super simple
Sliced a chicken breast, eggplant, onion, red pepper and asparagus put all into air fryer. 12 minutes later, in a bowl topped with teriyaki sauce.

I don't know for certain but I am leaning towards pizza. I was talking with someone about it last night and now it's stuck in my head.
I did have pizza. DiGiorno's new balsamic and veggie pizza (https://www.digiorno.com/products/thin-crust/vegetables-and-balsamic-glaze).
Grilled cheese sandwich and soup.
I love a good grilled cheese! I like to mix my cheeses so they all blend into an ooey gooey mess inside the sandwich and then I get weird with it. Maybe I'll have that tomorrow night.
I had the last of the pizza last night and tonight, I think it's going to be an eye of round steak with some veggies. I need to eat pretty clean today and tomorrow for medical stuff so no grilled cheese until I'm finished tomorrow night.

Chinese delivery. It's going to be the last time I order delivery for the foreseeable future - or for as long as I can stand it. I can cook a few Asian-ish things, and a couple of "authentic" American-Chinese dishes, but I can't imagine living without Chinese food for very long. Or I don't want to imagine it.

I'm watching the snowfall outside and just put on a big pan of homemade soup: Barley, vegetables, fresh sprigs of rosemary, and a few baby red potatoes too. Maybe add a small can of fire-roasted tomatoes and maybe add a few canned red kidney beans. I will add rainbow pasta bow-tie noodles, which are high in protein, to the soup before it's ready to serve.

Last night was corned beef on rye with white bean soup.
Pressure cooked the corned beef in the instant pot and it was tender and delicious.
Will have leftovers tonight, tomorrow, and Wednesday.

My best friend loved the Checca so i think it's finally nice enough ...no wine tonight but a nice crusty garlic french bread was enjoyed, a tomato salad w Ranch dressing (her favorite) we watched msnbc and discussed how this pandemic could undo our democracy...we shared a brownie w ice cream and she left early..i think we are a little depressed about the state of things in the world..and it's going to get worse before it gets better..

Anyone have a tried and true recipe for swordfish steaks and lemon? I only have one and it's a big beauty but I've never cooked it before. The lemons need to be eaten/used up now and fish and citrus goes well together soo....
That will likely be tomorrow or Thursday's dinner. Tonight will be burger balls and maybe a salad. Gotta eat that up too.

I am having a "Tofurkey" type meatless patty (which has jalapeno bits in it) and broccoli buds and edamae, which I pan seared in evoo.
I am smothering it all in my favorite vegan Caesar salad-type dressing.

I made a pot of zipper peas tonight. I browned 3 cloves of garlic in bacon grease, then added a small chopped onion and one diced carrot. Then I added some chicken stock and some beautiful pork stock that I had left over from the pulled pork I made earlier this week. I added 1/2 a pound of chopped bacon and a pound of zipper peas, and some salt, a little sugar and some thyme.
They should have been delicious. I don't know what went wrong. Maybe zipper peas don't benefit from lots of seasoning; I usually just make them with a little bacon and some salt, or even just salt, and I love them.
I made cornbread to go with them, which was very good. The peas were passable, just not what I expected. I will finish eating them tomorrow and I might freeze some for a quick meal later.

Well....I didnt think that thru very well. I have packed what ever I thought I might make them in. Lol. It was more like casserole style in a microwaveable bowl.
And then to top it off, I broke my favorite juice glass. It had cherries on it. Good thing I have more. Of course, all packed up!

I sliced up a small Jalapeno (de-seeded it too) into rounds, and pan seared them in evoo..... then when they were nearly 'caramelized'? I laid a few slender Tilapia fish thingy's into the evoo and pan seared them quickly.
I got my Fish in for Fish Friday and a huge dose of Jalapeno, too. There's something about the composition of Jalapeno peppers that calms my muscles down and I am eating more of it therapeutically because I feel it helps ward off viral stuff (I'm not sure about that, but it's what I've been telling myself since I came down real sick last fall and Jalapeno's saved my life <<-- :| ).
Tomorrow I am making another batch of that yummy vegetable soup I made a couple weeks ago. It begins with organic vegetable broth and I add lots of raw beets (chopped up, after I roast them), parsnips, scallions, cloves of garlic, baby red potatoes, Jalapeno's, (I used to use carrots but have to stay away from them, but you can use them if you like) and a dash of fresh herbs (rosemary and basil) and a splash of acv, sea salt, freshly cracked pepper and at the last minute or so, I add rainbow bow-tie pasta and a sprinkling of quinoa. I let it simmer all day, then taste test it and if it needs something else, I add it. Oh, and add a small can of fire roasted chopped tomatoes if you can have tomatoes. I like to use fresh tomatoes when they're in season, but out of season I use canned fire roasted tomatoes.
PS, roast all your veggies first. That's what I do. It makes for a richer soup and it's sooo-sooo good. I even use the drippings of the roasted veggies to soup up the soup.

