Tonight, I have a casserole baking in the oven. I cut up the left over chicken breast I roasted yesterday, and added quinoa, tiny broccoli buds, minced celery and onion, and sliced up some sweet yellow bell peppers, and added a touch of water and Sweet Vidalia Onion sauce. Growing up in a military family you had to be creative with stretching your pennies. My mom makes this fantastic spaghetti that's made from Campbell's Tomato soup (not generic or it doesn't turn out right) you saute about a 1/4 cup of diced onions, then you add a (1 lb) ground beef (tried it with ground turkey, it was so so) add salt and pepper (a lot) once the ground beef has been cooked you add a large can and one small can of tomato soup, mix together. We use shell macaroni (or whatever you have on hand) cook according to the bag or box. Once everything is cooked you combine everything. I promise you won't be disappointed. Serve with garlic bread. It always tastes better the next day.
So now that I've bored you with my crazy family spaghetti on the cheap... this is what we are having for dinner tonight.

Well, I made chicken. Supposedly oven baked fried chicken for a late lunch/early dinner... I guess it really does matter if you dunk the chicken in the the flour before dipping it in the eggs... It turned out - shellacked. However I did luck out on sending my son to the market to fetch me a watermelon. He picked me out a really nice one. I chopped off one end with a great big, could have featured in the movie Halloween or the Shining, butcher knife. And now I'm sitting here with a melon ball scoop looking at a what will soon be an empty dish. And best yet, one I won't have to wash.

You do cook it in the crisper pan. If you liked Pizza Hut's pan pizza, this is a good at home alternative. It says to cook it in the pan directly on the rack but I have a metal round pizza thingy with handles that I plopped it on (the pizza thing has holes in it to allow air flow and even heating) and shoved it in the oven. It is a little hard to cut through initially at the edges because the pan is soft and it's hard to get a really good push through but when I stopped being a brat and let it cool for a second it was easier. Mainly because I wasn't burning my fingers any more but still....

They have a cheese, supreme and pepperoni option where I live. I saw it a couple of days ago and came back and there were no pepperonis to be found. I was devastated and then I saw a weird shaped box waaaaaay in the back with its corner sticking up. Bingo! Some poor sucker probably thought they'd hide it and come back to it. Ha, sucker! I got the LAST one in the whole store. The whole supply had been demolished in less than 48 hours. I think it's fair to note that there were still plenty of supremes and the cheeses were half gone but the pepperoni was king and now it's mine. Bwahahahaha

I just made chicken pot pie filling and layered it between thinly sliced potatoes (like lasagna) covered it with cheese and cooked it until the potatoes were tender and the cheese was golden brown. It turned out tasty.

I had dental surgery to remove a super huge molar that wasn't working well with my jaw and my ability to eat food, so I'm much better today and plan to make a Chicken pasta dish for supper, tonight: seared chicken breast and penna pasta with mushrooms, sweet onion and sweet red bell pepper in a creamy garlic roux type sauce. Toasted sour dough bread, on the side. Water over crushed ice, to drink.

No dessert. ...but maybe I'll bake some ginger snap cookies, thus afternoon. :stillheart:

I never got around to my supper plans yesterday, but I soaked a small bowl of red kidney beans in baking soda and water, then put them in a small crock pot to simmer over night.

So tonight....I'm using half of the kidney beans to make a scrumptious paste type of dip (seasoned with small amounts of garlic salt, sea salt and cracked peppercorns).... which I'll spread over a warmed large tortilla and add grilled bites of chicken, freshly grated parmesan cheese, and shredded deep green ice berg lettuce. I might even have a few olives on the side, too, because I'm craving olives today.

I've also been sipping on cup after cup of hot cocoa....marshmallows on top. Yummmm. :balloon:

Homemade chili. Well actually I used canned beans so pretty homemade anyway. Milk to drink - need something to put the fire out. Later watermelon for dessert if the supermarket still has any left. My son's been on the look out but no luck, so I'm not getting my hopes up. If one can't be found I'm gonna to cheat on my diet real bad and make/have peanut butter cookies. I'm only burning about every other batch now so things are improving. I can still hear my mother's voice - You don't cheat on a diet, when you overeat you're only cheating yourself. Way to be supportive mom! I mean when she said it I was like 5'4" and 107 lbs. Sheesh I sure wish I had that "problem" now.

Roast pork, which I put into a Pyrex covered dish, with a cut up Granny Smith Apple. It turned to mush, it's own sugar free apple sauce that I ended up spooning over the sliced roast. Amazing! I'll be doing that trick again!
