Last night was cauliflower and cheese, leftover fajitas, naan bread, green salad. Pumpkin seeds and a hard seltzer (tangerine) for dessert.

Tonight will be steak and some veggies and probably a popsicle for dessert.

Well I thought we were getting a foot of snow but yay it stayed south and we got zip. With that said, I had bought a bunch of ingredients to make some serious "soupage" while I was going to be dealing with all that snow that never showed up. Chicken and vegetable broth, potatoes, onion, celery, corn, black beans, carrots, mushrooms, chicken and egg noodles. It's been on the wood stove since late this morning and is looking thick and tasty. Thank you Mr. Weatherman for a great supper!

quartered brussel sprouts, mushrooms, yellow peppers and sliced kielbasa sausage, all in a pin tin. Roasted in the oven. Topped it off with green hot sauce, called The Taco. Omg..that sauce is my new favorite.

My boss butch brought it to me for dog sitting.

I also have cheese crisps with dill pickles and bacon bits. I just pulled them from the oven. I made them for the Superbowl and it definitely was a hit! No carbs!

I pick and choose the daily carbs. Tonight it went towards a beer.

Well, Pete is very good natured. I made polenta in the oven, to be served with (plant-based) meat sauce, which we had yesterday over pasta. Something was off in the proportion of water to polenta, and the texture was more like soft brown sugar than the creamy version I prefer.

Last night was some nondescript frozen meal, and I expect tonight will be the same.

I've been having too much trouble with my knees to go down to the kitchen and cook, and I'm on a tight budget saving up for vacation so no delivery. The boy eats at work most nights. So unless he's home to cook, Stouffer's and Marie Callender's is what I foresee for dinner for the immediate future.

I was thinking about this all afternoon...

Fired up the grill with 2 veggie skewers, 6 pieces of asparagus , some sliced sweet potato and one skewer of shrimp.

So, so good. Basted with thick terriki sauce. I forgot how sweet veggies get when grilled. I'm going to make entire skewer of mushrooms next time.

I've been thinking about cabbage lately. I saw a recipe for escalloped cabbage somewhere, and now I can't find it again, but it sounded really good. Chopped cabbage and onions in a casserole dish, creamy stuff with cheese on top of that, topped by buttered breadcrumbs; it was someone's childhood recipe favorite. Has anyone got a recipe like that?

That's when you slice up tomatoes or peppers, maybe a dollop of sour cream! Brings color to anything!

I went into my chopped kitchen and came up with this..

Chopped up small peeled pink potato, broccoli and cauliflower gnocchi, steamed. Added some chorizo sausage.
Topped it off with a little hollandaise sauce I had left over. Poured that over chopped fresh spinach, so it would wilt. And then, chopped jalapeno
peppers. Its was really good! One bowl dinner.

Zero cherry splash gingerale.

Some pretty strawberries in a little while over a piece of lemon bread.

So spring!

We’re having vegan saag paneer with basmati rice tomorrow, and aloo gobi on Saturday. Once I open the can of coconut milk, I have to use it in a couple of recipes.

We get specialty Gin, every so often, outside our usual choice of Tanquery Gin (juniper berry gin). The Boodles Rhubarb-Strawberry gin was light and dry. Last year we got special crafted Hibiscus Gin, which we still have, and it was slightly sweet yet dry, as well.

spring greens and spinach one bowl salad. Pulled pork, cheese, bbq sauce on one side, scoop of homemade potato (left overs from Sunday) and avocado, olives and a little steamed broccoli. Sweet vidalia onion dressing. It was soo good!

Half of a cheddar jalapeno muffin.

I'll look for the sweetest blackberries in the refrigerator after I paint my nails.

And that was the story of the last meal of the day..lol

I’m making dinner in my unnecessarily large crock pot. I chopped three onions and most of a cabbage. I added a few peeled cloves of garlic and a few slices of fresh ginger. I used soy sauce, sesame oil, rice wine vinegar and some chili garlic paste. I roughly chopped a package of tofu. At some point I added sugar and salt and pepper. I just snuck a piece of tofu, and OH MY GOD, it is delicious.

