I threw together a turkey soup/stew...with green lentils....noodles and veggies....sprinkled with parmesan cheese and herbs and spices....I'm thinking I should have made some garlic bread to go with it...

Going with a classic...open faced meatball sandwich on crusty bread, topped with provolone and tossed in the oven for a few. Probably a glass or two of a nice, jammy Sicilian red.

I was going to have some yummy left over meatloaf. Until I went to the kitchen and saw the empty plate in the sink. The Boy already ate it. So instead I had a can of Tuna. :watereyes:

The kiddo loves Steak n Shake, so we waited almost 2 hours at the grand opening of the new one that's a half hour from our house. (It's the closest one within three hours drive.) Soooo....I had a burger and fries....and a chocolate shake. I have no regrets LOL

new recipe, i cut a zucchini in half, sprinkled olive oil and fresh garlic, put a few tomatoes on top and tossed it in the oven for about 25 mins. delicious!

I roasted all the wrinkly bits and bats of root veggies and some butternut squash then turned it into a spicy veggie, cheesy bake thingamabob. Turned out yummy! Homemade carrot cake for afters. :)

Tonight I was craving tacos..so as a no carb option I browned ground turkey, with red and yellow bell peppers, garlic, and seasonings and put that over a bed of lettuce with a little cheese. it was petty delicious...
i also premade dinner for tomorrow. Chicken baked with red and yellow bell peppers, garlic and then i put a ill olive oil and fresh squeezed lime juice..should be good!

yesterday...I cooked a chicken in the crockpot..started it on low early in the morning...infused butter with herbs and spices (chives fresh from the garden!) and put it under the skin...and in the juice...came out nice and juicy and tender...
made rice on the side....
Planning to make soup with the leftovers...adding veggies and a lovely brown and wild rice mix that I actually got for the dogs...but I loveeee wild rice.... :)

Pesto made from scratch (using walnuts instead of pinenuts -- which yields a less creamy and more textural sauce) with vegetable pasta. Have portioned the remaining pesto out into ice cube trays for future use on nights I don't feel like cooking. Delish on a cold evening like tonight!

BLTs with the leftover turkey bacon from breakfast..made healthyish with whole wheat bread, and had mine with fat free ranch dressing instead of mayo...then ruined it with steak fries...the ketchup for which I seasoned with hot sauce and that lovely Chinese spicy relish....I dont know the name...but goood stuff...

horrible because I burnt it yet the damn rice is still crunchy.
even my girls dogs won't eat the rice, nope took a wiff and walked away.

I bought a big enough piece of beef for dinner and slice cold cuts for sandwiches through the week. My aim is to not eat a slice every time I go to the kitchen so there is at least enough left for a decent sandwich tomorrow :D

Hot spagetti squash, veggie samich, sour cream (kicker dip), plain yoghurt (also dip), in scrambled eggs, hot plain broth, add cayenne if you have cold, leftover chicken (make salad), tomato mozzarella cheese salad, chicken or veggie soup, dressing for green salad.... love pesto... :rrose: so many uses, so good for ya.

Yes!!! Use finely crunched up crackers(something with a buttery nature to it as opposed to a saltiney nature) instead of breadcrumbs and use more crab meat than cracker. Whatever wet ingredients you put in it make sure there is a little mayonaise in there somewhere, and don't forget to season with salt, pepper, Louisiana hot sauce, and old bay seasoning.

This is the Crab Cake (http://uktv.co.uk/food/recipe/aid/516676) recipe I use, give or take a tweak here and there. :) I prefer to use sweet potato.

i marinated deer steak in terayaki sauce and then seasoned it with grinders steak house seasoning and garlic salt and then slowly pan seared it in a skillet. i also made four cheese mashed potatoes and green beans as sides.

Teddy is trying a new recipe for a crab bake casserole that we LOVE at our favorite restaurant. He even teased me with the possibility of making it into the topping for stuffed portabella mushrooms sometime. If it comes out as good as we are hoping, I will be sure to post it in the delicious thread :)

Chilled Red Quinoa Salad (improvised and surprisingly tasty): 3/4 Cup cooked/chilled Red Quinoa; 1 diced California Avocado; 1/2 diced Red Tomato (on the vine); 1/3 seeded/diced Cucumber; 1/8 Cup finely diced Yellow Onion; Juice of 1/2 Lemon; 2 tsp Grapeseed Oil; 1/8 tsp Turmeric; pinch Sea Salt.
High in protein and fiber but low in sugar, fats (the bad kind), cholesterol -- and very filling!

Found a hole in the wall, looks sketchy seafood place. They cook, you carry out as dine in consists of one large plastic table in the middle of the store. The choices are "boiled, boiled, and boiled." Have not had seafood this fresh in forever!!!!

a.) Should be eaten at home to *really* enjoy them.
b.) Are almost a feral experience.
c.) The afterglow of messy, sticky fingers and lips is borderline nirvana.
Crab legs and BBQ ribs fall into the above categories.

Last night we made a co-operative dinner :)
I "marinaded" boneless chicken breasts with a rub that Teddy talked me through making over the phone...let that set up in the fridge..
then
I boiled the potatoes and eggs and Teddy came home and threw together a wonderful southern style potato salad...mmmmm
With which we had fresh zucchini/summer squash mix.....
AND
garlic bread made with the leftover half loaf from dinner last night.... :hangloose:

Tonight I made "cabbage steaks" and tuna patties. Tuna patties that are a lot like salmon patties but with all white albacore tuna, and tasty! the cabbage steaks are 1/2 inch slices of cabbage brushed with olive oil, lemon juice, salt and garlic and pepper tossed in the oven for 40 mins...new recipe and SO GOOD. i will def be cooking it again!

I'm bleeding and I had a rough day.
Dinner was a pina colada muffin, weirdly shaped gummy spiders, Coke, and the tiniest bit of healthy stir fry leftovers from two nights ago (but I slathered it with ginger dressing).
I didn't want to go all crazy with the good stuff.

It was supposed to be salmon patties, but they fell apart, so it was like salmon hash. The cool part was going out to the garden and getting lettuce for the salad. First gardeny goodness of the year! YAY!

This evening (Thursday) I have a brisquit marinateing in the fridge over night so I can put it in the smoker to cook for dinner.I also bought some string beans from the produce palce not far from hear so i'm fixing up a pot of them with bacon,onions with new potatoes...I may well fix some sweet cornbred to go with it.

Lol it's really good and easy to make, it's steak marinated in soy sauce, ginger, garlic and onions then grilled.
I had Campbells beef and barley soup. Diet coke. Coffee for dessert.

I sauted tons o veggies....baby carrots, bell peppers, red peppers, gourmet baby cukes (which are more squashy than cukey, imo), and mushrooms in a soy ginger marinade and then tossed a pork loin in the middle of the pan and buried it.
I wandered back into the kitchen a while later and it was all done and juicy and not dried the fuck out, which I tend to do. Yay for bringing my A game to the table tonight!
Oh, and I had dessert first. A red velvet muffin. Super nummy.
