I have no idea but if its anywhere as good as last nights dinner I'm ready! I'm so glad everyone in the house is on the same page eating healthy wise. Cause they are all good cooks and I would have a hard time saying no!

Vegetarian shepherds pie. Mixed herb salad. Sliced gala apples. Unsweetened iced tea.

Vegan crumbles on the bottom layer. Corn, peas, carrots on second layer. Mashed garlic potatoes on next layer. Extra sharp cheddar to top it off with french fried onions mixed into the cheese.

Going to the neighborhood hole in the wall for Taco Monday. Although I wish it were Indian Food Monday. I'm tired of tacos, but the kid doesn't want to break tradition LOL.

It's gonna' be roast chicken night if I remember to get it in the oven on time. :)

last night I made a chicken pot pie and fresh sweet corn on the cob


POT PIE

2 deep dish frozen pie crusts
2 cans veggies - whatever your <3 desires can be combination
or all of potatoes, green beans, peas, carrots, corn
1 12 or 18 oz chicken or turkey gravy
1/2 to 1 cup diced and cooked chicken or turkey
shredded cheddar or other cheese optional

let crusts thaw a bit.
mix veggies, gravy, meat in a bowl and pour into one crust.
cheese can go in or can be put on individually when pie is complete.
place other pie crust on top. 4 slits on top.
bake 375 for about 40 mins.

enjoy!

tonight was frozen meat pizza. icky. Reminder to self: just go or order out,
pizza is getting too damn expensive at the store and it's not that good!

i had kfc with cole slaw and mac n cheese...i've been craving fried chicken for awhile so it was pretty good :) i prefer popeyes but kfc'll do in a pinch.

Wow, I am finally cooking for myself and getting away from the Lean Cuisines....tonight I baked boneless, skinless 4 ounces of chicken marinated in a raspberry/vinegar olive-oil dressing, spinach salad with tomatoes, cukes, carrots, almonds and pine-nuts with the same dressing, strawberries and cottage cheese. Oh and a glass of water with lemons....lol, trying to get healthy, not too bad. Hopefully I will not be too hungry tonight and go for the snacks in the cupboard...

Beef shish kabobs w/baby portabellas marinated in olive oil, red wine vinegar, fresh rosemary, onion, and garlic. Grilled on the G.Forman with olive oil, sea salt, and ground pepper.

Scallops cooked with 1 tablespoon of butter, olive oil, fresh rosemary, fresh dill leaves, red pepper flakes, sea salt, and ground pepper. I set those aside and then heated two tablespoons of sour cream until it thickened, added 1 cup of fresh spinach and the sauteed scallops and heated through.

It was low carb, and oh so yummy!

hey wuffy...yea, me, too...and that is wrong..just wrong..on so many levels...I think that is available here in the US as my GF told me about it.
The mini cheeseburger pizza is Pizza Hut and is only available in the UK at the moment...and there is also a chicken sammie one avail only in Europe now...lol

I'm trying a new crock pot recipe...

1 bottle of barbeque sauce (I used KC Masterpiece)
1/2 C italian dressing
1/2 C brown sugar
about a clove of garlic
a lil salt, a lil pepper
3-4 boneless skinless chicken breast

I set it on low and ill let that go for the rest of the day...hopefully with the outcome of shredded bbq chicken!

Dunking sandwiches in soup is the best!

However, dunking biccies in tea and coffee is just wrong! LOL! I hate the sludgy bit at the bottom when washing up the cup.

Just an update on my previous post..the recipe for shredded chicken is AMAZING! I ended up serving it on a toasted potato bun, with cole slaw (home made) on top..sweet and spicy sweet potato fries and a glass of sweet tea...oh and cant forget the claussen!

Nuked Stouffers' spaghetti with a coke... 12oz. spaghetti seemed feeble so I toasted 3 pieces of frozen french toast. One for Kelly, one for Kevie and one for me. KKs loved it. They had already eaten their dog food.

After two hours of grocery shopping.. :|

One whole grilled chicken breast that had been marinated in a parmesan-garlic dressing for four hours, uncle ben's brown rice with garlic and olive oil, and a small salad of spinach, tender greens and half a carrot's worth of carrot 'shavings'. Bought coconut water but did not like it, so drinking 12 oz of fat-free milk. Splurged and bought mini vanilla icecream sandwiches, may have one for dessert..

Prepped my dinner for tomorrow to take to work - 1c leftover uncle ben's brown rice, 1/2 chicken breast also marinated, 1/2c cooked broccoli tossed with a tsp of butter and lightly salt'n'peppered, 1c globe grapes and another small salad with a very light drizzle of fat-free italian dressing.

Still have to do bloodwork about the diabetes, so trying to eat better in the meantime and watch the fat grams, as well as sodium (my body reacts to it a bit more than most people do)

Low carb Spaghetti, high fiber rolls and the most wonderful strawberries everrrrrr...grown locally by high school students in the FFA.