ETA I used two bouillon cubes and a liter of boiling water.

BBQ pulled pork sandwich and a fried apple pie. The boy made a stop on his way home from vacation and picked some up. The BBQ is delicious, but the fried pies! oh my gosh, they're the size of a regular pie pan, the filling is heavenly apple-y goodness, and the crust! I can't make pie crust like this, flaky and light and crispy and wonderful. I suspect they use lard. I can't wait!

Last night, boss butch came over for dinner. Grilled chicken with hot honey bbq sauce. First time couscous for her.

Tonight, my cinco de mayo treat, homemade tostadas. I don't think I've ever made them. Well, after watching Selina make them on her cooking show, I wanted some. So easy to make, well, duh! Bean and chorizo, topped with fresh pico de gallo and avacado.


If she wants to stop by, I definitely will make her some! ( shes working)

Unfortunately, the boy had an epic Fail with the meatloaf tonight. It didn't hold together, and it tasted like teriyaki beef. It had chunks of bread in it. If it weren't for the soggy bread, I would eat it on top of rice. At least the mashed potatoes (Bob Evans, premade) and green beans (from a can) were okay.

I made a dinner kit I found at ALDIs. Korean beef with udon noodles. I added pepper and onion strips and a bag of frozen broccoli/cauliflower and carrots.

It has amazing flavor. I sure hope it will be a regular thing at Aldi’s. Too many of their things come and go.

Dinner last night..true fish and chips. The chips are thicker than fries. I also got a side of Yorkshire pudding. I took that back to my room. That was quite delicious as a late night snack.

Other dinners...
One night was Turkish food. That was really good. A sampler plate of such.

Thai food another. So fresh and delicious! I had a Thai beer with that. I think I'll be able to find that beer back home.

Another night..a beef and ale pie. Very good. On the plate were smashies. What? Smashed peas, not exactly pureed. I also tried a cider. So refreshing, Key lime and Kiwi! Also very good.

First night here, we were able to make a happy hour. ( before we crashed from jet lag). It was a crispy fish sandwich and a pint of ale.
That's when I found out they serve draft at room temp. Oh, not so good. Lol
Got a tip to order bottled beer from there on out!😉

we switched countries yesterday. I'm in Paris now.
Last night at the downtown Disneyvillage, it was, excellent roast beef Julia Child style. I have not had a bad meal on vacation! I'll definitely remember each and every meal. Well, I did take photos of them all.

Today was late lunch of salmon fettuccine. We asked for extra garlic. It did not disappoint. That chef crafted it in this tiny one person kitchen area. So fresh!

We had early afternoon drinks, me espresso martini my friend champagne.

And then later in my Paris room ( so delightful) I brought a bottle of prosecco to go with croissants, salami and cheese. Topped with a couple of fresh macarons.

Again, nothing has disappointed.

I had honey apricot ribs with a little salad and a basket of crispy fries. Quite delightful.

Must say, the food on Vacation has been so good. Nothing disappointing.

Pete made dinner! She doesn’t enjoy cooking, so I really appreciate her effort. She made plant-basedhamburgers on rolls with onions, roasted red peppers, pickles, and ketchup.

Last night, I made mini pizzas with hummus, roasted red pepper, and a sprinkle of feta. Tonight, we’re having a Greek spinach and rice dish called Spanakorizo.

I made homemade barbecue sauce a few weeks ago, and I froze most of it in mason jars. I had a special request for sloppy joes so I’ll defrost a pint this week or next.

I’ve been making a vegetable ‘hash’ by using organic rainbow beets and other vegetables like green cabbage, parsnips and carrots that I sear in evoo, until the vegetables are tender; then I usually do eggs — sunny side up, until they are softly cooked until nearly over done, seasoned with organic crushed rosemary, over everything. Sliced avocado, on the side. Maybe a very small piece of sourdough naan. :balloon:

Tonight was the first night since September 2020 that I had ice cream. I found a keto ice cream at Market Basket and decided to give it a try. Well, two of them. I couldn't decide between mint chip and strawberry. The flavors are limited but both were decent enough for me to check out the salted caramel and peanut butter next time. Or maybe I'll get the peanut butter and mix it with the chocolate. They are still calorie laden but the sugar is nil so that is fantastic.