My :wine: course began a little earlier in the day, with a nice Louis Jadot Beaujolais. I already drank all the really cheap stuff, except for a box of sangria that I've had for about a year and a half, and have my doubts about.

Started with...you know you have to cook that asparagus that's on the bottom shelf. Oh and I have a chicken
breast.
Stir fry asparagus with red peppers,jalapeno, onion. Add sliced chicken breast. Almost made an alfredo sauce. I changed the direction, lol
Added ginger and a little fruit cup of pineapple.
Chicken teriyaki, waaa-la. Open cupboard found sesame seeds to top off.
Way better and much lighter than alfredo sauce!
Yogurt and frozen strawberries.

Am presently eating butter chicken with rice and some fried bread thingie which I got take-out from the Asian noodle shop around the corner, run by young yuppie hipsters (20th century hippie entrepreneurs). Absolutely delicious, a tad spicy, but I now have very cleared out sinus passages!! There goes my budget (lol). First time that I have tried out this place, but I was desperate for something resembling Chinese food. I also bought another meal, crispy pork and pineapple and other thingies which I will eat later. They are only doing take-out.
I did a walkabout in my neighbourhood to check out some of my favourite restos. My absolutely favourite West Coast taco place has closed down completely :bigcry:. So are the two wonderful bakeries, one of which had the best homemade shortbread cookies and vanilla slices (their version of the mille-feuille) :bigcry:. The Thai resto has also closed down completely :bigcry:. There is also a little sushi take-out place in a kind of mini-mall (like 15 stores, 3 food places: soup & sandwich, etc.) and the whole little mall has closed down :bigcry:. My 2nd favourite pizza place has closed down completely :bigcry:. Micky D's is closed completely, it has no drive-thru (I don't usually eat there). Timmy's is open :) but only for take-out (I wonder for how long...).

The reason I decided on this place is that, while it is closed inside so I didn't have to even go inside, it has a window that opens up to the outside (they also have a great rep), so I placed my order, paid, and he pulled down the window, and so I waited outside 10' while the guy prepared everything, and then he opened up the window and handed me a nice brown paper bag. Other people dropped by to pick up their orders (all of whom waited while one at a time they approached the window, social distancing 3 metres). I'm not afraid as yet, just my idea of 'abundance of caution'. I wouldn't enter any resto to get take-out.
My freezer is stocked but I know it will get much worse, and I'm saving what I do have.
My mind/heart said I wouldn't get covid-19. I used to have an "inner voice" (which I liked, but sometimes just told me wishful thinking :) ), and because of meditation, the mind combined with the heart (outside the brain), and it dissolved the inner voice. The mind/heart is totally neutral and objective, and, in general, I do exactly what it may say, even though I hardly ever hear it, maybe a few times a year. I did ask the mind/heart about the noodle shop prior to my walkabout, and it said it would be okay. I asked about another place, and it nixed that idea. I am protected by forces beyond the realm of thought, beyond my own self-protective actions.

Shredded Beef and Cheese Quesadillas from Los Cabos Tequila in Poulsbo!
We took them out of the containers, placed them in a hot skillet to re-heat them so the cheese would melt, tossed the empty containers in the outside dumpster, then washed & sanitized our hands again just in case before removing them from the skillet and eating!