I mean, I have known many a strawberry, but these were a deep red, special, sweet.

Unexpectedly had to come home instead of rehab, and I happen to have some good eats here in stock. Hence tonight's menu:

Rosehips with lemon peel tea

Chicken Cordon Bleu - a splurge, but easy. Easy is good with a fresh Total Knee Replacement. TKR are not for the wimpy, imnsho.

Spinach Salad with lovely strawberries, slivered roasted almonds, and blue cheese. All Organic, all beyond Yummmmy!

Watermelon for dessert. Also organic. Will probably eat way too much of this, it is so dang good, juicy and sweet. Also guilt free.

Green/white tea mix that is especially lovely. I forget the name. I think it is a new one from Celestial Seasonings. Is that the name of the local company that is now all over the USA these days? I do like supporting smart local companies like that one.

Wish I could remember more or better. Or I suppose I could simply go check. But I am stuck here with the Game Ready on my leg *heavenly! no wonder they use these devices for the players in the NFL, simply amazing -accelerated recovery systems. Basically ice water bath around your whole affected limb* So I am ain't going anywhere soon!

And before bedtime, I gets to have my better than ice cream dream! I simply am addicted to Wild Blueberries, which are naturally organic and naturally amazing. I enjoy them frozen, just as they are starting to melt. Much better than any ice cream on earth and I have tried many an ice cream in my day. Totally guilt free, too. Which is always lovely. As I tend to excel at all things guilt related. The Irish Catholic in me has a Masters in guilt, the good Jew in me has the Ph.D.!

It will be a lovely night chock full of good eats. The foodie in me is a happy grrrl!

last night we went out for bbq ribs, Mac and cheese, Cole slaw, corn bread. She had turkey instead of ribs and coffee, I had a red ale brew and water.

Tonight her famous potato casserole with new red potatoes, broccoli, carrots, peas, corn and added chunk chicken breast and shredded cheese.oj to drink.

I have decided I will eat better if i log/post about it. Sooo..

Breakfast was Mom's Best Naturals Apple & Cinnamon oatmeal.. Mixed in some vanilla because the taste was a little meh, and put in 2tbsp wheatgerm. Had a cup of fatfree milk + Carnation Benefits w/ no sugar added (for the minerals/vitamins and such)

Snacked on 14 of the mini Quakers Cheddar Cheese ricecakes.

Lunch was .5c Uncle Ben's Whole Grain Medley Roasted Garlic rice (leftover from last night) and 1/3c grilled chicken (also leftover) and .5g steamed broccoli tossed with a little butter, salt 'n'peppered.. I bought globe grapes last night, but they have seeds in them, so I am not really feeling them =/ Munched on some raw spinach and carrots because I forgot salad dressed, so did not eat a whole lot. Drank 16.9oz water

Dinner was liquid egg whites + dried chives + roasted sesame seeds + garlic powder + salt 'n' peppa + 2tbsp wheatgerm + a pinch of mexican blend cheese, between two pieces of a nutty whole wheat bread (I know, bread bad!) Now eating 2c of steamed broccoli tossed with 1tbsp of lemon dill butter (surprised it had no carbs, bonus right?) and 1tbsp of chopped pecans. Drinking water.

Who knew I'd ever eat a BOWL of broccoli that wasn't covered in cheese? >.>
Just posting it makes me feel good, so sorry about the whole day's worth :)

Fresh onion, bell and red peppers and mushrooms left chunky and in a cast iron pan with a lid to get soft. Go play online. Toss in some Heinz 57 and some spicy Southwestern mustard and Italian seasoning and stir. Go play online. Toss in some nearly freezer burnt pork loin sliced into strips. Turn down and play online for a while. Come back and turn off.

Go check the fire pit as the housemate requested. Play with fire for a while.

Get smoke in my eye.

Toss some on a plate and sprinkle crumbled feta on top.

Now, WTH do you call that?

leftover homemade potato salad from yesterday's party
leftover baked beans from yesterday's party
grilled portobello mushroom caps, drizzled with EVOO, and topped with italian seasonings and shaved parm cheese
grilled thick sliced tomatoes, topped with mozzarella cheese

and for dessert, a light mix of cool whip, mandarin oranges and coconut

I didn't eat much, but what I did was deeee-lish! And damn did I impress my butch with my culinary skills!! (can we say brownie points??)

Cheesy Spaghetti Bolognese (creamy because I like to add soft cheese) which probably means it isn't actually spaghetti bolognese but anyway...... That. Mixed green salad and garlic bread. If, I can be bothered to make the garlic bread later. :)

Egg white omelet with chives, sesame seeds, curry powder and wheat germ. Steamed broccoli tossed with lemon dill butter, chopped pecans and sesame seeds. One piece of grain bread toasted with a light layer of peanut butter. Water, and an apple. Lazy dinner!
