I had a subway salad and grocery bbq'd chicken in a motel room in brooks Alberta on my way to drum heller Alberta.
Last night: smashed sweet potatoes with taco meat, broccoli, cheddar and green chile on top.
Tonight: Something with leftover taco meat-- not sure what yet.

A grilled turkey, swiss and tomato sandwich, and a kale & mango salad with citrus dressing.
Tonight: Something with leftover taco meat-- not sure what yet.
Made instead-- chicken enchiladas with NO soup mixture. We purchased some fresh green chile at the grower's market, 3 larger bags, and have consumed 2 of the 3 since Saturday. :)

Had Subway's "veggie" salad...best deal ever...and some cold bbq'd chicken from a grocery store down the road...nothing gourmet but the grocery clerk was sweet and offered to carry the chicken out to the car ( I have no idea why but, not wanting to cause a row, I accepted the kind offer ( it was a heavy chicken...at least 3 lbsb

We received 2 huge tomatoes from the farm box -- so I've oven baked some bacon, made some homemade mayo and have asked my wife to pick up some lettuce. We'll be having BLT boats-- no bread. I also made a apple cinnamon crisp-- for dessert.

I made a huge pot of Moroccan lentil vegetable soup. It smells and tastes amazing. Also made the family a huge bowl of garden fresh salsa.
grilled burgers seasoned with salt/pepper/green chile powder wrapped in lettuce leaves. Toppings sauteed onions and chopped green chile.

I am making "fish in crazy water" again. This time I used fresh catfish fillets, onions,(I forgot to buy garlic dammit!) carrots, celery, zucchini, crookneck squash, a big ol fat tomato and a pink peppercorn lemon thyme seasoning. It's on the stove in my cast iron dutch oven as I type. One pan, 30 minutes start to finish. I love this stuff!

neopolitan ice cream with Hersheys syrup and a banana...so it was healthy....
Grass fed brisket (crockpot for 12 hrs on low with seasons of salt/pepper/garlic powder/onion powder and some tjs everyday seasoning), smashed pink potatoes with olive oil and rosemary, and sauteed purple/green beans in bacon fat with red onions. Cantaloupe for dessert.

I changed my mind and made red sauce with meatballs, sausage and peppers. I have plenty leftover for the freezer too. :) I'll do the chicken gyros tomorrow maybe.

I had put ribs in the oven, wrapped up, @ 275 for 3 hours. Can I just say...fall off the bone delish.
Since I broke a crown, I thought cutting the corn off the Cobb and roasting it was a better idea. That topped a spinach/romain, tomato,avocado salad.
Pure summer bliss dinner, I might add!

We had one of those frozen dinner meals in a bag; chicken stir fry. Not great but she did a good job.
Then she made salted caramel brownies for dessert....and strawberry banana smoothies after that lol

Will make this fish in crazy water at some point, soon, though. It sounds divine, and can be adapted to one's tastes specifically!!!

Roast pork (was stuffed with toasted pine nuts,apricots and prunes that had been soaked in calvados,roasted garlic cloves,sage,thyme,butter and panko,mushed up stuffed and then rolled and tied)
Served with roasted little potatoes with rosemary, and salad,various herb leaves and lettuce, black olives, roasted cherry tomatoes, cucumber and peas dressed with classic french dressing.
Pud: strawberries and cream
All washed down with Normandy cider.

I had a small veggie sub with provolone and a ton of veggies and Southwest chipotle sauce, spicy sweet chipotle chips, white macadamia nut cookies and gummy bears. I had 'sweet' tea that was sweeter than the last stuff I bought but not quite sweet enough for my Southern sweet tooth so I added a little Organic Agave 5 and it was better. I found it today at the store so I'm glad I gave it a try.

For dessert I wanted the pumpkin cheesecake...but for 7 bucks?? I think not. I went to the DQ to get a pumpkin pie blizzard but the Asheville location doesnt have them yet.....sad face....

I took a good friend of mine to dinner for her birthday. We both love Greek food, so of course we headed to a favorite Greek restaurant. I had a Greek specialty platter with a little of everything, and she had Mediterranean chicken with the fixings. We also had Saganaki which she had never had before. Then the waitress brought out some baklava with a birthday candle in it. I am glad that we went, it was a joy to see my friend smiling from ear to ear. :) Both of us ended up bringing home enough leftovers for dinner tomorrow night.

Not sure what I wanted..so, I made pasta elbows with sauce and meatless "meatballs" and then I made a veggie packed spicy Lo Mein. At some point I'll figure out which one I want to eat for dinner and what I'll eat tomorrow
I had fresh Gulf shrimp smoked in smoker with a honey BBQ dry rub & some Old Bay seasoning with a fresh tomato with mozzarella slices, chiffonaded fresh basil with a balsamic vinagarette dressing and sliced fresh peach wedges. My honey had a smoked fresh grouper fillet rubbed with a dry garlic herb mix and a salad like mine. It was so yummy!

Homemade Sloppy Joes:
Ingredients
2 tablespoons olive oil
2 red bell peppers, seeded and cut into small dice
2 medium yellow onions, small dice
4 medium garlic cloves, finely chopped
1/4 cup tomato paste
2 pounds lean ground beef
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons kosher salt, plus more as needed
1 jar passata sauce
1/4 cup water
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon packed dark brown sugar
6 to 8 hamburger buns, split and toasted
Instructions
1 Heat the oil in a large pot or Dutch oven over medium heat until shimmering. Add the peppers, onion, and garlic, season with salt, and cook, stirring occasionally, until the vegetables have softened, about 6 minutes.
2 Add the tomato paste, stir to combine, and cook until the raw flavor has cooked out, about 1 minute.
3 Increase the heat to medium high, add the ground beef and cook, breaking the meat into smaller pieces with a wooden spoon, until it’s just cooked.
4 Add the chili powder, cumin, and measured salt, stir to coat the meat and vegetables, and cook until fragrant, about 1 minute.
5 Add the tomato sauce, water, vinegar, Worcestershire, and brown sugar, stir to combine, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors meld and the mixture thickens, about 30 minutes. Serve immediately.

I had okra in the fridge..I have never cooked okra before and had only eaten it once in my life time. So, I did a bit of searching and decided to make okra cornmeal cakes (cornmeal, okra, red and yellow peppers, onion, crushed Portuguese hot peppers, garlic, baking powder, salt and pepper, fried in a little oil until golden brown on each side). On top of that went a chipotle vegan mayo, avocado, vegan sour cream, vegan cream cheese, salt and pepper whipped together with chopped tomato. On the side was steamed cabbage and onions.
the rest of the okra is in the crock pot for a veggie jambalaya
