Roasted pear halves, filled with crunchy peanut/almond/coconut 'butter'.
A few sprinkles of cinnamon, on top of them. I roasted 4 pears.
But I'm still hungry, so I will most likely make a chipotle vegan 'burger' patty and melt some 'cheese' on top of it, then toast a miniature Hemp bagel, to make a sandwich out of it. Maybe use some Organic Girl salad greens too.
That should sate my appetite tonight.

Healthy Choice Chicken Marinara Power Bowl. Grain free, gluten free “for the low carb lifestyle”. It needs cheese or salsa or sour cream or something I don't know. What I do know is, substituting mini beads of cauliflower for rice was for starters one way to wreck this dish. Not at all tasty but it is a fairly generous size serving for only 210 calories. My recommend - skip it, and dive instead straight for the Adkins TV dinners. Maybe this meal is called a power bowl because more power to you if you can stand eating it without complaint. I can't.

I love those Amys vegan burritos. And just one stays with me. I don't feel like I am starving to death in an hour after consuming one. That was an enomous problem with a vegan pad thai meal. I was doubling up, then running out of food midweek. I am still finding new, good-tasting things that hang with me.
I went vegan for my doctor. She looked directly into my face and promised me I would feel better. I told her I thought it was a crock of shit but did it anyway. She was right. I did not feel bad on the insides at all to begin with and did not realize I could feel any better. By the way, I finally quit salivating when I get around her and this is good. Sure don't want her feeling uncomfortable with me. All good now because she is the best! That is what all those women who ran all the medical tests she appointmented me to told me about her ... every single one. I tell you I have never had my parts handled on, greased up (lotion motion included ) by so many strange, unfamiliar women before in my life. A bit unnerving to say the least, especially when it was an attractive one. Geez! My doc is happy now, everything turned out great and I am thankful it is over!! LOL!

We starting craving Mexican. Ordered from Taco Bueno walking in the rain (or my Dom did). Got a boat load of food. Enough for 2-3 days for 2 of us. Really great food make to order.

I made myself a salad with tomato, carrots, sunflower seeds, crumbled bacon and some steak from yesterday. I grated a little parmesan and added a small amount of dressing. It was pretty good.

I love meatless crumbles! Morning Star Farms makes a great chorizo crumble that has good flavor. It's vegan and non-GMO too. The veggies sound great. To me, the only thing you're missing is either a sauce or some spices. Without either of those, it's bound to be on the bland side. Also, if you want a Sloppy Joe vibe, use tomato paste instead of spaghetti sauce. It's the right consistency.
Tonight, I had seedless red grapes I got on sale for .88 a POUND. Killer deal! I followed that up with a version of chicken pot pie, some apple cider cake donuts and my oj/pom juice blend I like. There's a brand at Stop 'n Shop that has two homemade pot pies in 36 oz tins. One has dark meat and one has white. The one with white meat also has pearl onions, which I LOVE so I got that one. Both were on sale and, of course, the one I prefer is more expensive but I got them! There was a bonus buy on it and I got another buck off, which means it wound up being cheaper than the cheaper one. Ha! Take that! I got a little peckish a couple hours later and had some more grapes and I feel fine now.

I love roasted ears of corn. There's a family owned fruit and vegetable farm nearby, and I only got a couple of the last of ears of corn they had, the other day. But their entire crop will be harvested next week, so I am going to be stocking up on a few good ears of corn, so I can have it for dinner, while it's in season.
Tonight I had two small meatless patties (chiKn flavor/type) on a small bed of salad greens. I cooked the two patties with a frozen blend of quinoa and kale, and when it was finished cooking, I just put it all on top of the bed of greens, then smothered it lightly with my vegan Caesar salad dressing. I also sprinkled a few chopped walnuts on top, too.
Next week, I'm going to have corn every night. *lol*

Whole milk, a scoop of cottage cheese, handful of pistachio nuts and some tea. It's like Old Mother Hubbard's around here but I don't want to bother the kids. Since they both have to work tomorrow today was the only honeymoon they got. They're going to take a for real honeymoon proper when schedules sync up. So bummed because I left the wedding last night with two cupcakes I intended for lunch today but forgot them in their stepmother's car after she and my ex dropped me off at home. Damn, she gets everything good of mine.

