I grocery shopped today and did not feel up to cooking. So I had a sandwich-

Sliced chicken breast, with salad greens and white cheddar and a 100% whole wheat thin bagel, and water.

I'll cook tomorrow...maybe.

Oh and I had Greek yogurt with cocoa powder blended into it for dessert. Good stuff!

Ebon took me to a surprise restaurant. I knew we were going to one, but not which one. We wound up HERE (http://www.saltgrass.com/menu.asp).

Ebon had the ribs and steak fries and I had the peppercorn crusted top sirloin and baked sweet potato and we both had beer bread and Caesar salads.

The steak was so good, I could have eaten it all without any sauce whatsoever. For those that really know me, or at least my eating preferences, you KNOW that's some good stuff right there.

We. Will. Return.

The most velvety and luscious Onion soup with added extra fattening crispy onions and a toasted cheesy ciabatta...I can't tell you how scrumptious it was after being poorly and then a little very plain food yesterday

I brought home a prime rib, shrimp scampi combo meal from Outback Steakhouse tonight. I finally used a Christmas gift card. I went to Cleveland Clinic today and after hearing about my surgery and how it was going to alter me, I needed super comfort food.

I made jasmine rice and baked tilapia with olive oil, lemon juice, pepper, scallions and mushrooms. Ebon seems to like it. He just finished off another plate of it. :blink:

They don't taste like anything....so I make a lemon avacado dressing to go over them.... They are good to help you feel full and get that pasta like effect....but I can't handle them naked.

With help from a bottle of trader joes general tso's sauce... I made general tso bean curd with onions, garlic, broccoli and mushrooms. I eat it like this without the rice.. too many carbs for a diabetic.

Just jo... I also waited too long... but seem to be doing ok with the beancurd... don't have to do shots yet, just pills so it's easier to control. Hope you feel up to something more substantial soon!!!

Gooder n' gold, I'm familiar with and use on occasion. Gooder 'n shit seems vaguely familiar but I can't say that it's actually ever been used in reference to food.

Ebon and I had :sushi:. He had a spicy tuna hand roll and another regular salmon roll. I had a house salad and a crunchy roll with a side of steak (OMG, it was SOOO good and tender!!!). We had vegetable tempura as an appetizer and I had banana tempura for dessert. Ebon tasted it but said it was too sweet. It wasn't but that's okay, cuz I wanted it all anyway. :tease:

Water with lemon to drink for both of us.

Every year or so I get the urge for oysters. I can only eat them fried (apparently, I don't care for the texture of fibrous snot). I'm due in about, oh, 8 months or so.

Tonight, we bought the goodies to make our own pizzas and Ebon made us pepperoni, mushroom and cheese pizzas. Next time, we'll use less sauce and more veggies, but we liked it enough to try again.

I got home after working 12 hours and i wasn't hungry so i thought ok i'll not eat. Now it's 9:42 and i'm starving. Too late to really eat so i'm gonna have one piece of dry toast with peanut butter (i know if you put peanut butter on it, it's not dry....i just like to say dry toast ...it's fun)

Tonight has been a bit of a roller coaster in terms of dinner. First, Ebon decided he wanted to go to lunch at 4pm. So, I planned my time accordingly so that din din would be ready around the time he got off.

Then, I got the brilliant idea to prepare the sauce early. Said early sauce making involved taking the crumbled feta out of the fridge. Unbeknownst to me, either Ebon or I had not put the lid on it tightly and I wound up dropping the bottom, feta included, all over our kitchen floor. The top, sans feta, remained firmly in my hand. :blink:

Have you ever tried to clean damp crumbled cheese off of your kitchen floor? It's not pretty. Ebon was told to stay the Hell out of the kitchen (he's was on a 10 minute break) while I put dinner on hold and swept (as best I could) and then mopped the floor. Ebon was trying to come into the kitchen for a snack, so I popped some popcorn while trying to paper towel dry the part of the floor I needed to stand on to prepare dinner.

