - hamburger patties on rolls with melted cheese and tomato slices to dunk in Au jus - even though the Jonny’s Au jus is fake, still this for me in the kitchen is getting pretty fancy, that added to the fact that company is coming and the pressure is on. Since it’s a special occasion I have purchased multicolored wooden toothpicks to stab the sandwich halves with because I couldn’t find frill picks anywhere. To go with, I’m serving real potato salad, sparkling water for me - my “adopted” son is getting the last ghastly root beer flavored beer that one of my birth sons left here who even knows how long ago. This because ever since he’s learned of its existence he’s been after me to try it and I keep forgetting to bring it with me whenever I head to his place.

My client's family treated us to a lovely dinner at a Greek/Italian place called Pompadoro. I had the best Greek salad ever....really fresh feta...amazing Kalamata olives...and a lovely light Greek dressing.

I tried my lady's cheese lasagna...it was amazing. For dessert we shared a baklava topped creme brulé... afrigginmazing...

I found half a package of Trader Joes chicken hot dogs in my freezer, sliced them into rounds, added. Some frozen pepper blend, cut them smallish then added a can of beans. Good stuff

I had a very late lunch, which was a HUGE, so I'm going light with my ice cream tonight, and having a root beer float. :)

I really didn't feel much like making dinner tonight. I had some cottage cheese with a ton of fresh cracked black pepper and cherry tomatoes. Yum!

Oh ya, only $1.57 per pound. HUGE savings, HUGE.

My Son is weightlifting, and working very physical job. Gotta keep the man healthy. He still loves my cooking, lol.

Tonight will be tuna salad served on a bed of butter lettuce, on the side will be sliced tomatoes, thing slices sweet onion and sliced cucumber along with cherry tomato cause I like them. Maybe I will break out the electric grill then grill some veggies too. The veggies will be topped with a lemon herb dressing , I am glad spring is hear.

I've had a craving for egg salad so I whipped some up with Duke's mayo and will have it on top of a lettuce salad with carrots, tomatoes and an avocado.

Trying to wait until the egg salad gets cold. It's hard.

So, when I came home from work I started cooking for the weekend.

1) made a vegan pot pie...mushrooms, green beans, carrots, onion, pepper, broccoli, peas and corn, with a country gravy.

2) hand pies stuffed with mushroom, spinach, onion and pepper with a vegan cream sauce

3) pinto beans and Spanish rice (always have pinto beans made in this house *shrugs*)

4) biscuits

yesterday I made homemade mac and cheese for the vegetarians

We have leftovers so tonight is easy! My daughter is taking a cooking class for teens that is focused on "Learn how to make 10 good things so you don't starve when you move away from home". Yesterday was the first day. She fully prepared a whole roasted chicken, including breaking it down and plating for us. That and we have lots of veggies prepped and ready in the fridge. Loving the independence that will come with this class! She'll be making dinner every Friday for the next 9 weeks. If it goes well, that is. I know she has homework next week to learn how to prep dried beans- soak and long cook. Whoop!

green beans with mushrooms and onions
green beans with baked beans

additional goodies:
avocado w/ spinach
spinach salad w/feta, olives, tomato
mozzarella w/tomato, olives etc.

Supper tonight was pan fried potatoes and chicken tenderloins with garlic cloves, topped off with non-dairy ranch sauce (homemade). Very Yummy. : )
