The soup that I made turned out yummy. It was broth (yeah I have secrets), chicken, brown rice, onions, green beans, corn, carrots, and lots of secrets. It was yummy!

I wasn't mocking or complaining about the posts, only noting that so many at that particular moment were essentially on the same topic. Do people really not have anything more serious to report? AS someone just wrote to me: "Someone obviously doesn't like you" I've no objection to "fluff". I post lots of it myself.

Everything under the roof! I had broccoli two ways in chicken Alfredo and broccoli Italiano, chicken teriyaki pot stickers, veggie egg rolls with sweet 'n sour sauce, peppermint chocolate wafer sticks, peppermint meringue bites and water. Lots and lots of water.

BB and I have been doing this delivery service that has been so much fun. Once a week we get various groceries and recipes, and then we cook the recipes, and they are easy recipes. I often go rogue but let the recipes influence ideas. Somehow it is so much easier than shopping and cooking!
Tonight I cooked in the oven a flatbread with a tofu burger, and I added onions, mustard, and ketchup. That doesn't sound very exciting but that is because I have used up more of the fresh veggies over the weekend, and it was actually quite delicious.
The service we are using is called HungryRoot.

I took a few of my favorite meatless 'meatballs' and heated them up in my ceramic non-stick pan; then mashed them all down to make a 'patty', then melted a slice of that Chao Field Roast Creamy 'cheese' on top. I also sliced up some sweet potatoes into coins, and cooked them in the pan alongside the meatless patty with the melted 'cheese.' It was filling and very tasty.
I'm still catching up on hydrating with water, before bed time.
I might have a cup of chamomile tea before bed, too.

Went out to dinner with a good friend we shared the food. Steak, lobster, crab cake, scallops, asparagus, mushrooms, and cream brulee. So yummy! A great night with good company and good conversation.

Heirloom grape, cherry, pear tomatoes. String cheese. An open face sandwich of deli ham and mayo on one slice of Dave's Killer 21 Whole Grains and Seeds thin sliced bread. Coffee with half and half. Dessert, still not decided which it will be – ½ a Red Delicious apple or an Outshine no sugar added fruit juice bar.
P.S. I like reading about what others are having for dinner, care to eat, drink. Though I'll probably never cross paths with anyone here real time face to face, if I ever do I'll go back through this thread , so when they visit I'll know what to feed them. Surprise!

I have a beautiful piece of salmon.
I also came across some last chance bella mushrooms that need to be eaten tonight. So after perusing recipes, I found a mushroom and broccoli stir fry. I'm going to make it a bit more colorful by adding some red peppers.

I found this: The term "wedding soup" comes from the Italian language phrase "minestra maritata" ("married soup"), which is a reference to the flavor produced by the combination/"marriage" of greens and the meat. The minestra maritata recipe is also prepared by the families of Lazio and Campania.
I had grass fed beef, steamed veggies, a salad, some candy canes, water and some trail mix.
Today I am making beef enchiladas and picadillo. I made Spanish rice last night.
Maybe nachos for game time too.

I went grocery shopping today, so tonight, right after I sign off, I'm going to make a fresh Caesar salad out of organic Romaine and sprinkle some walnuts on top and add a splash of a home made dressing that is dense in acv. And, I will warm up some of those meatless spicy 'meatballs' and cut them up and have them on the side, to go with my salad.
Water to drink.
Hot herbal tea, later on tonight, right before bedtime. Cinnamon Orange. It is a chamomile tea with heavy orange and cinnamon notes. It is delish.

I made a huge batch of vegan, organic chili which also has meatless meat crumbles, organic red kidney and pinto beans, and a huge dose of minced organic garlic. I used an organic, low-acid tomato base and lots of spring water.
I'm having a cup of it right now for lunch, but most likely I will have more for dinner tonight. I used a bit of vegan, non-dairy 'sour cream' to put on top of a bowl of chili and a few organic multi-grain 'corn' chips.
Luckily, I only have chili at weird, irregular times during the year, so I'm going to have chili all week long (or for as long as this big batch of home made chili lasts).