Tex Mex stew. I got the recipe from the Southeastern Gay Rodeo Association's (SEGRA) cookbook. I made a few changes, based on what I had. Venison, onions, Ranch beans with jalapenos, corn and tomatoes, plus a few spices. And what is that very yellow spot on the right, you wonder? That is a piece of delicious Jiffy Mix cornbread, soaking up all the juices.
Apparently potatoes, lots of 'em.
About three weeks ago I bought what I could find in produce which included bagged potatoes, three kinds, three pounds each, on the premiss they would keep for a good long time.
Checked on them this morning to pull out a couple and found they had all started sprouting. I've been roasting potatoes all morning to cut, shred, mash and just have whole in the freezer all pre-done. This kind of works out since the frozen veggies in the store have been decimated for three weeks and I have room in the freezer.
Serendipity.

Not sure what I will have for supper. I'm just too tired to make anything, right now.
But my sister-in-law came by my place while I was at work and she left some beautiful Portabello mushrooms. I might slice some of them up and caramelize them in evoo, then add some broccoli buds and freshly grated cloves of garlic, sear them all together, then maybe get my wok out and the soba noodles and make a stir fry, type of supper.
Right now, I just want a cookie. *LOL*

I came across the most unique videos of an elderly woman, Clara, who was at the time, in her mid-to-late 90s. She grew up in The Depression. In the video's I'm going to post, Clara talks about having Dandelions for supper, and she tells you little bits about her life back then, like she worked at the Hostess Twinkie factory. Clara is Italian and she's got tons of videos about all kinds of things people used to make to eat, back during the great Depression.
She's a beautiful soul. And her little stories about yesteryear are just precious.

I guess that depends on whether she really knows how to make ramen soup. Did she add other things to the stuff that comes in the package? Diced cooked meat, vegetables, a three-minute egg? How did it turn out?
It wasn't good. She wouldn't take help from her grandmother or me... no one ate it.

I just simmered some pork chunks in chicken stock, garlic, white onion and sliced jalapeno (seeds and all). I left it covered for over an hour and a half.
Wrapped it up in the last floor tortilla, last dollop of sour cream. Oh, and some cheese.
Last of the diet coke.

I thought about caving in and ordering Chinese delivery, but both of my go-to Chinese restaurants have closed. I took my last carefully hoarded container of noodle soup out of the freezer and put it in the fridge to defrost - I'll have it in a couple of days. I ended up having a meatloaf sandwich and brownies.

I could always reheat one of the servings of Navy Bean soup I made the other day, but I kind of want something different tonight. So I'm going to make Mac-n-cheese with high protein pasta bow-tie noodles and use some Chao Field Roast 'cheese', and add some chopped scallions and tiny broccoli buds and maybe toss some roasted sunflower seeds on top, once I finish making it, then bake it in the oven until it's slightly crispy on top.
To drink: water, a small cup of orange juice and a cup of hot herbal tea for dessert. Maybe an after dinner cookie too (coconut macaroon).

I have been watching CBC News Network, and they allow phone-in questions and the subject of take-out foods has come up many times; many journalists have interviewed "experts" who have stated that cooked take-out foods have a very low risk rate, which I have seen stated many times. Of course, they all end their reporting by showing how one must remove and dispose of all packaging (and then thoroughly wash one's hands). You could also let the food cool down and reheat in the microwave which would kill any virus. There has been an amazing amount of TV commercials on local TV stations advertising various places where one could order take-out.
The only thing I would worry about is the exchange of money (in Canada, bills are made of plastic and plastic seems to retain the virus for longer periods of time.) [I have cleaned my debit card with a sanitary disinfecting wipe each time I have used it.)
Two days ago, on my return walk from the bank, I checked out the Asian noodle shop, but although there was a few staff inside, they said they would be closed that day, and open the day after. Keeping to my minimal goings-out, I didn't go out yesterday. God, I miss my restos. And, all I did this morning was wash dishes. What a drag !!!

I'm having supper right now, earlier than usual, because I'm turning my sleep cycle up a few hours in advance. So I just cooked in the skillet, two Quorn ChiKn veggie patties and I'm going to chop them up and put sweet pickle relish and vegan mayo in, to make a 'chicken salad' type of salad.... so I can have it on Ritz crackers (about ten crackers, half of the salad).

I might just make a small bowl of Oatmeal, add some chia seeds to it and a couple packettes of Truvia (get my sweet tooth fix) and top it off with coconut cream.
I was thinking of making a warm Mango chutney to spoon over it too.

