I have done as little cooking as possible these past few months, but I have found a few frozen meals that I really like.

Tonight I had Michelina's Salisbury Steak and Mashed potatoes, with some extra mashed potatoes which I also did not cook. They're Marketside brand and they are delicious. Often I throw a cup of canned french cut green beans in with it. They go well. Tonight I ate the steak and potatoes then I made a salad with romaine lettuce cauliflower bits that I did chop myself and some baby peas, Tossed with egg salad as a dressing. OOPS! I messed up! I did cook something - I cooked the eggs and made the egg salad myself

Leftovers from last night: Sheet pan dinner- roasted cubed sweet potatoes, green cabbage, and chicken sausages. It was a spontaneous weird combination but it worked well together!

I wish I could post a picture of the sauce I made. I used my stick blender to turn roasted tomatoes + roasted onions into sauce, and I cut up a few small eggplants to stew. Pete is working at home today, and she wants this with pasta.

I also made Arnie goop melange for lunch. He only has two tiny teeth left, so I have to chew up his chicken, which I mix with cooked sweet potato and delicate chicken pate. He’s whining now, because he’s a tiny Yorkie, and tiny Yorkies always want something.

Monday I hit a couple of food sales, one of which was a ten pound bag of chicken drumsticks for $5.99.

I had been craving homemade chicken soup. I claim the title for world's best chicken soup maker. Move over Paula Dean, Martha Stewart, Emeril Lagasse and whoever else makes chicken soup, mine is good!

But its a lot of work, and I have sworn off cooking.
. . . But the chicken I just bought was staring me in the face, so I finally just quit whining and got started.

First thing is to dig around in the veggie drawers in the fridge. I try to have at least 10 different fresh veggies in each batch. I was watching TV and chopping veggies during the commercials so it took quite a while to make. If I don't have enough fresh, I add frozen peas or corn.

I had already used up all my calories for the day so I couldn't eat any of the soup when it was finished.So that what I had for dinner last night - a big bowl of chicken soup, a few saltine crackers and a fudgsicle. I made a bunch of soup. I packed 6 lovely meal size portions in containers for the freezer. so my chicken soup cravings will be covered for a few weeks.

For tonight, I have half a can of chili in the fridge that I have to use up, so I'll probably have that on potatoes, maybe with peas on top. I've been hooked on peas the last few days. Happy eating, y'all!

Went shopping for food this afternoon and right now I have supper roasting in the oven: jumbo organic chicken breasts (3), cut up organic vegetables (garlic, carrots, potato & beets) and dressed down in evoo, balsamic vinegar and a smattering of fresh herbs (tarragon and rosemary).

I’m cooking for the weekend ahead, but tonight I will have a taste or two of everything, before i divvy it up into glass Pyrex storage containers.

Last night I made a quick peanut sauce to go over steamed shrimp, broccoli, carrots, and snow peas. It was good and I made enough for a few dinners so, no need to cook tonight. That means I can play outside longer after work.

I just want to do a mini survey among us here who post on the dinner thread. Do you like your soup chunky or pureed? I have a friend who makes delicious soup, but she likes it all smooth, so she purees everything. That was a foreign concept for me, that's why I'm asking your opinion; I like to load up my soups with different shapes and colors of veggies so it is visually appealing and colorful. Now to thicken a soup I will take out a cup or so, blend it and then return it to the pan, but in general . . .


I vote for chunky soup.

How about you?

As a side note, I prefers most things chunky, especially chunky butches,(blush), but that is way off subject.

Georgia, when I read your post about cream of tomato soup, I right away wanted some too. I don't much like (canned) tomato soup, but the idea of fresh tomatoes cooking in a creamy sauce sounded wonderful. I confess I had never heard of cream of tomato soup before.


