I tried the new Georgia Gold chicken from KFC, and it was the most greasy, revolting thing I have ever put in my mouth. I had no idea they could find a way to make KFC chicken even greasier than it already is.

I only had a few bites, but I don't feel like eating much of anything now. I might have an apple in a while.

I love honey crisp apples, sliced with a smear of reduced fat peanut butter. I had that for lunch today!

I've never eaten an apple with salt directly on it. Watermelon is good that way, but I've never tried it on an apple.

There are some tomatoes sitting on my counter that I need to use or they are going to go bad. I am going to roast them, and then make an Italian meat sauce which I will have over lightly blanched zucchini noodles. Spaghetti my way! :winky:

I have a big pot of chicken soup on the stove. I made homemade chicken broth yesterday along with pork carnitas.

So, for dinner it will be chicken soup with pork carnitas tacos.

Leftovers from last night. I don't know what to call it. I just started throwing things in the pot.

Cooked 2 lbs hamburger meat in a large deep skillet. Drained grease, then ran very hot water in the pan, shook it a lot, rinsed (drained) off grease again.

Added:

can of pork and beans

can of diced petite tomatos

about 5 tablespoons of FRENCH'S Worstershire sauce (has to be that brand)

chipped up half an onion and a huge green bell pepper

Dumped some barbeque sauce and ketchup in it

Cooked it until onion and bell pepper were soft


Note:
It wasn't too tasty last night but I was so hungry I did not care.

Tonight, I put a couple of handfuls of grated colby cheese on top of it before I nuked it. It was very good tonight. ;)

Cheese helps anything!

I had a delish dinner of turkey chili with Mexican shredded cheese on top and sourdough bread dipped in softened yogurt butter. Lemon curd filled cupcakes for dessert.

A couple of evenings ago, I had the most amazing spaghetti. It started out unremarkable with canned sauce but I doctored it and added my spices and some fresh garlic and onions plus mushrooms and then the piece de resistance. I had vegan spinach noodles that had bits of tofu and some seeds and whatnot in it. The noodles were lovely enough on their own but combined with my doctored sauce, oh boy it was some kind of food Heaven in my mouth. So much so that I went back to the store and got. the. last. container. of. noodles. left. Sooo happy! I'm going to try the noodles with an Alfredo sauce next.

I decided to try the new Georgia Gold KFC chicken...omg...it is the GREASIEST most foul tasting crap I have ever had in fast food! I gave it to my dogs. I will never be able to eat KFC again...it had pickle juice in the flavoring!

Tonight I am making Chicken Tikka Masala with brown rice, and a vegetable salad of cucumbers, onions and chick peas, in a yogurt based dressing.

Maybe some nan bread too, if I have time.

I'm going to make extra so I can have some for breakfast with eggs on top! Yuuuuuuuuuummmmmmmmyyyyyyyyy

Once year a grocery store near where I live has a really great sale on meat, seafood and dairy. If you're able to buy in quantity the prices are very, very good. This year my oldest son and I went in together on chicken breasts, hamburger and pork loin roast. So I was working on portioning and packaging everything up until just a little bit ago. When all was said and done, there I was surrounded by all this food, with so many choices before me, and I couldn't eat a thing of it just because I was so exhausted from packaging it all up - I was too tired to cook. So now I'm sitting here having candy for dinner, a late Valentine's Day present from my somebody special. Mmm - so good.

I was going to do a "first dinner" "second dinner" tonight, a salad before working out, then some protein after. But I forgot I worked late and daylight savings has me cafuddled and so I ate the salad and worked out and now it's 9pm and kind of late to eat more...

I did and it's sooo good! :)

It's made by Macro Vegetarian, made with solar power and has yummy veggies mixed in. Ingredients include: organic brown rice, organic corn, sundried tomatoes, peas, tofu, onions, sunflower oil, yeast extract and Tamari (don't ask me what this is). I got it at Dave's.

Is the Tamari the don't ask you what it is part? It's just like soy sauce but wheat free. Flavor is pretty much exactly the same but ingredients and fermentation process is altered. Food snobs will slap me for saying they are the same though.

It's Pi day! Which I forgot about until this morning but we had provisions to make pies in the house. Whew.

My daughter just put a mixed berry pie in the oven and when that comes out I am putting in this Old Country Pie (http://thesimpledietitian.wordpress.com/2014/05/24/old-country-pie/) in the oven.

I was So hungry for hot dogs...put them in the oven to broil them and damn if I didnt forget about them! I burnt them to a crisp...

my husband, bless his heart, got me a frozen dinner Chicken Alfredo...lol. I think he thought I needed something quick that didnt involve the oven.

I stood to the side of the microwave and said nothing while it cooked. Didnt want to be wire tapped before dinner....lol

Last night...

My daughter brought me Chinese. It was from the place I hated when we went loll

It was soooo good! Chicken and shrimp in a yummy sauce, fried rice and some variety of an egg roll with duck sauce. And a salad with ginger dressing. Yum!

Tonight:

Im making a corned beef and cabbage meal in the crock pot. Im having company and want them well fed :)

I mixed up a wet rub before I left for work this morning and put it on a corned beef brisket. I put the brisket in heavy duty foil and closed it up tight. At 2:30pm, I stopped at home and put it in the oven, cooked it low and slow. When I came home, I chopped cabbage and onions as I fried bacon. Put the onions in the bacon grease with a couple tablespoons of butter, added the cabbage, red pepper flakes, salt and black pepper, let it fry and then crumbled the bacon in as I stirred the cabbage. I also made mashed sweet potatoes with a little brown sugar, a splash of maple syrup and a little butter...it was all mouth watering yummy.

I went to a housewarming party and she served up quite a feast...all kinds of veggies and dips, fruits and dips, small breads and flavoried oils, hummus, and grape leaves, and a huge meat and cheese tray. I even had a virgin pina colata! What a celebration! Her house is GORGEOUS and I am delighted she landed so well!

The other day I made some milk kefir with cream, and it is thick like sour cream. Today I sliced a cuke, zucchini, radishes, onion, and chopped up a tomato and added it all to some of the "kefir sour cream", then I added in some basil, herbes de provence and S&P to taste for a yummy summer salad.

For dinner, I will have some of that along with leftover roast chicken, and riced cauliflower & broccoli.