Last night I had Vegetable Korma that I made from a recipe.
It turned out good but homemade didn't taste the same as restaurant style. Probably because it was healthier. (The restaurant probably uses cream and the recipe used coconut milk.)

My late lunch/early dinner was chili with meatless crumbles, 3 kinds of shredded cheddar, sour cream and tiny cornbread loaves cooked with hunks of jalapeno in it (not my choice but it could have been worse). I toasted and buttered the cornbread and had flavored water to drink. Nerds for dessert. The blue ones are my favorite.

Beef and cheese burritos. Well actually hamburger and cheese. It doesn't really matter though because I've got a cold and can't taste it much anyhow. I thought I'd be over it by now but nope looks like this party is just getting started.
Today I am roasting a turkey breast and basting it with Apple cider and butter, making mashed potatoes, candied sweet potatoes, gravy, and a broccoli cauliflower carrot mix. Dinner is @ 5!!

We're going to try and re-create a casserole from our childhood that both of our mothers made. Mine called it Hamburger Mulligan. It's simply browned ground beef with various seasonings, whole kernel corn, canned or fresh tomatoes, and elbow macaroni baked in the oven at 350 for about 30 minutes.
Now this does not sound like rocket science, but neither did my mother's recipe for Beef Barley Soup which I watched her make a gazillion times.....to be truthful my attempts were down right disasters!

I grazed all day on a salad I took to work and it was so simple, just a bed of salad greens, slivered almonds, thinly sliced red bell pepper, carrots and tiny broccoli buds. I had some left over smoked salmon and I broke it up into bits on top, then put in a few sesame type salad topper cracker thingy's on top.
Just a smidge of dressing. But it was soOooOooOooo tasty. I just could not eat it in one sitting, so I snacked on it all day long.
I also drank lots of water and had a small bit of carrot juice.
For dessert tonight, I had to tiny bite sized 'pay-day' type candy-like bars; Peanuts and caramel kind of candy like dessert.

BB and I went out for dinner tonight. We had Indian at a place we like a lot.
We shared Saag Paneer, some kind of whole wheat Tandoori bread, mango chutney, raita, papadum, a mango lassi, malai kafta, and samosa chat.
It was really good and a nice setting, and we had a lot of laughs. It was good on all levels.
I feel sorry for people who don't like Indian food :praying:

I need some meal ideas. Something that both adults and kids can enjoy.
Chicken is always a winner (unless they are vegetarians or vegan, of course). You can tear up bits of it and fry it for nuggets or do some baked chicken and rice with cream of mushroom soup.
Tonight I had one piece of the bacon lovers pizza with a Santa Fe style salad, some soda followed by a water chaser and then some Nerds because, why not?

I am just getting around to have a bite to eat for supper. So I am having a few broccoli buds (steamed) and several meatless 'Meat Balls' (steaming those too) and half a slice of Garlic Nan (it's warming up on the griddle).
Most likely I will smother it a bit with some vegan Caesar dressing and sprinkle a bit of grated parmesan on top. Sea salt and pepper too.
Water to drink, but after my meal, I'm going to make a cup of herbal tea because I am coming down with a cold (I think). *achhhoooo*

Homemade chicken noodle soup J made to tide me over until they get back from their trip this weekend. She brought me some earlier and it was so good I only ate ½ though I wanted to eat it all, just so I'd be able to enjoy it twice. I told her that so she made me a huge thing of it. :eating:

I had about 6 chips and some pico de gallo and then I moved on to some chicken nugget balls and then I started picking at the dill pickle chips and then I gave up on any pretense of eating a "real" dinner and had peppermint ice cream. Sweet tea to drink. I'll have water later.