I found a simple recipe on line and cooked it tonight. It wasn't as good as I believed it would be. I'm hoping you can help me figure out how to improve it. I sauteed 1 cup of onions, 1/2 cup of corn cut right off the cob and about !/4 c fresh mushrooms in butter till the onions started to brown a little. I added 2 Tb flour and two cups milk to make a roux, then I added 2 cups chopped fresh beefsteak tomatoes. and allowed it to simmer for about 20 minutes. I added very small amounts of the following spices: black pepper, ground ginger, a bay leaf, paprika (not smoky) and dried parsley. There is quite a bit left, so I'm hoping it will be better after the ingredients gel overnight. I mean, it wasn't horrible or anything, it just didn't "wow" me the way I thought it would. I didn't add the sugar the recipe called for because I didn't want it sweet, and I don't cook with salt, so I left that out as well.


Can you figure out what I can do to improve it? Thanks for your help.

Keri, I’ll look around for a recipe, but the cream of tomato soup I’ve made has way fewer ingredients, and it’s super creamy.

I can’t help but think of people who don’t have a place to cook a meal or food to eat or clean water to drink. So far, out here in the Pacific Northwest we have not had horrifying weather conditions, like elsewhere. We did have serious fires back in 2020 and we’ve had a couple of very damaging winter days that wrecked peoples lives in small scale ways, but we’ve not suffered much out here. Yet. I worry about it all the time: will it be an earthquake that makes the volcano (s) blow or will it be a killer tsunami event that makes the Columbia River turn into an inland sea/ocean??? I have nightmare like nights, some nights.

My heart hurts for the suffering people are enduring out on the east coast and down in the Gulf of Mexico.

Tonight I took one of the organic chicken breasts I roasted the other day and I shredded it and put it in my crock pot to make a navy bean chicken chili. Lime and fresh cilantro is all I had to get at the produce stand today ($2 bucks). Nothing like a bowl of warm chili to satisfy your hunger. :)

I’m making chicken soup today. I’m using vidalia onions from the supermarket, carrots and dill from our farm share, dehydrated celery from our garden, and chicken from the supermarket and a local farm.

Best Butch brought over steaks. I was in charge of sides. Sweet potato fries( I could only find white sweet potatoes) and Cesar salad with fresh Parmesan.

She has gotten my rare steak down to a science!

Adult cocktails, sweet tea vodka and lemonade.

iamkeri, I have to admit I can't help you with your cream of tomato soup because I eat the canned kind (Campbell's). I really love it and eat it often. It is a little sweet, so it might not be what you're looking for either.

Also, I like both chunky and pureed soups. It just depends on what flavor it is.

Tonight it was a Five Guys burger and fries kind of night. We're both too tired from a day of traveling home from vacation to cook.

(While on vacation, I had a large variety of shrimp and fish - the best was a garlic and white wine sautéed shrimp with a light cream sauce. Also two charcoal grilled steaks - our inn had grills to borrow outside on the decks.)

I cooked dinner for myself tonight, plus I have it divvied up into two other meals (so I do not have cook the next couple of days).

Lean and thin sliced pork loin chops.

Veggie medley of organic beet, sweet potato and carrot slices with sliced up jalapeños and cloves of garlic, plus brown rice quinoa too (all pan seared in evoo and simmered in the skillet).

Super delicious and filling.

I kind of had two dinners tonight. Around 6:30 I had Campbell's chicken noodle soup which I have loved since childhood. Broke up some saltine crackers in and finished with a perfectly ripe banana. Later I had Michelina's five cheese ziti and my daily fudgsicle.

I made something delicious tonight. I chopped up a handful of spinach and cilantro, and threw it in my rice cooker with a frozen cube of ginger, four cloves of thinly sliced garlic, one diced carrot, half of a sliced vidalia onion, a few splashes of sesame oil and soy sauce, and used two cups of rice. I spread canola oil on parchment paper with my silicone brush, and baked cubed tofu at 350 degrees. Pete had hoisin on hers, and I had hoisin and hot sauce on my bowl.

Costco still comes in #1, but it's a fair distance from me.