Chili Verde.
I had some left over pork roast. Mixed it up with onion, garlic, chopped celery, cilantro and jalapeno. Added a can of green chilies.
The base was concocted up with chicken stock, cream cheese and a dash of heavy cream. More like creamy chili verse.
It wasn't quite spicy enough, so I topped my serving off with green salsa and some shaved cheese. It is quite delicious! And keto approved.
Hot lemon pound cake tea.

I tried the Hardee's Beyond Burger for dinner.
I liked it about the same amount that I like Hardee's meat burgers, which is to say, "Not much, but if there's no 5 Guys or Wendy's around and I _must_ have a burger, then Hardee's is acceptable." Part of my ambivalence toward Hardee's burgers is their bun, which I think is too sweet for a burger. The vegetables were good, fresh and crisp.
The burger: Remarkably a lot like a Hardee's hamburger, which is to say, a bit flavorless. The texture was surprisingly very hamburger-like. Oddly, this "vegan" (?) sandwich came with a slice of cheese. (I don't know if they claim that the sandwich is vegan. Also, I suppose the cheese could have been vegan cheese - but I don't think so.)
I couldn't argue with the price, which was FREE. I had to say, "Beyond the Game!" when I ordered, but I did get it for free, and with no strange looks. Unfortunately, this promotion was only for today, Feb. 3. I don't think I would pay the regular price for this burger, which is $5.99 at my Hardee's.

When my brother came back from down east this fall he brought me a lot of trout, salmon and cod frozen in ice which I can use all winter unless I find a good sale on fresh northern fish then I can buy that and save my stored ones.
I eat a lot of fish and try to only eat non farmed.

I'm having Red Quinoa stir fry w/veggies (mini corns, sugar snap pea pods, water-chestnuts, broccoli buds and slivered almonds) with Orange Miso sauce. There is even tiny red peppers in it, the spicy kind.
Water to drink. Hot herbal tea, later.
Walnuts and cashews, for dessert.

I had popcorn- I think it's called Brooklyn popcorn or something like that. Someone must make it in Brooklyn an drop it off at the health food store. It's not that great but pretty good. Ya know... popcorn, always fabulous in my book.
I also fell for this cup of soup that's powder and you microwave... It was called "pad thai" soup, and I thought "oh, wow, it will taste like pad thai! What a sucker I am. I also didn't follow the directions because after you microwave it you are supposed to cover it with foil for five minutes. So my noodles came out funny. Story of my life.

I made a small salad tonight: a bed of romaine lettuce; then pan seared some of my meatless 'meat balls' with one small jalapeno pepper and put it on top of the bed of romaine, then smothered it (kind of) in my vegan non-dairy Caesar salad dressing. It was delish. Nice and spicy and it hit the spot.
I drank some water and will most likely have a couple cups of hot herbal tea (hibiscus and orange with cinnamon, sweetened with Truvia).

Fresh Cantaloupe, with salt and pepper. A few broccoli buds, with my fav Caesar salad dressing. A big ole jar of water, to drink. And finish off the Albacore tuna salad I made last night, with a few whole grain Ritz crackers.
Hot herbal tea for dessert (Orange-Rose-Hibiscus, with cinnamon and sweetened with Truvia).
Maybe a handful of walnuts, too. OR, maybe make some homemade Oatmeal cookies and use the walnuts in them. Yep, that's it.

BB and I are still doing the Hungry Root plan for some of our meals, where you get sent some food and recipes. It forces one to branch out.
Tonight I made a very decent stir-fry with tofu, onions, napa cabbage, broccoli, carrots, kohlrabi, sugar snap peas, and Gochujang sauce. It was Bibimbap! Always a fave when it comes out well, which it did tonight.
For dessert I had an apple with peanut butter. Can't beat that :sunglass:
Last night I made meatloaf, green beans, corn on the cob, and baked potatoes.
To make my grandmother's green beans render some bacon in a deep pan then saute the green beans to a bright green then add steaming hot water and cook to tender. Add salt and pepper along the way. Super yummy.