I had a fairly big salad for lunch, so what I'm going to have shortly is a big slice of my home made Cinnamon Walnut cake. It's made with vegan coconut flour and the frosting is made with substitute butter and Truvia (and Cardamom seeds sprinkled on top).
A big quart of water, then a cup of Bigelow's Balanced Herbal tea (it's a health and wellness tea) afterwards.
Got to incorporate 'balance' in the meals I ate today. :cherry:

I'm having a light meal tonight (ruby red grapefruit and a small garden salad, sans salad dressing).
But I spent the afternoon prepping for the holiday meal tomorrow, which I am making Polish Stuffed Cabbage Rolls. I am using the same recipe seen in the video below, except I substituted the meat portion with using Meatless Meat Balls, all mashed up, since they taste exactly like meat balls should; and I added Garlic Rice Vinegar to the tomato puree, for the added liquid you pour over the finished cabbage rolls, before you cover them up and bake them off.
I've got them all prepared; they're sitting in the fridge right now, but I bake them off tomorrow morning, for the afternoon holiday supper tomorrow.
I'm also having Starbucks' Toasted Graham Coffee and miniature Easter cupcakes with lavender frosting and tiny yellow flowers, for after dinner treats. :)

I am thinking chili today. Yeah i know it's Easter and I had this dinner planned, but noone planned for a cold windy day....

I'm thinking of doing up my baked ziti tonight. I know CCB loves it and I like knowing she's getting a good home cooked meal. Now that I'm cooking more, I'm doing more vegetarian options so that I can share with her. It's not so bad eating vegetarian. But there are some things that just need meat. I am quite conscious of what I cook. The apartment is rather small and I don't want her to get grossed out. Pasta was picked pretty clean at the store, so I bought the expensive imported kind. And shredded cheese was picked clean, but I found name brand cheese to use. It was ok, too. I got enough for two. We will eat pretty well in lock down.

Pete and I did a big shop yesterday, hunting and gathering, from coop to coop, looking for tofu and oat milk.
We got greens from a farm cooperative, so I think I’ll make orzo with baby kale.

I am going to cook some high-protein Penne pasta (zero sugar index, high vegetable protein index pasta by Barilla) and add some meatless 'meat balls' to it; then add marinara sauce and let it simmer until supper time.
Water to drink, then a cup or two of hot herbal tea (chamomile + lavender) before bedtime.
I made bean soup with ham and southern style cornbread. Yum.

I was obsessively watching an Australian tourist’s vlog. She challenged herself to get all of her meals at 7/11. The last meal she had was rice, tofu, kimchee, and greens, so that’s what we actually had for dinner. Pete made the rice.

Lots of time and effort, especially patience!
Oven roasted smoked brisket. Marinated with a dry rub and wet sauce overnight. Slow roasted at 275° for 5.5 hours. The apt smelled amazing.
So I had too much sampling at the end, I'm calling that dinner.
Lots of leftovers, yay !
To drink...vanilla bean vodka infused with diet coke. Oh my!
I'll make some berry mousse for a late night snack later.

Made spaghetti sauce a couple of days ago and decided on something else so tonight is spaghettini and meat balls in home made sauce. Dipping with sourdough bread. Parmig. cheese to finish it off.
We are ordering take out. Grinders and maybe some poppers and an ice cold soda. Refreshing!

Rolling around ideas for a meal with left over brisket tonight. Thinking a brisket noodle bowl...some kind of Pho. I have all the goodies for it! Loaded with asparagus, carrot, red pepper. I have Thai basil, fresh on my balcony. I even have a lime to squeeze on top....hmmm, dinner time yet?

Found some new Whole30 plan frozen entrees...tonight's fare was Butter Chicken with sweet potato cubes, kale, tomatoes, and Indian spices......pretty filling but bit too spicy for my tastes...:)

Salad and rice.
A simple salad consisting of iceberg lettuce, cucumber and plum dressed with freshly squeezed lime juice and some pumpkin seeds.
The rice was made with leek and red, yellow and orange peppers that were finely chopped and sauteed and then added to the rice to boil.

Hamburgers off the grill with all the trimmings. Silver Queen corn. The hamburgers were really good. I am trying to support local small business and one little restaurant is selling boxes of produce and meat that they would normally serve to customers in-house. I'm guessing it had a higher fat content than what I typically buy as they were really juicy.