Just spent the afternoon making Polish cabbage rolls ,,, they’re baking in the oven right now. Here’s the recipe I used, plus I used hemp hearts, brown rice & quinoa as my stuffing filler and chopped jalapeños. I like my Polish cabbage rolls on the spicy side.

Folks, it does NOT taste just like mashed potatoes and it doesn't have the bulk of mashed potatoes either. It was good. As I said, I love cauliflower, but it really didn't go too well with the stew. I kind of had to turn my brain off to eat it. Bad news: I made up a second portion of everything into a frozen future meal before I tasted.it. I would have chosen an alternative had I tasted it first. Live and learn.

To me, mashed cauliflower tastes a lot like - not "just" like - mashed potatoes when you bulk it up with lots of milk and butter. This eliminates the benefit of being low calorie though, so I don't really bother with it; I just eat the potatoes, with a reasonable amount of milk and butter.

I had round steak strips on wheat bread spread with low cal mayo, topped with avocado slices. It was yummy. I break my fast so late in the day that it feels like dinner. So I usually have two dinner-like meals. my second dinner tonight was a Banquet sweet and sour chicken dinner, which is really flavorful. My last meal is usually breakfast food. My milk soured way before the expiration date, so tonight I had three dinner meals. I had a whole can of Campbell's Chicken Noodle Soup, which only has 150 calories, with Saltine crackers and a fudgsicle. I love to have something sweet to end the day. Since I couldn't have frosted flakes, the fudgsicle filled in nicely.:cheer:

Misspelled parisienne potatoes by one letter.... sorry. I cheat when I make mine (just as tasty in less time) Tiny potatoes, parboiled placed in olive oil pan using spices you prefer. To me is is paprika, parsley, onion powder, salt and pepper. I fry them on one side and flip and respice while adding my steak to the middle of the pan. 15 fry min . first time, steak time about 5 to 10 min on each side (med. rare and crisps up the bacon).

But I was tripping on the food of a country far away from Mexico,
My kids took me out to dinner to a Chinese buffet. I am a "bite of this" and "bite of that" kind of person so its a lot to list, but my favorite things were the crab meat stuffed mushrooms which were OUTstanding, and the chocolate ice cream which was so chocolatey and so creamy.

I’m making soup for tonight’s dinner. It has a few pinto beans, soy chorizo, cubed potatoes, sauerkraut, a large onion, two green peppers, and roasted tomatoes from the freezer.

I love it when Pete gets home and says, You kicked it out of the park, honey.

I love Wendy's chili!

I was out and about today and picked up a few prepared food items at Winn Dixie since I am cooking averse. Then I got a quart of won ton soup at the Chinese restaurant in the plaza. So I had a Barbecue chicken leg quarter with some won ton soup for first dinner. For second dinner I had 1/3 of a beef and Swiss cheese sub, some birthday cake and a fudgsicle topped off with a Lindor Chocolate. Still stayed under 1200 calories.

I have been predictable with dinner. I have been eating soup for a while. I do change up ingredients, though. Tonight's was feta, tomato, basil, cauliflower, onion, garlic, chick peas, and tofu blended to a puree and then heated in a pot. I've found doing recipes like this yields the amount I need for fiber and protein, using healthy ingredients. Then, I am free to enjoy my homemade brownies etc. since I've taken care of the essentials :)

I bought myself an early Christmas gift of a Ninja "Foodi Combi Cooker". It's one oven, where you put your proteins on top and your veggies/rice/noodles in a pan on the bottom level. Everything cooks at once! So tonight is baked chicken with Spanish rice and corn.

Last night I stopped for take out from Outback. I had a bowl of chili, no beans, made with steak. And a blue cheese wedge salad. The salad also came with a tangy balsamic dressing. Mmmm, quite the pairing.

Tonight, I'm doing a quick chili with some left overs.