I bought hatch chili gouda cheese to make cheesy broccoli some time this week.
It was tonight! I added a handful of mini shell pasta, and some shrimp. My cheese sauce also included heavy whipping cream and some cream cheese.
Homemade wine with diet 7-up..a wine cooler.
I made wine, for real!

I pan seared some slices of green cabbage wedges in evoo and a small patty of meatless 'meat' which had some jalapenos too. It was easy to make, tasty and now I feel satisfied.

I made Hungry Girl capellini-style Noodles (tofu shirataki noodles). They are a headache to make, though they don't take too long really. They also come out odd but taste pretty good. Here's how I make them:
They are stored in water, so cut open package and drain. They smell like seaweed and must be washed. Then microwave to dry them out (one minute per pack). Then dry stirfry them in a wok until they are crisp and completely dry.
I had them with dry-sauteed onions, riced cauliflower, broccoli, bell peppers, carrots, garlic, and spaghetti sauce.
OMG, the meal was quite delicious. Surprisingly so...

I don't know I was goofy on pain meds when I went shopping and made some really poor choices. I bought the last six packages of diet black cherry Jello they had, so will definitely be having some of that. It's so good though, so happy mistake. If you're ever going to have an error in judgment this is probably one of the better poor decisions to make.

Ugh! I keep losing my post.
Okay, I dry-cooked cabbage, onion and carrot in my wok but I kept having to tilt the heavy wok to the side while cooking it to dump out the excess water created by the vegetables to keep them from being steamed. Does anyone have a solution to this?
Then I added Gochujang sauce which changed my life, thanks to GeorgiaMa'am who repped me with the idea, and now I can make bibimbap at home which is amazing to be able to do, and frankly I like the sauce on everything.
I also had Greek yogurt, strawberries, walnuts, kamut puffs, and cinnamon. Joy!

Buttered saltine crackers with very thin slices of Tillamook mild cheddar cheese and piping hot Herb Ox instant chicken bouillon. I can dip the crackers in the bouillon to soften them, and because the bouillon is so hot it slightly melts the cheese. By the time I've finished the crackers the broth is still hot but cool enough to drink. No dental pain that way, and surprisingly it's actually pretty good. I had to think of something soft because I started cutting back on pain meds today.

Engineers at work asked me if I like spicy hot sauce, and brought a spicy wing for me to taste test. I didn't like it much but thanked them for letting me try it.
So... tonight, I dropped by the grocery store and picked up my favorite items to make a smokey warm spicy salsa.
It has chili tomatoes, chopped jalapenos, chopped sweet onion and Elephant garlic cloves, orange rind chopped sparingly, strawberries, a few raisins, medium chilis, and chopped mango. Cinnamon makes the salsa expand with smokey warmness. There is a titch of Rice vinegar in it too.
It is good with organic corn chips or over a cup of Vanilla Bean ice cream.
That is what i am having right now. I am taking it to work on Monday for post weekend woo-woo. :cheer:

I'm making a soup tonight too.
I call it: Won-ton Beet Soup.
I oven roasted some beets, after I boiled them. Then I let them cool off. I took a fork and smashed them all up and added coconut cream, cinnamon, some leaves off of a bouquet of basil, added some lemon zest and filtered a tablespoon of acv, to add sparingly, after the smashed beet concoction heats thoroughly. In the mean time, I am using sheets of Won-ton 'paper' and hand crimping them shut, after I stuff them with vegan creamed cheese, chopped fresh chives and chopped up Korn ChiKn patty meatless meat.
Should be fairly delicious. It certainly smells good, the soup part.
I'll get a pan of coconut oil going on the stove top soon, to cook the won-ton thingy's.
You just dish up the soup into a bowl first, then top it off with a fair amount (5-or-6) of the won-ton 'cheesy-ChiKn' thingy's.

I got home late from work, so I am keeping it simple. I am making 'street tacos' with miniature soft taco shells (only 3 or four) and sautéed chopped green cabbage and Portabella mushroom (one is enough). Once the cabbage and Portabella mushroom is sautéed, I will melt some Chao Field Roast creamy 'cheese' in each small soft taco shell and spoon the sautéed veggies into each of them. Should be filling and delicious (I'm hungry tonight).