Besides ice cream, I had a few baked chicken nuggets and an Asian salad from SaladWorks. First drink was carrot juice and second was tangerine juice.

I made a casserole a few nights ago that I’ve been dining on for dinner. I’m having the last cup of it tonight for dinner after work. It’s made with high protein rotini pasta, refried organic black beans, organic chickpeas, diced celery, crushed elephant garlic, fresh lemon and grated lemon rind, sun dried tomato, and crushed rosemary… with a creamy white Caesar white sauce.

I’m also going to have zucchini fries too, that are drizzled in olive oil, with sea salt and Parmesan cheese and baked until crispy.

I’ve taken to only drinking Spring Water that is bottled in glass bottles from southern Oregon (very tasty water from natural springs).

Hmmmm, something I came up with tonight..

Sauted onions with fresh spinach. I had this box of Indian inspired tomato soup, so I added a splash for a sauce and topped with a chorizo sausage. Quite tasty!

I turned a half of an avacado into a simple smash. Green onions, dollop of sour cream and sprinkle of hatch chilies.

No carbs. Well a little bit when I added the Kahlua to my half cup of morning coffee. A pre dinner cocktail.

I made an awesome soup tonight. Saute'ed a bunch of fresh veggies: onions, cauliflower, carrots,and corn. I had some pumpkin in the freezer. I blended that with some no-lactose milk and poured it in the soup pan, shook in a bunch of spices and Voila! it was delicious, The veggies were a little crunchy, which I love.


I love throwing together soup with whatever I dig out of the fridge or freezer,
Turned out to be a lot of soup, so tomorrow I'm going to toss in some rotisserie chicken I have in the fridge. If there is some left the next day, I think I'll add some shrimp. Oh and maybe serve it over some angel hair pasta, or rice.

Protein does come in other forms. Garbanzo beans/chick peas in salad. Peanut butter on apples. Edamame with a dusting of Himalayan pink salt is delicious and chock full of protein. Nuts/seeds. Oats/oatmeal/wild rice. Eggs. Tofu/Seitan. Peas/beans/lentils. Quinoa. Breads made from sprouted grains. Soy milk. Veggies like broccoli, spinach, asparagus, artichokes, sweet potatoes and Brussels sprouts all have solid protein counts. White fish is even considered a 'non-meat' protein source.

I'm not a vegetarian by any means, and I do love a good steak when I'm feeling carnivorous, but some days, when it's boiling at 95 degrees F and 89% humidity, the heaviness of meat is just too much for me. It sits in my belly like a rock.

Tonight will likely be the last two chicken potstickers to get rid of them with some mushroom and herb soup and an apple. Tangerine juice is likely but I'm eying my box of A&W root beer mix too, so I will probably have a mock root beer float as well. The mix is sugar free so it definitely tastes like a diet root beer melted float (I use nut milk instead of ice cream to keep the sugar down) but it is not the worst thing I've drunk in my life either.

I'm aware of the other forms of protein, although looking back at my original post I do sound flippant about it. I eat many other proteins. Part of the problem with them as one's only protein source, in my eyes, is that you have to eat them in specific combinations in order to come up with complete proteins. Being a vegetarian is work. But that is neither here nor there in my case, because if it's not some kind of animal product, it will not satisfy my hunger after a day or two.

Today I had a bunch of errands to run in town, so I picked up a Rueben sandwich and a greek gyro from Arby's. I won't have to cook for a couple of days. I ate half of the rueben, then I was so tired I couldnt eat anymore. I'll finish tomorrow. I'm about to fall out. Hopefully I will be smart enough to lie down and go to sleep soon.

Last night I got my two best butches together ( there would be more if you both lived closer ), and we went to the casino. I had a sausage Parm sandwich, I ate only the insides..lol
One had Chinese and the other had cheese pizza .