I have always disliked baked fish, but it was so much easier than fried fish that I wanted to keep trying. So I had these tilapia fillets soaking in milk in the fridge, planning to pan fry them. When I added it up, I had too many calories to fry them. The fact that they were soaking in milk made me think of poaching them. I looked up how to do it, and then dived in. I made up a concoction of cream of mushroom soup with spices. Bottom of the pan - filets. Stacked on top boiled potatoes, Italian green beans and the soup mix. Pepper all over. Bake at 400⁰ for 20 minutes. It looked great and was way better tasting than I hoped for. Added benefit. I slid the tin foil out of the pan and it was clean enough to put back in the cupboard.

Yesterday I made a big batch of bone stock from a turkey. This morning I will put the stock into a crockpot with some turkey meat, mushrooms, carrots, celery, spinach, and cubed butternut squash. When I get home from work there will be a wonderful turkey soup waiting.

I made dinner in my rice cooker tonight. Rice, plus olives, corn, chives, and Trader Joe’s plant-based chorizo. I added salsa verde to our bowls. There is plenty left over for Pete to bring for lunch tomorrow.

I think I’ll make natural hippy fish sticks tomorrow. I have a crazy knife that makes ridges in vegetables, so I can serve cool roasted potatoes.

Happy Hump day, everyone.

Hey, I actually cooked. I made stuffed cabbage. I'm dieting, so I'm always looking for ways to reduce calories. Walmart has a good sale on ground turkey, so I bought some. I used 16 boiled cabbage leaves, 1 pound (2 cups) ground turkey, 2 cups shredded carrots, 1 cup chopped onions, 3 eggs. spices of your choice, Mix well. Fill your cabbage leaves. Roll them up. Chop up a few cabbage leaves to line the bottom of your pan, this will keep your rolls from burning or sticking to the bottom of the pan. When you're done rolling them and they are all in the pan, pour tomato juice or thinned down tomato sauce over them, making sure they are fully covered. They need to be covered while cooking. If the pan you're cooking in has a lid, use it. Otherwise wrap aluminum foil around the top of the pan. Cook in the oven at 375 Fahrenheit for 2 hours. I got six meals plus a bowl of soup, out of this batch and it cost me about less than $7 for all the ingredients. Also, they were delicious. 85 Calories each! Happy Day!

Sauteed a fall harvest blend of chopped veggies, butternut squash, sweet potato, red onion, parsley, sage and celery. Quite tasty, I found that at Trader Joe's.

Tonight dinner is going to be bread pudding with a honey bourbon sauce. I can't really get interested in eating anything more healthy, but I'm excited by the idea of taking the rest of my stale Christmas stollen and turning it into a bread pudding. I think it will be really delicious.

I might nibble on some cheese ball while I wait for the pudding to come out of the oven.

I use Napa cabbage for this recipe, and use chopped crimini mushrooms with peppered bacon to make a creamy rich white sauce (roulade). I might add sliced jalapeños to step up the warm factor. ��

I heard an interesting story on NPR: Apparently scientists have decided that your gut can be just as healthy as that of a vegan or vegetarian, even if you eat meat, as long as you eat a lot of diverse plant material.

We have this same meal about once a week. I wonder if we should mix it up?

I am not too sure about what you heard on NPR,,,, but — I try to choose portions of meat that are the size of a card deck (pork chops, small portion of turkey, etc) and I don’t partake of red meats (too hard on my digestive process). But filling up on water and veggies seems reasonable. :balloon:

It's been chilly and I have felt like home cooked meals.

Last night was Cornish game hen in the air fryer. Comes out just like a rotisserie chicken. A veggie medley of zucchini, onions and mushrooms sauteed with olive oil and red wine. Now I have left over chicken for salads.

Tonight was quick browned country style ribs. I left it in the cast iron skillet and added zucchini, onions and halved brussel sprouts. Added fresh basil. Covered loosely with foil and put it in the oven. This too got a dash of red wine. Ahhhh, the veggies were so good.

Left over meat from last night, onions, mushrooms, zucchini, garlic, ginger, fish sauce, hosin sauce and I swirled an egg in at the end. Oh, and spicy for me, red pepper flakes. Topped with chopped cilantro and sesame seeds. It was just what I wanted!