I wrung the mop and cleaned off the bottom of the broom as best I could and stored them back in the laundry room and then picked up where I left off. As I was cutting the plastic away from the filets, our small 'only for food items' kitchen shears broke. Luckily, I was able to chase the tiny lil bastid of a screw before it got into the disposal.

Then, when I needed to take the filets out of the oven to flip them, the pot holder was nowhere to be found and my kitchen towels are not thick enough for the broiler pan. So, I sneak into the living room and inquire (hiss) at Ebon softly (as he was on the phone with a customer) as to the location of the pot holder. I was nonchalantly notified that it was in the laundry room. WTF??? So, I run into the laundry room and find it inside the washer and manage to get the filets out of the oven and they are only slightly rubbery on one side. :blink:

I get them flipped and properly sauced and then I realize that there is not enough sauce. Dammit! So I whip up more sauce super fast and dump it on the remaining filets. Ebon wanted asparagus and we only had a little bit left in the jar, so I tossed them on the broiler pan and seasoned with veggie seasoning. Into the oven it went again.

I've been starting and stopping salads for us since the beginning and I'm able to finally finish them up and, as I'm dusting Ebon's salad with the pepper he likes, the top comes open more and WALA! Pepper salad. :blink:

So, I clean off the salad (thank goodness there wasn't dressing on it yet) and finish mine. Toss the dressing on and add forks and the salads are a go.

Grab some plates out of the dishwasher that finished running right before dinner and put the rice (oh, did I mention there was rice? no emergencies there though, for once) and a filet on a plate with four sad little asparagus spears for Ebon and told him dinner was ready.

He told me his lunch time slot was canceled. :blink:

So, I brought it to him anyway since he was hungry and he could eat in between talking, but I was not happy about it.

In conclusion, we had broiled parmesan tilapia filets, jasmine rice, white asparagus spears, and dinner salads comprised of romaine, tomato, mushroom, seasoning and dressing (Balsamic and Basil Vinaigrette for Ebon and Caesar Vinaigrette for me).

By this time, I'm not really hungry anymore.

I roasted a whole chicken with potatoes, garlic bulbs, onions, celery, turnips and some butternut squash
Italian bread to schmear the roasted garlic on and some goat cheese
Green beans with almonds
For dessert mixed berries with some lovely sugar free chocolate mousse

Tomorrow I am going to take the pan drippings,bones and some of the left over chicken and veggies and make a really fine chicken stock for soup

Ingredients

* 1/2 teaspoon paprika
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 3 large boneless, skinless chicken breasts, cut into 2-inch pieces
* 2 eggs, slightly beaten
* 1 cup Italian seasoned bread crumbs
* 1/2 cup sugar
* 1/2 cup lemon juice
* 1 1/2 teaspoons curry powder

Directions

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a bowl, stir together paprika, salt, and pepper. Sprinkle seasoning over chicken pieces. Dip pieces in egg, then dredge in bread crumbs. Arrange chicken pieces in a single layer in an aluminum foil-lined 15x10-inch jelly roll pan.
3. Bake in preheated oven for 15 minutes, turning once.
4. In a small saucepan over medium-low heat, stir together sugar, lemon juice, and curry powder, stirring until sugar dissolves, about 5 minutes.
5. Drizzle lemon sauce over chicken, return to oven, and bake 5 minutes more.

Last time she visited our SIL, the SIL bought my sister a magazine of diabetic recipes. We've been trying them - tonight we had Chilli Burgers (sort of spicy with chimichurri on top) and a salad with apples, feta and a vinagrette dressing. My sister fixed Spanish rice - but it really was unnecessary - there was enough with just the burger and salad! It was so good, spicy but not spicy enough to make my sister worry about heartburn. We're full but not stuffed.

Also seems like everyone I know is off with their families lol

So I've decided to be totally unhealthy and have pizza and beer for supper tonight, which I haven't done for a long, long time. But what better way to spend a Sunday night when nothing's open and everyone else is off gettin' their family time on :p