Homemade corn bread with butter.
We had our first hard freeze and dusting of snow yesterday/over night.
Its that kind of day!

I was at work late. Hmm.... and I work in a school but it's new this year so I am practically living there to get my paperwork done! I ordered in an Impossible burger. Gosh, the Beyond and Impossible are okay to me but almost too much like meat for my taste. I like a classic vegan Boca burger. I think I'll order in Beyond next time because they had both on the menu. I've had Beyond but I want to do a direct comparison (everything same except Beyond vs. Impossible). I also had the classic combo of onion rings and french fries. They were great. Oh, and a diet root beer.

Maybe a bowl of hot cereal or better yet, maybe eggs over easy and some Garlic nan with melted 'cheese'. Kind of like a late night sandwich raid of sorts.

From an old family recipe. Supposed to be shepherd's pie but it's not -
Hamburger browned dumped into a casserole dish with can of Campbell's cream of something soup mixed in. Usually celery or mushroom with all the rubbery mushroom pieces removed. In this case cream of chicken because that's all that's on hand. On top of that a can of drained green beans. On top of that seasonings. Then topped with prepared instant potatoes, can't use fresh potatoes has to be instant, then smothered in grated cheddar cheese. Mom never topped with cheese saying it was already rich enough. Yeah well if there's any life left after nuclear war assuming we're both the same amount of healthy, barring any unforeseen accidents, illnesses or being murdered in cold blood, who's gonna live the longest fat me or thin her during the ensuing famine? Oh well, on second thought in the aftermath of a nuclear war, that might not be such a blessing...

I tried ordering the Beyond Burger from the same place I got the Impossible burger and definitely prefer the Beyond, though neither of them impress me. I still say a vegan Boca burger wins me. Oh, and I had sweet potato fries, always so good.

The husbutch, my old college chum, and I ordered in pizza. I had 3 slices of vegan pizza (the kind with vegan cheese) on a gluten free crust (I like the cracker texture) with squash on it. I added a ton of arugula on top. Vegan cheese can be like glue. A little goes a long way!

Last night was shrimp and pasta in a lemon cream sauce. It was pretty good. Have no idea what's on for tonight. Probably a pork chop and zucchini noodles.
Last night, I had the pleasure of dining with the lovely Georgia Ma'am. It was a very enjoyable evening & I finally got to meet her IRL!
I had the goat cheese terrine...OMG what a lovely, lovely salad...mixed baby greens, yellow & red beet wedges, candied walnuts, candy cane radishes, and 4 goat cheese (fried) medallions with a citrus, lime vinaigrette. The Irish soda bread app was amazing! BUT the scallops...OMG!!
We had so much fun laughing, talking, & just enjoying each other's company!
You are such a warm, compassionate person, Georgia. I truly enjoyed the frivolity of our dining experience. Perhaps, we can do so again, sometime.
You have such incredible eyes...they are warm, smiling....and BTW, ready to "race".....:)

It's rainy and windy outside so I think I'm going to simmer a pot of spaghetti sauce (gravy to the purists) and have it with my veggie pasta. I have no appropriate bread, though. I was going to pick up a couple things anyway so this dish is absolutely feasible! Stay tuned....

Mom's homemade beef stew with the best gravy in Texas. I also made Acorn squash. I cut it in half add butter, brown sugar and cinnamon. Yummy.

Did you get to Epcot this time around? They used to have these 2 little snack type places in the basement. It doesn't sound like what you were looking for, just wondering if they're still there.
It was, at the time, one of the only places a vegetarian could find food in the parks. Scoring veggies is probably not difficult now, this was way back in the 90s when there weren't as many vegetarians around.

I did get to Epcot, and the Food and Wine Festival was going on. I had a few tasty nibbles. There were _lots_ of vegetarian choices - that seems to be a trend for Disney menus now. A lot of it sounded very delicious, although I admit I didn't try any.