Air Fryer Cornish game hen, super easy. Coat with oil, rub with your fav seasonings, cook at 375° ( breast side down) for 30 min. Be sure to check that the juices run clear.

I've been experimenting with my Ninja Combi Meals cooker and air fryer, with mixed results. It's just getting timing and temperature (read: follow the directions) down pat.

The instructions said you can bake a cake in it, using the "Bake" function, so I had a box of cake mix hanging around and went for it! The cake swelled up so far it touched the heating units on the top and left a beautiful pattern of burn on the top. Other than that, it came out really well!

The "combi meal" feature allows you to cook grain, vegetable, and a protein all together; quite nice with my busy days. (Question: How am I coming up to retiring and yet busier than ever?)

All this to get back to dinner, the point of the thread: Tonight was chicken breasts, roast potatoes, and green beans a la Foodie. I put BBQ sauce on the chicken, which did char a bit, but once that was cut off, this was my best attempt thus far.

We're having fajitas! I've made them before, but never using a tri-tip roast. They were on sale this week though, and looked really, really good, so we got one. If it turns out well, we'll get a couple more to freeze - it's that good a deal. I'm going to have to research it though - I've got a couple of hours.

T-bones were on sale over the weekend so I scootered down to the shopping center to get some. They were sold out. I got a few rib eyes instead, but they were pretty fatty. Made me think again about getting a meat grinder.

But all was not lost, as I picked up a quart of won ton soup (which I dearly love) Had it for dinner and it will last me for three more meals. Add an awesome sweet onion and chicken teriyaki 1/2 sub from Subway and my dinner was outstanding. Best sub idea they have had since they eliminated the seafood sub years ago.


For future no-cook meals I got a cold beef and Swiss sub from Winn Dixie. It's huge - measures 13 inches long, and a pack of 4 cooked bbq chicken legs from the deli. So I'm set for a few days. I rub some extra sauce on the chicken leg, wrap it in aluminum foil,and heat for about 10 minutes in the toaster oven. So much better than a microwave for meat. I had one for lunch yesterday with some applesauce. Yummy.

I made the collard greens in the Instant Pot, and they were easy, quick and delicious! I sautéed the onions, poured in some chicken broth and vinegar and sugar and spices, stirred in a pound of collard greens and put it on steam with the vent closed for 10 minutes. They were perfect!

The last few nights I've been eating frozen dinners I made and froze some time ago. For one meal I had stuffed cabbage made with carrots and ground turkey. It was super delicious when I made it, but it didn't freeze as well as the rice and ground beef version I have always made in the past. It was still flavorful, but very "wet." On the positive side, it produced a nice amount of tomato broth which I really enjoyed.

My second meal was chunky beet and cauliflower soup, one of my favorites. It is such a beautiful color, Along side I had the last four cheese puffs left i the bag - I just wanted that little bit of cheesy/salty taste, and my low cal daily addiction, a fudgsicle.

Forgive me, I know this is a thread about dinner meals, but my favorite meal of the day was what I call breakfast because I almost always eat breakfast foods. I had a lot of calories left for the day, so I had a veritable feast eaten over a drawn out period of 1-2 hours. First I had toast with sliced Roma tomatoes and unsmoked provolone cheese which I toasted till the cheese on top just started to brown. So good. Then I had a small orange cut into a bunch of wedges. It was juicy and just right in sweetness. Lastly I had cream of wheat made in the microwave in one of the pretty turquoise bowls i just recently brought. I added brown sugar, a dab of bluebonnet margarine and some shredded coconut. mm mm mm.

The grand kids were dying to go swimming. of course they didn't bring suits, but we put this and that together so they could swim. Lots of it still got eaten and we had a cute little store bought Valentines cake for dessert. My baby girl, who is six, declared me the "the best gramma in the whole world." What could be better than that?

Not to brag, but I make delicious chicken soup. Its a LOT of work though so I don't make it all that often. Today it was raining and edging toward colder weather here, so today was the day for soup making.


