I'm too lazy to rewrite it, so I copied it from my FB wall.
Tonight's dinner started with half a leftover rib eye that I cut into small pieces and a thought. I diced a small potato, a small onion, beat 2 eggs. Set a pan up and put butter in it to melt, added diced potatoes and cooked until almost tender, added diced onions and then the pieces of rib eye. Finally stirred in the eggs and made a scramble out of it. Add a half of a bagel toasted and I have dinner...yay!!!

Know what's great about being alone? I am sitting in my underpants with a big container of hummus. All of that hummus is mine - nobody else wants it or knows it's in my fridge. I could eat it with a spoon and lick the spoon and stick it back in and nobody would care or say ewwww about it.
I also have a cucumber. I just chopped it into... logs. You know. Just cut off chunks of it. No need to make dainty spears. Nobody's watching. You bet your sweet bippy I double-dipped it, too.
Aside from my underwear, I'm in an old Specials t-shirt which I gave to my brother years ago and reinherited, and old rugby slippers. I am truly the unsexiest person in the world, but that was a darn good supper.

I was thawing meat in the fridge since yesterday.
Italian sausage, ground beef and pork neck bones.
Today when I got home from work, I started the cooking
I was dicing and mincing and pre-cooking the sausage and ground beef
I open 6 large cans of crushed tomatoes and 1 can of petite diced tomatoes
Put them in a 12 quart pot with all the meat, diced onions, minced garlic and spices
So, my sauce must cook at least 4 hours and then set overnight, so the spices soak in really good.
Always on the first day of this kind of cooking, Italian sausage sandwiches can be had, but never pasta.
Tomorrow will be pasta night and I look forward to it.
BTW, the sausage sammich was yummy :)
Last night I made chicken burgers with a pesto aioli, and baked kale chips. Super yummy and who knew kale could be so tasty. Tonight I am making Apricot glazed chicken breasts and a broccoli/potato mash.

gemme, my apartment complex I am in, requires the thermostat be on 5 and left there..try that setting and look at the ones for the veggie drawers and go a degree towards warmer and see what happens. Anyway I am offering some suggestions...hope it helps..good luck Ms. Gemme.OMG, someone save me from myself.

I fried up a few corn tortillas, used some refried beans from yesterday's dinner, chopped a roma tomato and jalapeno, topped it off with cheddar cheese....meatless tostadas, yum, yum, yum :)

I just put chicken in the toaster oven to bake
I put a small amount of water in the pan, tossed in diced jalapenos including all the seeds, sprinkled on cumin, garlic powder, paprika and a little Nature's Seasoning. Covered with aluminum foil to infuse my meat as it bakes. I will take the foil off after an hour (things seem to cook slower in a toaster oven from what I'm finding out) and let it bake until done.
I'll add smashed taters and a veggie (undecided)

I haven't a clue.
I mean, I made it and it's good but I don't know what to call it. It's one of those 'a little of this, a little of that' dishes. It looks like a mess but it's quite flavorful.
Super lean (7% fat) ground beef, fresh mushrooms, green chilies and juice, horseradish sauce, light ranch dressing, and Heinz 57 sauce.
Cooked it down and now the house smells yummy.
Took a 94% fat free wheat tortilla and dumped some of it on top and sprinkled the tiniest dusting of shredded sharp cheddar.
I had some pickled beets on the side while I was cooking.
Dr. Thunder to wash it down.