Tonight we are having a new roast chicken recipe that I'm excited about - the chicken is rubbed with a bunch of warm spices like cinnamon and clove before roasting. I'm gonna make a cranberry apple sauce to go with it, some potatoes, and a salad.
I'm also making the beef stew for tomorrow's dinner today. Stew is always more delicious the next day after it's had time to make flavor babies. I'm always looking forward to leftovers whenever I make it, so, since I have the time, I figured I'd just make the whole pot be 'leftovers'.

I am cooking up a storm. Making pork roast, sweet potatoes, corn on the cob, yellow squash, cornbread, and chili for mom's chili mac.

Taco Salad...so far..i'm afraid the pie may have to wait until tomorrow...the day just flew by....tomorrow i will most likely practice pumpkin pie...trying to figure out a way to make it amazing...

I'm not sure. My late lunch of Impossible burger, onion rings and cheesy tots (gross!) has me still fairly comfy. It might wind up being cereal again.

Cubed:
Yellow summer squash, zucchini's, mushrooms, red onions, celery and red potatoes-
Tossed with:
Minced garlic, rosemary, parsley, sea salt, fresh cracked black pepper-
All marinated in:
Splash of olive oil and Italian dressing for 4 hours-
Roasted in the oven!
Bottle of Rose' Wine-
ks-
425 degrees for about 30-45 mins- I used a sheet pan to spread it out evenly. The *char* made it so tasty! As a side note: I tasted it before I baked-and easily could be a fresh *salad* as well.

We had pizza last night. Pete can’t eat dairy, so I got her a vegan pizza at the supermarket and she picked up a cheese pizza at what passes for a pizzeria in Western Mass. She loved hers and I enjoyed mine too.
I’m making chili today with pinto beans and ‘chorizo’ crumbles. I’ve cooked a lot in the last few weeks, and the chili has been the coziest and the yummiest.

Spinach Alfredo Pasta Bake
Ingredients
One pound pasta any kind (I used spaghetti)
Two jars alfredo sauce (each jar 15 oz)
One package frozen spinach (can be 10 or 16 oz your choice)
One package pre-shredded cheese any kind (2 cups total - I used Italian blend cheeses)
Directions
Defrost the spinach.
Then squeeze all the liquid out of the spinach that you can.
(I used my hands but you can use a colander if you prefer)
Put the spinach and the alfredo sauce in a pan. Mix it together and warm it up.
Meanwhile cook the pasta according to the directions on the box. If you're using spaghetti I recommend breaking it in half before cooking. This makes it easier to mix later on.
Pre-heat your oven to 350.
Once the pasta is done and you have drained it mix everything together except the cheese.
Put this in a 9 x 13 pan that you have already sprayed with Pam or olive oil. Then sprinkle with cheese on top.
Cook for 20 to 30 minutes - I checked it starting at 20 minutes to make sure the cheese didn't burn.
Now it's time to eat and enjoy!

I made spaghetti squash for the first time. Served it with marinara and grated some parmesan over it. It definitely doesn't replace pasta. I also roasted some asparagus wrapped in prosciutto. It was awesome.
If you make spaghetti squash how do you eat it? I am thinking butter and garlic would be good. Something simple and light.

We had a food truck here tonight.
So tonight, it was so not called on my diet night! But hey, its super cold..lol
Fries with an Asian flair. Scoop of kimchee and some grilled chicken. All kinds of good sauces zig zagged across them. ( my lips have been warmed up with the spicy stuff)

I grilled steaks. I roasted spaghetti squash and it was so much better than last time. Rice as usual and salads for three of us. I ate so much squash that I wasted my salad.

Yes! It has a couple shades of green in the mix plus red. Super festive and yummy!
Your food sounds good. Switch out the peas for greens and that's my New Year's Day dish.

It's brand new so you never know. This was the first time I saw it here. It's delicious, even if it does have Brussels sprouts in it. Thankfully, the glaze covers the nastiness of them and the veggies are so juicy. I'll definitely purchase it again.