Its a lot of work because I won't make it unless I have at least ten fresh veggies on hand, and since I do it by hand, they are a lot of work to cut up. Veggies vary by what's available when I make it, but it has to have cabbage, and it has to have bay leaves in it. Also, I like to put three different kinds of onions in it because they really layer the flavor. Today I made a huge batch with nine chicken drumsticks, cauliflower, carrots, cabbage, yellow onions, green onions, dried minced onions, fresh corn cut off the cob, mushrooms, zucchini, frozen peas, and a package of smashed up ramen noodles including the flavoring. I ate it for two meals today, I have one all ready in a bowl in the fridge to heat up and eat tomorrow, and I made up 6 "TV dinners" for future meals In each meal I make up, I make sure there is a whole drumstick and about 1.5 cup of veggies and broth. Its plenty of food, and it looks pretty in the bowl.


Wish I could have y'all over for dinner.

I made soup last night. Just used veggies that I thought would go together well. The base was baked pumpkin that I had in the freezer. I had to boil it to get the chunks apart, so I used that water to blend the pumpkin till it was smooth. I like chunky soup. In the soup pot I sauteed cauliflower, carrots, onion and corn till the onion started to brown,then added two cups of chicken bouillon, a can of cream of mushroom soup and more water. Spices were garlic, ginger, chili powder, lots of black pepper and curry powder. Super low in calories - 137 calories for 2 cups. Along with, I had a frozen strawberry bar.


Had the soup for dinner again today, but for a different tangy-ness I added cottage cheese before I heated it up. Had a butterscotch pudding cup for dessert. Later I had DeliMex taquitos which I have recently developed a passion for.

For dinner tonight I had a stuffed green pepper from Stouffer's.

Mashed potatoes and corn with slices of watermelon. Cutting up that watermelon was the most work for for me of that meal. The rest was either frozen or ready to eat food. Plenty good for a non cooker.

I did like it! I had the beef tamales. I think next time I will try the chicken. Since it was February and there were no good tomatoes to be had, I used canned store brand fire roasted tomatoes with green chilis (89 cents). I also added a couple of tablespoons of sour cream, which increased the calories a bit, but hey - I love sour cream on spicy food.

That sounds like a variation that would appeal to many people. I never have been much of a "hot" food eater. I like a little kick but not as much as many people I know. What I'm using for hot sauce these days is Louisiana Supreme Wing sauce. I like it on wings, or drumsticks which I usually substitute for wings.

Tonight I had some leftover steak, so I sliced it up into very small pieces, tossed it in the wing sauce, nuked it, and added tons of lettuce, tomatoes and onion. Pretty good tacos. I'm fighting a UTI, so I had some cranberry gummies and some yogurt to help in eliminating it. I also reheated a baked eggplant (aubergine) and onion dish I made yesterday. I'm going to post it on the "easy food" thread in a minute.

Panama City Beach, FL has two good New Orleans Creole style restaurants that I know of. On my recent trip I had a creamed shrimp scampi that was flavored with boudin. Delicious! And the best bread pudding I've ever had outside of New Orleans.

I didn't post Thursday night, but I actually cooked so I want to tell my tale. I had some steak pieces in the fridge that I wanted to make shredded beef out of for enchiladas, So on Wednesday I braised them with carrots and onions, Took hours for them to get tender enough to pull apart. I bought some street size tortillas, rolled the beef up in it, along with the carrots, topped it with Italian cheese mix and baked for 15 minutes. It was too late to eat when I got done, so I made up two freezer meals and plated up the third meal to eat Thursday for dinner. It was very flavorful - worth the effort.
Friday night I went out with my family. Had a wonderful hamburger with lettuce, tomato and onion. The service was terrible. We waited about an hour to get served, but all the food was good once we got it. We were celebrating my 6 year old g-daughter's 6th birthday so we had cupcakes and rainbow sherbet at my place. Fun Fun Fun.