Tonight we will be grilling ribs under cloudy skies. ( Beach Day was a bust)
Ribs... marinating over night in Coke and pineapple juice. Will bake in slow low oven for 4 hours today and then pop them on the grill to finish.

Not sure of sides yet, lol

We had seafood boil at my house on labor day, Tons of crab legs and shrimp, a few clams, kielbasa, corn on the cob, baby red skins, shrimp sauce and spicy butter to go with - so good. Water melon for dessert after the kids went swimming,

Lobster would have been a wonderful addition, but it was not in the budget for a crowd. Daughter cooked. I did the prep, My g-kids can eat some seafood!!




Oh my goodness, y'all been doing some good cookin and some good eatin. Wish we lived close so we could get together and cook together. I'm rarely motivated to cook just for myself. Thanks so much for sharing y'all!

Question: did you boil the Brussels sprouts before you seared them? I find them a little bitter unless they are boiled for a few minutes before you do anything alse with them.

No! I never boil them. But also, I'm a fan of bitter flavors so... there's that. I would try it. At least maybe blanche them? I'll keep you posted.

Tonight was a late summer grilled salmon, zucchini, and mushrooms.

I find that brussel sprouds are delicious with a tiny shake of white vinegar. Cuts the harsh taste.

I'm putting that on my menu this week somewhere.

Last week I brought home Pei Wei Pad Thai and lettuce wraps. I didn't even touch the wraps. So, that's going to be my dinner tonight!

Gotta love a meal with no prep, lol!!

I spent a few hours roasting tomatoes from our farm share and from our garden. I also roasted onions from our farm share and garlic from the supermarket. When everything is cool, I’ll combine everything in my blender.

I really should serve that sauce somehow, but I enjoy filling up our freezer with produce from the summer.

If Pete has a vote, she will choose plant-based burgers. I use dairy cheese but she uses some cockamamie vegan cheese.

On a related note, does anyone put peanuts in their Asian cucumber salad? I tried it this time and it was delicious and crunchy, but a little too hard to eat. I was thinking about making the dressing with some peanut butter next time - has anyone tried that?

Yes to the peanut sauce! I don't like the texture of peanuts crushed in the salad either but a peanut sauce elevates for sure.

Pete stopped to pick up grinders, chicken parm for me, eggplant parm for her. We only ate half tonight. I hope she remembers to bring the other half to work. I cook a lot but I almost cleaned the kitchen today and I didn’t want to get it dirty again. :|

I ordered from our go-to place, and we usually like them a lot. However, they messed up so badly tonight that I'm going to have to leave them a bad review. The chicken was way overdone, dry and stringy. The lo mein was bland, to the point of almost being flavorless. I hope it was a one time thing and that the place hasn't been sold to someone new.

The other night I picked up a deal from Chili's. Burger, fries, chips and salsa. Great deal $10.99.

Actually two nights worth of dinners!

Last night was chorizo nachos.
So good, and so many chips left. It's going to be a repeat for a football treat today!

I'm making my mom her favorite dinner. I like it too. Grilled salmon, mashed potatoes, and steamed broccoli. Balsamic reduction to drizzle- she drizzles it on EVERYTHING.

My A/C is out and it's too hot to eat. I had a balogna sandwich around 1 a.m. because I was too hungry to sleep. Ha, ha, ha, the joke's on me because I never did get to sleep - it's too hot to sleep.

I haven’t had steak or pot roast in a very long time, probably about 5 or 6 years now. But yesterday I bought some meat that I slow cooked in a cast iron skillet, Dutch oven type thing, until the meat was fork tender.

I seasoned the meat with freshly chopped rosemary and coarse Himalayan sea salt (pink stuff), and added freshly sliced veggies (organic grown carrots and finger sized baby red potatoes) and added a whole clove of garlic, then dressed it down in evoo, while it simmered away all afternoon.

Glorious meal. Very tasty.

I’m fairly certain I will do that again today.
